 Soya Chunks Burji


Eating healthy is not complex or challenging. It is our mindset that works against it. I do not say that we should be strict with healthy eating, we can always have cheat days/ meals by keeping it within the limits. I have been asked how to help with limiting or cautioning oneself; well, for me it has always been the mid night junk munching issue, for that I found that brushing my teeth as soon as I am done with dinner helped, you wouldn't want to eat junk after that. Just find a way about it, and you will get used to it.

Another way, is to always read the list of ingredients of the food consumed, so that it helps to avoid consumption of junk food. Try to avoid processed and packaged food as much as possible. The number of additives, preservatives etc, that goes into the packaging are INSANE! I am not a complete clean eater. Trying to take baby steps, one meal at a time.

Today I am sharing with you the recipe of Soya Chunks burji. One easy yet delicious recipe that you can have with whole meal bread, or as it is. The benefits of Soya Chunks are many , they are rich in protein, omega3 fatty acids, Fibre etc. It also helps lower bad cholesterol levels in the body. Soya Chunks act as a meat substitute, it is known as the meat in vegetarian. 😃 It is very simple to cook them too. The dry soya Chunks are soaked in water for 10- 15 minutes, which then doubles in size.

This recipe is very easy to prepare as these are ingredients that are easily available in every Indian home. My girl said that it smells like maggi when I make Soya chunk burji. Not going to lie, it does smell the same and tastes even better too! Let's get started!

Ingredients : (2 persons)

  • 1 cup Soya Chunks (soaked in water for 10-15 minutes)
  • 1 tbsp Extra Virgin Olive Oil
  • 1 small Garlic clove, minced
  • 1 medium Onion, chopped finely
  • 1 Green chilly, slit
  • 1 Tomato, chopped
  • 1/4 tsp Turmeric Powder
  • 1 tsp Red Chili Powder
  • 1/4 tsp Garam Masala Powder
  • 1/4 Cup Water
  • Salt, as required 
  • 1/4 cup Frozen Green Peas (Optional)
  • 1/4 cup Frozen Sweet Corn Kernels (Optional)
  • 1/4 tsp dried Fenugreek Leaves 
  • Squeeze of Lemon
  • Coriander leaves, chopped (to garnish)

Instructions :

  1. Soak the soya Chunks in water for 10-15 minutes. Squeeze out the excess water and chop using a food processor or chopper and set aside.
  2. In a cast iron pan/ wok, pour Extra Virgin Olive oil and saute your minced garlic, to that add in your chopped onions, salt and green chilli and sauté well.

  3. Next add the chopped tomatoes and allow to cook until mushy.

  4. Next add in your spices like turmeric powder, red chilli powder, garam masala powder and mix well.
  5. Pour the water to deglaze the pan, check for salt.

  6. Finally add in your chopped soya Chunks and combine well.

  7. To this, add your frozen peas and corn (Optional).

  8. Place the dried fenugreek leaves in your palm and rub and add to the burji. Mix well.
  9. Garnish with chopped coriander leaves and finish off with a squeeze of lemon and enjoy warm!

 Breakfast Cheddar Biscuits



Since it's the vacation season, kids are always at home, and this makes a great garb and go breakfast idea when you have made plans with your family. These biscuits when paired with some veggies and fresh juice, makes a great breakfast meal. These buscuits comes together very easily, no effort at all, I guarantee. 

The aroma that sits in the house is just, aaaah, sooo good. Well, of course, you have butter as the star ingredient. You can make them ahead and store it in the frezeer, so that you have something ready for your kids snack time. These are much similar to buttermilk biscuits that are my favorite, Popeyes biscuits. The crisp from the scallions are just so good. If you can get hold of some shredded cheddar cheese, do try this recipe. If you have made ahead, and frozen them, thaw the biscuits in the refrigerator overnight and bake them for 15 minutes and have it warm, and enjoy. 😋

Ingredients:

  • 1 1/2 cup All purpose flour
  • 1 tsp baking powder 
  • 1/2 tsp baking soda
  • Black pepper, crushed
  • Salt, as required 
  • 1/2 cup cold butter, cubed
  • 1 tbsp butter, melted
  • 1/4 cup Scallions, chopped
  • 1/2 cup shredded cheddar cheese
  • 3/4 cup buttermilk

Instructions:

In a large bowl add flour, baking powder, baking soda, black pepper and salt.
Work the cold butter into the flour, using fork/finger until crumbly in texture.
Add in the chopped scallions and cheddar cheese, mix well.
Now pour the buttermilk, little at a time and bring to a dough until not too sticky or too crumbly.

