These traditional Emirati crunchy dumplings is one dish that every Arab will have on their table spread for Iftar. Luqaimat is deep fried, yeast based dumpling that is usually drizzled with date syrup/ honey or even sugar syrup. Luqaimat literally means “little bites” and these are indeed little bites that you can’t get enough of! 

They are crunchy on the outside and mostly hollow on the insides, making it a really delicious “little bite” along with the drizzle of date syrup and a sprinkle of sesame seeds. These are very easy to prepare, you just to prepare the batter an hour in advance.

If your proportions of the yeast batter goes wrong, chances are that the dumplings can get oily, soggy or even flat. So you need to get your batter right.. for that, follow the instructions below: 


Ingredients:

  • 1 1/2 cups Lukewarm Water
  • 1 tbsp instant Yeast
  • 1 tbsp Sugar
  • 2 cups All purpose Flour 
  • 2 tbsp Corn Flour 
  • 2 tbsp Milk powder (optional)
  • 1/4 tsp Salt
  • 1 tbsp Oil 
  • Water
  • Vegetable oil, for frying
  • Sesame seeds for garnishing 

Instructions:

  1. In a bowl, combine the warm water, yeast and sugar. 
  2. To this, add in all the ingredients except for oil and mix and combine well using a whisk. 
  3. Now add in the oil and mix. Now, cover and set aside for an hour allow to rise.

  4. After one hour, wet your fingers with water and take a tiny bit of the batter with all your fingers and drop into hot oil. (The water helps the batter to slide off your fingers easily)

  5. Fry the dumplings until golden brown. 
  6. Top off with date syrup, honey or date syrup and garnish with sesame seeds. Enjoy! 

Ps: Make sure the oil is super hot before dropping the dumplings to the oil, or else chances are the dumplings can get oily.
You may also use a piping bag and scissors to drop the batter into the oil.

​ Emirati Chebab 




Chebab is an Emirati pancake made of slightly fermented batter using yeast, which is flavored with cardamom and saffron, usually enjoyed with honey and /cheese. It’s super easy to prepare and makes a great lunch box recipe too! 

Weekend breakfasts are mostly my favorite Chebab’s especially on a Friday morning…gives the whole Jumuah vibe..hehe

We as a family, gather around the table right before the husband goes for Jumuah and we have Chebab for brunch/breakfast for a glass of black tea or coffee, dry fruits and fresh fruits.

Chebab is widely served in most Arabic /Emirati restaurants as a breakfast dish. It is soft and super delicious too! It is a hit among the kids, they keep coming for more, well my Ms. Picky eater does! 😁

Let’s see how Chebab is prepared! 



Ingredients: (makes around 12 Chebabs)

  • 1 cup All purpose Flour 
  • 1/2 cup milk
  • 1 egg
  • 2 tbsp Sugar
  • 1/4 tsp Salt
  • 1 tsp yeast
  • Cardamom powder, a pinch
  • Saffron, a pinch 
  • 1 tsp Yeast
  • Little less than 1/2 tsp Baking powder
  • 100 ml water (a little bit more depending on the consistency) *
  • 1-2 tbsp Vegetable oil 


Instructions:

  1. In a bowl, pour the milk, egg, sugar , salt, yeast, baking powder, cardamom powder, saffron, and water.
  2. Gradually add in the flour little at a time and combine everything using a whisk.
  3. Cover with a cling wrap and set aside for around 30 minutes to ferment.

  4. On a non stick pan, pour ladlefuls of batter to form pancakes and wait for holes to form on the top and when batter looks slightly done, flip and cook the other side.


  5. Similarly do all of them.
  6. Serve them warm with Honey and Cream Cheese.





Notes: 

The batter should not be thick nor watery, somewhere between that, refer video/ reel for reference.

Saffron Golden Lattè 



The perfect soothing drink for winter evenings! This drink has so many health benefits and also helps lower stress level and helps improve sleep quality.
I love to have this drink if I have not cold already or have cough. Do not try this drink if you are already having symptoms of cold, as it may worsen your cold.

This drink helps in protecting against flu and I love to have this either in evenings or right before sleep. Make sure you add honey generously, it is a heart warming drink. Enjoy!

