Korean Air Fried Chicken 
Bao Buns 


This Ramadan I am trying to go oil free and that doesn’t mean I will be harsh on myself, when situation persists, like being invited for iftar parties #iykyk😅

Bao buns or also known as “wrapped” buns are the easiest to prepare, the softest and fluffiest. There are many versions of this easy Chinese bun, where you shallow fry after steaming and variation in shapes. The most traditional shape being a spherical shape with tiny pleats on top. Also you can stuff it your choice of fillings, I like the classic Korean fried chicken, as I am going oil free this Ramadan tried air frying the chicken and it turned out good, you may also oil fry the chicken for better texture of course! 😀


Along with the Korean Fried Chicken I also added julienned veggies like cucumber, and purple cabbage, you may add julienned carrots too. 

Ingredients:

Bao bun:

  • 2 1/2 cups All purpose flour 
  • 3/4 cup Milk
  • 1 tbsp Yeast
  • 1 tbsp Sugar
  • 1 tbsp Butter / 2 tbsp Vegetable oil
  • 1 tsp Baking powder
  • Salt 

Korean Fried Chicken 

  • 200 gms Bonless Chicken
  • Salt
  • 1/2 tsp Pepper powder
  • 3/4 cup all purpose Flour
  • 2 tbsp Gochujang Korean Chilli paste *
  • 1 tsp honey
  • 1/2 tsp soy sauce
  • 1 tsp Vinegar
  • 2-3 Garlic cloves, finely chopped
  • 1 tsp Ketchup
  • Cucumber and Purple Cabbage Julienned 
  • Sesame seeds

Instructions:

  1. In a beaker, combine slightly warm milk add sugar and yeast, to which add the butter and give it a mix and set aside. 
  2. Next, in another bowl all the dry ingredients like the flour, baking powder and salt. Now pour the wet mix to the dry ingredients and combine well to form a smooth dough. Cover and set aside to rest the dough for 60-90 minutes or until doubled in size. 

  3. Scrape the dough onto your clean work surface and knead well. Make equal sized balls and flatten them into a 4 inch oval shape. Alternatively, you may flatten the whole dough and cut into equal shapes bun using a cookie cutter.
  4. Slightly brush half of the inside of the bun and fold into half. (Brushing with oil help to open the bun easily once steamed)
  5. Transfer the bun onto a square piece of baking paper and to make sure you have a smooth surface on your bun, slightly roll over the bun using a roller. And place them onto a tray and do the rest of it similarly.

  6. Place the Bao buns into your steamer and allow to steam for 12 minutes and after the 12 minutes switch off the flame and allow the bun to stay in the steamer for 5 minutes before you open the lid.

  7. Cut your boneless chicken into tiny cubes and and marinate them in salt and pepper.
  8. Next coat them in flour and then dip in cold water and again dip in flour and then place them onto your air fryer and spray oil all over. Allow to air fry at 200 for 20 minutes (flipping or shaking your airfryer in between).
  9. In a small saucepan combine the gochujang, soy sayce, honey, vinegar, garlic, and ketchup and a dash of water and bring it to an oil and set aside. 
  10. Combine the sauce with the crispy air fried chicken. 
  11. Once your Bao buns have cooled slightly, open the bun gently and spread the sauce inside the bun and place your veggies and the Korean fried chicken. 

  12. Sprinkle sesame seeds and enjoy warm! 

Notes:
* You may alternately you my homemade Szechuan sauce, but since it’s Korean fried chicken, I suggest to get gochujang itself.

19B Soup




What an interesting name for a soup yeah?! I was surprised too! Haha.. A Chinese chef developed the recipe of this soup whilst traveling on a train, and when he reached his destination, he prepared the soup and named the soup as per his seat number on the train. Also I read an article that the chef was one of the best in Pakistan and hence it is a pak-Chinese influence soup. Not sure about the authenticity of this part of the story, but still thought to put it here ☺️

The soup is more like hot and sour soup but with the addition of prawns, the soup has a very delicious flavor full of umami. This soup is perfect for the winters, when you want to gulp on some warm liquids. So satisfying! 

The soup is very easy to prepare too. The soup uses a whole egg without separating the yolks from the whites. And also remember to quickly stir when pouring the corn flour slurry, or else you will end up with a lumpy mess. And once prepared do try to have it immediately, reheating may not give the desired taste. 




