Swedish Meatballs with Mashed Potatoes

The faintest memory I have had of Ikea is of their famous Swedish meatballs and mashed potatoes, they are so delectable. I love it! The meatballs are usually baked in the oven for that perfection, but they are more time consuming and if you are a health freak then please do bake! Here, since I was throwing a party and I wanted the spread to look different with different types of cuisines, Swedish meatballs it is! I will insert the image of the party spread. 

My guests were very happy to indulge with the experience I had arranged!

  



This kind of spread is very uncommon at our place, it's usually the traditional Thalassery biryani, alsa (hareesa), chicken fry, Mutta Maala (egg garland) etc that is served. But with much anxiety and anticipation, I planned the menu for the party. However, it was a big hit! There is nothing happier than seeing the guests plates wiped clean. 

Back to the Swedish Meatballs, the meatballs are prepared with half the quantity chicken mince and half the quantity meat (mutton/beef) mince, you may substitute the quantity depending on your need in the ratio 1:1. In this recipe I used only 500 gems of fresh beef mince. Once the paste and the sauteed garlic and onions are added to the meat mince mixture, let the mixture sit marinated in the fridge for at least half an hour. The sauce is the flavor booster here. So simple to make yet so delicious. This one is perfectly gourmet.

Ingredients:

For the paste:

  • 1 cup Bread Crumbs
  • 1/4 cup milk
  • 2 tbsp cream
  • 1 egg
  • Salt
  • 1 tsp Black Pepper 
  • ½ tsp all-spice / ½ tsp cinnamon powder or ½ tsp cloves powder
  • Parsley (a handful chopped)

For the Meatballs:

  • 1 tbsp Butter
  • 1 tsp Oil
  • 1 small Onion, finely Chopped
  • 2 big cloves of Garlic, minced
  • 250 gms mutton, minced
  • 250 gms Beef, minced

For the Sauce:

  • 2 tbsp Butter
  • 3 tbsp All-Purpose Flour (APF)
  • 1 cup Beef Stock
  • 1 cup Chicken Stock
  • ½  cup heavy cream
  • 1 tbsp light soy sauce
  • 1 tsp Worcestershire sauce (optional - see notes)
  • 1 tbsp Granulated Sugar
  • 1 tsp Freshly Cracked Pepper

Instructions:

  1. Make a paste by mixing bread crumbs, milk, cream, egg, salt, pepper, allspice, and parsley. Set aside.
  2. Now in a pan, heat butter and oil and sautee the chopped onions and minced garlic until the onions are translucent and the raw smell of the garlic is not present.
  3. Now add this mixture to the ground meat and the paste prepared earlier. Combine them well using a wooden spoon. 
  4. If time permits keep the mixture stay in the fridge, covered for half an hour so that all the ingredients are incorporated well. 
  5. Now make plum-sized balls out of the meat mixture and deep fry them, on med low flame, for 15-20 turning them around after the first 5 minutes of cooking for every 2-3 minutes so that all sides are evenly cooked. **Check notes for cooking alternative.
  6. To make the sauce, melt the butter in a pan and add the APF*, and combine in the lowest heat setting, better off with the stove off. The heat from the pan cooks the APF*, now add both the stock water little by little and keep stirring so that lumps are not formed.
  7. Pour in the heavy cream and sauces (soy sauce and Worcestershire sauce - refer notes)
  8. Now add a pinch of sugar to balance out all the saltiness and a dash of freshly cracked black pepper.
  9. Now bring the sauce to a boil on medium-high heat, then bring the heat to a simmer and add the meatballs and let them cook for 5 minutes until the sauce has thickened.
Add chopped parsley and serve along/overmashed potatoes, egg noodles, spaghetti, etc. Enjoy!


Note:

  • *APF - All-Purpose Flour
  • You may substitute the All-Purpose Flour with a corn starch slurry or use arrowroot powder instead. (Like I mentioned previously, arrowroot is a healthier option.
  •  Sauces are optional you may/ may not add these, according to your taste preference. But Soy Sauce is necessary.
  • I have tried making using tender chicken breasts, you may use normal chicken breast parts, but if you find tender chicken breasts, the metaballs will be juicier.
  • Be careful with the salt in the meat mixture as the sauce tends to be salty due to all the stock water.
  • **You may bake the meatballs in the oven if you are health conscious and you have the time and patience, takes about 20 - 25 minutes at 200 deg C, depending on the heat of your oven.

Creamy Chicken Sandwich



Since Monday was a holiday, regular working days starts from tomorrow, so if you are in search of lunch box ideas, or snacks that you can make for children in the evening, do give this sandwich a try. With a bite of the sandwich in your mouth, it's all things delicious that runs in your mouth. 

