Air fried Stuffed Buns/ Bun Nirachathu

One among the most nostalgic Ramadan eats is this Thalassery specialty called bun Nirachathu, where a filling of chicken masala and boiled eggs are stuffed and sealed with dampened and flattened bread (that was removed to fill the bun).

It is an easy snack that can be prepared easily if you have the filling prepared in advance. This Holy month is all about Ibadaah, and the last thing we want is to consume all the time in making food for iftar. Bi ithnillah.

Usually these buns are fried in ghee, (where my mom patiently fries all sides in a small deep pan one by one)here I just spread a bit of the ghee and air fry, which covers up the smell of the egg too. Do not consume immediately after airfrying, as the exterior may become a bit hard, after 5-10 minutes, they gain back the fluffy texture. Airfryer them is so easy, where you don’t have to give your attention.

Ingredients:

Pav buns

  • 150 gms Boneless Chicken
  • 1/4 tsp Turmeric powder
  • 1/2 tsp Kashmiri Chilli removed

For Chicken Masala:

  • Coconut oil
  • 1 Onion, chopped finely
  • Curry leaves, chopped
  • Salt, as required
  • 1 small Green Chili
  • 1 tsp Ginger Garlic paste
  • 1/4 tsp Turmeric powder
  • 1/2 tsp Kashmiri Chilli powder
  • 1/4 tsp Garam Masala
  • 1/2 tsp Ghee
  • Hard Boiled Eggs

Egg wash:

  • 1 Egg
  • Coriander, leaves chopped
  • 1 tbsp Milk
  • 1/2 tsp Ghee

Ingredients:

  1. Marinate the chicken in turmeric powder, chilli powder and salt and boil the chicken for 7-8 minutes, once cooked and cooled slightly shred and set aside.
  2. Pour the coconut oil in a pan and add the finely chopped onion, chopped curry leaves, salt as required and sauté until translucent.
  3. Next add the ginger garlic paste and a dash of leftover chicken stock water (optional).
  4. Next add in the turmeric powder, red chilli powder, garam masala powder, sauté for a minute.
  5. Next add in the shredded chicken and add the ghee and mix well.

  6. Boil eggs to hard boiled, peel the eggs and set aside.
  7. Cut the eggs into quarters.
  8. Using a paring knife, score the underside of the bun by deeply and carefully cutting and removing the bread and crumbs inside and set aside.
  9. Now stuff the buns with the chicken masala and add the quarter eggs and dampen the removed bread and crumbs and flatten and attach and press to cover the masala and eggs.
  10. Now prepare an egg wash of chopped coriander leaves, a dash of milk and ghee and whisk well.
  11. In a airfryer safe cake tin, line the tin with parchment or baking paper and place the stuffed buns, now smear the egg wash on the buns and airfry at 170 deg C for 5 minutes and brush little ghee over the buns and airfry again for 5 minutes, remove from airfryer and consume after 10 minutes.

Note: You can prepare the same with beef filling too.

 GRWM FOR RAMADAN 2023

Ramadan is just in a few days and I am super excited! In Sha Allah.. I have always wanted to share a few tips and tricks with my readers, that will help in fully utilizing the month of Ramadan in doing acts of worship in Sha Allah. Utilize your freezer space during this time of the year. It is not easy for me, as I am a spontaneous cook, and I just can't seem to make ahead, but this time around, I have decided to plan my meals and make use of the time in Ramadan, in Sha Allah.

  • Plan your meals for the 30 days in advance
  • Prepare Snacks and Do meal prep in advance
  • Deep clean your house and Kitchen space
  • Make a small corner for all your Ramadan essentials
  • Tips and Tricks to stay active and hydrated

Let's welcome Angels to our clean houses and make this Ramadan the most productive of all in Sha Allah.

Plan your meals in advance:

Planning your meals ahead of time can help you save time, and energy during the Holy month. Make a list of snacks, meals, drinks, soups, and suhoor in advance. The food can be repeated, just try to keep the meals nutritious. If you have kids, make sure to plan their meals too, this will help you to completely focus on your Ibaadah, in Sha Allah.

Planning and creating a list of Food that you will be preparing in Ramadan can help you decide and stock up on your groceries in advance, i.e, the non perishable groceries. Planning your meals can also help in over splurging on unnecessary and unhealthy food options, this in turn will help minimize wastage. I am sure, we will all feel relieved and spend more time doing our Ibaadah if we spend the time to make a meal plan before Ramadan.

