​ Emirati Chebab 




Chebab is an Emirati pancake made of slightly fermented batter using yeast, which is flavored with cardamom and saffron, usually enjoyed with honey and /cheese. It’s super easy to prepare and makes a great lunch box recipe too! 

Weekend breakfasts are mostly my favorite Chebab’s especially on a Friday morning…gives the whole Jumuah vibe..hehe

We as a family, gather around the table right before the husband goes for Jumuah and we have Chebab for brunch/breakfast for a glass of black tea or coffee, dry fruits and fresh fruits.

Chebab is widely served in most Arabic /Emirati restaurants as a breakfast dish. It is soft and super delicious too! It is a hit among the kids, they keep coming for more, well my Ms. Picky eater does! 😁

Let’s see how Chebab is prepared! 



Ingredients: (makes around 12 Chebabs)

  • 1 cup All purpose Flour 
  • 1/2 cup milk
  • 1 egg
  • 2 tbsp Sugar
  • 1/4 tsp Salt
  • 1 tsp yeast
  • Cardamom powder, a pinch
  • Saffron, a pinch 
  • 1 tsp Yeast
  • Little less than 1/2 tsp Baking powder
  • 100 ml water (a little bit more depending on the consistency) *
  • 1-2 tbsp Vegetable oil 


Instructions:

  1. In a bowl, pour the milk, egg, sugar , salt, yeast, baking powder, cardamom powder, saffron, and water.
  2. Gradually add in the flour little at a time and combine everything using a whisk.
  3. Cover with a cling wrap and set aside for around 30 minutes to ferment.

  4. On a non stick pan, pour ladlefuls of batter to form pancakes and wait for holes to form on the top and when batter looks slightly done, flip and cook the other side.


  5. Similarly do all of them.
  6. Serve them warm with Honey and Cream Cheese.





Notes: 

The batter should not be thick nor watery, somewhere between that, refer video/ reel for reference.

Healthy Oats Pancake 
with Caramelized Cinnamon flavored Banana Slices



Anything healthy and delicious is game for me. I love how easy and versatile this Oats Pancake recipe is. With a handful of basic ingredients found at home, you can easily make these pancakes at home. My favorite add ons are fresh fruits, especially blueberries, strawberries, kiwi and honey while for my girl it's always her favorite chocolate chips with chocolate sauce.

Like I said that these Pancakes are versatile, I added my own touch by caramelizing just ripen robust bananas in a caramel sauce, ohh boyy they are sooo good!! This was completely spontaneous, I usually don't do these extra sauces, unless it's for some special occasion. But this one is such a keeper! I know the pictures don't look that tempting, but the truth is they dont do justice to how yum the sauce is that goes so well with theseoat pancakes.

These pancakes make a great lunchbox idea for kids, they are yummy and healthy too. I was first treated to these yummy goodies when  my friend cum relative invited me to her home for breakfast and I was wowed by how easy yet yummy they were and I couldn't clearly make out that it was prepared using something like oats that is fibrous yet very difficult to convince the kids to eat. Such a great idea! Thanks Buraida for introducing Oats Pancakes to me. <3

If you are in a hurry these pancakes are the best as they can be completely made directly in a blender or made using a hand held blender like I did. So much less dishes to wash and directly pour the batter to the butter greased pan and voila! So easy peesy! Let's see how it's made...


Ingredients :

  • 1 medium ripe or over ripe Robust Banana
  • 1 Egg
  • 1/4 cup Water/ Milk (adjust if more required)
  • 1 tsp Vanilla Essence 
  • 1 1/2 cups Old Fashioned Oats
  • 1/4 tsp Baking powder
  • 1/4 tsp Baking Soda
  • 1 Tbsp Yogurt
  • Salt, a pinch
  • 2 tbsp Unsalted Butter
  • Blueberries, to top
 

For Caramelized Banana Slices

  • 1/2 just ripened Banana slices
  • 2-3 tbsp Honey
  • Cinnamon powder, a pinch
  • Agave Syrup/ Honey

Instructions:

  1. In a bowl add all your Pancake ingredients except for bluberries and blend well using a hand blender or a machine blender.
  2. In a butter greased pan, pour 1/4 cup full of the batter to the pan, making 2-3 pancakes at a time (depending on the size of your pan). Drop a few Blueberries over the pancake and flip. Allow to cook well on both sides.
  3. Place the pamcake on a serving plate.
  4. To the same pan, add butter and drop in your sliced bananas, honey, Cinnamon powder and toss for a few seconds.
  5. Now slide the Caramelized bananas directly over the cooked pancakes and enjoy warm with a glass of fresh juice for a refreshing and delightful day ahead!

