19B Soup

What an interesting name for a soup yeah?! I was surprised too! Haha.. A Chinese chef developed the recipe of this soup whilst traveling on a train, and when he reached his destination, he prepared the soup and named the soup as per his seat number on the train. Also I read an article that the chef was one of the best in Pakistan and hence it is a pak-Chinese influence soup. Not sure about the authenticity of this part of the story, but still thought to put it here ☺️

The soup is more like hot and sour soup but with the addition of prawns, the soup has a very delicious flavor full of umami. This soup is perfect for the winters, when you want to gulp on some warm liquids. So satisfying!

The soup is very easy to prepare too. The soup uses a whole egg without separating the yolks from the whites. And also remember to quickly stir when pouring the corn flour slurry, or else you will end up with a lumpy mess. And once prepared do try to have it immediately, reheating may not give the desired taste.

Ingredients: (makes for 3)

  • 3-4 Mushrooms*, sliced
  • 1 egg
  • 3 1/2 tsp Corn Flour (mixed with 3 tbsp water)
  • 1/2 cup Carrot, chopped finely
  • 1/4 cup Spring onion, chopped finely
  • 150 gms Boneless Chicken, chopped finely
  • 8-10 pcs Prawns, peeled and deveined (chop few of them)
  • 2 Garlic, freshly minced
  • Small piece Ginger, freshly minced
  • 2-3 tbsp Vegetable Oil
  • 1 Chicken Cube / 1 cup Chicken broth
  • 1-2 tbsp Soy Sauce
  • 1-2 tbsp Red Chilli Sauce
  • 1 tsp White Pepper Powder
  • 1 tsp Black Pepper, crushed
  • 1 tbsp Oyster Sauce, optional
  • 3 1/2 - 4 cups Water
  • Salt, as required
  • Spring onion, chopped (to garnish)

Instructions:

  1. In a heavy bottom pot, pour in the vegetable oil and add in the chicken pieces and the minced ginger and garlic and toss well until almost cooked.
  2. Next, add in the chopped prawns and whole prawns.
  3. Add in your veggies like sliced mushrooms, finely chopped carrots.
  4. After a couple of minutes of sautéing, add in the chicken cube and add in the sauces like soy sauce, red Chilli sauce and oyster sauce and spices like white pepper, black pepper.

  5. Pour in the water, close lid and allow to boil, once boiled, if froth is visible, skim it using a ladle.
  6. Pour in the corn flour slurry, while stirring continuously.
  7. Add salt, if required, and sauces if necessary.
  8. Finally pour in the beaten egg like a thin string and swirl while doing it, mix gently.
  9. Garnish with the chopped spring onion and your 19B soup is ready to enjoy!

Note:

It is recommended to use shiitake mushrooms if they are accessible to you, if not normal button mushrooms works fine as well! *

Oats Chicken Soup

Winter in Dubai is bliss!😻 The perfect weather, which calls for outings, that is, more family time. The most favorite few months in Dubai, it comes and goes in a blink. Trying to make the most of this beautiful season, is what every person wants to do in #mydubai. Dubai has a lot of outdoor activities, everyone embraces winter with wide open arms. It's the best feeling. But along with it comes cold and flu.😷 May the Almighty protect everyone. Aameen.

I created the recipe for the soup many years ago when I felt I wasn't satisfied with the soup ideas on the internet then. Me and my family was ill and I didn't want to eat anything, like duh? This soup is so wholesome, it has veggies, chicken and oats, which is perfect for your metabolism, especially when you are ill. I am not a big fan of kanji (A South Indian rice water soup/porridge). I do not like to have kanji for than a day. Hence this recipe happened.