Transfer the dough to a lightly floured counter top and kneed well, just until the dough comes together.
Flatten into a rectangle shape and fold the short sides overlapping each other and press down and flatten and repeat the process again.

Now flatten a little and using a dough scrapper/knife , cut the dough into 6 equal squares.

On a baking paper lined sheet, place a little cheddar cheese just before placing each biscuit. The cheese comes underneath each biscuit.
Brush the biscuits with melted butter and bake the biscuits in a preheated oven at 210 deg C for 15 minutes until golden brown.
Enjoy with semi boiled eggs and fresh fruits and juice for breakfast! 😋😍

 Malabar Style Mutta Curry/ Mutta Aanam Vechadh




I have always been asked to share the recipes of the food the usual food we malabaris have. I kept delaying it, as I am someone who loves trying and sharing experimental food. Finally taking baby steps to make this page helpful for beginners in cooking as well. This egg curry is the easiest to prepare. No crushing of ginger garlic, and with basic pantry ingredients you can make this delicious curry that goes well with soft ari rotti (a malabar rice pancake), that is smeared with lots of ghee and/ Chappattis. This curry goes very well alongside some delicious meen mulagittadh/ meen varattiyadh, spicy fish curry made using red chilly powder and tamrind. 

We, here, usually like to pair it with some fried fish to compliment the curry. We also prepare a seafood version of this curry, will share the recipe as another post, in Sha Allah. It is very delicious too. I always like to prepare this curry durimg lazy days as it is effortless, yet delicious too. Make sure to cook the egg as per your liking keeping the time in mind to boil the coconut paste too. If you keep the coconut paste boiling for too long it might come out a little curdle-like. Once the curry starts boiling switch off and place lid as the earthen pot will do the rest of the cooking.

The last time I shared a pic of my breakfast plate with this curry and ari roti, I was bombarded with recipe requests. So here you go guys.. Do try and let me know you liked it.



Ingredients:

  • 1/2 medium size Onion, sliced
  • 2 sprigs Curry leaves
  • 3 tbsp Coconut Oil
  • 3 green Chillies, slit
  • 1/2 medium size Tomato, chopped
  • 3 Eggs
  • 1/2 cup Shredded Coconut 
  • 1/2 tsp Turmeric Powder 
  • 1 tbsp Fennel Seeds
  • Salt, as required
  • 1 tsp ghee

Instructions :

  1. In an earthen pot, pour the coconut oil and Sautee your sliced onion.
  2. Add salt for the onions to turn translucent .
  3. Next add in your curry leaves, and slit green chilies, Sautee well.
  4. Now add in the chopped tomato, mix well and close lid, allow to become mushy.
  5. Next make a coconut paste by grinding shredded coconut, turmeric powder, fennel seeds and little water and grind to a smooth paste.*
  6. Open the lid, and crack in your eggs and allow to cook for around 2 minutes and add in your ground paste, cook for around 3 minutes on medium low and you are done!
  7. Add in a tsp of ghee for that extra richness.
  8. Enjoy with mabalar Ari rotti/ Chappathi and some delicious fish fry like this. 
 

Notes:

  • Make sure to add enough water, as the earthen pot drains the moisture.
  • *Do not add too much water, as you will get a smooth fine paste. 
  • Do not keep the coconut paste boiling for too long it might come out a little curdle-like. Once the curry starts boiling switch off and place lid as the earthen pot will do the rest of the cooking.

Sunny side up Potaffles



Pottafles are what came to my mind when I was craving for hash browns, yet wanted to make waffles when I had a lot of potatoes in my pantry. It is a super easy breakfast idea. Some days I really crave for something savory in the morning, but the thought of the process involved makes me want to adjust with pancakes and waffles. What I liked about potaffles was that it had a hash brown taste to it, without much effort.

The ingredients are basic, so you make it very easily, but of course, if you have a waffle maker. The addition of the corn flour helps to make the waffles crisper unlike usual savory waffles. Though, right after cooking the potaffles, they may look soggy, but it gets crisper when the vapour evaporates, the potaffles gets crispy.

After mixing the batter of the potaffles, the more the batter sits, water oozes from the potatoes, which can be removed by straining the water. You may avoid onions, but it helps elevate the flavors as well as helps the potatoes from oxidizing and changing color once shredded. I served the potaffles with sides like sausages, streamed brocolli and sunny side up eggs with a warm cup of coffee to go with it. If you have a food processor and a waffle maker, do definitely try this recipe, it's delicious yet super easy.

