Healthy Oats Khichdi

My go to recipe when I want to cook up something quick and dump in all the veggies in my fridge! And this one tastes so comforting that you won’t even feel you are eating healthy, but if course be easy on the portion you take too.

Usually Khichdi is made with veggies or is more of a vegetarian dish (that’s what I know) but since my family loves chicken and instead of using store bought chicken cubes, adding the boneless chicken not only oomphs up the flavor but also gives you extra protein.

Add in whatever veggies you have in your fridge, potatoes, peas, bell peppers, etc cauliflower is also a great add on! I love cauliflower in Khichdi. This is such an amazing way to get your kids veggies..I tell you..they will ask for more!! 😁

Ingredients:

  • 1 1/2 cup Whole Oats
  • 1/2 cup Moong dal
  • 1-2 tbsp Ghee
  • Hing/ Asafoetida, a pinch
  • 1 tbsp Olive oil or any neutral oil
  • 1 Onion, chopped finely
  • 1 tbsp ginger garlic paste
  • 1 cup Button Mushrooms, sliced

  • 150 gms Boneless Chicken, sliced into small thin strips
  • 1 tsp Jeera/ Cumin
  • 1 Sprig Curry leaves
  • 4-5 cups Water
  • Salt, as required
  • 1 tsp White pepper
  • 1/4 tsp Turmeric powder
  • 1/2 tsp Red Chilli powder
  • 1-2 Green Chillies, optional
  • Coriander leaves, finely chopped for garnish
  • Lemon slice, for garnish

Instructions:

  1. In a pressure cooker wash the moong dal and add it into the pressure cooker and add in the oats and add salt as required. Pour in around 3 cups of water and allow to cook on medium high for 2 whistles.

  2. In a large heavy bottom pan, pour the ghee and splutter the cumin, and a pinch of hing and add in the curry leaves.
  3. Next add in the ginger garlic paste and add in the chopped onion and sauté well.
  4. Next add in the chicken slices and add salt and pepper as required and cook well for around 4-5 minutes.
  5. Next, pour a little olive oil and add in the veggies and cook well and finally add in your spices and the cooked mushy oats and moong dal.

  6. Add in some more water for the desired consistency and salt as required, pepper and finally add in a squeeze of lemon and ghee (if required).

Healthy Oats Pancake
with Caramelized Cinnamon flavored Banana Slices

Anything healthy and delicious is game for me. I love how easy and versatile this Oats Pancake recipe is. With a handful of basic ingredients found at home, you can easily make these pancakes at home. My favorite add ons are fresh fruits, especially blueberries, strawberries, kiwi and honey while for my girl it's always her favorite chocolate chips with chocolate sauce.

Like I said that these Pancakes are versatile, I added my own touch by caramelizing just ripen robust bananas in a caramel sauce, ohh boyy they are sooo good!! This was completely spontaneous, I usually don't do these extra sauces, unless it's for some special occasion. But this one is such a keeper! I know the pictures don't look that tempting, but the truth is they dont do justice to how yum the sauce is that goes so well with theseoat pancakes.

These pancakes make a great lunchbox idea for kids, they are yummy and healthy too. I was first treated to these yummy goodies when  my friend cum relative invited me to her home for breakfast and I was wowed by how easy yet yummy they were and I couldn't clearly make out that it was prepared using something like oats that is fibrous yet very difficult to convince the kids to eat. Such a great idea! Thanks Buraida for introducing Oats Pancakes to me. <3

If you are in a hurry these pancakes are the best as they can be completely made directly in a blender or made using a hand held blender like I did. So much less dishes to wash and directly pour the batter to the butter greased pan and voila! So easy peesy! Let's see how it's made...

Ingredients :

  • 1 medium ripe or over ripe Robust Banana
  • 1 Egg
  • 1/4 cup Water/ Milk (adjust if more required)
  • 1 tsp Vanilla Essence
  • 1 1/2 cups Old Fashioned Oats
  • 1/4 tsp Baking powder
  • 1/4 tsp Baking Soda
  • 1 Tbsp Yogurt
  • Salt, a pinch
  • 2 tbsp Unsalted Butter
  • Blueberries, to top

For Caramelized Banana Slices

  • 1/2 just ripened Banana slices
  • 2-3 tbsp Honey
  • Cinnamon powder, a pinch
  • Agave Syrup/ Honey

Instructions:

  1. In a bowl add all your Pancake ingredients except for bluberries and blend well using a hand blender or a machine blender.
  2. In a butter greased pan, pour 1/4 cup full of the batter to the pan, making 2-3 pancakes at a time (depending on the size of your pan). Drop a few Blueberries over the pancake and flip. Allow to cook well on both sides.
  3. Place the pamcake on a serving plate.
  4. To the same pan, add butter and drop in your sliced bananas, honey, Cinnamon powder and toss for a few seconds.
  5. Now slide the Caramelized bananas directly over the cooked pancakes and enjoy warm with a glass of fresh juice for a refreshing and delightful day ahead!