Since it is a soup it contains water which is most essential when you catch a cold or fever. And it contains oats, which has carbs and fiber and many other essential nutrients. You may add in any veggies like carrots, beans, cauliflower, broccoli, mushrooms (I like to sautee my mushrooms and then add them to the soup) etc. This soup is a perfect dinner idea too, especially in this weather, it is heavenly! It is so simple... doesn't even take half an hour from start to finish. Not only does it taste delicious it fills your heart and soul with warmth which is why I named it chicken soup for the soul! Happy taysting! 😋

INGREDIENTS

  • 1 medium Onion Finely Chopped
  •  3 Garlic Cloves minced
  • 1-2 cups quick cooking white Oats (depending on the thickness of the soup)
  • 1/2 Carrot
  • 1/2 cup French Beans
  • 1/2 cup Broccoli
  • 2 tbsp white vinegar
  • 3/4 cup Corn (cause I love corn)
  • 150 gm chicken breast
  • 1 tablespoon Butter
  • 2 tablespoon Olive Oil
  • 1 teaspoon freshly ground Black pepper
  • 1 teaspoon white pepper (Optional)
  • 1/4 teaspoon crushed chili flakes (Optional)
  • 1 Maggi Chicken Cube (Optional)
  • Spring Onions to garnish
  • Salt to taste

INSTRUCTIONS

  1. Soak the vegetables with white vinegar for 15-20 minutes.
  2. Boil the chicken breast with water covering the chicken, add salt and ground pepper.
  3. Now take a big pot or non-stick casserole on a medium-high flame, put in the butter and olive oil. Once the butter has melted immediately add in the minced garlic and saute till the raw aroma goes. Be careful not to burn the garlic and onions.
  4. Next, add in the finely chopped onions, add a little salt and saute till translucent.
  5. Now add in the Oats about 1 cup and increase gradually if needed after checking the consistency when the water is added and the soup boils. Sautee the Oats with the garlic and onions for a couple of minutes and add in the veggies and saute the veggies for a couple of minutes. (Ps. You may add in the chicken cube/freshly made chicken stock at this stage)
  6. Now add in 4-5 Cups of water, freshly ground black pepper, chili flakes, white pepper powder, and salt according to requirement (the stock already has salt).
  7. Let it boil till the veggies are done. Check if the soup is thick enough (the oats acts as a thickening agent here), add more oats if required. Add in the chicken (you may slice the chicken to make pieces or you may use a fork to shred it)
  8. Give it a good stir and let it boil for about 5 minutes and your soup is done.
  9. Serve in soup bowls and garnish with chopped spring onions. Serve warm.

Note:

  • If using mushrooms you may saute them in little butter/olive oil and add in a splash of soy sauce when the mushroom gets done and salt if required.
  • You may use the white part of the spring onions chopped finely, and sautee when you add in the onions.

Manchow Soup

Howdy folks! Manchow soup, perfect for your wintery slurpy goodness. Nothing beats a bowl of steaming hot soup on a cold winter night. Manchow soup is from indo-Chinese cuisine which has its name 'manchow' derive from the word 'manchuria'. Despite the name, it doesn't taste anything like manchurian.

I love soups during winter because they are easy to prepare, hearty, yet full of goodness. Manchow can be prepared vegetarian or non vegetarian according to our preference. It is basically a brown color soup which can accommodate all or any veggies you like, perfectly a fridge forage recipe.

I know I have been a bit quite in here. I was a bit under the weather. As much as I love winters, this is what we gotto go through every year. As soon as the cold slightly subsided, I wanted to try all sorts of my favorite food. In fact, I was tired of rice gruel and it's variants. I wanted something spicy, tangy, sweet, and Chinese. And ll I could think of was a good bowl of hot soup for my sore throat.

So I immediately starting preparing the ingredients required for the soup and since the color comes from a few sauces that is added in, to compensate that, I used arrowroot powder as my thicker to feel guilt free. You may use corn flour instead. The best part of manchow soup is the Crispy Fried noodles that are sprinkled over the soup that brings in texture and makes it stand out from other soups. Ginger is unavoidable in this recipe, and a lot of garlic which is the main essence of the soup. Aaahh... The feeling of the steam from the hot soup gushing over your face when you try and sip in, is just the best during Winters. Drooling already?

Let's get started! 🤤

Cream of chicken and mushroom soup

Good morning folks! It's the second Friday of Ramadan already! Time is surely flying. I hope and pray that the pandemic situation comes to an end soon. Really! It's getting on my nerves now days, sometimes I really wish I could run to the beach.. Enjoy some fresh and some time in solitude free from any responsibilities.. I am sure this pandemic has taught us a lot. One among them being not to take things or people for granted! We are only here for some time and time is ticking so fast. Utilize your time by being resourceful especially getting close to the creator is the most we can do during this phase of the pandemic. No matter what stay home and stay safe guys!