 

INGREDIENTS : (Makes for 4 )

  • 4 Potatoes (3 shredded and 1 finely shredded, using a food processor)
  • 1 Onion, finely chopped
  • 1 Egg
  •  4 tbsp All Purpose Flour
  • 2 tbsp Corn Flour
  • 1 tsp Black pepper, crushed
  • Salt, as required 
  • Eggs, brocolli, sausages to serve as sides
 

Instructions:

  1. In a food processor, shred 3 potatoes and finely shred 1 potato.
  2. In a mixing bowl, add the shredded potatoes and finely chopped onion, and all the ingredients, mix well to combine.
  3. Next scoop the batter mix and spread over the waffle griddle and close the griddle and cook for around 7 minutes or until the edges turn brown.
  4. Finally, place a sunny side up egg over the potaffles and serve with your favorite sides. I served with steamed brocolli and fried sausages.

Afghani Omlette




Mornings and breakfasts are inseparable. To have an easy and healthy is ideal but busy mornings can mean gobbling down junk food.

Not anymore. This Omlette, though the name states omelette, Afghani Omlette is more like bullseye or sunny side up eggs on a bed of chopped veggies.

What is stunning about this dish is that it is simply uncomplicated, and to believe that something so easy can turn out this delicious is just stunning! When the cubed potatoes crisp and brown the juices from the tomato caramelize to form this umami flavor that is unbelievably good. This dish requires no spices and is prepared with basic ingredients you can find at home. 

The first time I came across this omelette, I felt what was so great in this dish that made it unique. Well, the addition of potatoes made it interesting, so I definitely had to give it a try and oh boy was it good. The original version that has just salt and pepper has its intense flavor bomb in itself, though I wanted to try using Garam masala and Chilli powder. I'd recommend trying the dish with just salt and pepper for a first timer. 

This is a great recipe for busy mothers especially, kids will love it. Can be had as it is with a spoon or you may dip and eat using any sort of bread. 

Ingredients :

  • 1 tbsp butter/ oil 
  • 2 eggs
  • 1 onion chopped finely 
  • 1 small potato cubed (peeling the skin is optional) 
  • 1 tomato chopped finely
  • Salt and pepper 
  • 1/4 tsp Garam masala (optional) 
  • 1/4 tsp Kashmiri Red Chilli Powder (optional) 
  • Red Chilli Flakes/green chilli for garnish

Instructions:


  1. In a small Omlette pan, drop a piece of butter and saute your potatoes and allow to cook well and crisp up on the outsides. 
  2. Add salt and pepper to taste. 
  3. Next add in your chopped onions and add salt. 
  4. Now add in your tomatoes, add salt and pepper to taste, close the lid and allow to cook for 1 minute. 
  5. Open the lid and mix well and allow the tomato to caramelize well. 
  6. Finally add in your chilli powder and Garam masala (this is an optional step). 
  7. Saute well. Spread the veggies and crack in 2 eggs and allow to cook depending on the consistency you like you eggs, I did my eggs for around 4-5 minutes. *
  8. Add in salt, pepper and red chilli flakes /slit green chillies according to your choice. 
  9. Your easy peesy Afghani Omlette is ready to serve! 😍 




Notes:

  1. Do not add the Garam masala and red chilli powder if preparing for the first time. The authentic Omlette without additions is the best. 
  2. Egg cooking directions:
  3. 3-4 minutes runny yolk
  4. 4-5 minutes semi cooked yolk
  5. 5-7 minutes yolk cooked well.

Blueberry Dutch Baby Pancakes




May peace and blessings be upon you all.

Okay, I am back here after a month of vacay and it literally feels likes ages, my in laws were here with me and it was a month well spent, alhamdulilah ❤ . Ramadan is just a few days away and I cannot wait to share with you iftar recipes. But today I am presenting you guys with German origin custard-crusty pancakes called Dutch Baby Pancakes with a Blueberry twist. Weekend breakfast is always a thing! If you have such easy on-the-go recipes in hand to kickstart an awesome weekend, why worry?! 😀

My little one is having her spring break and I am more happy than her to get some relief from e-learning 😁😁 Now weekends are the only days I get to experiment on breakfasts and one fine day I made these delicious, super easy pancakes and my daughter wiped clean her plate. When a fussy eater like her, likes such easy breakfasts, the recipe definitely becomes a keeper!

So easy to prepare, yet it has its own speciality. I call it a simple yet effective breakfast because you just have to prepare the batter and pour out the contents to your butter greased cast iron pan and the oven does the job for you. As simple as that! So you can summarize Dutch babies as crepes in the form of pancakes. 

