Thari Kachiyath/ Thari Kanji - Malabar Semolina Drink 


One of my favorite hot drink is Thari kachiyath. Also know as Thari Kanji, nombu Kanji, it is one of the most popular drinks in the Malabar region especially during ramadan. Thari kachiyath is simply prepared using milk and Thari (semolina), to form a thin porridge kind of drink mostly had when it's warm.

This is something that brings so much warmth and memories, especially during Ramadan.
I wanted to post my Thari kachiye recipe during Ramadan. But when you have too many recipes to post I kept it for later and could not shoot too. Finally, one day I had posted a story on the cooking scenes of Thari kachiye in Instagram and put up a poll to check how many liked it. To my surprise, there were many who didn't like it. Every time I try this semolina drink from anywhere outside, I never got this homely touch like how my mom used to make, that explains why most of them didn't like it.


So many messaged me asking why it was so good and how was it made. I thought since I love Thari kachiye, I must do a post on it on my blog. Thari kachiyat is also known as Thari Kanji or nombu Kanji in few other nearby districts from Kannur.

Now if you ask me what makes my Thari kachiyat stand out? Well, it is super simple, but if the proportions go a little wrong, for example if the drink turns too thick, or if it doesn't have enough sweet or when you don't add that pinch of salt to balance the flavors, it really changes the real impact of flavor, so all of these factors play an important role.

Finally that touch of ghee that has been infused in shallot/ onions, sautéed and added to the drink finally brings in that special aroma and taste that is indescribable. And the best part is, it gets done in a jiffy. Whenever I am short on time and I need a quick fix drink other than tea/coffee I immediately make this. It is so yumm and refreshing. Well, try this and let me know if your views on Thari kachiyath has changed. 😁
Fun fact : I hated Thari kachiyat, until I realized how delicious my mom used to make it compared to the others that I have tried before in my life. And now I loveeee it!

I made my Thari kachiyat for the first time without asking her for the recipe. And whenever I give her some, she always smiles and that makes me happiest. 

Let’s make some refreshing, warm and delicious Thari kachiyath.


Ingredients : (for 2-3 people)

  • 11/2 cup fresh milk*
  • 1 cup water
  • 3 tbsp roasted semolina (leveled)
  • 3-5 tbsp sugar, (around 3 tsp for 1 glass)
  • A pinch of cardamom powder
  • A pinch of salt
  • 2 tsp ghee*
  • 6-8 cashews and raisins*
  • 3 Shallots, sliced thin*

Instructions:

  1. In a deep small pan, pour in your milk and water and switch on the flame. 
  2. Right away add in your semolina and mix well immediately so that no lumps are formed and add your salt, sugar and cardamom powder. 
  3. While keeping an eye on the drink and stirring in between occasionally on Sim while you prepare your temper. 
  4. In a small pan, add in your ghee and Sautee your Cashew and/raisins until just about it, not too brown. Transfer to another bowl. 
  5. Now to the same ghee add in your shallots, thinely sliced and Sautee well and pour it into the drink that has been prepared and mix. 
  6. Check if salt or sugar is required and you are done! 

Notes:
*Use UHT milk for better results 
*You may use onions, cut thin and small if you do not have shallots with you, I do this a lot. 
*Do not use butter instead of ghee. 
*raisins are optional, Cashews need to broken into small bits before adding to the drink.

Saffron Golden Lattè 



The perfect soothing drink for winter evenings! This drink has so many health benefits and also helps lower stress level and helps improve sleep quality.
I love to have this drink if I have not cold already or have cough. Do not try this drink if you are already having symptoms of cold, as it may worsen your cold.

This drink helps in protecting against flu and I love to have this either in evenings or right before sleep. Make sure you add honey generously, it is a heart warming drink. Enjoy!