Ingredients: (makes for 1 person)


  • 1 cup Full Cream Milk
  • Turmeric, a pinch
  • 1/2 tsp Black pepper
  • 2 pieces Cinnamon
  • 1 Cardamom 
  • 1 Clove
  • 1 small piece ginger 
  • 2 tbsp Honey, generously
  • 1 tbsp Almonds, chopped
  • Saffron, a pinch

Instructions:

  1. In a tea pot, pour the milk, add a pinch of turmeric and mix it.
  2. Using a steel infuser ball or a small piece of clean cotton cloth or simply use a strainer once the ingredients have simmered well. Add the black pepper, cinnamon, clove, cardamom, and ginger and allow it to infuse in the milk.
  3. Once comes to a boil, simmer for 2 minutes and pour to your mug and honey generously, mix well.
  4. Add chopped almonds for a crunch and a pinch of Saffron and enjoy immediately!

 Honey Chilli Crispy Smashed Potatoes



Looking for a recipe that's savory, yet super easy to make to enjoy in this rain? I have got your back! It's been raining 3 days back to back and ordering food is my best bet xD But outside food does get boring and isn't very healthy, so I thought of something that required less dishes to wash and is quick to make and the honey Chilli Smashed Crispy potatoes were born! I have used medium-small potatoes here. I would suggest to get hold of the really tiny ones if possible, gives better texture when bakes. The potatoes are boiled and then smashed which is then baked to crispy perfection. The honey Chilli sauce is like liquid gold. I like to drop a dollop of the sauce over the crispy Smashed potatoes, so that the potatoes stay crispy. These are best enjoyed hot. 

From now on, I plan to write a lot about a particular recipe, if there is a back story etc, otherwie, I plan to keep my blog recipes simple and easy to navigate through. Hope this will help the blog grow in a better way :) 

Now to get back to the recipe.. If you like the sweet and spicy combo, I am sure you will love this one! Let's get to the ingredients...

Ingredients :

  • 1/2 kg Baby potatoes 
  • Salt, as required 
  • 3-4 Garlic cloves, minced
  • Freshly crushed pepper
  • Parmesan Cheese
  • 1 tsp Paprika 
  • 2-3 tbsp Olive oil
  • 1 tbsp Butter
  • 1/4 Red Chilli Flakes
  • 2 tbsp Sriracha Sauce
  • 1 tbsp Honey 
  • 1 tsp Black pepper powder
  • Sesame seeds and Parsley to garnish

Instructions:

  1. Preheat oven to 220 deg C.
  2. Boil the baby potatoes with some salt and place the potatoes on a baking tray lined with parchment paper and space them evenly.

  3. Smash the potatoes gently with a potato smasher and sprinkle, salt, freshly crushed pepper, Parmesan cheese, paprika and a drizzle of olive oil.
  4. Bake for 15 minutes each side, meanwhile, let's make the sauce.
  5. In a saucepan, drop butter, and add the minced garlic to the butter, once fragrant add the red chilli flakes, Sriracha sauce, honey and black pepper powder, a dash of water and allow to come to a boil and set aside.
  6. Onto the piping hot crispy Smashed potatoes, add dollops of the prepared sauce over the potatoes and garnush with sesame seeds and/ parsley.
  7. Serve hot!

 

Notes:

I have used medium-small potatoes here, I would prefer to use the small tiny ones for better texture.
You may air fry the potatoes too.

Effortless Cream Cheese Honeycomb Bread




I love it when a recipe is effortless, especially in the month of Ramadan, when it gets tiring to toil in the kitchen to make dishes that will be served to break your fast with. Usually, if we have a savory snack on the table, I always like to have a sweet snack by the side too, so that I don't fee the urge to binge on foodstuff like chocolates,etc.

Our family loves honeycomb bread, but little do I have the patience to knead, make balls and allow them to rise, especially when fasting! I was thinking of ways in which honeycomb bread could be recreated at home using basic ingredients available at home, and of course kept in mind that it shouldn't be time consuming nor oily nor uses oven.



Ta daa! Comes SAMOON* to the rescue! (*a long sandwich bread, commonly found in supermarket stores). This hack is such a life saver! It's like a last-minute thing that you can get done in jiffy, yet so addictive and delicious. The recipe uses only honey, which a natural sweetener, so again, it is definitely healthier. 

I love the combination of egg, cheese and honey, which is an acquired taste of the traditional Emirati snack called Regag from all these years living in Dubai. So that's when this honeycomb bread hack struck me. I loved everything about this recipe, except that it has a small drawback, ie, if you consume them immediately you don't get any eggy smell, but if you are planning to have it after a while, I would recommend you to use vanilla essence/ cardamom powder in the egg mixture if you do not want the eggy smell. 

