Double Chocolate Goey Muffins



Some days I crave for cake so bad.. And I am one picky eater when it comes to chocolate cake. I definitely like rich and decadant chocolate cakes, like using the real deal (chocolates itself) , maybe that's why I bake more brownies than normal chocolate cakes. Let me know what you prefer in the comments below. 

Ever since, whenever I crave for chocolate cake but not fudgy like brownies, I immediately bake a batch of my double chocolate muffins! Basically it is called double chocolate Muffins because these Muffins are studded with semi sweet chocolate chips and chunks of dark chocolate. I like to have them a little warm, as the chocolate bits/studs would be at their gooey stage. The brown sugar helps to bring out the color in the Muffins. Basically you can swap it with granulated white sugar, it doesn't make much difference. Try to use the sour cream/ or thick yogurt called in the recipe, it moistens the muffins. These muffins are the best, just don't go skimpy on the chocolate, be generous and when you take your first bite you will know why! 😋😋👌


Recently I have had many requests from mommies for cupcakes/ muffin recipes to bake for their little ones. I am so glad that I will be able to make these little souls happy. Can't wait to see your little ones' smiles.. In Sha Allah 😍😘

It's the weekend and the final one before school reopens, let's enjoy and spend sometime with our kids before they turn into their routine life. I am sure they are gonna love this weekend baking project! If you do try please don't forget to take pictures and send them to me.. I love to see your recreations ❤️

Ingredients :

  • 2 cups all purpose flour
  • 1 cup white granulated sugar (or 1/2 cup white and 1/2 cup cup brown sugar)
  • 1/4 cup unsweetened cocoa powder
  • 3 tbsp butter, melted 
  • 3 tbsp any flavorless Vegetable Oil
  • 1 cup yogurt/vanilla yogurt /sour cream
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup full fat milk
  • 2 large eggs
  • 1 tsp Vanilla extract /essence
  • 3/4 cup semi sweet chocolate chips 
  • 1/2 cup dark chocolate chunks

Instructions:

  1. Preheat the oven to 180 deg C. 
  2. Place paper muffin cups in your muffin tins and set aside. 
  3. In a large bowl whisk together the dry ingredients. 
  4. In another bowl whisk the wet ingredients and pour the butter mixture into the dry mix and stir until thick batter forms. 
  5. Add in your chocolates and stir gently. 
  6. Pour the batter evenly into your lined muffin tin. 
  7. Bake for 20 minutes or until skewer inserted comes out clean. 
  8. Transfer to a wire rack to cool for 5 minutes before removing th Muffins to cool completely. 


Notes :

Please add chocolates generously for the best outcome.

Teriyaki Chicken Thighs


Basically, this is one of the best recipes I tried for chicken Thighs! The hubster is a big fan of Thighs fried in the normal kerala spices. I love almost anything that has soy sauce in it. Even though this isn't the authentic teriyaki Chicken recipe, I have tried to bring in the authenticity by using ingredients that are in favor of my tastebuds. 

This might sound out of topic, but I hate it when someone has to talk to me while I am jolly good in my kitchen enjoying the spices and other ingredients speak and thrive to bring out the flavors of the dish. When I was a little child, I often wondered why my mother would get mad at me when I intrupted her while cooking, but now I know why! Talking to someone whilst cooking is the last thing I would do. The next time you see someone cook with so much love and silence, always remember, the food that is being prepared is put in with loads of love, and not mere ingredients. I adore my mom's passion to cooking, with which I feel like I have grasped on so much more. The bond between me and mama has grown so much over food that I can't imagine what life would be without being able to discuss food to someone who could understand like I do. Well, basically 90% of what we talk is about food nowdays.. And now I know exactly how being a foodie is in my blood. 

Coming back to Teriyaki Chicken Thighs! Teriyaki was basically invented by the Japanese who settled in Hawaii and it was used as a marinade or brushed over the meat for that glossy finish. 'Teri' means glossy sheen and 'yaki' basically translates to grill/broil. Traditionally the sauce is brushed over the meat along the cooking process. 

Well, in the images, you can find that teriyaki Chicken has been served with steamed Cauliflower, as this was an image captured when the Mister was on a strict keto diet. So it is safe to say, this makes a great keto recipe too. It is low in carb and high in fat.  

Anyhow! Do give this teriyaki Chicken a try. It's the easiest, juiciest, and tastiest chicken marinade recipe you will ever come across! 


Ingredients:

  • 4 Large Chicken Thighs skin on
  • 1/2 tsp Ginger paste
  • 1/2 tsp Garlic minced 
  • 1 tsp Lemon juice
  • 1/2 tsp Red Chilli Flakes
  • 1/4 tsp Black pepper powder
  • 1 tsp Red Chilli sauce
  • 2 tsp Soy sauce
  • 1 tsp Green chilli sauce (optional)
  • 2 tsp Kashmiri red chilli powder
  • 1 tsp brown sugar (optional)**
  • 4-5 tsp olive oil

Instructions :

  1. Make a marinade of the above ingredients and apply on the chicken Thighs that has been slit/given cuts. 
  2. Allow to marinate at least for half an hour or preferably overnight. 
  3. Place a pan on heat (you may also use a grill pan) , pour in your olive oil and shallow fry for 8 - 10 minutes and flip and cook for another 8-10 minutes on medium low flame.
  4. You may brush the sauce/ marinade whilst cooking the meat. 