Pepperoni Pizza Pancakes



I am all in for easy recipes especially for iftar and if it is oil free and healthy double points! 😍 😍

I made a batter that can be used as a pizza base and requires no oven.. Pizza made on a pan with a simple batter. To make it healthy I have used half wheat flour and half of all Purpose Flour* and just a tbsp of olive oil. 

For toppings you may use any pizza sauce/bbq/ ranch sauce. I just used a basic pizza sauce here, that I demonstrate in the video/ recipe. I wanted to make mini pepperoni Pizza. But since the real pepperonis were too big for these mini pizza pancakes, I dehydrated my sliced sausage in the oven, for that crispy pepperoni look. Pepperonis are basically sausages with pepper. You may add pepper prior to baking if you like. 


This pancake pizza was such a hit! I was so happy to see the happy faces. The batter shouldn't be too thick not too thin, just make sure to prepare a batter with no lumps. The dry ingredients are gradually added one tbsp at a time to the wet ingredients. This batter method is easy during iftar preps so that you don't end up with messy hands, which happens while making the real pizza. 

You may use onions and other toppings as per your taste. Pizza is something that adults and kids unanimously love, so it is definitely going to be a hit on your iftar table and healthy and oil free too. 


Ingredients :

  • 7-8 Chicken Sausages / Franks
  • 1 Cup All Purpose Flour 
  • 1 Cup Whole wheat flour
  • 1 egg
  • 1 cup warm milk
  • 1/2 cup warm water
  • 1 tbsp melted butter 
  • 1 tsp baking powder 
  • 1 tsp instant yeast 
  • 3 tsp Sugar
  • Salt as required 
  • 1/4 cup Chopped Capsicum 
  • 1/4 cup Black Olives, sliced
  • 1 cup Shredded Mozzarella 

Tomato Sauce Base:

  • 3 tbsp Tomato paste
  • 2 tbsp Tomato Ketchup 
  • 1/4 tsp Oregano 
  • 1/2 of a Garlic clove, minced
  • 3 tbsp Water 
  • Salt, as required 

Instructions :

  1. To prepare your Pizza Sauce, in a bowl, add tomato paste, tomato ketchup, Oregano, minced garlic clove, salt and water, mix well. 
  2. Slice your sausages thin and place on your baking tray lined with baking paper, sprsy some oil and bake for around 10 minutes or until almost crisp. *

  3. In a bowl prepare your dry ingredients, ie, all Purpose Flour, whole wheat flour, baking powder, instant yeast, sugar and salt and mix well with a dry whisk and set aside. 
  4. In another bowl, pour your lukewarm milk, lukewarm water, melted butter, egg and mix well. 
  5. Slowly and gradually add in your dry ingredients to your wet ingredients bowl, 1 tbsp at a time, so that no lumps form. 
  6. Mix well and make sure there are no lumps. 
  7. In a pan, greased with some olive oil/ butter pour your batter and cook covered for 3-4 minutes on low. 
  8. Open the lid and spread your pizza sauce, add in your toppings, here I have used finely chopped Capsicum and sliced black Olives, Shredded Mozzarella and Pepperoni (prepared earlier).

  9. Cover and cook until cheese melts. 
  10. Your no Bake, 20 minute Pepperoni Pizza Pancakes are ready! 😋😋🍕

Notes:

  • *You may add pepper powder on your sausage prior to baking. 
  • You may also shallow fry the sliced sausages if you do not have an oven. 
  • You may use only all Purpose Flour for better texture and results. But since it's for iftar, I wouldn't want to have it that way.
  • For easier pouring of pizza batter, to get perfect rounds, you may use a small pan for it, in which you will to pour one pizza base at a time. 
  • You may use toppings like cooked chicken, Mushroom, sliced onions etc.

Blueberry Dutch Baby Pancakes




May peace and blessings be upon you all.