Now coming back to the recipe of cream of mushroom and chicken soup. Sometimes you need some warmth and that feeling of satisfaction is truly attained by soups. I love soups.! Just few ingredients put together and you get a delicious, filling and comforting bowl of hot soup! Now who doesn't like that?

My mushrooms were almost about to die and noticed they needed to go somewhere and not the garbage. As I was already craving for some mushroom soup, I didn't think much and got started!

Normally in such soups, the roux method is used where you add a tbsp of flour and add in your milk and/ heavy cream. I love it with heavy cream, but sometimes, especially during this stage of pandemic you don't necessarily need to get hold of ingredients like heavy cream. So in order to keep it easy and taysty, in my recipe I have ground the boiled chicken along with the cooked mushroom for thickening the soup. You may find that this method might give you a grainy or crumbled texture in your mouth. But tastes sooo good. The sautéing of finely chopped garlic in butter is the best aromatic therapy I can ever relate to in cooking! 😍  Do you love it too? Well, if you love garlic do try my roasted Garlic Fried Rice, they are the best!

I prepared the soup for iftar and it was almost time for the azan and I didn't want to run to to take daylight pictures. Also I couldn't capture step by step pictures too. But if you really want to see, please hop onto my stories/highlights on my IG❤️

Without further a do let's get started!

Ingredients (makes for 2)

  • 1 tbsp butter
  • 1 tbsp olive oil
  • 3 garlic cloves, finely chopped
  • 1/4 th of a medium onion, finely chopped
  • 8-10 button mushrooms, sliced
  • 1/4 tsp Black Pepper powder
  • 1 tbsp flour/arrowroot powder
  • 1 cup milk
  • 1 1/2 cup freshly prepared chicken stock/broth
  • 50 gms boiled boneless chicken
  • 1/4 tsp white pepper powder (optional)
  • 2-3 tbsp cream
  • Parsley, to garnish
  • Salt to taste

Instructions :

  1. In a heavy bottom large pot, melt butter with olive oil and Sautee finely chopped garlic for 30 seconds and add finely chopped onions and allow to cook.
  2. Next add in your sliced button mushrooms and black pepper powder and Sautee.
  3. Add flour and mix and pour in milk gradually.
  4. Next pour in Laddlefulls of freshly prepared chicken broth. Allow to boil.
  5. In a mixer add couple of pieces of the boiled chicken pieces and the mushroom soup mix and grind well to a paste and add to the boiling soup. This helps the soup to thicken.
  6. Add the remaining pieces of chicken pieces if you like.
  7. Finally finish off with white pepper powder, cream, salt to taste.
  8. And garnish with chopped parsley. And you are ready to enjoy your soup!

Notes:

  • You may use arrow root powder instead of flour for an healthier alternative.
  • You may use any extra soup to freeze and use them up in casserole dishes (never get any leftovers here when I make this soup! Just a suggestion)
  • For a creamier consistency you may use heavy cream instead of grinding the chicken and mushroom mix.

French Shrimp Bisque

I love seafood, and my favorite after the cream of seafood and Seafood Chowder is this yummilicious French Shrimp Bisque. Basically it is a super creamy soup, and super smooth that is made from the broth of any shellfish like lobster, crabs, Shrimps etc. The broth from any seafood is super addictive, to top that this creamy base that is made from onion, garlic, carrot, tomatoes (mirepoix) etc gives it that different flavors from other seafood soups.

These mix of vegetables are called Mirepoix, that are added to stocks, sauces, soups etc.as a basic flavoring to bring in that distinct flavoring. You may change the color and flavor of the soup/sauce by simply changing the vegetables in your mirepoix.

Traditionally the mirepoix is boiled along with the shrimp shell and head and strained using a traditional French strainer. I have separately boiled and made the shrimp stock and made the mirepoix separately so that it is more filling,(as I need to feed my little one).

This super delicious soup makes you feel no less than enjoying a five star experience from a five star menu. This is the perfect soup for those weekend dinners where you need all the nutrients, yet it is super easy, healthy and comforting. What more does one need from a gorgeously appealing and satisfying soup.