I would sometimes like to pair it with a salad and it makes a delicious, filling and nutritional dinner too. I love to keep this sandwich for lunchbox, as it's filling and no dropping of contents of the sandwich on uniform by kids while grabbing a bite, as the filling sets and yet still feels creamy to the mouth.

I bet you, once you make this for your kids lunch box, they will keep asking for more. So, without further ado, let's get started!



Ingredients: (makes around 3 sandwiches)


  • 6 Slices of White/ Milk bread
  • 1 med Onion, chopped finely
  • 2 Garlic cloves, chopped finely
  • 1+1 tbsp Butter
  • 150 gms Boneless Chicken
  • Salt, as required
  • 1/2 tsp Black Pepper Powder, crushed
  • 1/2 Paprika/ Red chilli powder
  • 1 tbsp All Purpose Flour
  • 1/4 Cup Milk
  • 2 tbsp Mayonnaise 
  • 1 tbsp Tomato Paste
  • 1/4 tsp Oregano
  • 1/4 tsp Red chilli flakes
  • Cheese Slices, as required 

Instructions:

  1. In a pan, drop a tbsp of butter and add in your onion and garlic, chopped in the food processor.
  2. Next, pulse your boneless chicken pieces in the same processor and mince the chicken.
  3. Add the minced chicken to the onions and add salt as required.
  4. Add spices like black pepper powder, paprika/ red chili powder.
  5. Drop a piece of butter to the chicken add in your flour, give it a mix, reduce heat and pour in the milk, allow to cook on low heat.
  6. Next, add in mayo and tomato paste, combine well.
  7. Lastly add in oregano and red chili flakes.

  8. Place the bread on a griller and add in your creamy chicken masala and place a cheese slice and place your other slice of bread, allow to grill.
  9. Spread some butter and grill for a couple of minutes and your sandwich is ready to serve.
  10. Slice the sandwich diagonally and enjoy with some ketchup.

Turkish Tulumba



And alhamdulilah the Holy month of Ramadan is here to spread joy, peace, tranquility to the mind and soul. May Allah accept our Ibadah and forgive our sins and shortcomings and make us the inhabitants of Jannah. 

Tulumba can be described as a distant cousin of Jelebi and Churros. What is distinct about this dessert/ sweet snack is that it is super crunchy on the outside yet soft and Juicy on the insides.



Tulumba is generally prepared by making a soft and semi liquid dough that is squeezed into *cold oil* using a piping bag with a star nozzle and each segment of Tulumba is cut off using oil greased scissors. Notice that I have stressed cold oil, because frying Tulumba in hot oil might not give the exact texture you are looking for.

It definitely looks eye catching, at the same time it is a delicious dessert too. If you have prepared sugar syrup ready in hand ( I make a batch of sugar syrup for Ramadan treats like this, Qatayef, Kunafa rolls etc.) this is the easiest sweet dish you could prepare for Ramadan.



Tulumba is called Bamiyeh in Iran and Egypt. It is a famous and everyone's favorite street food, which is also also served especially during Ramadan. 

To attain the glossy finish keep in mind to drop in your hot Tulumbas in room temperature or cold sugar syrup. I am sure these Tulumbas are going to be loved by everyone. Let's move on to the ingredients. 



Ingredients :

Sugar Syrup ;

  • 2 1/2 cups sugar
  • 1 1/2 cups water
  • 1 tbsp lemon juice

Dough:

  • 2 1/2 cup Flour
  • 2 cups water 
  • 1 tbsp butter/oil
  • 1 tbsp sugar
  • Pinch of Salt 
  • 4 eggs 

Instructions :

  1. In a large vessel, add your sugar, water and lemon syrup and allow to boil for 10 minutes and switch off the flame and allow to cool. 
  2. In a large vessel, pour in the water to prepare the dough. Salt, sugar and  flour are to be added. (explained in the next step) 
  3. Into the hot boiling water add in your flour and mix vigorously using a wooden spoon. 
  4. Once the dough has come together and cooled, using a stand mixer or wearing kitchen gloves add your eggs one at a time and combine well (using a kitchen mixer /stand mixer is best for combing). 
  5. Using a star nozzle for your piping bag, fill in your dough and for safety of your dough from plopping out while you squeeze the dough, use an extra piping bag and give a cut at the end of the piping bag again. 
  6. Now into a wide pan, pour your oil. Into your cold oil drop in your squeezed Tulumbas and cut off using a greased scissors. 
  7. Now switch on the flame on medium high and allow to fry until golden and crisp. 
  8. Now drop your hot Tulumbas to your cold sugar syrup and coat well. 
  9. Using a slotted spoon remove your Tulumbas from the sugar syrup to your serving dish.
  10. Garnish with a dash of ground pistachios. 