Okay, I am back here after a month of vacay and it literally feels likes ages, my in laws were here with me and it was a month well spent, alhamdulilah ❤ . Ramadan is just a few days away and I cannot wait to share with you iftar recipes. But today I am presenting you guys with German origin custard-crusty pancakes called Dutch Baby Pancakes with a Blueberry twist. Weekend breakfast is always a thing! If you have such easy on-the-go recipes in hand to kickstart an awesome weekend, why worry?! 😀

My little one is having her spring break and I am more happy than her to get some relief from e-learning 😁😁 Now weekends are the only days I get to experiment on breakfasts and one fine day I made these delicious, super easy pancakes and my daughter wiped clean her plate. When a fussy eater like her, likes such easy breakfasts, the recipe definitely becomes a keeper!

So easy to prepare, yet it has its own speciality. I call it a simple yet effective breakfast because you just have to prepare the batter and pour out the contents to your butter greased cast iron pan and the oven does the job for you. As simple as that! So you can summarize Dutch babies as crepes in the form of pancakes. 

You may use any pan or casserole that is oven safe, the batter puffs up as heat hits the pan. I have added a few blueberries before baking, you may either use a Compote (if you dislike blueberry's natural sourness), add other berries like raspberry or blackberry or avoid all and keep it plain. Serve it right away by adding in fresh fruits, or a Sprinkle of Icing sugar or strawberry sauce, maple syrup, honey butter etc. I'd also recommend using room temperature ingredients for better texture. Use butter liberally so that the batter does not stick to the pan. Without further delay let's get our basic ingredients that everyone has in their pantries. And bake a huge giant pancake that is the easiest and mess free!  



Ingredients :

  • 3 large eggs
  • 1/2 cup patent flour/ all purpose flour
  • 1/2 cup full fat milk at room temperature  
  • 1 tbsp sugar
  • 3 tbsp butter
  • 1 tsp Vanilla extract 
  • A pinch of salt
  • 1/4 Blueberries or Blueberry Compote (any berries of your choice)


Instructions:

  1. Preheat the cast iron pan in a preheated oven at 200 °C for around 5 minutes. 
  2. In a bowl incorporate all the ingredients like eggs, flour, milk, sugar, salt, and vanilla and combine well using a whisk. 
  3. Now safely remove the cast iron pan from the oven using mittens and drop in 3 tbsp of butter and swirl the pan so that the bottom of the pan is covered in butter. 
  4. Pour in your batter to the hot and buttered pan and drop in your blueberries, preferably Compote and allow to bake for 15-18 minutes, until the Dutch baby pancake is puffed or the sides turn golden brown at the edges. 
  5. Carefully remove the pan from the hot oven using mittens and serve immediately with your favorite toppings and sauce. 


Notes:
  • Use cast iron for best results. However any type of Dutch oven or oven safe casserole dish would do. 
  • Dutch Baby Pancakes require a good amount of butter, which adds to its taste and also helps the pancake to come off the pan easily. 
  • The pancake can rise and have a shapeless outcome which is totally natural and has a divine beauty in itself. 
  • You may prepare these pancakes without any berries or you may use any berry sauce, fresh fruits or Icing sugar as a garnish.

Cinnabon inspired Cinnamon pancakes with Cream Cheese Icing



Good evening ya'll!

I can't wait for the winter vacation. Like literally! This e-learning experience is the worst. Sometimes gets on my nerves, especially if you have a child doing their kindergarten. So exhausting! And every day in the morning I just sit so blank as I have no time to prepare anything fancy. The breakfast or lunch here since distance learning started has been so boring which otherwise never happens here.



I kept scrolling my phone whilst I got some time to chill once my LO's break time happened, just looking for inspiration 😉
But my my even 5 minutes in break time is precious. But I was wanting to cook something exciting. And not the every day stuff. So all that came to my mind was pancakes! And I was sick of all the basic combinations like maple syrup, honey, Lotus biscoff, bananas, blueberries and other berries etc. Suddenly I had this craving for Cinnabon rolls. So I asked the Mister if he was okay with cinnamon flavor for pancakes. He nodded and then and there I knew I had to do this! 😍 And the Cinnabon inspired cinnamon pancakes with cream cheese frosting was born. 😋😋