I love how different the flavor of the soup is, as I also add tomatoes for the zing of umami that tomato brings in. Such a game changer! The creamy and smooth soup when accompanied by small bites of fried Shrimps makes it even more delectable. I love playing with textures. And I like to get the chunks of Shrimps while slurping the hot bisque. The intense flavor of seafood will make you want for more. My little one loves it. And I bet your family will love it too.!

I have added thick cream instead of heavy cream as I did not have it in my fridge. Use heavy cream for even better creamier effect. I also added half the Shrimps to the mirepoix so that it gives better seafood flavor. Also the authentic version uses alcohol, but this is a halal version of the French Bisque.

The other half of the Shrimps are sautéed in butter and a roux is made to which you add heavy cream, the Shrimp stock and the pureed mirepoix and seasoned well with pepper and salt. The roux helps the soup attain a thicker consistency. And finally cream is added to make it richer and smoother. And your vibrant, orangish, velvety smooth bisque is ready to serve!

Ingredients (makes for 2-3 people) :

  • 10-12 Shrimps, cleaned and deveined
  • Shrimp head and shell for stock
  • 2 onions, chopped
  • 1 carrot, chopped
  • 3 garlic cloves
  • 1 tomato, chopped
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 2 tbsp flour
  • 1 garlic clove, sliced
  • 3 tbsp tomato paste
  • 3 tbsp heavy cream or any cooking cream
  • 1 tsp white pepper powder
  • Salt as required

Instructions:

  1. To a deep steel vessel boil the shrimp heads and shells with 2-3 cups of water and allow to boil for 20 minutes to make stock, drain and set aside.
  2. In another deep vessel add in 3 garlic cloves, chopped onions, chopped carrots, half of the cleaned Shrimps, chopped tomatoes and add 1 cup water and allow to cook for 20 minutes.
  3. In deep vessel used to make soup, add in olive oil, butter and the rest of your Shrimps and salt as required. Fry for 3-4 minutes and set aside.
  4. Meanwhile make a puree of the mirepoix (vegetables).
  5. Scoop the fried prawns, set aside and to the same vessel which contains butter add in your flour and mix well without forming lumps to make a roux.
  6. Now slowly, add in your heavy cream, your Shrimps stock and your pureed mirepoix (vegetables).
  7. Allow to boil and scoop the residue layer that forms on the top and season well with white pepper powder and salt.
  8. Finally add in a touch of thick cream or cooking cream and add in your chopped fried shrimp that was fried earlier.
  9. Your velvety smooth French Shrimp Bisque is ready to devour with freshly made croutons! 😍

Easy Homemade Chicken Ramen bowl

Okay so I have been contemplating whether to post the recipe here or not. Traditionally ramen being Japanese has its origin from China. I had been contemplating as I did not have authentic ingredients in my pantry to make these. Since its lock down and the hubster gets me my groceries, long gone are those days where I can simply roam around asian grocery stores to find such amazing sauces etc to recreate some real Asian food.

So I thought of creating my own ramen bowl at home with limited ingredients available in my pantry. Imagine yourself sitting in front of a bowl of ramen bowl with some deliciously complex flavor profile of the freshly prepared broth that has a hint of sweetness, spicy and lightly salty and fresh veggies, slices of cooked chicken (you may use leftover chicken too) , and perfectly half boiled eggs that have their yolky yolks oozing out, with a splash of home made Szhechuan sauce and finally finished off with a sprinkle of scallions/spring onions and white sesame seeds. To give it that extra kick I also added a dash of fish sauce to my broth.

I never imagined noodle bowls could be so heart warming made with love right in your own kitchen in under an hour, it was definitely satisfying and looking forward for cooking more ramen bowls in the near future.

The Szhechuan sauce/chutney that I prepared, just took off the flavors to a next level. If you can't get the real Asian store stuff, you are lazy and really want a bowl of hearty warm bowl of ramen, just Kickstart with whatever is available in your pantry just like I did. And oh boy! I just can't describe how appetizing it was.

Some days when you are out of ideas for lunch, this is the best deal. I urge you to try this! Apart from what I demonstrate, if you could get hold of shitake mushrooms and seaweed use that too for extra umami flavor.