Meal prep in advance and make Freezer Friendly snacks:

Doing meal preparation in advance definitely helps save lot of our time. You can do this by:

Making an Onion-Green Chilli-Coriander mix (sliced and chopped batches) :

Make two batches of Sauteed onion (one sliced and one chopped) , green chillies and coriander leaves in some oil and ghee and set aside to cool. Once cool, pack the cooled onion mix into freezer friendly zip lock bags and make portions using your hand so that you can easily use that portion for cooking instead of thawing the whole pack or using many zip lock bags! Thanks to @tableforfivedubai for this amazing tip! <3

You can use the sliced Onion mix for preparing biryani, curries, egg puffs etc (which is why I haven't added spice powders, so that you can kee them versatile and use for any recipes as a matter of fact!). While the chopped onions mix can be used for almost every snack recipe.

Also make sure to add a good number of green Chillies, as you don’t want the sauteed onions to taste sweet.

Ps: I preferably like to do a ratio of 1:1 (1 Green Chilli for 1 large onion) and if it’s a big quantity, increase or decrease the quantity of green Chillies depending on how spicy you like your food.

Prepare ginger garlic paste:

The most laborous part of Indian cooking is making the ginger garlic paste. Making them ahead of time and storing them in jars, definitely helps making cooking easier.

Ingredients :

Garlic paste:
250 gms/ 1 small bag Garlic bulbs (peeled)
1 tbsp Vegetable oil (any odorless oil like sunflower/ corn oil etc)
2 tsp Salt

Ginger paste:
Replace the Garlic in garlic paste and the same ingredients

Instructions:
In a blender, add your garlic, oil and salt and blend to your desired consistency. I like mine not pastey nor coarse.
Similarly do the same for ginger and store them in clean and dry jars and these ginger garlic lasts upto 2-3 weeks, if used carefully. Keep the jars back in the refrigerator immediately after use and use a dry spoon when scooping from the jars.
*Slight color change is normal, unless you see mold or the smell hasn't changed, you may use the ginger garlic paste.

Make a batch of Fried Onions:

Fried onions are a must for us Asians in our cooking, from biryani, haleem, aleesa what not!
Slice onions thinly and fry them to golden brown and drain them well using paper towels. Now make sure to mix the fried onions every now and then so that they completely cool down and crispen. If you have an aluminum zip lock you may use them to store the fried onions. If you are like me, who only uses the zip lock bags, add the crispy Fried onions to the bag and remove any trapped air inside and store them in the freezer. The crispy onion stays crisp for more than a month.

Chop veggies ahead of time:

I know you get these frozen veggies, but I am not s big fan of them, as for making bulk food, it's not the best choice, also you do not know the sources of these veggies and how well they are washed before being chopped and frozen. So I like to chop the veggies myself, especially for soups, stews, filling for snacks,. Doing them gives you so much satisfaction and of course free time. Once frozen on a tray separately, transfer the veggies into ziplock bags and store in the freezer. Use as and when required.

Ps: You may use them directly for cooking, no need to thaw.

I  have some more tips, I may do a part 2 depending on the response for this article, or maybe update this space, so stay tuned and keep checking this space :) in Sha Allah!

Deep clean your house and Kitchen space:

This is that time of the year when the angels come to our houses, let's give them a warm welcome by tidying up every nook and corner of our houses like washing curtains, cleaning carpets, organizing cupboards (donating good ones and throwing away unnecessary ones) etc.You can bring home the spirit of Ramadan by involving kids in the cleaning process and doing small Ramadan decors, that will get them, excited too and look forward to the Holy Month.

Kitchen is the place that we all spend a lot of time yet we don't get that extra time to tidy up. if you haven't started your Ramadan preps , this is your cue to clean your kitchen and house now!

  • For starters, you can start with the fridge, this will help you decide what to add into your grocery shopping list. And you may throw away expired and give away unused food items that are in good condition.
  • Wipe down the Kitchen cabinets and cupboards (check expiry dates and discard if not in use).
  • Clean the cooking range, oven, dishwasher (if any) and fridge. I like to use Smac for tough grease and stains and for cleaning the oven and fridge (I wiped down using lemon - vinegar water solution). Don't forget the stove hob and the kitchen hood, where all grease are accumulated.
  • Lastly, make sure to replace old brushes/ sponges/ cloths with new ones and if they aren’t that soiled, soak them in a solution of bubbling hot water with vinegar for around 30 minutes and you will feel so satisfied to see all that dirt that came from the kitchen cloth. Squeeze and rinse well with warm water. Allow to dry in sunlight.

Do not make yourself overwhelmed with all these tasks, do them one day at a time.

Make a small corner for all your Ramadan essentials:

You can make a small corner in your house where you keep your Quran, Translation, Islamic books, Duaa books, Morning and evening adhkaar Duaa cards, Ramadan Planner if any, folding desk,Musalla (prayer mat), Prayer dress, maybe some candles, a bottle of water and maybe a couple of plants for that extra feel of serinity. (This is just my way of creating a calm and quiet atmosphere for better concentration and tranquility).