Even though the flavors were the same, the textures made a slight difference and I loved it! The pancakes and the frosting was ready in less than half an hour and the perfect solution on a weekday breakfast for busy momma's like me. This was an instant idea and added in ingredients as though a recipe book was open in front of me. But honestly, it was indeed the best pancake flavor 🤤🤤

Though the pictures did not turn out like that I had in my mind as the Mister was in such a hurry, I urge you must try! Super easy and delicious, kids are going to love this😋👌 Well, my LO approved! 😁😍

*LO - Little one🤭





For pancakes:

  • 1 and 1/2 cup All purpose flour
  • 1 egg preferably omega
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup milk
  • 1/4 cup melted butter
  • 1 1/2 tsp cinnamon powder
  • 3 tbsp honey
  • Salt, a pinch


For icing:

  • 100 gms cream cheese, softened
  • 1 tsp Vanilla Essence
  • 1/4 cup butter, softened
  • 4 tbsp heaped sugar
  • 2 tsps and more of milk/cream /Whipping cream.
  • A pinch of salt

Instructions :

  1. In a large bowl add in your your dry ingredients and give a mix using a whisk.
  2. Next make a well in the middle and add in your wet ingredients one by one and combine well using a whisk.
  3. Cook the pancakes on a heavy cast iron pan or a pancake pan.
  4. Place a small piece of butter and smear the pan.
  5. Next pour in 2-3 ladlefuls of pancake batter in equal proportions and flip when you notice bubbles forming on the top.
  6. Cook for 2-3 minutes and transfer to a small plate and stack them up until you finish the process.
  7. The cream cheese Icing is prepared by combing all the ingredients mentioned under the ingredients of Icing. If at all yih come across lumps, use a electric whisk and combine well.
  8. Finally pour this luscious and delicious cream cheese frosting over the pancakes and enjoy! 😍


Notes :
Try to use unsalted cream cheese. If not possible, use a brand that has less salt content. You don't want your Icing to be too salty.

Qatayef


Happy 47th UAE National Day folks! I discovered the taste of Qatayef during one of these recent Ramadans. I could not BELIEVE how sublime this looked as well it tasted even better. I always love a platter that not only looks good but tastes better. So, this time around I thought I would make Qatayef, which isn't originally an Emirati dish but happens to be of middle eastern cuisine; that plays the game for me. It has more of an Egypt origin.

The main essence is the taste of the rose water that simply gives it a nice definition to taste. Qatayef is prepared in two ways, the Qatayef batter is used to make similarly shaped pancakes and filled with nuts or cream and fried. The other way is to fill the Qatayef with a cream mixture or whipped cream halfway through, this one isn't fried, it is served with some rose water scented sugar syrup which is the main element of the dish; this version is also called Qatayef Asafiri.




This is commonly found at iftar tables during Ramadan. You can also find these small pancakes in supermarkets, ready to fill and fry. But I prefer homemade from scratch rather than store bought. It is so much fun to make this. I always find it very interesting to make this one. Doesn't take much time and effort yet it is nectarous and fit for a king.  We all love it here! Qatayef

Pancake Batter: 

Ingredients: 

  • 1/2  cup warm water
  • 1/2 tsp active dried yeast
  • 1 tbsp sugar
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1 1/4 cup milk
Instructions: 
  1. In a large mixing bowl combine warm water with yeast and sugar. (Do not kill the yeast by pouring in hot water, it just needs to be warm) 
  2. Set aside for 10 minutes. Then add milk.
  3. In the meantime, combine the rest of the dry ingredients and whisk to combine.
  4. Add the dry ingredients into the milk mixture gradually and whisk creating the pancake batter without lumps.
  5. Set aside the batter for 15-20 minutes to give the yeast time to wake up.
  6. Preheat a non-greased non-stick skillet over medium-high heat.
  7. Pour ⅛ of a cup of batter into a preheated skillet and fry the pancake on one side until the top surface is no longer shiny about 2-3 minutes.
  8. The bubbles created during the frying process is a good indication that yeast in the batter is working properly.
  9. Once the surface is dry and no longer shiny remove the pancake onto a clean kitchen towel and cover to prevent it from drying out. Continue with the rest of the batter. Adjust the heat as needed so the bottom part of the pancake doesn't burn.
  10. Let the pancakes cool and keep them covered under a kitchen towel to keep them from drying.