Enjoy! 

Notes :

  • Just like I mentioned, the oil has to be cold  and the dropped Tulumba are then placed in the stove for heating and frying them, the syrup has to be cooled before dropping in your hit Tulumbas.
  • The dough must cool before putting the eggs into the dough.
  • Add the eggs one at a time and combine well everytime you add it ( you may use kitchen gloves too)
  • When you squeeze the second batch of dough, make sure the oil has cooled.
  • For greasing your scissors, dip the tip of your scissors in the cold oil.

Blueberry Dutch Baby Pancakes




May peace and blessings be upon you all.

Okay, I am back here after a month of vacay and it literally feels likes ages, my in laws were here with me and it was a month well spent, alhamdulilah ❤ . Ramadan is just a few days away and I cannot wait to share with you iftar recipes. But today I am presenting you guys with German origin custard-crusty pancakes called Dutch Baby Pancakes with a Blueberry twist. Weekend breakfast is always a thing! If you have such easy on-the-go recipes in hand to kickstart an awesome weekend, why worry?! 😀

My little one is having her spring break and I am more happy than her to get some relief from e-learning 😁😁 Now weekends are the only days I get to experiment on breakfasts and one fine day I made these delicious, super easy pancakes and my daughter wiped clean her plate. When a fussy eater like her, likes such easy breakfasts, the recipe definitely becomes a keeper!

So easy to prepare, yet it has its own speciality. I call it a simple yet effective breakfast because you just have to prepare the batter and pour out the contents to your butter greased cast iron pan and the oven does the job for you. As simple as that! So you can summarize Dutch babies as crepes in the form of pancakes. 

You may use any pan or casserole that is oven safe, the batter puffs up as heat hits the pan. I have added a few blueberries before baking, you may either use a Compote (if you dislike blueberry's natural sourness), add other berries like raspberry or blackberry or avoid all and keep it plain. Serve it right away by adding in fresh fruits, or a Sprinkle of Icing sugar or strawberry sauce, maple syrup, honey butter etc. I'd also recommend using room temperature ingredients for better texture. Use butter liberally so that the batter does not stick to the pan. Without further delay let's get our basic ingredients that everyone has in their pantries. And bake a huge giant pancake that is the easiest and mess free!  



Ingredients :

  • 3 large eggs
  • 1/2 cup patent flour/ all purpose flour
  • 1/2 cup full fat milk at room temperature  
  • 1 tbsp sugar
  • 3 tbsp butter
  • 1 tsp Vanilla extract 
  • A pinch of salt
  • 1/4 Blueberries or Blueberry Compote (any berries of your choice)


Instructions:

  1. Preheat the cast iron pan in a preheated oven at 200 °C for around 5 minutes. 
  2. In a bowl incorporate all the ingredients like eggs, flour, milk, sugar, salt, and vanilla and combine well using a whisk. 
  3. Now safely remove the cast iron pan from the oven using mittens and drop in 3 tbsp of butter and swirl the pan so that the bottom of the pan is covered in butter. 
  4. Pour in your batter to the hot and buttered pan and drop in your blueberries, preferably Compote and allow to bake for 15-18 minutes, until the Dutch baby pancake is puffed or the sides turn golden brown at the edges. 
  5. Carefully remove the pan from the hot oven using mittens and serve immediately with your favorite toppings and sauce. 


Notes:
  • Use cast iron for best results. However any type of Dutch oven or oven safe casserole dish would do. 
  • Dutch Baby Pancakes require a good amount of butter, which adds to its taste and also helps the pancake to come off the pan easily. 
  • The pancake can rise and have a shapeless outcome which is totally natural and has a divine beauty in itself. 
  • You may prepare these pancakes without any berries or you may use any berry sauce, fresh fruits or Icing sugar as a garnish.

Tamale Pie



As weird as Tamale may sound, I weirdly loved the name given to this dish. Tamale Pie is a comfort food that originates from US in the early 1900. Though it has its origin from US, the flavors are totally Mexican inspired. 

It is said that the original recipe of Tamale takes hours of labor and due to the time consuming process, the authentic recipe isn't followed as much. After hours of researching I understood that Tamale isn't actually a pie, it is more like a casserole; never mind the name. This corn bread casserole is super easy to prepare, more like a shepherd's pie, corn version.

Interesting yea?!

Well, I wasn't quite aware of this dish, until lately when I happened to read about Tamale Pie… I wanted to try it right away! Usually, the dish is prepared using any red meat or minced chicken, or  can be done using only veggies. This dish makes a great veg/keto dish too if made slight variations in the ingredients.

