General Tso's Chicken 




Good day greetings my dear folks. This time it is all about my general tso's chicken. As per the poll on my Instagram I have decided to share this recipe with you guys, based on the majority votes for savory, stove top and continental recipe.

General tso's chicken is a North American Chinese main course that is the easiest that you can prepare! I have been wanting to share this recipe with you guys since a long time now, because if you ask me what is my favorite Chinese dish and that you can cook in jiffy? Then it is definitely the general tso's chicken.

You might wonder what's with this name. Even I had thoughts about the same the first time I heard about this dish. It is said to have been named after a military leader, who loved eating this dish, I mean who wouldn't? It is known by many other names; General T's chicken being one of them. Also to pronounce the name of this dish, you don't say the T, so it's basically "general so's chicken ". If you look closely this dish definitely has a similarity with orange chicken. Though orange chicken is more on the sweeter side whole General tso's chicken is more savory. It is one of the most favorite and popular Chinese take away dishes. 

I loooove sticky orange chicken, but my family detests the combination of chicken being sweet, while me and my mom loves such combinations. So to keep me sane while I crave for Orange chicken I always keep my cravings at bay with this yummy recipe. So the family and myself are content.

General tso's chicken is basically batter fried chicken tossed in a slightly sweet and spicy gravy with a kick of garlic. This is best had when it is right from the pan as the more the chicken sits in the gravy the more chances the coating gets soggy.

General tso's chicken is normally served with Brocolli and carrots but I like to have it with my garlic fried rice (psst psst.. also because I had no Brocolli in my fridge 🙈) or any other Chinese main course. It is so flavorful that you can actually munch in these and feel all that garlic flavor popping along with the tender fried chicken that makes it insanely delicious! The best part is that the gravy/sauce takes you less than 5 minutes and the whole dish gets done in a jiffy! A perfect crowd pleaser 👌 

With a few ingredients you can make this better than take away general tso's chicken at home! The easiest Chinese dish with minimal dishes to clean 😁

Without further a-do, let's get started! 


Ingredients :

  • 250 gms tender chicken breast, cubed
  • 1 tsp Black Pepper Powder 
  • 1 large egg/2 small eggs
  • 2 tbsp all purpose flour
  • 1 1/2 tbsp Corn Flour 
  • 1 cup chicken stock
  • 2 tbsp Soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp Corn flour
  • 1 tsp white vinegar 
  • 2-3 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 tsp crushed chilli flakes
  • 1 tsp white sesame seeds

Instructions :

  1. Marinate the chicken with salt, black pepper, all purpose flour, corn flour and your eggs and mix until all the water from the chicken absorbs the batter well and set aside. 
  2. Next prepare your sauce by mixing 1 cup chicken stock, soy sauce, corn flour, brown sugar, and white vinegar. 
  3. In a deep small pot, deep fry the coated chicken pieces for 5-6 minutes in small batches. Once cooked, drain on a kitchen towel. 
  4. In a wok, pour your vegetable oil and add your minced garlic and crushed chilli flakes. Toss for a few seconds and pour in your sauce prepared earlier. 
  5. Allow the sauce to come to a simmer and add in your fried chicken and toss well, dally add in some white sesame seeds and you are done! 
  6. Serve with white steamed rice or my roasted garlic fries rice. 



Notes :

  • Traditionally the chicken is prepared with boneless thigh pieces, I have used tender breast pieces instead. 
  • I have used 2 medium eggs for the batter. 
  • Do not over crowd while frying the chicken.

 Yemeni Mutton Haneeth




Yemeni Mutton Haneeth is a popular dish where lamb meat, preferably ribs cut/ shoulder cut is marinated in a blend of spices with butter and slow roasted until the meat is so tender that it falls off the bone. So the meat is usually cooked for many hours until tender. Since, we live a fast life, it's preferable to cook the meat using the pressure cooking method. But if you have the time, I would suggest to prepare the Haneeth using the slow cook method. The meat becomes so tender either way, that it just melts in the mouth. To give it extra texture, the cooked meat is then roasted in the oven, for the skin to develop a juicy crust.

Since the meat is rubbed with spice rub, you do not want the spice rub to come off completely whilst the meat cooks, so I use a rack/ trivet that helps the meat not to be completely in direct touch with the water, hence the masala stays intact and the meat gets cooked well and also the juices from the meat drops in the water which is used to cook the rice, this helps to make the rice extra flavorful.

Mutton Haneeth is something that I can't have enough of, my husband says that I have an extra tummy when we go and eat haneeth/ mandi from restaurants! xD I am that much of a fan of the flavorful Yemeni dish. I used Basmati Sella rice here, you may use the usual basmati rice too, but I fee texture and flavorwise, sella rice stands out in Haneeth. Let's make this scrumptious main course right away! Or at least it's Fridayyy tomorrow :D Without further ado, let's get started!