Ingredients: (makes for 3)


  • 3-4 Mushrooms*, sliced
  • 1 egg
  • 3 1/2 tsp Corn Flour (mixed with 3 tbsp water)
  • 1/2 cup Carrot, chopped finely 
  • 1/4 cup Spring onion, chopped finely 
  • 150 gms Boneless Chicken, chopped finely 
  • 8-10 pcs Prawns, peeled and deveined (chop few of them)
  • 2 Garlic, freshly minced 
  • Small piece Ginger, freshly minced 
  • 2-3 tbsp Vegetable Oil
  • 1 Chicken Cube / 1 cup Chicken broth
  • 1-2 tbsp Soy Sauce 
  • 1-2 tbsp Red Chilli Sauce
  • 1 tsp White Pepper Powder
  • 1 tsp Black Pepper, crushed 
  • 1 tbsp Oyster Sauce, optional
  • 3 1/2 - 4 cups Water 
  • Salt, as required 
  • Spring onion, chopped (to garnish)

Instructions:

  1. In a heavy bottom pot, pour in the vegetable oil and add in the chicken pieces and the minced ginger and garlic and toss well until almost cooked. 
  2. Next, add in the chopped prawns and whole prawns.
  3. Add in your veggies like sliced mushrooms, finely chopped carrots.
  4. After a couple of minutes of sautéing, add in the chicken cube and add in the sauces like soy sauce, red Chilli sauce and oyster sauce and spices like white pepper, black pepper. 

  5. Pour in the water, close lid and allow to boil, once boiled, if froth is visible, skim it using a ladle.
  6. Pour in the corn flour slurry, while stirring continuously. 
  7. Add salt, if required, and sauces if necessary.
  8. Finally pour in the beaten egg like a thin string and swirl while doing it, mix gently.
  9. Garnish with the chopped spring onion and your 19B soup is ready to enjoy!

Note:

It is recommended to use shiitake mushrooms if they are accessible to you, if not normal button mushrooms works fine as well! *

One pot Brown Rice



Unlike white rice, brown rice has many benefits to the body. Consuming in moderation with a healthy lifestyle can do wonders! This one pot dish is the easiest way to prepare brown rice. 

You may add your favorite veggies to the dish. This one bowl of brown rice is so filling and satisfying (makes you feel good). Some days when I eat out too much or when I feel I don’t eat enough nutrient rich food, I make this one pot brown rice and immediately feel better about the food I ate. 

This recipe is great for make ahead/ meal prep and also if you workout too ( and looking for nutrient rich meals). This is one of my takes on brown rice. Also, I have used a spice blend depending on availability at home, you may use Chinese Spice if you have it. I have used chicken with bone pieces but I would suggest to use boneless (my family loves with bone).

Let’s get cooking!

Ingredients:

  • 3 Garlic cloves, chopped finely 
  • Bunch of Scallions, chopped 
  • 150 gms chicken, chopped (preferably boneless)
  • 1 tbsp Soy sauce
  • 1 tsp Garlic powder
  • 1/2 tsp Freshly cracked Black Pepper 
  • Salt, as required 
  • 2 tbsp Olive oil
  • 1/2 cup Frozen Vegetables 
  • A pinch each of Cinnamon powder, Fennel powder, Black Pepper powder
  • Sesame seeds, for garnish
  • 1 1/2 cup day old short grain Brown rice*

Instructions:

  1. Marinate the cleaned boneless chicken pieces with garlic powder, black pepper powder, soy sauce and salt.
  2. In a pan, pour olive oil, add in the minced garlic and sauté until fragrant. 
  3. Next add in the chopped scallions and add in the chicken pieces, and cook covered.
  4. Then, add in the frozen veggies, (I added frozen corn too) and add in the spice powders and allow to heat well.
  5. Next add in your day old brown rice, soy sauce and stir fry everything well on high heat. 
  6. Serve in a bowl, garnish with sesame seeds and serve immediately.

Notes: 
* unlike white rice, brown rice needs more water.
To cook the brown rice, Add 2 cups of water for 1 cup of water, cook covered on simmer for 30-35 minutes

Chicken Hakka Noodles





It's already halfway through October? Can you believe that? I am done sitting at home and bam! End of year 2020. If there is anything at all that has helped us to rewind and learn is anything and everything related to food. We have all been creepy crawlies when it comes to socializing, and food has been a big part of the whole lock down situation. Even though you belonged to any part or any community of the world, you could always talk food! If there is anything I like to d other than dozing off is cooking dome amazing food and even if I feel a little bumped for the plans I had for the year 2020, I am grateful to the Lord for bringing families together during this pandemic and to stumble upon so many like-minded people whom I now call my friends. Peace and prayers to all those who have been affected by the Virus.

Onto the Hakka noodles, now now, you may call this Hakka noodles, chow mein or stir fried noodles. It doesn't matter. The main difference between Hakka noodles and chow mein is that there is no difference other than they were invented in two different regions in China. They both have the same ingredients, be it vegetables, or a favorite protein like chicken Thighs strips/pieces etc. Additionally chow mein may be prepared a little watery which are slurpy good. But they are cooked by tossing unlike stir frying method which is used for Hakka noodles. For me noodles has always been my go to dish whenever I go to a restaurant. It's so easy to prepare at home too. I'd recommend not to use the Maggie noodle cake coz the textures are quite different.
Here I have used Chings Vegetable Hakka Noodle pack you may use the egg Hakka noodles too, tastes the same.