 Skillet Granola

I love days when my day starts with a bowl of Granola, it is light on the tummy, super Nutritious and delicous. Granola once prepared, can be stored in an air tight container and can be used upto a couple of months. The case here is that, Granola always vanishes to thin air, and mostly I will have to hid the jar, or else the next morning the jar gets empty. I love how the sweet crunchy oats marries well with the beaten yogurt and fresh fruits and berries.

Such an underrated breakfast I must say. I feel so pumped up in the morning whenever I eat granola. The perfect breakfast when you have little to no time to prepare food for yourself. The skillet granola is such a good hack, when you want to make granola and you don't have access to oven. While making on a skillet, make sure you keep stirring the granola, so that the rolled oats does not get burnt, especially once you add honey, the chances of burning are high. But making granola on a skillet is much easier, as you can make sure, nothing gets burnt and the granola gets crispy pretty quickly. Do try this super easy breakfast and I am sure you will love it!

Ingredients :

  • 1 1/2 - 2 cups whole Rolled Oats
  • 1/4 cup Coconut oil
  • 5-6 tbsp Honey/ maple syrup
  • 1 tsp Vanilla Essence
  • Salt, a pinch
  • 1/4 cup Healthy Nut Mix
  • 1/2 cup Yogurt
  • 1/4 cup berries
  • Fresh fruits of your choice
  • 1 tsp Chia seeds

Instructions:

  1. In a pan, pour coconut oil and add in your rolled oats, keep tossing until crisp.
  2. Once you feel the oats are crisp, add in your sweetener, honey. Combine well.
  3. Next add Vanilla Essence, salt, and health nuts mix and toss again.

  4. Whilst hot, transfer the granola to a baking paper and allow to cool.

  5. You may tap and shape into a rectangle, either way, allow to cool and crisp. Once cooled, break the granola pieces between your fingers/ palms so that the granola is not joined into a bar.
  6. In a bowl, whisk yogurt well, and add the crisp granola as topping along with fresh fruits and berrie and a teaspoon of chia seeds.

 Easy Homemade Chicken Nuggets

We are all in search of the best recipes when it comes to pack lunch for kids. I completely detest the frozen chicken Nuggets that come in the supermarkets, as we do not know what all goes into it. So I try and make these ahead of time, super easy to make too. I made the chicken Nuggets with hormone free boneless chicken cubes.

The addition of mayonnaise helps the chicken to tenderize and makes the Nuggets even more delicious. Make these Nuggets ahead of time (during the weekend) and your kids are going to love their lunch time. And for us mommies, we can feel guilt free too. I served the Nuggets on lettuce, you may place them inside bread slices as a sandwich or however you desire.

Chicken Nuggets are loved by kids worldwide. So I am sure your kids will love them! It is always a hit here. To bring in the right coating texture I used 3 different ingredients to bring out the texture, I used plain cornflakes, rolled oats and a little amount of bread crumbs. Do try and let me know how your kids liked them!

Ingredients : (makes 12 Nuggets)

  • 250 gms Boneless chicken
  • 1 tbsp Mayonnaise
  • 1 tsp Garlic powder
  • 1/2 tsp Paprika Powder
  • 1 tsp White Pepper Powder
  • 1/4 tsp Parsley (dried, optional)
  • Salt, as required
  • 1-2 tbsp Bread Crumbs, if required

For coating:

  • 2 Eggs
  • 1/2 cup Maida/ All Purpose Flour
  • 1/2 cup Cornflakes
  • 1/4 cup Rolled Oats
  • 1/4 cup Bread Crumbs

Instructions:

  1. In a food processor, pulse boneless chicken cubes with mayonnaise , garlic powder, paprika powder, white pepper powder, and dried parsley. Pulse and check the consistency, if required add a couple of tablespoons of bread crumbs and pulse once again. (make sure not make a paste)
  2. Onto a parchment paper/ baking paper add the chicken mixture and with the help of oiled hands flatten using using your fingers and shape the nugget mixture to a neat square, cover using the overlying baking paper from all sides and store in the freezer for around 20-30 minutes, this step will help you slice the chicken nugget block into perfect sized Nuggets.
  3. Remove the nugget block from the freezer and using a sharp and oiled knife, cut the chicken nugget block into equal sized nuggets.