You may use any pan or casserole that is oven safe, the batter puffs up as heat hits the pan. I have added a few blueberries before baking, you may either use a Compote (if you dislike blueberry's natural sourness), add other berries like raspberry or blackberry or avoid all and keep it plain. Serve it right away by adding in fresh fruits, or a Sprinkle of Icing sugar or strawberry sauce, maple syrup, honey butter etc. I'd also recommend using room temperature ingredients for better texture. Use butter liberally so that the batter does not stick to the pan. Without further delay let's get our basic ingredients that everyone has in their pantries. And bake a huge giant pancake that is the easiest and mess free!  



Ingredients :

  • 3 large eggs
  • 1/2 cup patent flour/ all purpose flour
  • 1/2 cup full fat milk at room temperature  
  • 1 tbsp sugar
  • 3 tbsp butter
  • 1 tsp Vanilla extract 
  • A pinch of salt
  • 1/4 Blueberries or Blueberry Compote (any berries of your choice)


Instructions:

  1. Preheat the cast iron pan in a preheated oven at 200 °C for around 5 minutes. 
  2. In a bowl incorporate all the ingredients like eggs, flour, milk, sugar, salt, and vanilla and combine well using a whisk. 
  3. Now safely remove the cast iron pan from the oven using mittens and drop in 3 tbsp of butter and swirl the pan so that the bottom of the pan is covered in butter. 
  4. Pour in your batter to the hot and buttered pan and drop in your blueberries, preferably Compote and allow to bake for 15-18 minutes, until the Dutch baby pancake is puffed or the sides turn golden brown at the edges. 
  5. Carefully remove the pan from the hot oven using mittens and serve immediately with your favorite toppings and sauce. 


Notes:
  • Use cast iron for best results. However any type of Dutch oven or oven safe casserole dish would do. 
  • Dutch Baby Pancakes require a good amount of butter, which adds to its taste and also helps the pancake to come off the pan easily. 
  • The pancake can rise and have a shapeless outcome which is totally natural and has a divine beauty in itself. 
  • You may prepare these pancakes without any berries or you may use any berry sauce, fresh fruits or Icing sugar as a garnish.

Dynamite Tortilla Wraps




Good evening folks!

When breakfast can be made scrumptious in a jiffy, why skip breakfasts. A wholesome breakfast is what is required to boost your energy levels to be productive the entire day.

Just in time, few days back, a brand named 'Kawan' approached me. They sent me their sample products which included just heat chappathis, Paratha, protein Paratha, tortillas, Puff pastry etc. Their Tortillas fascinated me, coz I haven't seen frozen tortillas before.

The idea of having Tortilla wraps for breakfast is my favorite, as they are simple to prepare right in the morning, when you have less time but you need to eat like a king. These tortilla wraps are super easy to make. The fillings can be customized, but here I demonstrate using Mexican flavors. And being a lover of any food spicy, I added. A packet of crushed Oman chips which added to the flavor and texture. You may play around with the fillings as you like. You may also use leftover chicken.

The sauce that is used in this recipe plays a major role in bringing out the flavors of this wrap. I use Mayo, tomato ketchup, tobasco, Sriracha and smoked paprika and a squeeze of lemon juice. Basically a DYNAMITE Tortilla wrap. My initial thoughts were to experiment something with authentic Mexican flavors. So here I combined it with everyone's favorite Dynamite sauce.

It is so filling and the flavors are just next level. 🔥 The Crunch from the Oman chips is the Icing on the cake. This is completely an experimental Tortilla wrap that turned out super yum! Not to forget to mention the Kawan Tortilla wraps were super soft, even after toasting on the pan, which gave a Crispy texture outside though super soft inside. This cheesy Tortilla wraps with a fiery sauce is just too good. Do try and let me know your feedback..

Ingredients :
  • Frozen Kawan Tortilla Wraps
  • 2 Omega eggs
  • 1 tbsp finely chopped onion
  • 1 tbsp finely chopped capsicum
  • 1 tsp smoked paprika powder
  • Salt as required
  • 1 tbsp olive oil
  • 2 tbsp Corn niblets
  • 1 tbsp Sliced Black Olives 
  • 1 tsp Chopped Jalapeños 
  • Handful of Shredded Mozzarella Cheese
  • 1 packet Oman Chips
  • Chopped Coriander leaves. 