Chicken Hakka noodles is a popular Indian street food which is prepared using boiled noodles that is stir fried on a high flame with lots of veggies and chicken pieces and a drizzle of soy sauce. Make sure you prepare your Hakka noodles over high heat and you got to slice your veggies thin. I used Onion, Capsicum, carrot, Cabbage and green french beans. When you want to prepare something quick this is just the perfect dinner treat for weeknights! Gets done in half an hour max! 😍

I like to toss and stir fry my noodles and shhh.. I have a secret to share with you. But only if you promise you won't tell it to anyone🤪 haha, who am I kidding? I know you are here for the secret.😉 I like to add a drizzle of vegetable oil at the end of the stir frying to get that glossy restaurant look. But let me tell you, it's not just in the looks but this is the best Hakka noodle recipe. I had to share it here as I have my followers always ask for the recipe, so here you go!

Ingredients:

  • 250 gms/ 1 package of Chings Hakka Noodles
  • 2 + 1 tbsp vegetable oil (1 tbsp for the final coat) 
  • 3-4 garlic cloves, chopped finely
  • 1/4th of an onion, thinly sliced
  • 1/2 Capsicum, thinly sliced
  • 9-10 French beans sliced thinly
  • 1/4 pc of Cabbage sliced thin
  • 1-2 green chillies, chopped finely (depending on the heat level) 
  • 1/4 Chicken stock or 1 maggi chicken cube (optional) 
  • 50- 100 gms Boiled and lightly shredded chicken (boil in water with salt + pepper) 
  • 2 tbsp Soy sauce
  • 1/4 tsp white vinegar 
  • 1/4 tsp crushed black pepper
  • 1/2 tsp white pepper powder (optional)
  • Salt (if required)

Instructions :

  1. In a large pot, boil water required to boil noodles. Add salt and allow to cook 80% and drain off the water and run through cold water. Finally coat with a tbsp of vegetable oil. 
  2. In a deep wok, add 1 tbsp oil and Sautee the garlic for around 15 seconds and quickly add the onion and stir well. 
  3. Next add in your veggies in the order - French beans, carrot, Cabbage and Capsicum and finally add your green chillies and stir well. 
  4. Next add your boiled and lightly shredded chicken. 
  5. Next add your soy sauce, white vinegar, and some crushed black pepper powder and add in your noodles, toss and stir fry really well. 
  6. Now you may see the moisture has all dried out and the noodle might look dry, if so use my secret trick, add a tbsp of vegetable oil and stir fry well for a minute and voila your chicken Hakka noodles is ready! 
  7. You may garnish with greens of spring onion. (I didn't here coz let's be honest here, I ran out of groceries🙈)

Roasted Garlic Fried Rice 


Good day folks! It's freezing cold today. Very windy and with slight rain falls.. Loving the weather every bit!

When it's lunch time you always want to gorge on something yummy and here I am with the recipe of Roasted Garlic Fried Rice! So yumm that you will keep wanting it more.. A whole garlic bulb is chopped apart at the top and the garlic is placed in a foil and drizzled with olive oil which helps to release the lovely aroma of the roasting garlic😋😋

And this perfectly roasted garlic brings out so much of flavor in the fried rice, it's super delish!
Now to go with it I made General Tso's Chicken which I will be doing a post on it soon! That is a super simple side dish recipe, you wouldn't want to miss!


Back to the roasted garlic fried rice, if you love garlic but not it's strong pungent smell but love the amazing aroma it brings out when it is sautéed in oil or butter, this recipe is going to be your best friend as roasted garlic gives out a delicate and a not so intense flavor. 😋

And for the perfect fried rice, I would suggest you use spring onions too but since I didn't have them I haven't used it here. Also for the ratio of the garlic bulb for making the fried rice, it would 1 bulb for 2 person's quantity.

This garlic roasting technique is a game-changer - you may use it to substitute any recipe that calls for raw garlic and if you want a milder taste. Roasting garlic makes your kitchen smell killer, that's a bonus! Roasting Garlic takes about 20-25 minutes in the oven, you may also break open the bulb and keep the garlic cloves with skin on and cover in foil with the drizzle of olive oil if you are short on time. It is insanely creamy and rich that you would want to use it on anything and upgrade the food - soups, salad dressings, mashed potatoes, dips,etc. The options are endless 😋😋
I can't wait to try my hands on many other recipes using this technique! 😍