  4. In a dry grinder, pulse cornflakes, rolled oats and bread or bread crumbs.

  5. Now dip the nugget into beaten eggs and then dip in the flour and repeat the process, now dip in egg again and coat in the cornflake mix.

  6. In a freezer safe container place the prepared Nuggets using a baking paper before placing another layer of nuggets, or immediately fry for 3-4 minutes each side on medium flame.

  7. Serve with ketchup or any of your favorite dips.

Dates and Oats Smoothie

Ramadan is almost here! And this is one of my favorite drinks to have at the time of iftar. This one drink is enough to quench your thirst and fill your tummies. Also perfectly refreshing during summer. 😍👌
This milkshake is super nutritious. And you instantly feel that zing in your energy levels. Feel free to use Almond milk if you are lactose intolerant. Dates are rich in anti oxidants too.
Try this drink for iftar and you can thank me later. 😉😁❤️

This can make a perfect breakfast or food for anytime of the day. I guarantee you that you will instantly feel so good when you drink this. It's more like food for the body. Just 3 ingredients and voila you have the most simple, delicious and healthy smoothie ever!

The story behind this smoothie is that I always love to try new drinks for Ramadan. Well, we all face that time during Ramadan when you don't have the energy or time to shop and you need to fill your tummies with whatever is at home. So I thought of dates as dates are in abundance in the time of Ramadan at every home and also oats are really nutritious. So I was thinking of preparing a smoothie that wouldn't be headche, like finding many ingredients.. This smoothie is one that can be definetly tried by everyone at home.. Since these are basic ingredients..
I love dates.. Having at least 2 of them in a day makes a whole lot of difference.. Especially its high in Iron. Also there no requirement for artificial sweetener but if you really think it's not sweet enough feel free to add in some honey or extra dates.

When I first made this here, everyone did not like the taste at the first sip. But as you drink it, you taste the flavors more and makes you feel good. The flavors that come from this are strictly from the roasting of the oats that brings in that nutty flavor. You need to roast the oats well on low until a beautiful aroma comes in. Be careful not to burn it.
I don't know how exactly to describe the flavor. You definitely need to try it. It's super delicious 😋

Ingredients :
  • 8-10 Dates deseeded
  • 2 cups Ice cold milk
  • 5 - 6 tbsp oats
  • Date syrup for styling
  • Chocos/nuts for garnishing

Instructions:
  1. Soak the dates in warm milk for 5-10 minutes.

  2. Whilst the dates soak, roast the oats on low until a beautiful aroma comes. Be careful not to burn it.
  3. Next add the deseeded dates and oats along with the soaked milk in a blender and blend well.
  4. Now add the rest of the milk and pulse.
  5. Style your glasses by pouring the dates syrup and immediately pour the smoothie and garnish with nuts or chocos for a crunch!
  6. Your healthy smoothie is ready!

Notes:
  • For extra thickness add in extra roasted oats at the final pulse.
  • Try to use ice cold milk or you may add ice cubes, if so adjust the sweetness accordingly by adding honey or extra dates.
  • Roast the oats well without burning on low flame. That's where the delicious taste comes from.

Oats Chicken Soup

Winter in Dubai is bliss!😻 The perfect weather, which calls for outings, that is, more family time. The most favorite few months in Dubai, it comes and goes in a blink. Trying to make the most of this beautiful season, is what every person wants to do in #mydubai. Dubai has a lot of outdoor activities, everyone embraces winter with wide open arms. It's the best feeling. But along with it comes cold and flu.😷 May the Almighty protect everyone. Aameen.

I created the recipe for the soup many years ago when I felt I wasn't satisfied with the soup ideas on the internet then. Me and my family was ill and I didn't want to eat anything, like duh? This soup is so wholesome, it has veggies, chicken and oats, which is perfect for your metabolism, especially when you are ill. I am not a big fan of kanji (A South Indian rice water soup/porridge). I do not like to have kanji for than a day. Hence this recipe happened.