Dynamite sauce:
  • 2 - 3 tbsp Mayonaise
  • 2 tsp Tomato Ketchup
  • 2 tsp Sriracha sauce/ hot sauce
  • 1 tsp Tobasco sauce
  • A squeeze of lemon juice
  • 1/2 tsp Black Pepper Powder
  • 1 tsp Smoked Paprika



Instructions :
  1. In a bowl, prepare the sauce by mixing the ingredients mentioned below Dynamite sauce and set aside. 
  2. Make an Omlette using chopped onions, capsicum, smoked paprika powder, and salt as required.
  3. Place 1 Kawan Tortilla wrap right away and allow the Omlette to cook for around 2 minutes.
  4. Now flip, and add in your defrosted corn niblets, sliced black olives, chopped jalapeños, shredded Mozzarella cheese, slightly crushed Oman chips and drizzle in your prepared sauce and finally garnish with chopped Coriander leaves.
  5. Now carefully, roll the Tortilla wrap from one side to the other and press down so that the melted cheese allows the wrap to bind together.
  6. Trasfer to a serving plate.
  7. Cut into half and serve hot alongside your favorite sauce or the Dynamite sauce.





Notes:
You may use leftover shredded chicken

Regag - Emirati Flat bread 




Being born and bought up here in Dubai, UAE, I have always felt blessed. This country has been in my ups and downs. UAE has never missed an opportunity to make us proud! My grandparents, who along with their children lived in this beautiful has given the privilege and opportunity to my late grandmother to showcase her creativity! Her art work, which is a dancing ornament that the Arabs used to wear is still on display in the DUBAI MUSEUM.

Talking about heritage, I am here to share about one of my favorite Emirati dishes. The regag. We can find them easily in the heritage villages here in Dubai and other parts of the Emirates. The moment a plate of regag comes in front of us, it just vanishes in a couple of seconds. Not even kidding! The extremely thin bread is Crispy with an egg and cheese filling, which can be customized to our liking, be it, Nutella, cheese and honey, cheese and Oman chips etc. The options are endless! I cannot stress enough how good these are! As these are flat breads that are like insanely thin and Crispy, you feel like you haven't had enough. It's so good! I am telling you, you are missing out if you haven't tried it yet. And it is so easy to prepare, that's the best part! And there is this other delicious dish called the luqaimat, another one that I would die for. Will be sharing my recipe soon! So watch out for the recipe 😍❤️



I cannot stress enough how much I value this country and its traditions! UAE in itself is a world. There are all sort of people from different nations and that is what makes UAE stand out. And to be raised here is a blessing and a privilege that I, as a foodie consider. From my birth until now, I might have seen, tried and tasted different types of dishes from different cuisines which has helped me to mould the blog that you read now. UAE has now given me a career in the food blogging world, which I am sure I would have been if I were raised elsewhere. Alhamdulilah for all the blessings. And special mention to my grandparents and parents who have stayed strong and raised all of us here in all sorts of situations.




Coming back to regag, like I said, it is devoured either savory or sweet so here I am presenting a sweet version featuring Nutella and fresh fruits and the other, the traditional one, with egg, cheese and a drizzle of honey. Works best as a breakfast or a snack. Without further a do, presenting to you my National day special! 🇦🇪 ❤️ 




Ingredients : (makes for 2 ppl, 2 servings each) 

  • 1 cup All purpose flour
  • 1 tsp yeast
  • 1 1/4 cup warm water
  • 2 tsp sugar
  • 1/4 tsp salt
  • A cassette cover (to spread, optional) 
  • 1 egg
  • 2 tbsp cream cheese (salted) 
  • Nutella
  • Fresh fruits 
  • Honey

Instructions :

  1. In a large bowl, mix warm water with yeast and sugar, allow to dissolve for 2 minutes*.
  2. Then add in all your ingredients, give a good mix and allow to rise for one hour. 
  3. After one hour, onto a lightly oiled cast iron tawa drop in a handful of the dough and spread using your hands, or use an old cassette cover or a dough scrapper if you are a beginner. Allow to cook on the top, spread in half of your whisked egg, allow to cook. 
  4. Next spread your cream cheese or any filling that you like and flip into half. Again flip it into half to get a triangle kind of shape. 
  5. Drizzle with your desired sauce, honey or melted Nutella. 
  6. Enjoy! 😋
  7. If making the sweet version just use Nutella to spread. And top or fill in with fresh fruits. And a drizzle of melted Nutella. 

Notes:

Make sure not to use hot water*

Cinnabon inspired Cinnamon pancakes with Cream Cheese Icing



Good evening ya'll!

I can't wait for the winter vacation. Like literally! This e-learning experience is the worst. Sometimes gets on my nerves, especially if you have a child doing their kindergarten. So exhausting! And every day in the morning I just sit so blank as I have no time to prepare anything fancy. The breakfast or lunch here since distance learning started has been so boring which otherwise never happens here.