My misters reaction when he had this for the first time made my heart was so full. He was so happy and asked why I never shared this recipe on my blog. So here you go guys! It's super easy too. Hub said that they were melt in the mouth good, so you can imagine how much of a keeper this recipe is! Alhamdulilah!

Let's make these delicious bItes.

Ingredients : (Makes 16)

  • 4 Samoon (cut in 4) *
  • Kiri Cream Cheese Cubes, cut into 4 cubes
  • 2 Eggs
  • 1/4 tsp Vanilla Essence (Optional)**
  • 1/4 Cup Whole milk
  • 2 tbsp Butter
  • 4 tbsp Honey
  • 1/2 tbsp White and Black Sesame Seeds each

Instructions:

  1. Cut the Samoon into 4 pieces and make a cavity underneath each piece using a knife, cutting half way through on each of them. 
  2. Now place a small piece of Kiri Cheese cube in the cavity and sealed the cavity by pressing down using the extra piece that was cut open.

  3. In a small bowl, crack in the egss, pour the milk and add vanilla/cardamom for flavoring, and add a pinch of salt and beat with a fork well. 
  4. Now using thongs, dip the samoon pieces one by one and place them on a hot pan smeared with butter, place the dipped samoon pieces on the pan, and Sprinkle sesame seeds on the upside of the bread and cook on all sides until the egg coating cooks well. 

  5. Finally, place them in a serving plate and drizzle with Honey as required. 
  6. Your melt in the mouth and effortless honeycomb bread is ready to devour! 😍 😍 😋




 

Notes:

*Please do not use stale samoon bread.
**You may use Cardamom Powder or Vanilla Essence for removing eggy smell from the eggs.

Baklava Mini Bundt Cake with Honey Glaze




Howdy Folks? Finally my LO gets her mid term break and this calls for celebration. Haha! Little pleasures of life.. I tell you! So I decided to celebrate doing what I love doing the most.. Experimenting! 

Last week I happened to have Baklava and currently the only thing that I crave for is baklava. Baklava is a sticky sweet made of filo pastry brushed with pure ghee or butter, filled with chopped nuts and drenched in sugar syrup w/wo honey. The crunchy texture of nuts and crispy from the buttery filo pastry and the citrus flavor from lemon which is added to the sugar syrup binds all the different flavors together into a delicious sweet which originates from the Ottomon Empire.

This Baklava mini Bundt cake is inspired from the Traditional Baklava. Though this recipe doesn't use Filo Pastry, we take the good stuff i.e., the nuts and the base that of ghee cake with a hint of cinnamon and drizzled with honey icing and topped with caramelized nuts and pistachios.

Baklava is a time consuming process, which is why I rarely prepare them at home. Now this innovation of mine is just so easy. Basically no efforts at all. I bet even little kids can make this yummy cake.
Though I have prepared the cake in mini bundts, you may use a loaf cake pan or a normal bundt cake pan. The mini one's are cute and bakes in no time. I am sure if you try this for a tea party, it is definitely going to be a show stopper. 





If you think you ain't great at baking, this recipe is for you. It is a no-fail recipe. If you plan to bake ghee cake, just double the quantity of ghee. And aah, your house will smell so good while the oven gets its job done. Once the mini cakes are done, allow it to cool on a cooling rack for 10 minutes and flip it. The 10 minute timing is perfect for the bundt cakes to fall off, to be on the safer side, don't forget to grease the inner nooks and corners well.



The flavors are sooo good. They honey icing is killer. I added a dash of cream, but if you prefer the lemony zest, add in a squeeze of lemon instead of the cream.* If you love ghee cakes and caramelized nuts, you are definitely in for a treat! 

Ingredients:

Cake Batter:

  • 1 Cup All Purpose Flour/ Patent Flour
  • 1/4 Cup Ghee
  • 1/2 Cup Full Fat Fresh Milk
  • 1/2 Cup Sugar
  • 1 Egg
  • 1 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • 1 tsp Vanilla Essence
  • A pinch of Cinnamon Powder
  • A pinch of Salt


Honey Glaze:

  • 2 tbsp Room Temperature Butter
  • 1/4 cup Honey
  • 3/4 cup Powdered Sugar
  • 1 tsp lemon/ cream*

Topping:

  • 1/4 cup butter
  • 1/2 cup chopped nuts
  • 1 tbsp honey
  • A pinch of light brown sugar


Instructions:

Baklava Bundt Cake:

  1. To prepare the mini bundt cakes, preheat the oven to 180 Deg C. Prepare your pan by greasing all the corners of the bundt pan using any flavorless vegetable oil and/ ghee.
  2. Combine the dry ingredients like flour, baking soda and baking powder and set aside.
  3. Next in a deep bowl, cream your ghee and sugar.
  4. Add in your milk and vanilla essence; whisk until creamy.
  5. Crack in your egg and mix well to combine.
  6. Now add in your flour mixture and fold everything well to a cake batter.
  7. Now slowly using an ice cream scooper, a piping bag or a normal tablespoon, spoon in your batter into the cake pan.
  8. Place the pan in the preheated oven for around 15 minutes or until a tooth pick inserted comes out clean.
  9. Allow the pan to cool exactly for 10 minutes on a cooling rack.
  10. Invert the mini cakes from the pan and to cool completely while we prepare the topping and the icing.



Topping:

Into a small non stick pan, add in your butter, brown sugar, chopped nuts (almond, pistachios, walnuts) and honey and allow to thicken and switch off and drop onto a baking paper whilst still hot and allow to cool. While the nuts topping cools, lets prepare the honey glaze.

Honey Glaze:

  1. Combine honey, powdered sugar, butter and lemon juice/ cream and make sure it is not too thick nor too watery. Reduce your lemon juice/ cream accordingly.
  2. Drizzle over the top of the cooled mini bundt cakes and garnish with your prepared nuts topping or slivered pistachios. Serve Immediately or you may keep the cake for up to 3 days in room temperature.



Note:
Please do not use cream if you happen to use lemon, as this might cause the icing to curdle.

Overnight Chia Oats with Blueberries and Kiwi



Mirror Mirror on the wall, which is the easiest and healthiest breakfast of them all?
It is definitely these Oats Chia Pudding!

It is not only a piece of cake to make this nutrient-boost/on the go breakfast with has full of life. Who wouldn't love to have a dessert/pudding right in the morning? This is not only going to give you your full potential to your day but will keep you full for a long time. Now ain't we looking for something like that, huh? We all might have had those days where we wanted to eat healthily but don't know how to start healthy. Well, this is absolutely dedicated to you guys. Well, I do not have a step by step image of this one, but hey, even a 5-year-old can make this! It's that simple. 

Ps: I wasn't actually planning to post this on the blog, this explains why there isn't a step by step recipe. *Posting because of popular demand!😊

Let me be frank here, I am not a big fan of oats that is made into porridge. I actually feel empty within an hour or so when I have oats in the morning. So I pretty much don't like it, it is like the last resort I think of when it comes to breakfast ( like when there is only milk and oats to hog in the morning😬)

However, this cold oats pretty much changed my perspective on cold food; when you are up from the bed. You are going to love your mornings when you make such delights. These creamy, rich and nutritious, slightly sweet course is undoubtedly going to make it to your favorite breakfast menu. Your fam is going to love you even more. 




All I do is grab my jar of Oats that has been sitting in the fridge since last night or 2 and grab a few berries and fruits or if I am much more in a hurry just put in a dash of dry fruits and voila! Delicious and filling breakfast ready! Hassle-free mornings are the best. Aren't they? So what are you waiting for? Grab your mason jars and get ready to indulge! 


You will need: 

  • A Mason Jar or any type of Glass Jar that has a covering
  • 1/2 Cup Oats 
  • 2 Tablespoon Chia Seeds (or more)
  • 1 Cup Unsweetened Almond milk/ Cow's milk
  • A pinch of Salt
  • A pinch of Cinnamon Powder
  • 2-3  Tablespoon Maple Syrup or Honey (I added both)
  • Cereals (Optional)
  • Walnuts/Almonds (Any dry fruit - Optional)
  • Fruits/ Berries (I used Kiwi and Blueberries)


Instructions:


  1. Combine Chia seeds, Oats, Almond milk, Salt, Cinnamon Powder, Maple Syrup and Honey in a mason jar or a glass container. Give it a good shake or mix.
  2. Place it in the refrigerator overnight.
  3. Give the mixture a good stir to make sure the chia seeds have soaked up all the goodness.
  4. You may add in berry puree or fruit smoothie for some extra craziness, but I prefer bite-size fruits in my jar.
  5. Top up with some cereals for crunch, any dry fruits (I used walnuts), fruits and berries. (all these are optional)
  6. Voila! Your Oats is ready to be relished.