You can make a similar space for your kids, with their Musalla , prayer dress, Ramadan activity books, craft supplies like sketch pens, Quran (if they know how to recite), Quran reading pen, Prophet stories etc.

Strive to make this a practice/ habit/ lifestyle even after Ramadan in Sha Allah (involve kids in decorating the space too)

Tips and Tricks to stay active and hydrated:

  • Drink water in half an hour intervals, make sure you do this maybe by downloading such apps or be personal reminders for each other haha :)
  • Break your fast with soups, fruits, salad, juice etc instead of gobbling down all the snacks and feeling tired and bloated for prayers. once you are done with your Magrib prayers, have your snacks and a limited amount of tea/ coffee.
  • Reduce intake of caffeine however possible, as caffeine drains out water from our bodies and keep us tired and dehydrated. I know it's difficult for some of us to completely quit tea/ coffee etc, but you can always have them limited.
  • Try to avoid processed food. They always make sure to keep you constipated, that's the last thing you want during Ramadan, so keep yourself hydrated and have fiber rich food such as lentils, oats, fruits, veggies etc.
  • Try to make use of healthier options such as airfryer, oven, steamed food etc. And have oil fried snacks with intervals of at least 1-2 days.

Suhoor ideas:

Try to include nutrient rich, fibrous, and filling easy meals like:
Shakshouka
Oats Porridge
Granola with yogurt/ milk
Banana Almond milkshake
Boiled eggs

At least have a banana or a couple of dates and a glass of milk if possible with loads of water, to help you keep hydrated throughout the day.

May we be able to make the most out of this Ramadan with these little tips and tricks, bi ithnillah.

May Allah SWT forgive us and accept our Ibadaah. Aameen ya rabb🤲🏼

Arrowroot Custard Milkshake

Arrowroot is a root vegetable that is known for its easy digestive properties and fully packed with protein, Fibre and healthy fats. Arrowroot does not have a distinct flavor profile, it is usually used as a thickening agent in desserts, soups, sauces, etc due to its thickening properties.

I always like to use arrowroot powder instead of corn flour slurry in most of my dishes, as arrowroot has more health benefits. So I thought of trying out a milkshake using arrowroot (koova). Arrowroot drink is usually prepared as a hot drink, here I demonstrate a Milkshake version. Arrowroot slurry is prepared and poured to boiled milk, which is constantly mixed till you get a thick consistency. Allow to cool the thick Custard which is prepared. Next blend the arrowroot Custard with chilled milk and coconut milk and set aside. Sabudana pearls are added as the first layer of the Milkshake for added texture, this step is optional. I added soaked basil seeds/ tuk malenga seeds too, as it has good health benefits, high in iron etc.
For added flavor I used a pinch of cardamom powder. You may use vanilla essence or any other flavoring agent, as per your liking. Finally topped off with a scoop of vanilla ice cream and garnished with toasted shredded coconut.

This Custard milkshake is going to make you feel refreshed for iftar. I tell you! It had a feel of Elaaner (tender coconut) Milkshake flavor to it.. definitely a super hit here!

Let's prepare this easy and refreshing arrowroot Custard milkshake,

Ingredients:

  • 1 tbsp basil seeds, soaked in water
  • 2 tbsp Arrowroot powder, made into a slurry with some water
  • 1/2 cup milk
  • 1/2 cup coconut milk (store bought/ freshly squeezed)
  • Cardamom powder, a pinch
  • 4 - 5 tbsp Sugar
  • A scoop of Vanilla Ice cream
  • 1 tsp of toasted shredded coconut (for garnishing, optional)
  • 2 tbsp Sabudana pearls (soaked in water at least for 3-4 hours), optional

Instructions:

  1. Boil and drain the sabudana pearls that has been soaked and set aside.
  2. Into a saucepan, add in your arrowroot slurry, milk, sugar and cardamom powder and bring to a boil, whilst stirring constantly, so that no lumps form.
  3. Set the arrowroot custard aside to cool.
  4. Blend the arrowroot Custard with coconut milk and chilled milk.
  5. Into a tall glass, drop your boiled and cooled sabudana pearls, then pour some of your arrowroot Custard milkshake, drop in some soaked basil seeds, and pour your milkshake, finally drop 1 scoop of vanilla ice cream and pour in your Custard Milkshake.
  6. Finally garnish with toasted, sweetened shredded coconut and enjoy!

Notes:
You may add frozen milk cubes and pulse for added chillness (don’t know if there is even a word like that) 😁

Cheesy Chicken Popcorn

I wanted to cut down on deep fried this ramadan, but it's almost impossible when you have fasting kids at home. They don't want to get served with non fried or simply have the main meal for iftar. So for keeping them excited all along Ramadan I try to include at least one fried item for the sake of kids. (My young siblings and my little girl)

We are already halfway into Ramadan, I feel so numb and miserable as it's Day 15 of Ramadan, which means the month of good deeds are slowly coming to an end. May Allah keep us all steadfast on His Deen and help us to continue to do all the good deeds that we have done this Holy month and may He accept it from us.