Also in the rush to feed my little girl, I forgot the eggs - keeping it real! So you may scramble eggs with a dash of salt and pepper or you may also do a sunny side up, which was my plan initially. Anywhoo, if you are not a fan of burnt garlic fried rice or intense garlicky flavor, then do try this recipe and let me know in the comments how you liked it ❤️

Ingredients :

For roasting garlic :

  • 1 Garlic bulb
  • Foil paper
  • Olive oil

For the rice:

  • 1 glass Jasmine rice/ Basmati/ Jeerakashala rice
  • 200 gm Chicken breast, boiled with salt and pepper
  • 1 carrot, chopped finely
  • 1 cup French beans, chopped finely
  • 2 tbsp Soy Sauce
  • 1 tsp Black Pepper
  • 1 tsp white pepper (optional)
  • 1/4 tsp red chilli flakes (optional)
  • 1 spring onion, chopped
  • 1/2 cup Corn niblets
  • 1/2 Maggi Chicken Cube
  • 2 tsp green chili sauce (optional)
  • Salt, as required


Instructions:


Roasting garlic :

1. Chop off the head of the garlic bulb and place the garlic in foil and drizzle some olive oil and cover it to form into a ball.





2. Using a muffin pan (If making many roasted garlic) or a ramekin, roast the garlic in the oven while you prep your veggies.

Roasted Garlic Fried Rice:

1. Cook the rice and set aside to cool.
2. Squeeze out the roasted garlic and sautee it in butter for 15 seconds and add in your veggies and the Maggi chicken cube.






3. Now add in your spices like black pepper powder, white pepper powder, red chilli flakes, and sauces like soy sauce and green chili sauce.
4. Finally add your boiled and shredded chicken to the veg mix. 




5. Now in a wok on high flame pour in some oil, the chicken-veg mix and cooked rice along with a  couple of tbsp of soy sauce and mix well, finally add some pepper powder and garnish with a sunny side up. 


6. While you make any sides just place the used garlic bulb leftover in the middle and close the lid. This is optional.
  • Note: I have used Jeerakashala rice here, as I did not have Jasmine rice with me. You may use whichever you have in hand and cook the rice according to its nature beforehand. 
  • I haven't used a wok here as I made for a large quantity and added more roasted garlic. I highly recommend cooking this in a wok on high heat.

Chinese Take away style

Kung Pao Chicken


Have you had this feeling when you are at home, all relaxed and chilling, don't feel like eating guilty from a restaurant or order a takeaway and wanted to have something Chinese and eat in about half an hour? I have always had that kinda craving especially on a cleanup spree day. It is always so satisfying to have easy to cook delicious homemade meal. Don't think of the dishes to wash. They can always be done later but a good family time with good food is always the best idea. No place outside can give the comfort of home.


Chinese cuisine has been close to my heart since childhood. My family always teased me saying I should have been born a Chinese and not Indian. My sister just cannot stand how chicken can be made sweet and spicy. That is what I love about Chinese cuisine. Especially Indo-Chinese. The aromatic white basmati rice balances the flavor of Kung Pao Chicken.

When you can make the perfect take out dinner why leave the comfort of your home. Relax and cook this easy peesy recipe at home with the family. Let's move on to the ingredients.

INGREDIENTS


  • 1/4 Cup soy sauce, divided
  • 2 tsp cornstarch, divided
  • 300 gm chicken breast, chopped into 1" pieces
  • 1/4 Cup low-sodium chicken broth
  • 2 tsp sesame oil
  • 1-2 dry red chilli 
  • 1 tsp  red chilli sauce
  • 1 tsp Sriracha sauce
  • 1 tsp peri peri sauce
  • 1 tbsp. vegetable oil
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 3 green onions, finely sliced
  • 1/3 cup Chopped peanuts


INSTRUCTIONS








  1. In a medium bowl, combine 1 tablespoon soy sauce, and 1 teaspoon cornstarch. Whisk until smooth then add the chicken and toss to coat. Marinate 15 minutes.
  2. Make the sauce: In a small bowl, whisk together remaining 3 tablespoons soy sauce, remaining 1 teaspoons cornstarch, chicken broth, red chilli sauce, Sriracha sauce, and peri peri sauce. Whisk until evenly combined.
  3. In a large skillet over medium-high heat, heat vegetable oil. Add chicken and cook until golden and almost cooked through about 10 minutes. Remove from heat.
  4. Add more oil, if necessary, and add the bell pepper. Cook until tender, about 5 minutes, then stir in garlic and cook until fragrant, about 1 minute more. Add the dry red chillies  
  5. Return chicken to skillet and pour in sauce. Stir to combine and bring mixture to a low simmer. Cook until the chicken is cooked through and the sauce has thickened, about 2 minutes.
  6. Stir in green onions and peanuts. Serve immediately.






Note: You can avoid all the sauces and stick to just the soy sauce. And if you like it sour you may add in a little vinegar.