Generally, the pie has its corn crust as the top layer, but I wanted to try it with a twist and made the corn layer as the base. Even though I love Mexican flavors, I don't usually stock up on Mexican ingredients so for the base, I used Masa Harina/cornmeal crust; flour made using dried corn kernels, and I had some cauliflower in the fridge waiting to be used. So I immediately blitzed the cauliflower and used it along with the base. Though I was quite unsure if the base would become soggy, I took the wrong road without the seatbelt. And oh boy was it a success! Alhamdulilah!

Also I made my own red enchilada sauce too from scratch! I am so happy that this dish turned out exactly like the comfort food I had in mind. I had to share the recipe today itself, before I forget how I prepared it!

The best part is that, if you prepare this dish, you will always have an additional casserole to save, which calls for a meal that is ready to it! For the cheesy layer I only used mozzarella cheese. You may use a combination of Monterey jack. cheddar cheese, mozzarella etc.

This recipe is definitely a keeper! Without further a-do lets gets started!

Ingredients:


Corn Base:

  • 1 cup Cornmeal/ Masa Harina
  • 1/2 cup Blitzed Cauliflower (optional)
  • 1/4 cup All Purpose Flour
  • A pinch of sugar
  • 1/2 cup canned creamed corn or corn niblets
  • 1 tbsp butter, room temperature
  • 1/4 cup heavy cream
  • 1 large egg
  • Salt as required.

Red Enchilada Sauce:

  • 3 tbsp vegetable oil 
  • 2 tbsp all purpose flour
  • 3 tbsp red chilly powder
  • 1 tsp cumin powder
  • 1/4 tsp dried oregano
  • 1 cup low-sodium beef broth
  • 1 Large Tomato, blended**/ 1 store bought canned tomato sauce
  • 1 clove garlic, minced/ 1 tsp garlic powder
  • Salt, as required

Meat Filling:

  • 250 gms ground beef
  • 1 Onion, chopped
  • 2 Garlic Cloves, minced
  • 2 tsp Red Chilli Powder
  • 1 tsp Cumin Powder
  • Freshly Ground Pepper
  • Salt, as required
  • 1 cup Mozarella*
  • Sliced Pickled Jalapenos, for garnish
  • Finely chopped Tomatoes, for garnish (without the inner core)

Instructions:

  1. Prepare your enchilada sauce, by stiring your oil, flour, chilli powder, cumin powder and oregano in a sauce pan on sim and allow to bubble.


  2. Add in your beef broth, tomato sauce, garlic and salt as required.
  3. Allow to simmer for 5-10 minutes, stir occasionally. Set aside, allow to cool.
  4. Preheat oven to 210 deg C. Grease a large casserole dish with butter or cooking spray.
  5. In a large bowl, mix all the ingredients under corn base. Now, into the prepared casserole dish, transfer the corn base and bake for around 15-20 minutes, or until golden. Allow to cool.

  6. In a skillet, over pour olive oil and sauté your chopped onions and minced garlic , once fragrant add in your seasonings like chilly powder, cumin powder, salt and pepper. Now add in your ground beef, break the meat using your wooden spoon, for around 6-7 minutes, until no pink color in visible. Drain the residual fat, that oozes out.






  7. Once your corn base has cooled, poke in using a fork and pour in your prepared enchilada sauce.


  8. Add your prepared beef and top with cheese.

  9. Cover with foil and bake for around 15-20 minutes. Allow to broil after removing the foil, so that cheese turns golden, for around 5 minutes.
  10. Your delicious Tamale Pie is ready to serve. Garnish with chopped tomatoes and sliced pickled jalapenos and a dollop of sour cream if you have or a sprinkle of chopped parsley will do. 


Note:

Other recipes calls for baking powder, I did not use here.
*You may use a combination of Monterey jack. cheddar cheese, mozzarella etc.
**If using fresh tomatoes, use a dash of Tomato ketchup to balance the tanginess.
The above recipe I divided into two medium casserole dishes so that I could use the other one later.

Nasi Goreng

One of the first recipes that I tried in my initial stages of experimenting was Indonesian cuisine and always the best. It is the super easy, delicious and tummy filling... *drum roll* - Nasi Goreng. 

As gorgeous as the sunny side up on the rice looked I was curious to try this at home years ago. And one fine afternoon when my mom asked what to cook for lunch, I asked her to go take some rest while I tried nasi Goreng. After like going through a couple of recipes, I tried my hands on Nasi Goreng on my own idea, as I did not have all the ingredients on hand that was required in the authentic recipe. And bam! It was soooooper hit.! 