 Ingredients :

  • 1 kg Mutton ribs/ shoulder *
  • 50 gms Butter
  • 1 tsp Garlic powder
  • 2 tsp Paprika powder
  • 1 tsp Freshly crushed Black pepper
  • 1 tsp Cumin powder
  • 1/4 tsp Turmeric Powder
  • 2 tsp Arabic Spice powder (store bought), optional
  • 1 tsp Rock salt
  • 1 MAGGI Chicken cube (less salt)
  • 2 tbsp warm Water
  • 1 cup Water

For Rice:

  • 1/2 cup oil 
  • 2 tbsp Cashews
  • 2 tsp Raisins
  • 2 Onion, 1 sliced and 1 chopped
  • 3 cups Sella Basmati Rice
  • 2 tsp Cumin seeds
  • 1 tsp Coriander Seeds
  • 2-3 Bay leaves
  • 2 Cinnamon sticks
  • 3-4 Cardamom pods
  • 4-5 Garlic, slightly pound  
  • 1 tsp Whole Peppercorns
  • 1 Dry Lemon
  • 1 Chicken Cube
  • 1/2 Capsicum, sliced
  • 4 1/2 Boiling water
  • 1/2 cup mutton broth 
  • Salt, as required
  • 3 whole Green Chillies, Large
  • A pinch of Saffron strands, soaked in warm water

Instructions:

  1. In a blender, blend all the spices, rock salt, chicken cube along with room temperature butter and warm water.

  2. Poke the mutton ribs using fork and rub the marinade well onto the ribs.
  3. In a pressure cooker, place a trivet or a stand that helps elevate the meat from the water.
  4. Place the marianted meat over the trivet and pour water and allow to pressure cook for 7-10 whistles depending on how tender the meat is, allow the pressure to release naturally.
  5. To make the rice, fry the sliced onions in the oil until golden and crisp, drain and set aside. 
  6. To the same oil, add in your cashews and raisins, drain and set aside.
  7. Now add the whole spices to the oil, along with lightly pound garlic, dry lemon, Maggi chicken cube and capsicum. Mix everything well and now add in the washed and drained rice.

  8. Check the mutton ribs, once the pressure is released naturalluy, set aside the broth water and roast the ribs in oven at 180 Deg C for around 10 minutes, or until the skin is golden and crisp.
  9. Pour water and the mutton broth water. Place lid and allow the water to evaporate.
  10. Open the lid, give the rice a good mix, place whole green chillies and pour the saffron soaked water. Close the lid and allow the rice to cook well on simmer for 20-25 minutes. *

  11. Check tenderness of the rice and transfer to a large platter and place the oven roasted mutton ribs and sprinkle the crispy Fried onion, raisins and cashews.
  12. Serve Haneeth piping hot, super tender ribs with Shatta** (tomato chutney).


** Shatta recipe - Blend tomato, green chilli, salt, paprika powder and set aside. 
Prepare the Shatta early, as the blending makes teh tomato chutney frothy, so when done eariler, helps the bubbles and foam to settle on its own. 
 

Notes:

  • You may soak the sella basmati rice, but it is not necessary .
  • Rock salt is preferred to use when marinating in the spice rub, as rock salt helps to marinate the meat thoroughly, (I did not keep the marinated meat overnight or even a few hours, yet the meat was perfectly marinated)
  • Do not open lid in between the cooking process, allow the heat to cook the rice really well. 
  • *I used mutton racks in this, you may choose any cut that is tender. 
  • Please note that different brand rice require differ amounts of water, but to stay on the safer side I take the ratio 1: 1 1/2 ratio for rice and water respectively and add an extra 1/2 cup water, and the additional broth water makes it perfect.
  • You may smoke the rice by adding a hot piece of charcoal and pouring oil over it in a small disposable aluminum/ steel container and closing the lid. But I prefer otherwise, without doing this step, as I feel the flavors feel very artificial whenever I smoke the rice and gives me a very bad headache, so you may do it if you like smoking the rice 👍🏼

Ps: This may not be the authentic recipe, but it definitely is the best!

Ratatouille - A French Veggie Stew


Have you heard of the movie Ratatouille? It's a Disney Animation Movie, whose story involves the dish Ratatouille. And I watched this movie when I was doing my schooling (I didn't know much about food and cooking back then🙊) and loved how pretty the dish looked! I was fascinated!😍

I used to pronounce the name as Rat-at-uillee whereas it's pronounced as rat-at-toolee. I was in love with how beautiful it looked. If you are fond of roasted veggies, then you're definitely going to love this meal. The tomato gravy acts as a sauce to go with the veggies, they are cooked till tender and has charred a bit. I love my veggies crisp, the more you bake, the crisper and it enhances the flavor (keep an eye while it gets done, you don't want it to burn😁).


