Beef Vindaloo

Beef Vindaloo is a Goan dish which is fiery, tangy and with a pinch of sweetness, slow cooked to perfection. This underrated curry is super delicious and has a very distinct flavor! Beef vindaloo goes well with paratha, naan or steamed rice.

This curry is a gem especially on busy days or if you have guests over, you just need to give the curry a stir once in a while, so that it doesn’t stick to the bottom of the vessel and burn, it’s sooo easy to prepare once you have the masala prepared. You may prepare extra masala (by doubling the quantities) and store them in the refrigerator upto a week! Use Kashmiri chillies or else get ready to get ready to drink a gallon of water! 🥵😆

The first time I prepared beef vindaloo, I wasn’t quite impressed, as I had used the normal dried red chillies. But this time I used dried Kashmiri Red Chillies and I was able to immerse in the flavors. Also slow cooked meat is always ‘vere level’! Using a Dutch oven helps, or any vessel that has a heavy bottom. Like a heavy bottom earthen clay pot also does the job. I’d definitely recommend to prepare beef vindaloo the slow-cook way! As it makes a lot of difference..It tastes even better the next day, when reheated, the flavors just comes along too good!

Ingredients:

  • 1/2 kg bone-in Beef
  • 8-10 Kashmiri Red Chillies (soaked in hot water with vinegar )
  • 1/4 cup Vinegar
  • 1 tbsp Coriander seeds
  • 1 tsp Cumin seeds
  • 1 tsp Whole Pepper
  • 4-5 cloves of Garlic
  • 1 inch Ginger piece
  • 1 tsp Mustard seeds
  • 1 tsp coconut oil
  • 3 Cloves
  • 1 Cinnamon stick
  • 1 tsp Jaggery powder
  • 1/4 tsp Turmeric powder
  • Salt, as required
  • 2 tbsp Coconut oil
  • 1 Medium Onion, finely chopped
  • Curry leaves, optional
  • Coriander leaves, to garnish

Instructions:

  1. Soak the dry Kashmiri Chillies in hot water (along with vinegar, optional) for 5-10 minutes.
  2. Grind all the ingredients from the ingredients list until jaggery powder to a paste and add in coconut oil, turmeric powder, and salt as required & marinate the washed beef pieces and allow to marinate for 4 hours if possible.

  3. In a Dutch-oven or a heavy bottom pot, pour the coconut oil and sauté the finely chopped onions until translucent and add in your curry leaves.
  4. Add in the marinated beef and slow cook for around 60-90 minutes, giving a mix every 15 minutes so that nothing sticks on the bottom.

  5. Once the meat is cooked tender, enjoy hot with paratha, naan or steamed rice!

Ps: If you want it more spicy you may add more black pepper and green chillies, we like it mild here!

Goan Chicken Fry

Goan cuisine is simply delectable, and my favorites are their lollipops and racheado fish fry (one of the most popular recipes) on my blog!

This chicken fry is no less delicious! The crispness from the gram flour, and corn flour, with the slight crunchy Kashmiri Chillis, make this chicken fry a lot more delicious unlike the usual chicken fry.

Try to marinate overnight for better results or at least for half an hour. Fry the marinated chicken right before serving.

Ingredients:

  • 500 gms Chicken pieces with bone
  • 1 tsp Ginger Garlic paste
  • 6-8 Kashmiri Dry Red Chillies
  • 1 tbsp White Vinegar
  • 1/4 tsp Turmeric powder
  • 2 tsp Kashmiri Chilli powder
  • 1 tsp Coriander powder
  • 1/2 tsp Garam masala powder
  • 1 tbsp Gram Flour
  • 2 tbsp Corn Flour
  • 1 tsp Rock Salt*
  • 1 tbsp Lemon Juice
  • Coconut oil, for frying
  • Curry leaves, for garnishing

Instructions:

  1. Soak the dry red Kashmiri Chillies in hot water for 10-15 minutes.
  2. Next, grind them with Vinegar and make them to a coarse paste.
  3. To the cleaned chicken, add ginger garlic paste, spice powders like turmeric powder, Kashmiri Chilli powder, Coriander powder, and Garam masala powder.
  4. Next add in your corn flour and gram flour, rock salt and lemon juice and combine everything well.
  5. Marinate at least for half an hour or overnight if possible.
  6. Deep fry the chicken pieces in coconut oil, make sure to add them when the oil is hot, on medium flame.
  7. Fry the chicken pieces for 15-20 minutes until all sides are fried well and crispy.

  8. Add in curry leaves, and fry them and drain them and add to the fried chicken.
  9. Serve them hot.
*Note : Using Rock Salt helps the salt to penetrate to the bones, making your chicken even more flavorful.
Make sure not to flip them quickly, as the coating will come off, allow one side to fry on medium low and then only flip.

Goan Recheado Fish Fry

Racheado means 'Stuffed' in Portuguese. Use this marinade to fry your fish, and you are going to stock up the marinade in your pantry. This spicy, sour and tangy masala is going to take your taste buds on a ride. The masala/stuffing can be used with any fish like the Mackerel, Pomfret, Prawns, Kingfish etc.

I am using king fish in this recipe because I had fresh ones. And this recipe is the perfect one to go for a fry. The chilies and spices are soaked in white vinegar for a few minutes before you grind them to a thick paste. You will love how the spices and the tanginess come together. Also, try to marinate and keep for at least an hour or overnight, this will help to bring out the flavors. If you want it to be crispy, just before frying, coat it with semolina and flour.

Goan cuisine is one among my most desired options for dining in. If you haven't yet tried their food, you are missing out on some great experience. Moreover, if you love spicy food (like my mama), you will definitely love Goan food.

The traditional Goan cuisine is majorly influenced by Portuguese and African recipes; that explains the name of the dish. This is spicy, crispy and hot shallow fried fish that can go along with steamed rice and veggies for lunch or along with rotis and curry for dinner. Perfect combo!

I have no roots from Goa but definitely crave for their food every now and then. This might not be an authentic Goan recipe, but an amazing recipe. Try it, Tayst it and let me know how you like it.

INGREDIENTS

  • 4 King Fish rinsed
  • 15 Kashmiri Red Chilies
  • 1 tsp Kashmiri Chilli Powder
  • 2.5 Tbsp White Vinegar or as required
  • 1 Garlic Bulb
  • 1 inch Ginger chopped
  • 1/4 tsp Mustard Seeds
  • 1 tsp Cumin Seeds
  • 1/2 tsp Black Peppercorns
  • a pinch Fenugreek seeds
  • 6 Cloves
  • 2 Marble sized Tamarind Balls soaked in 20 ml Hot Water
  • Salt
  • Turmeric
  • Semolina (Optional)
  • Flour (Optional)
  • Oil for frying

Instructions

  1. Soak all the spices, ginger, garlic, tamarind pulp and Kashmiri chilies except oil in vinegar.
  2. Add salt.
  3. Also, add turmeric powder and chilli powder.
  4. Combine all nicely and soak for 35-40 mins.
  5. Grind the mixture until soft and smooth. Add more vinegar if required but ensure the paste has to be thick so add vinegar accordingly. If the masala paste is thin then it would not stick to the fish.
  6. Coat the entire fish with this paste. Marinate the fish for at least 30 mins.
  7. Place oil in a shallow pan, once oil is quite hot, shallow fry the stuffed Kingfish. If you want it to be crispy coat the fish with semolina and/ flour. Fry until 3 - 4 minutes each side.
  8. Serve the Recheado kingfish hot with salad, lime wedges, rice, and curry.