Ingredients: (makes for 1 person)


  • 1 cup Full Cream Milk
  • Turmeric, a pinch
  • 1/2 tsp Black pepper
  • 2 pieces Cinnamon
  • 1 Cardamom 
  • 1 Clove
  • 1 small piece ginger 
  • 2 tbsp Honey, generously
  • 1 tbsp Almonds, chopped
  • Saffron, a pinch

Instructions:

  1. In a tea pot, pour the milk, add a pinch of turmeric and mix it.
  2. Using a steel infuser ball or a small piece of clean cotton cloth or simply use a strainer once the ingredients have simmered well. Add the black pepper, cinnamon, clove, cardamom, and ginger and allow it to infuse in the milk.
  3. Once comes to a boil, simmer for 2 minutes and pour to your mug and honey generously, mix well.
  4. Add chopped almonds for a crunch and a pinch of Saffron and enjoy immediately!

Dates and Oats Smoothie 


Ramadan is almost here! And this is one of my favorite drinks to have at the time of iftar. This one drink is enough to quench your thirst and fill your tummies. Also perfectly refreshing during summer. 😍👌
This milkshake is super nutritious. And you instantly feel that zing in your energy levels. Feel free to use Almond milk if you are lactose intolerant. Dates are rich in anti oxidants too.
Try this drink for iftar and you can thank me later. 😉😁❤️



This can make a perfect breakfast or food for anytime of the day. I guarantee you that you will instantly feel so good when you drink this. It's more like food for the body. Just 3 ingredients and voila you have the most simple, delicious and healthy smoothie ever!

The story behind this smoothie is that I always love to try new drinks for Ramadan. Well, we all face that time during Ramadan when you don't have the energy or time to shop and you need to fill your tummies with whatever is at home. So I thought of dates as dates are in abundance in the time of Ramadan at every home and also oats are really nutritious. So I was thinking of preparing a smoothie that wouldn't be headche, like finding many ingredients.. This smoothie is one that can be definetly tried by everyone at home.. Since these are basic ingredients..
I love dates.. Having at least 2 of them in a day makes a whole lot of difference.. Especially its high in Iron. Also there no requirement for artificial sweetener but if you really think it's not sweet enough feel free to add in some honey or extra dates. 


When I first made this here, everyone did not like the taste at the first sip. But as you drink it, you taste the flavors more and makes you feel good. The flavors that come from this are strictly from the roasting of the oats that brings in that nutty flavor. You need to roast the oats well on low until a beautiful aroma comes in. Be careful not to burn it. 
I don't know how exactly to describe the flavor. You definitely need to try it. It's super delicious 😋

Ingredients :
  • 8-10 Dates deseeded
  • 2 cups Ice cold milk
  • 5 - 6 tbsp oats
  • Date syrup for styling
  • Chocos/nuts for garnishing

Instructions:
  1. Soak the dates in warm milk for 5-10 minutes.


  2. Whilst the dates soak, roast the oats on low until a beautiful aroma comes. Be careful not to burn it.
  3. Next add the deseeded dates and oats along with the soaked milk in a blender and blend well.
  4. Now add the rest of the milk and pulse.
  5. Style your glasses by pouring the dates syrup and immediately pour the smoothie and garnish with nuts or chocos for a crunch!
  6. Your healthy smoothie is ready!

Notes:
  • For extra thickness add in extra roasted oats at the final pulse.
  • Try to use ice cold milk or you may add ice cubes, if so adjust the sweetness accordingly by adding honey or extra dates.
  • Roast the oats well without burning on low flame. That's where the delicious taste comes from.

Classic Royal Falooda


Subhan Allah! The holy month of Ramadan is surely flying away. Its already the 22nd Ramadan, this is beyond belief. Trying to stay away from social media and other activities as much as I can. 

Increase your time in Ibadah, and do the maximum for the hereafter. If you are a busy mother and you don't have the time to do Ibadah like reciting the Mushaf and standing in prayer other than the obligatory ones, remember Allah is merciful and He rewards you for all that you do, be it household chores, or any other responsibilities as a mother, wife, daughter or sister. Moisten your tongue with dhikr and make duaa for the current situation to cease. Do include me and my fam in your duaa too.

Now coming back to star recipe of the day! The well known Royal Falooda is a dessert drink that is enjoyed amongst us especially during summer. Well, it is believed that the falooda was evolved from Persia. Persians had strong trade relations with India during the Mughal Era along with which food cultures were also adopted. It is said that Falooda was once served to the upper class, which is now enjoyed in every household too. This drink is prepared in various flavors, but I stilll prefer the classic rose flavored ones. I initially thought of making mango falooda, but my heart didn't feel like it.