I kept scrolling my phone whilst I got some time to chill once my LO's break time happened, just looking for inspiration 😉
But my my even 5 minutes in break time is precious. But I was wanting to cook something exciting. And not the every day stuff. So all that came to my mind was pancakes! And I was sick of all the basic combinations like maple syrup, honey, Lotus biscoff, bananas, blueberries and other berries etc. Suddenly I had this craving for Cinnabon rolls. So I asked the Mister if he was okay with cinnamon flavor for pancakes. He nodded and then and there I knew I had to do this! 😍 And the Cinnabon inspired cinnamon pancakes with cream cheese frosting was born. 😋😋

Even though the flavors were the same, the textures made a slight difference and I loved it! The pancakes and the frosting was ready in less than half an hour and the perfect solution on a weekday breakfast for busy momma's like me. This was an instant idea and added in ingredients as though a recipe book was open in front of me. But honestly, it was indeed the best pancake flavor 🤤🤤

Though the pictures did not turn out like that I had in my mind as the Mister was in such a hurry, I urge you must try! Super easy and delicious, kids are going to love this😋👌 Well, my LO approved! 😁😍

*LO - Little one🤭





For pancakes:

  • 1 and 1/2 cup All purpose flour
  • 1 egg preferably omega
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup milk
  • 1/4 cup melted butter
  • 1 1/2 tsp cinnamon powder
  • 3 tbsp honey
  • Salt, a pinch


For icing:

  • 100 gms cream cheese, softened
  • 1 tsp Vanilla Essence
  • 1/4 cup butter, softened
  • 4 tbsp heaped sugar
  • 2 tsps and more of milk/cream /Whipping cream.
  • A pinch of salt

Instructions :

  1. In a large bowl add in your your dry ingredients and give a mix using a whisk.
  2. Next make a well in the middle and add in your wet ingredients one by one and combine well using a whisk.
  3. Cook the pancakes on a heavy cast iron pan or a pancake pan.
  4. Place a small piece of butter and smear the pan.
  5. Next pour in 2-3 ladlefuls of pancake batter in equal proportions and flip when you notice bubbles forming on the top.
  6. Cook for 2-3 minutes and transfer to a small plate and stack them up until you finish the process.
  7. The cream cheese Icing is prepared by combing all the ingredients mentioned under the ingredients of Icing. If at all yih come across lumps, use a electric whisk and combine well.
  8. Finally pour this luscious and delicious cream cheese frosting over the pancakes and enjoy! 😍


Notes :
Try to use unsalted cream cheese. If not possible, use a brand that has less salt content. You don't want your Icing to be too salty.

Savory Breakfast Muffins



Have you ever wished if you could whip up a filling breakfast that is healthy at the same time delicious? I know we all have! Just imagine baking some easy breakfast muffins that are so simple that if you cut and prep the veggies the night before I am sure it won't take no more than half an hour from prepping to baking these cute little muffins, or more like mini frittatas (if you fancy a fancy name! *wink*) But if you want the perfect frittata recipe do check here.

These are so delicious and easy to prepare that I am sure once you make these you are going to bake these at least once a week! Who doesn't like recipes that are quick and done in a jiffy?! Also, this is a great idea for a potluck breakfast. Done so easy and yet so yummy. As these are tiny and bite-sized, kids will love to have them for sure. Well, my daughter did! This is a mini package full of nutrients - proteins, carbs, dairy, veggies, and everything you want for a meal. 


As parents, don't we always get clueless on a hustle bustle mornin, where you have so much to do yet little time to manage for a healthy yet nutricious meals for yourself and your little ones? Well, this is your answer to all your dilemma. The perfect lunch box solution! Recently I have been binge watcing this series on NETFLIX, where Nadiya, the famous chef-baker that hosts the show says that oven is your best friend when it comes to cooking food that are delicious, yet you have no time to toil in front of the stove. How true is that?! You just prep the dish, place it in the oven, do your chores and bam! You have your meal ready! Like Nadiya says,  The sooner you realise the oven is your best friend in your kitchen, the easier your life is going to be and I second that! That is my mantra to easy cooking too. 
Every time I open the oven to bring out the baked goodies it amazes me how easy and stress-free that was and how easily did I prepare my meal.



Now coming back to the recipe, the main ingredients in these muffins are broccoli, mushrooms, and cream cheese, you may add or omit any veggies or spices according to your choice. I have used Kiri cream cheese, you may use any cheese according to your preference like feta, etc. But if you are using feta cheese be careful when you add salt. Also, you may add soy sauce while sauteeing your veggies for a change, but here I am trying to keep it healthy. I have poured the egg mixture directly to the generously greased muffin pan. I'd suggest using muffin liners, if so add about 2 tbsp olive oil to the egg mixture.