All I would say is that the fish sauce is a bit unpleasant but when everything comes together, the umami flavor is just next level! 😋 You may use a dash of oyster sauce too 👌

And it is generally served with a fried egg/Sunnyside up, a few slices of Cucumber and tomato. Imagine the half done egg yolk oozing onto the flavorful rice. Oooooh soooo good!

One of my absolute favorite lunch/ dinner. The Kecap Manis is what takes this fried rice to a next level. Just make double the quantity of the mentioned kecap Manis and store in the refrigerator to use the next time you prepare nasi Goreng. Super easy and convenient yet such a wholesome meal. This one is such a keeper! 



Ingredients :

  • 3 cups day old Basmati rice (or cooked and cooled completely) 
  • 1 onion chopped, and fried (for topping) 

For rice:

  • 4 tbsp vegetable oil 
  • 1 onion chopped
  • 2 garlic cloves, finely chopped
  • 1 green chilli, low heat
  • 1/4 tsp Red Chilli Flakes 
  • 250 gms chicken breast, sliced (or any protein like shrimps), marinated in 1 tbsp kecap manis
  • 4 eggs (2 for scrambling and 2 for bullseye topping) 
  • 2 tsps fish sauce
  • Cucumber and tomato slices, to garnish
  • Lime wedges, to garnish

Kecap Manis (sweet soy sauce) :

  • 6 tbsp Soy sauce 
  • 1-2 red bird's eye chilli or 1/2 tsp Red Chilli Flakes 
  • 1-1 1/2 tbsp brown sugar

Instructions :

Kecap manis:
In a pan, add the ingredients under kecap manis and bring to a simmer. Reduce until slightly thickened (for about 2 minutes). The more it sits, the more it thickens. 

Rice:
  1. To a large skillet/wok , pour some oil. 
  2. Once heated, add in your chopped onion, garlic and green chilly. 
  3. Saute until raw smell disappears or until the onion has become translucent. 
  4. Next add in the marinated chicken strips and sautee well until cooked for around 5 minutes. 
  5. Shift the chicken to a side and pour a tsp of oil and drop in your eggs to scramble them. 
  6. Next add rice, little by little, adding in 2 tbsp or more of the prepared or store bought kecap Manis. Add in your fish sauce now, if you are using. 
  7. Now stir constantly on high flame, mostly by tossing the wok, so that the rice doesn't break down further. 
  8. Season with salt if required. 
  9. Garnish by placing a fried egg on the top, Sprinkle the fried onions and place sliced tomatoes and cucumbers on the side of the plate (traditional way of plating). Also place a lemon wedge* and enjoy! 
  10. Bon appétit. 



Note: 

  • You may use Jasmine rice too
  • If you do not like fish sauce you may omit it, but the fish sauce is what brings in its different, umami flavor.
  • You may use store bought shrimp paste as a substitute for fish sauce.
  • After a minute on high heat, add in your marinated protein
  • Topping suggestions : chopped spring onions and chopped red bird eye's chilli.
  • *The lemon wedge plays a great role in enhancing the flavor of the rice (my favorite part).

Unniyappam - A Traditional Kerala Snack



Good evening folks!

Unniyappam is one Kerala snack that I have faint memories of. The chewy outer layer and soft spongy like insides which gave in small pieces of ghee roasted coconut to munch on is something incredibly good. Though I used to dislike it as a child, I remember having my classmates and seniors bringing them to school when I did my schooling in Kerala; in these little steel dabbas that they would open and close with the utmost care and give you one if you are good friends with them. Aaaah memories! I used to always pass it on to the next person sitting near me as I hated wasting food and I didn't want to hurt by saying a no.

So one fine day, I finally happened to try it from one of my seniors and my bus mate. This particular unniyappam looked extremely appealing that I had to try it! Maaan, it would owe it her and her mom or whoever made that unniyappam.. big time! The unniyappam that she shared was undeniably so good, the color, the texture, yet the crunch from the ghee roasted coconut pieces made me fall for it. Neethu.. I hope you read this. :) 

Alas.. if you happen to have had an aversion to a particular food once and you somehow think of them all to be the same. Been there. Lesson learned. Never said a no after that lol, unless the food is stale or disgusting. Well, at our place, we don't make unniyappam much. Most often it has been a delicacy only relished from bakeries etc. Always disliked theirs too as theirs seemed to be hard and not spongy. If you nail the technique and get it right.. I am sure it will stay soft in an airtight container well for at least 2-3 days. My hubster, who happens to dislike unniyappam too, he never bothered to try it. My daughter who usually has food aversion, kept grabbing one from the kitchen counter top. The Mister who got curious, tried himself and stuffed his face without a word. Haha. Not boasting but it really was yumm coz I like mine chewy, spongy and crunchy at the same time.