Basically, Royal Falooda consists of rose syrup flavored ice milk, falooda sev or vermicelli, khas-khas or basil seeds, dry fruits, fresh fruits, and Ice cream. Falooda, as far as I remember was my favorite part of visiting India. We could never hold back our ecxitement to visit our favorite ice-cream shop 'Íceberg' or the then only ice cream cafe in Thalassery. If anyone would say they were going to Iceberg everyone would just jump to the car and join the clan. Ah! Those fine days were the best, even though we have many such cafe's and coolbars now in Thalassery, the memories and nostalgia attached to our visits to Iceberg are special. Fond memories of visits to Iceberg include this particular dessert drink that would quench our thirst, refresh us and fill our tummies, and Falooda was usually the most popular order given. The one faint memory if I hated falooda was that they added tutti fruitti which I totally dislike.
So I prepared it with all ingredients that I love. One spoonfull of this dessert drink and it felt like it took me back in memory lane and it was bliss!

You may add any fresh fruits of your choice or nuts preferably non-tropical fruits, I have added chopped apple, banana and pome aril seeds (anar seeds) in my demostration. You may add other fruits like sliced grapes etc. 

For iftar, we open our fasts with dates, juice and an array of fruits, why not try Royal Falooda since it is all in one and definitely a tummy pleaser.


Ingredients (makes 2 tall glasses of Falooda):
  • 5 tbsp rose syrup
  • 1 cup chilled milk
  • 1 cup cold milk
  • 4 - 5 tbsp sugar
  • 2 tbsp basil seeds (soaked in 2 tbsp water for 10-15 minutes)
  • 3- 4 tbsp cooked falooda sev or vermicelli
  • 6 tbsp cherry or strawberry jelly (prepared according to package instructions)
  • 4 scoops vanilla or pista ice cream
  • 6 tbsp chopped apple and banana
  • 2 tbsp dried fig and almonds chopped
  • 1 tbsp pome aril seeds
  • 1 tbsp slivered pistachio, for garnish
  • 1 strawberry, for garnish
Instructions:
  1. In a tall glass, add you bloomed basil seeds.
  2. Next, add your falooda sev or vermicelli and pour 1 tbsp rose syrup around the edges of the glass.
  3. Now in a blender, pour 1 cup cold milk, add 2 tbsp rose syrup and sugar. Blend well and add the chilled ice milk to the blender and pulse for a second or two.
  4. Add 3 tbsp jelly to the glass and pour in your prepared rose milk.
  5. Next add a scoop of vanilla ice cream and add your fresh cut fruits.
  6. Next add your dry fruits and almond and some pome aril seeds (anar seeds).
  7. Scoop in a couple of tbsp of jelly and finally finish off with a scoop of ice cream. Garnished with slivered pistachio and pome aril seeds.
                   
Notes:
  • Use Pistachio Ice cream for added nuts effect, I only had vanilla ice cream so used it.
  • My mom suggests to add sago seeds instead of Chia seeds or along with it.

Sparkling Strawberry Mocktail



Hi folks! Howdy? Summer being right up the sleeve, and humidity is already draining after a short while when out, I thought it's the best time to share the recipe of this refreshing Mocktail which is perfect for summer days.
So let's buckle up and prepare for summer! Here I have made it even before the summer has started, because the Mr loves Mocktails and Virgin Mojito. I am not a fan of bare soda, unlike the Mr! Always love adding flavors to it. This time I had a lot of frozen strawberries leftover in the freezer and I wondered how to use them up when I came up with the idea of making the Mocktail. I always loved to serve my guests something different and special. The sparkling strawberry Mojito is definitely eye-catching and keeps your table spread a part higher.



I am sure your family and friends will love it. You have no idea how I had to deal with my family who was literally on their toes to grab a glass of this refreshing mocktail. I bet you this is going to be your favorite summer drink! It is all the zest that is required for you to amaze your folks during the summer days. It has all that is required to freshen you up, antioxidants from the Strawberries and mint and vitamin C from the lemon!
Virgin Mojito is quite familiar with most of us but this one with the strawberry flavor is a game changer!