Ratatouille is a veggie stew, where the veggies are thinly sliced and placed in a consistent fashion around the dish. Basically, it is a healthy and tasty meal idea. I am sure, anyone who sees the ratatouille will be amazed. I love how tasty it turned out as I was a little reluctant to try it. You must definitely try this out if you're looking for a recipe for guilt-free eating. My hubby and dad loved it. They were saying I had to make more such dishes since it was delicious at the same time healthy too. Being it a French dish I doubted my dad would like it but I was proven wrong. 



But hey! I don't know about yours, our fam has this thing, everything we eat has to have a companion. Like in the case of this dish, it's more like a veggie stew, so it has to be had with some roti. To compensate that I paired it with some homemade pita bread to go with the extra tomato gravy. 🍅So let's make some Ratatouille! You're gonna love it. ❤️



INGREDIENTS



  • 1 cup of Tomato puree/ crushed tomato (fresh/tin, tetra pack)
  • Dried Oregano, to taste
  • Red Chilli flakes, to taste
  • Dried Basil, to taste
  • 1 tsp Minced Garlic
  • Salt and Pepper to taste
  • Pinch of Sugar
  • 4 tbsp olive oil
  • 1 aubergine/eggplant
  • 2 red bell pepper/ tomatoes
  • 4-5 zucchini
  • 2 Potatoes/ yellow bell pepper
  • Salt, pepper, thyme, olive oil to drizzle

INSTRUCTIONS




  1. Preheat oven to 190°C. 
  2. Slice all the veggies into thin rounds using a sharp knife. Add some salt, pepper, oregano, Thyme and a drizzle of olive oil to the veggies and give it a toss.
  3. To make the sauce, heat the olive oil in a 12-inch (30-cm) oven-safe pan over medium-high heat. Sauté the onion and garlic until soft. Season with salt and pepper, then add the crushed tomatoes. Stir until the ingredients are fully incorporated. Add the red chili flakes. Remove from heat, then add the dried basil. Stir once more, then smooth the surface of the sauce with a spatula.
  4. Arrange the veggies over the tomato sauce, alternating the colors in a consistent manner, starting from the outer edge, and ending in the middle of the pan. Season if required. Drizzle a good amount of olive oil over the veggies. 
  5. Bake for 35-40 mins until the veggies have softened and completely cooked and develops a crispy effect on the edge of the veggies.
  6. Serve with some crusty bread or pita bread or as a main course itself. 
Notes:

  • It tastes best the next day, reheat for 15 minutes or simply microwave.
  • I used fresh tomatoes pureed and some tomato paste too.
  • It is usually prepared with tomatoes, I used red bell pepper instead.

Crunchy Chilli Baby Corn Skewers


Do you love baby corns? I lurve the corn family in any form, be it corn on the cob, frozen corn, baby corn, popcorn, cornflakes yata yata.. I was not sure what to make of these baby corns when I bought them. I use them in salads mostly, but I was craving for Indo-Chinese the other day, so I thought to myself why not try a version of chili chicken using baby corn. And this appetizer happened! I coupled it with Chinese Hakka Noodles as the main course. It is a very interesting concept for the baby corn, you gotta have it hot if you gotta know what I am saying.


The crispiness is achieved by double frying the baby corns and you can obtain the crunchy munchiness. It is super delish yet very simple too.  Fit for veg or non-veg people, this appetizer is sure to tingle your taste buds with excitement. INGREDIENTS

  • 1 pack Baby Corn
  • 2 tbsp All-Purpose Flour
  • 1½ teaspoon Corn Flour
  • Salt
  • Water
  • 1 tbsp Sesame Seeds (roasted)
  • 1 tbsp Vegetable Oil
  • 1 tsp Garlic (chopped)
  • 2 Green Chilis 
  • 1 tsp Spring Onion
  • 2 tbsp Ketchup
  • 2 tsp Soy Sauce
  • 1/2 tsp green chilli paste 

INSTRUCTIONS

  1. Boil or steam the baby corn for 2 minutes.
  2. Mix All-Purpose Flour, Corn Flour, Salt, and Water and make a loose batter.
  3. Heat oil in a small deep pan and deep fry the baby corn by dipping in the batter. After 5 minutes, double fry the baby corn if you want it crispier. 
  4. In a separate pan, pour in the oil and add in the garlic and green chillis and saute till the raw smell disappears.
  5. Mix in the sauces and sautee for a minute. Add the fried baby corn to the pan and sautee till the sauces get covered in the sauce and immediately transfer to a serving dish.
  6. Push in Skewers onto the baby corn lengthwise. Garnish with spring onions and sesame seeds.