Since it is a soup it contains water which is most essential when you catch a cold or fever. And it contains oats, which has carbs and fiber and many other essential nutrients. You may add in any veggies like carrots, beans, cauliflower, broccoli, mushrooms (I like to sautee my mushrooms and then add them to the soup) etc. This soup is a perfect dinner idea too, especially in this weather, it is heavenly! It is so simple... doesn't even take half an hour from start to finish. Not only does it taste delicious it fills your heart and soul with warmth which is why I named it chicken soup for the soul! Happy taysting! 😋

INGREDIENTS

  • 1 medium Onion Finely Chopped
  •  3 Garlic Cloves minced
  • 1-2 cups quick cooking white Oats (depending on the thickness of the soup)
  • 1/2 Carrot
  • 1/2 cup French Beans
  • 1/2 cup Broccoli
  • 2 tbsp white vinegar
  • 3/4 cup Corn (cause I love corn)
  • 150 gm chicken breast
  • 1 tablespoon Butter
  • 2 tablespoon Olive Oil
  • 1 teaspoon freshly ground Black pepper
  • 1 teaspoon white pepper (Optional)
  • 1/4 teaspoon crushed chili flakes (Optional)
  • 1 Maggi Chicken Cube (Optional)
  • Spring Onions to garnish
  • Salt to taste

INSTRUCTIONS

  1. Soak the vegetables with white vinegar for 15-20 minutes.
  2. Boil the chicken breast with water covering the chicken, add salt and ground pepper.
  3. Now take a big pot or non-stick casserole on a medium-high flame, put in the butter and olive oil. Once the butter has melted immediately add in the minced garlic and saute till the raw aroma goes. Be careful not to burn the garlic and onions.
  4. Next, add in the finely chopped onions, add a little salt and saute till translucent.
  5. Now add in the Oats about 1 cup and increase gradually if needed after checking the consistency when the water is added and the soup boils. Sautee the Oats with the garlic and onions for a couple of minutes and add in the veggies and saute the veggies for a couple of minutes. (Ps. You may add in the chicken cube/freshly made chicken stock at this stage)
  6. Now add in 4-5 Cups of water, freshly ground black pepper, chili flakes, white pepper powder, and salt according to requirement (the stock already has salt).
  7. Let it boil till the veggies are done. Check if the soup is thick enough (the oats acts as a thickening agent here), add more oats if required. Add in the chicken (you may slice the chicken to make pieces or you may use a fork to shred it)
  8. Give it a good stir and let it boil for about 5 minutes and your soup is done.
  9. Serve in soup bowls and garnish with chopped spring onions. Serve warm.

Note:

  • If using mushrooms you may saute them in little butter/olive oil and add in a splash of soy sauce when the mushroom gets done and salt if required.
  • You may use the white part of the spring onions chopped finely, and sautee when you add in the onions.

It is not only a piece of cake to make this nutrient-boost/on the go breakfast with has full of life. Who wouldn't love to have a dessert/pudding right in the morning? Well, I do not have a step by step image of this one, but hey, even a 5-year-old can make this! It's that simple.

Ps: I wasn't actually planning to post this on the blog, this explains why there isn't a step by step recipe. *Posting because of popular demand!😊

Let me be frank here, I am not a big fan of oats that is made into porridge. I actually feel empty within an hour or so when I have oats in the morning. So I pretty much don't like it, it is like the last resort I think of when it comes to breakfast ( like when there is only milk and oats to hog in the morning😬)

However, this cold oats pretty much changed my perspective on cold food; when you are up from the bed. You are going to love your mornings when you make such delights. These creamy, rich and nutritious, slightly sweet course is undoubtedly going to make it to your favorite breakfast menu. Your fam is going to love you even more.

All I do is grab my jar of Oats that has been sitting in the fridge since last night or 2 and grab a few berries and fruits or if I am much more in a hurry just put in a dash of dry fruits and voila! Delicious and filling breakfast ready! Hassle-free mornings are the best. Aren't they? So what are you waiting for? Grab your mason jars and get ready to indulge!

You will need:

  • A Mason Jar or any type of Glass Jar that has a covering
  • 1/2 Cup Oats
  • 2 Tablespoon Chia Seeds (or more)
  • 1 Cup Unsweetened Almond milk/ Cow's milk
  • A pinch of Salt
  • A pinch of Cinnamon Powder
  • 2-3  Tablespoon Maple Syrup or Honey (I added both)
  • Cereals (Optional)
  • Walnuts/Almonds (Any dry fruit - Optional)
  • Fruits/ Berries (I used Kiwi and Blueberries)

Instructions:

  1. Combine Chia seeds, Oats, Almond milk, Salt, Cinnamon Powder, Maple Syrup and Honey in a mason jar or a glass container. Give it a good shake or mix.
  2. Place it in the refrigerator overnight.
  3. Give the mixture a good stir to make sure the chia seeds have soaked up all the goodness.
  4. You may add in berry puree or fruit smoothie for some extra craziness, but I prefer bite-size fruits in my jar.
  5. Top up with some cereals for crunch, any dry fruits (I used walnuts), fruits and berries. (all these are optional)
  6. Voila! Your Oats is ready to be relished.