As the saying goes, eat your breakfast like a king! This is a perfect breakfast as it has everything that needs to make you energetic all day round. Without further a-do, lets bake these and have breakfast like a king!

Ingredients:



  • 3 large Omega Eggs
  • 2-3 White button mushrooms, finely chopped
  • 4 tbsp Broccoli, finely chopped
  • 1 small garlic clove, minced
  • 2 tbsp tomato, finely chopped
  • 1/4th Maggi chicken cube (optional)
  • 2 Kiri Cheese cubes, cut into small squared
  • 3 tbsp cooking cream or fresh cream
  • 1 tsp cajun spice or oregano
  • 2 tbsp olive oil
  • Salt, as required

Instructions:

  1. Preheat your oven to 180 deg C.
  2. In a frying pan, pour in some olive oil and sautee mushrooms along with minced garlic clove and broccoli and add your chicken cube.
  3. In a hand whisk jar, crack in 3 large eggs.
  4. Add in your Cajun spice/Oregano, salt, as required, and cooking cream and whisk well.
  5. Into the whisked eggs, add your cooked veggies, finely chopped tomatoes, and Kiri cheese cubes (cut into small cubes).
  6. Gently mix and pour in generously greased cupcake pans or muffin liners (if using muffin liners add 2 tbsp olive oil in the egg mixture).
  7. Bake for 25 minutes or until the muffins are golden and come off the sides of the pan.
  8. Once slightly cooled, enjoy with your morning cuppa coffee or tea.

Note : I got 12 Muffins from this quantity.

Kaju chicken curry


The easiest chicken curry you can make! The only chopping required is for the onions. Other than that all the ingredients are blended or ground. Now you can imagine how easy it is going to be. Cashew paste makes the Curry even more rich and tastier. It is up to you to totally omit the cashew paste, you still have a thick and yummy chicken curry.

This curry is the perfect recipe for newbies to the kitchen, momma's with small babies, working moms, in fact anyone who has no time to spent in the kitchen all day and when hotel food is BOO. Also who doesn't like cheat days in kitchen, teehee. Well, this effortless curry is going to bring all smiles on your family's faces, this curry recipe is surely a keeper The recipe is so simple and effortless with minimal ingredients. I guarantee you this curry won't take you more than 30 minutes from start to end.

I was planning to make some naadan type chicken curry to go with my Ney pathil for breakfast. While I was in the mood for experimenting (yet I was starting to have strong symptoms of bad cold), so you know how badly I wanted to run from the kitchen. To top it my hubby was in a hurry and I had to make a curry super quick.

I had no time to think much so I did what I felt like and voila! It turned out so good Alhamdulilah!
This curry is made in a pressure cooker, yes! Thank god for pressure cookers. Always comes to the rescue when you are short on time. (I prefer to do it in a pot itself tough if I had the time), here I am using the cooker so that my onions are pressure cooked well in the masala and mashed well.



Rich and delicious cashew chicken curry can be accompanied with Ney pathil (oil fried rice pancakes), Ari dosa (rice crepe), ghee rice, appam, noolputtu/iddipyappam, chappathi, etc.

Ingredients:



  • 700 gms - Fresh Chicken (both with bone and boneless)
  • 2-3 tbsp any vegetable oil
  • 1 and 1/2 medium-sized Onions sliced
  • 2 medium Tomatoes (roughly chopped if required)
  • 3 large green Chillis
  • 6 Cloves of garlic
  • 1-inch piece of ginger
  • 2 sprigs of curry leaves
  • 10 Cashews
  • 1/2 cup Hot water
  • 1/4 cup milk
  • 1/4 tsp Turmeric powder
  • 2 1/2 tsp Kashmiri Chilli Powder
  • 5 tsp Coriander powder, leveled
  • 3/4 tsp Garam Masala powder
  • 1/2 cup water
  • Salt, as required

Instructions :



  1. In a heatproof bowl, place the cashews and pour hot water. Keep aside.
  2. Grab a pressure cooker, pour in the oil.
  3. Add the sliced onions, while sautéing grind tomatoes, ginger and garlic in a blender/grinder.
  4. Add in the Curry leaves and slit green chillies.
  5. Now pour in the prepared tomato mixture and add in the spice powders and the chicken along with 1/2 cup water.
  6. Finally add salt and close lid. And cook for 2 whistles and off the flame.
  7. While the pressure goes prepare the cashew paste by grinding cashew and milk, adding milk little at a time.
  8. Once the pressure is gone, add the prepared cashew paste and stir well and add water as required and bring it to a boil. Garnish with chopped Coriander leaves and you are done! Enjoy❤️

Khameer /Bakhmir


Emirati cuisine is so close to my heart. Simply because I am born and brought in Dubai and I am privileged to have been staying in an Emirati community too. Alhamdulilah.