This is the perfect drink to jazz up your party table with this welcome drink! If you plan to make them for guests muddle up Mint and squeeze in the lemon, set aside and blitz the frozen strawberries with sugar and keep in the fridge in advance until guests arrive. Mix the above mixture to soda and serve immediately! Let's beat the heat in style! 😍




Ingredients 


  • 10-12 frozen Strawberries
  • A few mint leaves
  • 1-2 lemon, squeezed
  • 1/2 cup simple syrup */ 1/4 cup sugar
  • 2 Can Soda
  • Ice, as required
  • Fresh Strawberries for garnishing

Instructions :


  1. In a bowl or Mason jar muddle up the mint leaves, lemon juice and sugar(if using).
  2. Blitz the frozen Strawberries with the ice for 2-3 seconds.
  3. Now to the Mason jar add the above mix, simple syrup (if sugar isn't being used) and more ice, if required.
  4. Stir gently. Garnish with mint leaves and fresh Strawberries! Serve immediately and enjoy! 👌👌

Note: If you have simple syrup you may use that, simple syrup is prepared by boiling equal parts of sugar and water and cooled.

Arrowroot Custard Milkshake



Arrowroot is a root vegetable that is known for its easy digestive properties and fully packed with protein, Fibre and healthy fats. Arrowroot does not have a distinct flavor profile, it is usually used as a thickening agent in desserts, soups, sauces, etc due to its thickening properties.

I always like to use arrowroot powder instead of corn flour slurry in most of my dishes, as arrowroot has more health benefits. So I thought of trying out a milkshake using arrowroot (koova). Arrowroot drink is usually prepared as a hot drink, here I demonstrate a Milkshake version. Arrowroot slurry is prepared and poured to boiled milk, which is constantly mixed till you get a thick consistency. Allow to cool the thick Custard which is prepared. Next blend the arrowroot Custard with chilled milk and coconut milk and set aside. Sabudana pearls are added as the first layer of the Milkshake for added texture, this step is optional. I added soaked basil seeds/ tuk malenga seeds too, as it has good health benefits, high in iron etc. 
For added flavor I used a pinch of cardamom powder. You may use vanilla essence or any other flavoring agent, as per your liking. Finally topped off with a scoop of vanilla ice cream and garnished with toasted shredded coconut.

This Custard milkshake is going to make you feel refreshed for iftar. I tell you! It had a feel of Elaaner (tender coconut) Milkshake flavor to it.. definitely a super hit here!

Let's prepare this easy and refreshing arrowroot Custard milkshake,

Ingredients:


  • 1 tbsp basil seeds, soaked in water
  • 2 tbsp Arrowroot powder, made into a slurry with some water
  • 1/2 cup milk
  • 1/2 cup coconut milk (store bought/ freshly squeezed)
  • Cardamom powder, a pinch
  • 4 - 5 tbsp Sugar
  • A scoop of Vanilla Ice cream
  • 1 tsp of toasted shredded coconut (for garnishing, optional)
  • 2 tbsp Sabudana pearls (soaked in water at least for 3-4 hours), optional 

Instructions:

  1. Boil and drain the sabudana pearls that has been soaked and set aside.
  2. Into a saucepan, add in your arrowroot slurry, milk, sugar and cardamom powder and bring to a boil, whilst stirring constantly, so that no lumps form.
  3. Set the arrowroot custard aside to cool.
  4. Blend the arrowroot Custard with coconut milk and chilled milk.
  5. Into a tall glass, drop your boiled and cooled sabudana pearls, then pour some of your arrowroot Custard milkshake, drop in some soaked basil seeds, and pour your milkshake, finally drop 1 scoop of vanilla ice cream and pour in your Custard Milkshake.
  6. Finally garnish with toasted, sweetened shredded coconut and enjoy!