Rose Scented Sugar Syrup :

Ingredients:
  • 1 cup white granulated sugar
  • 1/2 cup water
  • 1 teaspoon rose water

Instructions:




  1. In a medium saucepan, combine together the sugar, water, and a teaspoon of rose water. Set on the stovetop over high heat. Try to avoid stirring it as it heats to prevent crystallization from happening, but if the sugar is not dissolving, then help it out with a few stirs. Once it comes to a boil, STOP stirring.
  2. Bring to a rolling boil, then immediately reduce the heat to medium-low and let it simmer for 10 minutes. Set a timer! The syrup will thicken slightly and have a consistency similar to pancake syrup. If it simmers for longer it could thicken too much and become candy-like.
  3. Remove off the heat and transfer to a large bowl and allow to cool to room temperature before pouring over the Qatayef.

Ashta (Cream Filling):

Ingredients:
  • 1.5 Tablespoon cornstarch.
  • 1 cup milk.
  • a dash of rose water.
  • 3-4 Tablespoon unsalted cream cheese.
  • 1 tablespoon condensed milk or icing sugar

Instructions: 

  1. In a small saucepan, off the heat, whisk together the milk, sugar, and cornstarch until well combined and the cornstarch has dissolved completely without any visible lumps.
  2. Set the saucepan over medium-high heat and bring to a full boil, whisking constantly. Continue to boil for a few more seconds until the mixture thickens and large bubbles form around the surface.
  3. Remove the saucepan from the heat and whisk.
  4. Set the cream-filling aside to cool slightly and mix in the rose water and cream cheese.

Final Assembling:

  • Scoop about a teaspoon of the Ashta filling in the middle of the Qatayef.
  • Pinch the edges together sealing them two-thirds of the way. Dip the open side into ground pistachios.

  • Arrange nicely in a round assemble in a serving dish and cover until time to serve.
  • Drizzle the sugar syrup over the Qatayef right before serving. Enjoy them melt in your mouth!

Classic Pancake with Berries and Maple Syrup (The best pancake recipe ever)





Like who doesn't love pancakes? Pancakes are not only delicious but a delight to the eyes. There is a whole lot of variety of pancakes on the Internet, but once in a while, I like to stick to my classic pancake recipe.

I love to have them on a busy morning when I crave for a dessert-like delicious morning meal. I am a berry kinda person, I love to load my pancakes with a whole lot of berries, berries are not only so pretty and glamorous but it has quite a lot of health benefits too and I love to include them in my diet. When in the mood to indulge, I do replace the maple syrup with some hot and gooey melted chocolate. Gulp, a deadly combination indeed!

Pancakes can be made from scratch from homes of any type of ethnicity, because which house doesn't have flour, milk, and eggs? You can whip up these pancakes and have an instant breakie in no more than 15 minutes, its a piece of cake! Take the ingredients, mix them up, pour a ⅓ cup of the batter onto a pan and flip them when the sides turn brown/ have small bubbles on top- as simple as that! No more figuring out which is the best recipe to follow for the most divine pancakes right in the morning. Classic pancakes with freshly squeezed orange juice are my favorite take on a lazy morning. Without further ado, let's move on to the ingredients!





Ingredients

  • 1½ Cups of All Purpose Flour
  • 2 tsp Baking Powder
  • 1 Tablespoon Sugar (Optional)
  • 1 Egg
  • 1¼ Cup Milk
  • ¼ Cup Melted Butter
  • ½ Teaspoon Vanilla Essence
  • A pinch of salt 

Instructions

  1. In a large bowl mix together the flour, baking powder and salt with a wooden spoon. Set to the side.
  2. In a smaller bowl crack in the egg and pour in the milk.
  3. Add the melted butter and vanilla essence to the egg and milk and use a fork to mix together until everything is well combined.
  4. Make a well in the dry ingredients and pour in the wet. Fold the batter together with a wooden spoon until there are no longer any large lumps.
  5. To cook the pancakes heat a heavy based pan like cast iron over medium-low heat. When the pan is hot add a small amount of butter and ⅓ cup of the pancakes batter.
  6. Cook the pancake for 2-3 minutes each side. Repeat with remaining batter



Serve the pancakes stacked high with butter and maple syrup. Enjoy!