Recently I have been on an experimenting and inventing mode off, as I love to explore traditional food too.These are made using pachari (white rice), jaggery, small Kerala bananas*(4-5), ghee roasted coconut pieces, black sesame seeds and a pinch of cardamom. The ingredients sounds simple yea? Well, it gets done in no time too. One of the easiest evening snack you can make. Jutst prepare the batter in the morning and allow to ferment for a good 8 hours, or you may also grind and allow it to ferment right before you go to sleep (if waiting is not in your dictionary). For me, since it is winter here it took around 8 + hours, but if you are in a hot and humid country, your batter may get fermented even earlier. So, let's hop on to the ingredients. Shall we?



Ingredients: 

  • Coconut oil*
  • 1 cup Pachari/ White Rice (soaked for 4-5 hours)
  • 2 Robust Ripe Bananas
  • 2 tsp Ghee
  • 1/2 cup melted jaggery 
  • 1/4 - 1/2 cup small coconut pieces 
  • 3 large cardamom pods
  • 1/4 - 1/2 cup of water
  • 1 tsp black sesame seeds
  • Baking powder, a pinch
  • Salt, as required

Instructions:

  1. Roast your coconut pieces in ghee and set them aside.
  2. Wash and grind your rice with water (be careful not to make too loose nor too tight)
  3. Next add in your bananas, cardamom pods and grind well and transfer to a large bowl.
  4. Now add in your melted Jaggery and your roasted coconut pieces, and salt and mix well.
  5. Allow to ferment for 8-9 hours.
  6. Now add in your baking powder, and black sesame seeds and mix well.
  7. Into an Appa Chatti with cavities, pour in your coconut oil.
  8. Once the oil is hot, pour in tablespoonfuls of the batter and allow to fry on medium flame and turn 
  9. the unniyappams using a stick.
  10. Allow to cook well on both sides and transfer to a steel oil strainer.
  11. Allow to drain. Your favorite evening snack is now ready to devour.



Notes:

  • Using Coconut oil gives you the best results and taste, nevertheless you may use any flavorless vegetable oil too.
  • Usually, the small bananas are used for this recipe, if using the small Kerala bananas, you may use 5 of them. I had only robust bananas with me.

Sindhi Biryani



Good evening folks!

Who doesn't love biryani yea? I love our classic Thalassery Biryani the most, but once in a while, a change could do. Ever wondered that no matter how detailed of a recipe of a biryani is given to a person, no one comes up with the same flavors. Almost every biryani made by each one of us has a different taste to it, even if it's the same recipe. This is because everyone prepares biryani with so much love and care. 

For us every Friday it is Biryani day in here. So how about we try a different type of biryani this week that consists of meat, rice and potatoes with a special spice blend that goes into the making of the dish. Yes, you guessed it right! It's Pakistan's most beloved Sindhi Biryani. 



Sindhi biryani originates from the Sindh Province of Pakistan, it is known to be the most popular biryani in Pakistan. The main ingredients that makes this biryani stand out is the use of dried plums or prunes and potatoes. 

It is a very delicious biryani that can be prepared with chicken or meat. It is said that the Persian Travellers passed on their recipe, and the chefs took over and added their authentic flavors to it. And that pretty much sums up how this aromatic and indulgent Sindhi Biryani was born. What makes the Sindhi biryani distinct is also the fact that the biryani masala is cooked in caramelized onion. 


Ingredients :

Sindhi Biryani Spice Mix from scratch :

  • 1 tbsp Kashmiri Red Chilli powder 
  • 1/2 tbsp Coriander powder
  • 1/4 tsp Turmeric Powder
  • 10 pcs whole Black Pepper
  • 5 pcs Cloves
  • 2 black cardamom (optional) 
  • 4 dried Bay leaves
  • 1 tsp Cinnamon 
  • 3 pcs Green Cardamom
  • 2 pcs Star Anise (optional) 
  • Salt, as required 
  • Sugar, a pinch

Masala:

  • 3 cups Basmati rice, soaked for half an hour and drained
  • 4 1/2 cups water
  • 2 cinnamon sticks
  • 4 cloves 
  • 2 cardamom pods
  • 500 gms Fresh Chicken/Meat
  • 2 tbsp Vegetable oil
  • 1 tbsp Ghee
  • 3 large onions, sliced
  • 2 tsp Ginger-Garlic paste 
  • 5 Green Chillies, slit
  • 1 large Tomato, chopped
  • 4 pcs prunes or dried plum
  • 4 tbsp Curd, whipped
  • 3 tbsp Prepared spice mix
  • Handful of Coriander and Mint leaves, chopped
  • 2 large Potato, peeled and cut into cubes. 
  • 2 strands of saffron soaked in warm milk


Instructions:

  1. Grind all of the spices mentioned above to make sindhi biryani spice mix . 
  2. Into a pressure cooker pour in your oil and /ghee and Sautee your onions until caramelized and not burnt. 
  3. Next add in your ginger garlic paste. 
  4. Drop in your cleaned and drained chicken/ meat which has been marinated in salt and allow to fry for around 10 minutes. 
  5. Next add in your tomatoes, green chillies and your chopped herbs*. Sautee well and finally add in your cubes of potatoes. 
  6. Next add in your prunes and curd.
  7. Add in your spice powder mix and salt as required. 
  8. Cook the chicken with 2 cups of water with a closed lid without the weight of the pressure cooker for 5 minutes and you are done. *
  9. While the chicken gets done, let's prepare the rice. Into a large non stick pot add in your rice, water, spices and 1 tsp cooking oil and switch on your flame. *Click here to know the cooking instructions for the perfect, fluffy Basmati rice. Switch off the flame once it is 80% done,open lid and fluff up the rice. 
  10. If the chicken masala has too much gravy, remove the chicken pcs and allow to reduce by boiling on high and stirring occasionally. 

  11. Next, put the biryani on Dum by putting the first layer as the chicken masala and then top it with the 80% cooked rice and smoothen lightly. 
  12. Gently sprinkle your saffron milk and allow to stay on dum for at least 10 minutes on simmer.
  13. Slowly fluff up and toss your rice, very gently. Keep in mind not to over do this just a couple of times. You don't want mushy rice. 
  14. Finally garnish with fried onions, cashews and chopped Coriander leaves. 
  15. Serve hot with raita. 



Notes:

  • If using other meat like mutton or beef cook for around 6-7 whistles depending on the tenderness of the meat. 
  • Authentically, You may add your tomatoes, green chillies and Coriander leaves in the dum process after the layer of the masala. 
  • If using meat, do not add the potatoes along with the meat as meat needs more time to cook compared to chicken, and the potatoes in turn can become super mushy. You may boil the potatoes separately and add too.

Mutton Makhni



And we have reached the end of the year 2020, even though it might have not been as great as we anticipated it to be, we have made it Alive! Alhamdulilah (Praise is to God) for all the blessings we still have. My heart goes out to all those who have faced calamities during this pandemic. Let us begin this new year by being grateful for all that we have.

Okay, coming to the recipe of the day, it is mutton makhni, something similar to butter chicken but way easier! This recipe was an inspiration from my bhabhi (sister-in-law)'s mom. One day, when she happened to stay with us she prepared something that looked like butter chicken but without the chicken, instead, the meat was mutton. I was surprised and wondered why I never thought of this idea before. When I asked her, what the name of the dish was, she said there was no specific name. Recently, I decided to re-create the dish, from what I understood by tasting it. And to my surprise, I nailed it!

The gravy is a thick concoction of every Indian basic curry flavors, which comprises of onion, ginger-garlic, green chilies, tomatoes, turmeric powder, chili powder, and garam masala. The sauteed and pressure cooked meat is then fished out from the prepared gravy. The gravy is ground to a fine paste which goes through a mesh strainer to give you a butter-like sauce, which is why I named the dish - Mutton Makhni. The gravy is velvety smooth and the mutton (lamb meat) is so tender that I felt no other name would have matched better!



Such a royal and rich gravy that you can't get enough! Try this recipe the next time you have a party and I am sure you are bound to please your crowd! And best part is that, this gravy is super easy to prepare unlike the classic butter chicken, which involves another step of frying the chicken.



Ingredients :

  • 500 gms mutton
  • 1 large onion, sliced
  • 1 1/2 tbsp garlic paste
  • 1 tbsp ginger paste
  • 2 - 3 green chillies, slit (depending on spice level, I prefer less chillies as this dish isn't on the spicy side) 
  • 1 large tomato, chopped 
  • 1/4 tsp Turmeric powder 
  • 2 tsp Kashmiri Red chilli powder 
  • 1 tsp Garam masala powder 
  • 8-10 cashews 
  • 1 tbsp butter
  • 1 tsp Kashmiri Red Chilli powder
  • 1/2 cup milk
  • 1 tbsp Tomato ketchup
  • 1/4 tsp Garam masala
  • 1/4 tsp dried Fenugreek leaves 
  • 2 tbsp cream 
 

Instructions :