Notes :

  • **Do not use brown sugar if on KETO
  • Do not crowd your pan, brings out more water from the chicken.
  • Do not fry on high, the brown sugar speeds up the caramalization leaving the chicken uncooked. 
  • Feel free to remove skin if you don't like the skin, but remember keeping the skin helps the meat to be tender and juicy even after being cooked well. 
  • You may use white granulated sugar instead of brown sugar.

Gulkand lassi


Now since we have rose milk, rose milk cakes, anything and everything using roses.. Try this version of rose. Especially if you love lassi this one is sooo refreshing. Lassi is basically a thick yogurt smoothie. 

I love to beat the heat with refreshing drinks that are pleasing to the eyes, nutritious as well as hydrating! 😍 Roses have been my weakness lately, and if you have been consistent with my blog you might know that by now🙈

In the recipe I have used this rose jam or rose petal spread called gulkhand to intensify the rose flavors. It is not easy to find it here in Dubai. So I finally got it from Al Adil trading.. If you really love the flavor of roses you are definitely in for a treat!
Gulkhand is said to be an ayurvedic medicine for their cooling properties and many other health benefits.

The name gulkand derives from 'Gul' which means flower in Urdu and 'qand' means sweet in Arabic. I didn't know that roses had so many health benefits too just like how pretty it looks.

And gulkand can be prepared at home if you have roses at home easily. Basically wash the rose petals and chop the petals to small pieces and in a jar layer the roses, add sugar and a little honey and repeat the process until you are done!

Roses are always meant to bring an instant feeling of happiness, warmth and love. The best lassi can only be made with nice and thick yogurt. The best would be Greek yogurt for preparing lassi. Always remember you might be tempted to add ice to your lassi but adding ice can lighten the texture of lassi and not give you the exact results you aspire.

Since gulkand already has sugar in it, you do not necessarily have to add in more sugar or honey, unless you really want it super sweet. But I like a light note if sweetness to my lassis.

Without further ado, let's get started!

Ingredients :

  • 1 1/2 cup Greek Yogurt (Chilled) 
  • 1/2 cup milk, chilled
  • 1 1/2 tbsp rose syrup
  • 2 tbsp gulkand
  • 1/2 tsp cardamom powder
  • Chopped pistachio and cashews
  • 1 tsp edible dried rose petals
  • Sugar/ honey - if required

Instructions :

  1. Put chilled yogurt, chilled milk, gulkand, rose syrup and cardamom and add honey/sugar if required into a blender.
  2. Sprinkle with dried rose petals, and chopped nuts.
  3. Drizzle some rose syrup and serve immediately!

Signature Chicken Chukka



Let me tell you, chicken chukka was what I hated the most, until one day when I discovered my own recipe. The 'naadan' version includes a lot of onions sautéed and the chicken is cooked along with basic ingredients like ginger garlic paste, tomatoes and other basic ingredients used to prepare a chicken curry. I am not a fan of the Kerala Style Chicken Chukka.

Ever since I have ordered from kerala restaurants, I started hating this dish even more until one day I discovered Chicken Chukka is a Mangalorean dish and is nothing like that I have had all this while.

Oh boy the flavors are legit! I was wondering why haven't I ever tried the Mangalore style of preparing Chicken Chukka. Basically the fresh chicken, the sautéed spices that are ground, coconut and ghee is what takes the flavors of this dish to the next level. The warm notes of the dried red chilli is what brings out the kick in this dish. Even though the ingredients might be so basic but the flavor delivery is on point! My hubster was raving about how delicious it tasted all day the first time I tried it! 😍

Chicken Chukka aka Chicken Sukka being a semi gravy dish which brings aromatic flavors from the spices to bring out the flavors in the chicken, accompanied by fresh coconut and ghee, the combination is just mind blowing. The combo of coconut with chicken never goes out of fashion! Here is another of my favorite recipe - Payyoli Chicken. 

This semi gravy dish goes about with almost anything chappathi, dosa, paratta etc. To make things easier, this recipe isn't the authentic version, I tweaked it to make it instantly keeping in mind that the flavors stay intact. So let's go make some easy Homemade Chicken Chukka. 