Notes: 
You may add frozen milk cubes and pulse for added chillness (don’t know if there is even a word like that) 😁

Aseer Al Mouz


Don't gasp hearing the name of this drink. It means Banana milkshake in Arabic language. This is one of the most selling juices you can find in cafeterias in Dubai! I have grown up having shawarma and aseer Al Mouz (Banana smoothie /milk shake), something that gives me a lot of memories. 

Whenever we got ready to go out for the evening, the first thing that we do right after we leave our house is buy shawarma and Aseer Al Mouz.  It is super refreshing and fills the tummy. I always admired how they (the people working in the cafeteria) made those beautiful rosey colored lines in our shakes. It definitely gives a makeover to the dull looking banana milkshake. Later on when I grew up I happened to know that it was either rose syrup/vimto and it blowed my mind. I have always loved to try making attractive drinks. Well this is my attempt in making Aseer Al Mouz. Might not be authentic at all but who cares! As long as it can bring back memories to you. 

Also during this pandemic stay home at all times. I had to do a grocery run and I was just too worried that I finally gave in to buy my groceries online. And Alhamdulilah felt so good to not go out and get my stuffs as why risk your life to buy groceries. I sanitized and cleaned my groceries before I put them off in my pantry and fridge. You can find out how to do that on YouTube. 

And this aseer Al Mouz was the result of buying many ripe bananas. Had to give it a go! 

The secret to an amazing Aseer Al Mouz is frozen bananas. This is done by the slicing ripe bananas and dump them into a zip lock bag or a container and allow them to freeze. The frozen bananas are a game changer. Most of you might already know or might have been making banana milkshake for ages. I was skeptical, well, I thought if I posted this on my blog it might be useful to many who might have not yet tried Aseer Al Mouz. Especially since Ramadan is only a few days away, I like to have wholesome shakes or drinks for iftar than straight away popping snacks into my empty stomach. One such drink is the Dates and Oats Smoothie. 

This is super simple to make Frozen bananas, sugar, ice cubes and milk (fresh milk, Almond milk etc) and that's it! Let's make some Aseer Al Mouz. 

Ingredients:

  • 2 ripe fresh bananas, frozen
  • 6 - 8 ice cubes
  • 4 tbsp sugar or more
  • 3/4 cup milk
  • Rose syrup

Ingredients :

  • In a mixer mix bananas, ice cubes, sugar and milk. 
  • In a see through glass, pour the rose syrup at the edges and swirl it well and allwo gravity to do it work. 
  • Immediately pour the thick banana milk shake into the decorated glass and enjoy! 😍

 Mango Watermelon Mojito

It's peak summer here in Dubai and anything refreshing really makes a difference. I love Mojito. Mint and lemon is my all time favorite mojito. The mango puree elevates the flavor and the watermelon cubes is what makes it even more refreshing and colorful.

You have to blend the Mango really well, and make a fine paste and make sure to use low fibrous mango. You may crush the water melon before adding the soda, but I like to have bite while drinking it, so I used a stirrer that is a straw as well as has a spoon at the end of it, so I can drink the mojito as well as scoop up some water melon cubes for that crunch.

Muh-hee-tow is how it's pronounced. So next time, make this mojito in the afternoon for yourself or your folks and feel the freshness! 



Ingredients: (makes for 2)

  • 1 cup Watermelon cubes
  • 1 low fibrous mango, pureed
  • 3 tsp Sugar
  • 1 Lemon, slices
  • Few Fresh Mint leaves
  • 1 Can Soda
  • Ice cubes
 

Instructions

  1. Chop the watermelon to cubes and set aside.
  2. Puree the Mango and pour it to a tall tumbler.
  3. Next add the watermelon cubes, the lemon slices, sugar, and tear the mint leaves and add to the tumbler.
  4. Add some ice cubes. 
  5. Pour the soda and enjoy! 
 

 Notes:

You may add lemon juice instead of lemon slices.

 Elaneer Avil Milk / Tender Coconut Avil Milk






Avil milk is something that has been a part of every Malayalee's life, that can be found in the streets of Malabar region. The actual Avil milk consists of aval (beaten rice flakes), with mashed ripe banana, milk and nuts (peanuts are more prominently used).