  1. In a pressure cooler, add in a tbsp of oil and Sautee your onions until translucent. 
  2. Now add in your ginger-garlic paste and green chillies. Saute for around 30 seconds. 
  3. Next add in your chopped tomatoes and cahsews, Sautee. 
  4. Add your spice powders - Turmeric powder, Kashmiri Red Chilli powder, and Garam masala. Sautee for a minute on simmer. 
  5. Add in your cleaned mutton pieces and add salt as required. (around a tsp and 1/4)
  6. Pour 1/2 cup water or until the mutton pieces are almost covered in water. 
  7. After around 5-7 whistles (depending on the maturity of the meat), switch off and allow the pressure to release on its own. 
  8. Once the pressure has released and you open the lid, fish out your mutton pieces and set aside. 
  9. After allowing your curry to cool a bit, add the contents to a mixer grinder and grind to paste. 
  10. Now into a steel skillet or casserole add in a tbsp of butter, and add in a tsp of Kashmiri Red Chilli powder for that extra deep color on the lowest heat setting. 
  11. Immediately strain the ground paste using a steel strainer into the skillet or casserole and mix well. 
  12. Pour in your milk to make your gravy thin but without losing its richness. 
  13. Finish off with your garam masala and dried Fenugreek leaves. 
  14. Add in your tomato ketchup or sugar for balancing. Check and adjust seasoning as required. 
  15. Garnish with cream and Coriander leaves. 
  16. Enjoy with ghee rice, chappathi or any rotis of your choice! 😋

Manchow Soup






Howdy folks! Manchow soup, perfect for your wintery slurpy goodness. Nothing beats a bowl of steaming hot soup on a cold winter night. Manchow soup is from indo-Chinese cuisine which has its name 'manchow' derive from the word 'manchuria'. Despite the name, it doesn't taste anything like manchurian.

I love soups during winter because they are easy to prepare, hearty, yet full of goodness. Manchow can be prepared vegetarian or non vegetarian according to our preference. It is basically a brown color soup which can accommodate all or any veggies you like, perfectly a fridge forage recipe.



I know I have been a bit quite in here. I was a bit under the weather. As much as I love winters, this is what we gotto go through every year. As soon as the cold slightly subsided, I wanted to try all sorts of my favorite food. In fact, I was tired of rice gruel and it's variants. I wanted something spicy, tangy, sweet, and Chinese. And ll I could think of was a good bowl of hot soup for my sore throat.

So I immediately starting preparing the ingredients required for the soup and since the color comes from a few sauces that is added in, to compensate that, I used arrowroot powder as my thicker to feel guilt free. You may use corn flour instead. The best part of manchow soup is the Crispy Fried noodles that are sprinkled over the soup that brings in texture and makes it stand out from other soups. Ginger is unavoidable in this recipe, and a lot of garlic which is the main essence of the soup. Aaahh... The feeling of the steam from the hot soup gushing over your face when you try and sip in, is just the best during Winters. Drooling already?

Let's get started! 🤤

Ingredients :

  • 4-5 cloves of garlic, chopped finely
  • 1 inch piece of ginger, chopped finely
  • 2 tbsp scallions, chopped
  • 1-2 green chilies, slit or finely chopped
  • 4 tbsp Cabbage, chopped
  • 2 tbsp Carrot, chopped
  • 2 tbsp Capsicum, chopped
  • 1 tbsp Coriander leaves, finely chopped
  • 5-6 White button mushrooms, chopped
  • 3 tbsp sweet corn niblets
  • 1 tbsp dark Soy sauce
  • 1 tbsp Tomato Ketchup 
  • 1 tbsp red Chilli sauce
  • 1 tsp Black Pepper Powder 
  • 1 tbsp White vinegar 
  • 1 liter hot water/ fresh veg stock
  • 2 tbsp arrowroot powder /corn flour 
  • 1/2 block hakka Noodles boiled and golden fried

Instructions :


  1. Boil your noodles, drain and fry your noodle to golden perfection. *
  2. Into a large pot, drizzle in a couple of tbsp of olive oil or any flavorless vegetable oil. 
  3. Add in your finely chopped garlic, ginger, scallions, and green chillies. Sauté for around 30 seconds. 
  4. Add in your finely chopped veggies (carrot, Cabbage, Capsicum) Sautee for a couple of minutes. 
  5. Next add in your chopped Coriander leaves and chopped Mushroom. 
  6. Season with salt and finally add in your corn niblets. Mix well. 
  7. Finally add in your sauces - soy sauce, tomato ketchup, red chilli sauce and black pepper. 
  8. Finish off with a dash of vinegar and pour in your hot water or fresh vegetable stock. 
  9. Make a slurry using the arrowroot powder and 1 tbsp water. Add in while mixing the soup vigorously. 
  10. Allow to boil and thicken. Add in a handful of Crispy Fried noodles. Check for seasoning. 
  11. Pour into a serving bowl and garnish with the Crispy Fried noodle and some chopped scallions. Enjoy! 

Notes :

*keep in mind not to brown the noodle when frying.