Ingredients :

  • 900 gms Chicken (cut into small pieces) 
  • 3-4 dry red chilli
  • 1 tbsp Coriander seeds
  • 1 tsp Fenugreek seeds
  • 1 tsp cumin seeds
  • 1 tsp Garam masala / 2 cardamom, 2 cloves and a cinnamon stick. 
  • 4 tsp Kashmiri Red chilli powder 
  • 1/4 tsp Turmeric powder 
  • 1 tsp Garlic paste
  • 1 tsp Ginger paste
  • Salt 
  • 1 tbsp lemon juice
  • 1 medium Onion, roughly chopped
  • 1 tbsp ghee
  • 1 medium Onion, sliced
  • 1 small tomato, chopped
  • 4 tbsp grated coconut 
  • Curry leaves
  • 1/4 tsp Garam masala
  • 1 tsp ghee

Instructions:

  1. Marinate chicken with Kashmiri red chilli powder, Turmeric powder, ginger garlic paste, salt and lemon juice. 
  2. In a pan, dry roast the spices - dry chilli, Coriander seeds, Fenugreek seeds, cumin seeds, cloves, cardamom and cinnamon. 
  3. In a blender, drop in your roughly chopped onions, the roasted spices and grated coconut. 
  4. In a pan, add a tbsp of ghee and Sautee the sliced onions and some curry leaves witb some salt. 
  5. Once translucent, add in your chopped tomatoes and sauté. 
  6. Once the tomato has softened, add in your marinated chicken and allow to cook closed using a lid for 15 minutes, turning over occasionally. 
  7. Next add in your ground paste and cook for 5 minutes until the water oozed out from the chicken evaporates and ghee starts separating from the masala. 
  8. Check for salt and finally finish off with a sprinkle of Garam masala and drop in a tsp of ghee. 

Notes :

Please prepare this dish in ghee itself to help bring out the authentic flavors.

Meatballs in Coconut Gravy



I know I have been MIA. The Eid hangover is for real. After all those heavy dose of calories I wanted a break from cooking and posting lol. I simply wanted to make th most of the Eid holidays by pampering myself.

Now back on track and here to reveal my low carb high fat recipe - Meatballs in coconut milk gravy. You might wonder about the combination, well this is one great recipe that I love sooooo much. The flavors are on point when the addition of coconut milk comes. I love how coconut milk actually can bring out better flavors when it comes to meat.

The first time I tried this experiment, I wasn't quite sure if everyone here would like the flavors of meatballs in coconut milk. To my surprise, the dish including the pan used to cook it was wiped clean, like seriously it's that good. Do you know why? When the juices from the fried meatballs starts blending with the fragrant coconut milk, it just tastes fabulous. Like no word can justify the flavors. It is so simple to make, and you can thank me later.

This was prepared as an experiment for the hubster as he is on keto, when I remembered how fascinated I was when I watched some meatball recipe in coconut milk by some star celebrity. So this is my take on those faint ideas and memory that I had acquired. 

If you are not in keto, feel free to add in bread crumbs to the meat ball mixture so that it holds its shape when you fry them. 
The flavors of ginger, garlic and celery infuses in the coconut milk to make it fragrant, fresh and delicious. 

Drooling already? Without further a do let's get started! 

Ingredients :


For the Meatballs:

  • 500 gms Minced meat 
  • 1 Medium Onion, finely chopped
  • 2 Garlic pods, minced
  • A few celery leaves
  • 1 egg
  • 1/2 tsp Red Chilli Flakes 
  • Salt and pepper as required 
  • Olive oil for shallow frying


For the Coconut gravy:

  • 2 tbsp olive oil, if needed
  • 1/2 tsp Coriander seeds
  • 1 inch ginger, chopped finely 
  • 2" 2 stick of celery, finely chopped 
  • 1/2 cup chicken broth
  • 1/2 cup Coconut milk
  • A pinch of Turmeric 
  • 1/4 tsp Red Chilli Flakes
  • 1 tbsp lemon juice
  • Salt, if required 

Instructions :

  1. In a thick bottom pan, pour some olive oil and add in your onions and Sautee well. 
  2. Once translucent, add in your minced galric and celery leaves and Sautee for about 30 seconds. 
  3. Now into your washed and drained minced meat, add in your sauteed onion mix, crack in an egg and add your red chilli flakes, pepper and salt. 
  4. In the same pan, pour olive oil to shallow fry the meatballs.
  5. Now with the help of your hand, shape them into balls and shallow fry them clock wise so that you know which one to turn first. *
  6. Fry on medium for around 8-10 minutes, turning until all sides have cooked well. 
  7. Set the meatballs aside, into the same pan add your Coriander seeds, ginger, finelu chopped celery and red chilli flakes. Sautee well and once fragrant, add in your chicken stock and your coconut milk. Adjust seasoning if required. 
  8. Simmer for around 10 minutes, until the sauce has thickened and the juices of the flavors has blended well in the gravy and the meatballs are cooked well. 
  9. Finely add in your lemon juice and done! The easiest meatball recipe with delicious flavorful gravy is now ready! Serve hot. 


Notes:
  • Celery is completely optional, if you do not like the taste of it you may omit it.
  • Chicken broth will already have salt in it, so add salt in the gravy only if required.
  • You may double the quantities if you want more gravy.
  • Chop onion fine y for the meatballs, the finer the better.
  • You may use breadcrumbs in your meatballs if you want the meatballs to hold its shape.