There are many variations to this now, which includes the addition of boost. For me, anything and everything with elaneer/ Tender Coconut is just out-of-the-world good. I wanted to keep the authenticity of Avil milk, so I kept the mashed bananas, which is the signature flavor. Now, if you want the Elaneer flavor to stand out, add Tender coconut chunks instead of the bananas, for a full on tender coconut experience! 

What I truly love about this refreshing and filling drink is that, it can be prepared as a meal in itself, imagine a dessert for breakfast.. Aaah it's the best! I am not a big fan of the usual Avil milk, especially because of the addition of peanuts. Hence, I use other nuts like cashews, almonds and pistachios. 

The first layer is the mashed banana, then the aval (beaten rice) is added, to which chopped nuts are added, next added the tender coconut pulp, finally pour milk and top with ice cream and garnish with caramelized coconut and nuts.

Lets make this delicious, refreshing and filling Avil milk and enjoy during the peak summer days!



Ingredients:

  • 3 mysore banana (mashed with a tsp of sugar)/ Tender Coconut chunks
  • 1/4 cup Aval (beaten rice)
  • 1/2 cup Tender Coconut Pulp (store bought)
  • 1/4 cup Almonds and Cashews, chopped
  • Cardamom, a pinch
  • 1/2 cup Milk
  • 2 scoops Vanilla Ice cream
  • Caramelized Coconut 
  • Pistachios, slivered

Instructions :

  1. Mash the bananas with a tsp of sugar, set aside.
  2. In a bowl, add the tender coconut pulp and add a pinch of Cardamom and mix.

  3. Next, into a tall glass, add the mashed banana as the first layer.
  4. Next, add the aval/ beaten rice and add the chopped nuts.
  5. Next, add the Cardamom flavored tender coconut pulp.
  6. Pour the milk, add the ice cream scoops and garnish with caramelized coconut and silvered pistachio.
  7. Mix everything well with a long spoon, and enjoy immediately with a crunch in every bite. Sooo good!

Rooh Afza Hot Chocolate




Happy Women's Day! Dedicating this white hot chocolate to all the women around the world and to all the men who have been a strong pillar to women in their lives. As Ramadan is approaching, Rooh Afza has to be around. Rooh Afza is a squash made from ingredients like rose, mint etc, said to have cooling properties. It's a staple in all homes during Ramadan. Bidding farewell to the most amazing winter season, I wanted to make some hot chocolate, but like always with a 'twist'.

It happens to be women's day , so I thought why not try some Rooh Afza Hot Chocolate. We all have tried Rooh afza in many chilled ways, but a warm drink? Well, this might be a first.. But oh boy! It was really good! 😋

A warm mug of pink hued hot white chocolate is all you need for your evening me time.. Like a warm hug in a mug. But I warn you it's not something that you can have on a  daily basis. It's perfect to satisfy sudden sweet cravings, as it's quite rich and decadent. It's super easy to make too. I would suggest to use good quality white chocolate. Using the normal white chocolate chips might not give the desired taste.

Please feel free to add your favorite toppings, I somehow thought that I had mini marshmallows in my pantry. Boohoo, it would have been an amazing add on! 
Nevertheless, let's see how to make this Easy Rooh Afza White Hot Chocolate.



Ingredients:

  • 2 Cups Whole Milk
  • 1/4 Cup Cream
  • 50 gms White Chocolate
  • 2 tbsp Rooh Afza
  • 1/4 Cup dairy whipped cream
  • Dash of Vanilla Essence
  • Sprinkles

Instructions :

  1. In a small sauce pan, pour in your milk and cream.
  2. Once it comes to a boil, drop in your chopped white chocolate, do not agitate for a minute.
  3. Using a whisk, gently mix until the white chocolate mixes with the milk.
  4. Next pour your Rooh Afza and mix.
  5. Finally pour it into your favorite mug. 
  6. Using a hand blender, whisk your whipping cream with a dash of vanilla essence and top it over the Rooh Afza Hot White chocolate.
  7. And add in your favorite hot chocolate toppings like marmallows, sprinkles etc.