One among my all-time favorites from Emirati cuisine is the luqaimat. They are dumplings that are fried to perfect golden brown and served with a drizzle of date syrup and occasionally sesame seeds. If you would like the recipe let me know in the comments below.

Another favorite is the rigag, always found as street food, not sure if rigag is of Emirati origin, but always had loads of memories when it comes to sharing and fighting over a plate of luqaimat and rigag.

Rigag is basically like an Emirati dosa😂 with your choice of spread, be it chocolate (Nutella), Cream Cheese, egg, honey, etc. I love to watch Emiratis cook them, the pace at which they cook these are so amusing to watch. These are salient scenes you get to see in Dubai.

Now onto the bread; Khameer bread is, of course, coming from the Emirati cuisine, usually served with a hot beverage for breakfast. It is so soft looks very similar to battoora with black seeds on. Unlike battoora, this bread is made using yeast as a raising agent and is slightly sweet. Not exactly sweet. It totally depends on you. I just add a little sugar, so that it's not too sweet for a bread.
With a few basic ingredients from the pantry, you can enjoy this tasty bread and it goes along with most of the Indian curries/dishes too.

You may bake the bread in the oven, but we malabaris are used to frying anything and everything we get our hands on! 😃😃

Anomalous from how we roll in the kitchen, this is exactly why our dishes come out so good and we become flabby. 😅😅

This is the bread I make, most of the time when  I host a party at my place. Somehow I feel the bread being Emirati connects to our Indian side dishes and makes the spread fab! The picture isn't a perfect one to post here but since I was a bit back on time I could only capture this! But the recipe is a must-try, do give it a try and let me know how you liked it ♡

Let's move on to the ingredients

Ingredients :


  • 1 - 1½ cup All-Purpose Flour
  • 1 cup wheat flour/ atta
  • 1 tbsp active dried yeast
  • 1 ½ tbsp sugar
  • 1 cup lukewarm water
  • 1 large egg
  • Salt as required
  • ½ cup warm milk/ 2 tbsp milk powder
  • 1 tbsp olive oil
  • 1 tsp black seeds
  • A pinch of cardamom powder (optional)
  • Oil for frying


Instructions :


  1. In a large bowl add the active dried yeast, sugar and warm water and stir until dissolved and cover the bowl with a plate or lid for about 5 minutes for the yeast to activate.
  2. In a separate small bowl crack an egg, add warm milk and salt. (keep in mind not to pour in hot milk).


  3. Pour the egg mixture to the activated yeast and give it a mix. 
  4. Next, add 1 tbsp olive oil and add the cardamom powder (if using at this stage) and mix.
  5. Add the flour 1 cup at a time and knead well, check the consistency, if required add more. The consistency isn't that of chappati, it is a very wobbly dough but not very sticky either.

  6. Place the lid and let it rest for 1 hour in a warm dry place until it doubles in size.
  7. After 1 hour, pound the dough slowly with your fists, slowly bring the dough from the sides of the bowl to the middle.
  8. When at the final stage of kneading add the black sesame seeds.
  9. Grease your hands and the countertop with vegetable Cooking Oil. Make dough balls size of an orange.
  10. Now with the help of your fingers and inner palm, press the ball into a circle shape, you may use the help of a rolling pin but usually, it's done with the hands as the consistency isn't that of a chappathi.
  11. Press to a medium thickness, not too thick or thin and cut into fours using a knife or pizza slicer into a + sign, you should now have 4 pieces of Khameer from 1 ball.
  12. Fry in hot oil, when the khameer puffs up, flip and fry until golden brown on both sides. (Check notes for baking instructions).
  13. Enjoy your khameer with a drizzle of honey, cream cheese, or jam, etc! The perfect Emirati Breakfast! You may also pair it with any of your choice of Indian curries.


Notes :


  • Be careful that the water isn't too hot, or else the yeast won't activate.
  • Do not do the yeast activation in a glass or small bowl. When the yeast activates, there are high chances that the solution will overflow and you will end up with a big mess. I suggest do it in the bowl that you plan to knead the dough.
  • I have used equal parts of All Purpose Flour and Atta, it is normally prepared in Maida (APF).
  • You may also bake in a preheated oven at 230 deg C for 2-3 minutes changing sides when you see it starts browning.