I could literally feel the flavors ride on my taste buds when I took the first slurp of this ramen bowl and couldn't get enough, that hint of spiciness from the Szechuan took the ramen to a next level. So delicious that while I type I am thinking of making my next bowl for lunch again.

Well, during the summer it isn't the best dish, because it is warm soup bowl with a kick of spiciness which is perfect for winter! Can't wait for winter and I am sure this is all that I would want, so comforting. I haven't filmed this, as I was not sure how the results would be as I had used a lot of substitutes.

Well, if you are like me, and good food is all that matters, then definitely give it a go, sooo worth it! I love building up such bowls! Definitely is an art and so colorful. Without further a do, let's get started!

Saucy Garlic Butter Prawns in Coconut milk

with Rice Noodles

Doesn't it sound crazy yum already? How cannot it be? It is definitely a concoction of my two favorite cuisines - Thai and Italian. I am sharing this recipe for those who want to try cooking something different and appetizing during the weekend. Few ingredients and in about 30 minutes you have your dinner ready! 😍😋

It is super gourmet as the smell of prawns sizzling in butter will make you drool, not only is the smell killer, it tastes incredible! More like an Italian-Thai version of Idiyappam and stew but with much more dimension and richness. 💯

Moving on, the recipe requires minimal ingredients. The main stars of this dish are prawns, Thai vermicelli rice noodles, ginger garlic, butter, olive oil, coconut milk, fish sauce and a dash of honey (totally optional-honey helps to balance flavors). That's pretty much it. So if you are fond of these main ingredients then this definitely is your game! I would describe this to be more of a saucy and luscious Tom yum soup with some rice noodle add on! Also, you may use any kind of rice noodles, not necessarily the vermicelli variety. But that would be best. Also when I discovered rice noodles I was surprised to see that this is a perfect substitute for pasta/idiyappam.

Whenever I make a seafood dish I prefer to keep the head's and bones of the fish to make fresh fish stock, it does wonders for your seafood meal.

In this scenario, I boiled the heads of the prawns for about 3 minutes. And used the stock for making the gravy. I have also incorporated some herbal leaves called the kaffir lime leaves (if I am not wrong), which is commonly found here in Dubai and used in Tom Yum soup that gives it that lemony flavor. These Kaffir lime leaves are so aromatic that you wouldn't let go of it the next time you make Thai Cuisine.

While deveining and cleaning your prawns make sure to keep the tails intact, for that extra dimension. Also when cooking the rice noodles make sure you follow the instructions on the package, and not make it too soggy and drain very well.

When frying the marinated prawns keep the marinade aside and only scoop out the prawns and cook them as you don't want the garlic in the marinade to burn. The marinade is added to the cooked prawns with a blob of butter for that extra sizzle, aroma, and infusion of flavor.
I do not intend to make you drool, so without further ado let's get started! 😁

Ingredients :

  • 200 gm Thai Vermicelli Rice Noodles
  • 200 gm Prawns (cleaned and deveined)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic (chopped finely)
  • 1 very small piece of pound ginger
  • 1 sprig kaffir lime leaves
  • 1/2 cup coconut milk powder / 1 can of coconut milk
  • 1 tsp fish sauce
  • 1/2 lemon squeezed
  • 1 tsp honey (optional)

Instructions:

  1. To make the marinade for the prawns, toss together the prawns with olive oil, ginger-garlic, honey, and red chili flakes.
  2. Meanwhile, cook the rice noodles according to the package instructions.
  3. Now scoop out the prawns from the marinade and reserve the marinade. In a medium skillet, add in 1 tbsp butter and olive oil and cook the prawns for 2-3 minutes each side and season with salt and pepper.
  4. Next add the reserved marinade, 1 tbsp butter, and freshly cracked pepper.
  5. Once the garlic gives out this amazing aroma and the garlic starts to become golden brown turn off the flame and remove the prawns from the skillet and reserve half of it for topping.
  6. To the skillet, add the coconut milk and ¼ - ½ cup fish stock and the fish sauce. Add the twig of kaffir lime leaves and let it simmer for 3-5 minutes.

  7. Remove the skillet from the heat, squeeze in some lime juice if you'd like and ta daaaa! You are ready to devour this flavorful soupy meal.
  8. Serve hot with the boiled/steamed rice noodle. Bon Appetit!