Sparkling Passion Fruit Mojito 



Beat the heat with this PASSION FRUIT MOJITO.🍹

Passion Fruit? You might ask if you are a Dubai kid. I haven't had heard of this fruit until recently, probably after my marriage. From all these years of shopping, 🛒 I haven't seen them here in Dubai (guys let me know if you know where to get it from) 🥰

It has been my HD's and mom's fav fruit and they have had fond memories of adding in spoonfuls of sugar and mixing and having them within the fruit itself. They grew in the courtyard of their houses.  

*sigh* 

I wish I knew about this in the days gone by. My hubsy kept mentioning about this fruit and I wondered what it was. 🤔

Finally, when we were on a trip to Coorg he showed me the fruit on an estate tour, the fruit, tree and how it should be eaten, lol, like I mentioned above! The authentic way; you get it? and oh boy! Was I fascinated 😍

And when back in Dubai we have been ordering anything and everything passion fruit ever since. 😅

And that gives me the kick to try passion Fruit Mojito at home. But whenever I wanted to make something innovative with it I never got my hands on one. 
One fine day, my hubby gets a couple of them from one of his friends and was I craving them. I was so happy to make them at home finally! It was a shame that I could not take a good picture of it, as I didn't want the fizz to cease. Also, my hub and Lil peanut was gazing at it like an eagle would eye it prey😄
And there weren't any more passion fruits to make more😭😭

You definitely got to try this. It was soooo refreshing. Take my word for it. 🍋🍈

The recipe to celebrate the last days of summer is down below 👇 😋

Ingredients :


  • 2 Passion Fruit 
  • 10-12 mint leaves
  • 1/2 cup cold simple syrup *check tips
  • Juice from 1 medium lemon
  • Flaxseed (optional) *
  • Ice cubes
  • 2 cans of Club Soda 

Instructions :

1.  In a  medium glass muddle mint leaves and lime juice. 
2. Squeeze the juice of 1 whole lemon and scoop the insides of the Passion fruits to the glass, add the simple syrup and ice cubes.
3. Now pour this into the prepared glass jar (check notes) * and pour in the soda when you are ready to guzzle it down so that the fizziness is preserved and the drink revives you. Enjoy! 🍹 ❤️

Tips:

*Simple syrup is a mixture of equal quantities of sugar and water boiled and cooled to form a syrup. 

*You may use sugar and cold water instead of simple syrup, but my personal preference would be simple syrup.

*I have had it in a version of  MOJITO I had from a restaurant, haven't tried it that way since I had no flaxseeds ATM.

*On the edges of the glass jar simply apply the lemon and dunk the mouth of the jar onto a bowl or dish containing sugar for that dramatic icy effect.

Beef Vindaloo



Beef Vindaloo is a Goan dish which is fiery, tangy and with a pinch of sweetness, slow cooked to perfection. This underrated curry is super delicious and has a very distinct flavor! Beef vindaloo goes well with paratha, naan or steamed rice. 

This curry is a gem especially on busy days or if you have guests over, you just need to give the curry a stir once in a while, so that it doesn’t stick to the bottom of the vessel and burn, it’s sooo easy to prepare once you have the masala prepared. You may prepare extra masala (by doubling the quantities) and store them in the refrigerator upto a week! Use Kashmiri chillies or else get ready to get ready to drink a gallon of water! 🥵😆 

The first time I prepared beef vindaloo, I wasn’t quite impressed, as I had used the normal dried red chillies. But this time I used dried Kashmiri Red Chillies and I was able to immerse in the flavors. Also slow cooked meat is always ‘vere level’! Using a Dutch oven helps, or any vessel that has a heavy bottom. Like a heavy bottom earthen clay pot also does the job. I’d definitely recommend to prepare beef vindaloo the slow-cook way! As it makes a lot of difference..It tastes even better the next day, when reheated, the flavors just comes along too good! 

Ingredients:

  • 1/2 kg bone-in Beef
  • 8-10 Kashmiri Red Chillies (soaked in hot water with vinegar )
  • 1/4 cup Vinegar
  • 1 tbsp Coriander seeds
  • 1 tsp Cumin seeds 
  • 1 tsp Whole Pepper 
  • 4-5 cloves of Garlic
  • 1 inch Ginger piece
  • 1 tsp Mustard seeds
  • 1 tsp coconut oil 
  • 3 Cloves
  • 1 Cinnamon stick
  • 1 tsp Jaggery powder
  • 1/4 tsp Turmeric powder
  • Salt, as required 
  • 2 tbsp Coconut oil 
  • 1 Medium Onion, finely chopped 
  • Curry leaves, optional
  • Coriander leaves, to garnish 

Instructions: 

  1. Soak the dry Kashmiri Chillies in hot water (along with vinegar, optional) for 5-10 minutes.
  2. Grind all the ingredients from the ingredients list until jaggery powder to a paste and add in coconut oil, turmeric powder, and salt as required & marinate the washed beef pieces and allow to marinate for 4 hours if possible. 

  3. In a Dutch-oven or a heavy bottom pot, pour the coconut oil and sauté the finely chopped onions until translucent and add in your curry leaves. 
  4. Add in the marinated beef and slow cook for around 60-90 minutes, giving a mix every 15 minutes so that nothing sticks on the bottom. 





  5. Once the meat is cooked tender, enjoy hot with paratha, naan or steamed rice! 

Ps: If you want it more spicy you may add more black pepper and green chillies, we like it mild here!

 Easy Vegetable Coconut Milk Curry



 If there is a nostalgic Vegetable curry that I love, which my mama makes; is this curry! It goes so well with Chappati.. you can simply drink it like a soup, it’s that delicious and comforting! You can also have it with any of your choice of rotis, but I find it tastes best with chappati. 

Once the Chappatis suck up all that gravy, it just tastes too good. For me, any other curry just wouldn’t go along with chappati, it always has to be this easy vegetable coconut milk curry 👌🏼 and a choice of side, like chicken fry, prawns fry etc

The highlight of this curry is that, unlike stew or any other curries, the flavor isn’t from garam masala or any spices, it’s just the natural flavors of the vegetables and of course the coconut milk! Sometimes, the curry tends to get watery, so I like to store cashew cubes (by soaking cashews for 5 minutes in hot water and grinding it to a paste with a dash of milk or water and pouring it into molds and storing in the freezer) and throw a couple of them to the curry to bring out the flavor and thicken the curry. 


Ingredients: 

  • 8-10 pcs Ladies Finger* , chopped into two inch pieces
  • 1 small Potato, chopped into cubes
  • 1/2 of a Carrot, chopped into one inch pieces 
  • 1/2 Onion, thinly sliced
  • 1/2 Tomato, chopped 
  • 3 Green Chillies, slit
  • 2 Sprigs of Curry leaves 
  • Salt 
  • Coconut Milk, preferably freshly squeezed **
  • Cashew paste/ cubes *** (optional)
  • 2+2 tbsp Coconut Oil

Instructions: 

  1. In a pan, pour the coconut oil and fry the ladies finger and season with salt and sauté for 3-4 minutes on high.
  2. In another pot, pour the coconut oil and add in the sliced onion and sauté, once translucent, add in the green Chillies and curry leaves and sauté. 
  3. Next, add in your chopped tomatoes and close lid and allow the tomatoes to cook well, once mashy, add in the carrots and potatoes and add in salt and pour in 1/4 cup of water and close the lid and  allow the veggies to cook well. 
  4. Finally add in the coconut milk, and once it starts to bubble from the sides, add in your cashew cubes (optional, for thickening and added flavor). 
  5. Enjoy hot with freshly made Chappati and your choice of sides. 



Notes: 

  • *Make sure you get the tender ones, you can check this by breaking off the tip of the ladies finger, if it easily breaks apart, these are tender ladies finger 
  • ** If using fresh coconut milk, do not over boil, if may curdle, once the curry starts bubbling from the sides, the curry is done, you may switch off the flame. 
  • Also if using Coconut Milk powder, mix 7-8 tbsp to 1 cup of milk 
  • *** Soak cashews for 5 minutes in hot water and grinding it to a paste with a dash of milk or water and pouring it into molds and storing in the freezer