These cheesy Chicken popcorns are so easy to make, with almost all basic ingredients. Boneless Chicken pieces are minced and spices are added to which corn and mozzarella chesses is added to make it extra delicious and cheesy. Then these are made into lemon sized balls and frozen for around 30 minutes. At the breading station, coat the balls in flour, then beaten egg and then into bread crumbs and fry them on medium low for 6-7 minutes until chicken cooks well.* Kids will truly love this! It was indeed a hit here too, alhamdulilah!

Let's get on to the recipe.

Ingredients:

  • 500 gms Boneless Chicken Breast
  • 1/2 tsp ginger garlic paste
  • 3/4 tsp red chilli flakes
  • 1/2 tsp Oregano
  • 1/2 tsp Crushed black pepper powder
  • 1 tsp Smoked Paprika Powder
  • Salt, as required
  • 1/2 cup Corn niblets, thawed
  • 3/4 cup Mozzarella Cheese
  • 1/2 cup All Purpose Flour
  • 1 Egg, beaten
  • 1 cup Bread Crumbs
  • Oil for frying

Instructions:

  1. Add your boneless chicken cubes** to a food processor or a mixer and add in ginger garlic paste and your spices like red chilli flakes, oregano, black pepper powder, smoked paprika powder, and  mince your boneless chicken and transfer to a bowl.
  2. Now add in your thaw corn niblets, mozzarella and add salt if required.

  3. Next make them into lemon sized balls and freeze them for about 30 minutes.

  4. Coat the balls in flour, next dip into the beaten egg and then finally coat in bread crumbs and fry for 6-7 minutes on medium low heat until the chicken cooks well.

  5. Enjoy with ketchup or your favorite dip.

Notes:

  • The outer covering will get cooked fast, but since the insides are raw boneless chicken mince, you need to make sure to fry them well on medium low heat in oil before draining them*
  • Make sure your boneless chicken is cleaned and dried usimg a kitchen towel.**

Effortless Cream Cheese Honeycomb Bread

I love it when a recipe is effortless, especially in the month of Ramadan, when it gets tiring to toil in the kitchen to make dishes that will be served to break your fast with. Usually, if we have a savory snack on the table, I always like to have a sweet snack by the side too, so that I don't fee the urge to binge on foodstuff like chocolates, etc.

Our family loves honeycomb bread, but little do I have the patience to knead, make balls and allow them to rise, especially when fasting! I was thinking of ways in which honeycomb bread could be recreated at home using basic ingredients available at home, and of course kept in mind that it shouldn't be time consuming nor oily nor uses oven.

Ta daa! Comes SAMOON* to the rescue! (*a long sandwich bread, commonly found in supermarket stores). This hack is such a life saver! It's like a last-minute thing that you can get done in jiffy, yet so addictive and delicious. The recipe uses only honey, which a natural sweetener, so again, it is definitely healthier.

I love the combination of egg, cheese and honey, which is an acquired taste of the traditional Emirati snack called Regag from all these years living in Dubai. So that's when this honeycomb bread hack struck me. I loved everything about this recipe, except that it has a small drawback, ie, if you consume them immediately you don't get any eggy smell, but if you are planning to have it after a while, I would recommend you to use vanilla essence/ cardamom powder in the egg mixture if you do not want the eggy smell.

My misters reaction when he had this for the first time made my heart was so full. He was so happy and asked why I never shared this recipe on my blog. So here you go guys! It's super easy too. Hub said that they were melt in the mouth good, so you can imagine how much of a keeper this recipe is! Alhamdulilah!

Let's make these delicious bItes.

Ingredients : (Makes 16)

  • 4 Samoon (cut in 4) *
  • Kiri Cream Cheese Cubes, cut into 4 cubes
  • 2 Eggs
  • 1/4 tsp Vanilla Essence (Optional)**
  • 1/4 Cup Whole milk
  • 2 tbsp Butter
  • 4 tbsp Honey
  • 1/2 tbsp White and Black Sesame Seeds each

Instructions:

  1. Cut the Samoon into 4 pieces and make a cavity underneath each piece using a knife, cutting half way through on each of them.
  2. Now place a small piece of Kiri Cheese cube in the cavity and sealed the cavity by pressing down using the extra piece that was cut open.

  3. In a small bowl, crack in the egss, pour the milk and add vanilla/cardamom for flavoring, and add a pinch of salt and beat with a fork well.
  4. Now using thongs, dip the samoon pieces one by one and place them on a hot pan smeared with butter, place the dipped samoon pieces on the pan, and Sprinkle sesame seeds on the upside of the bread and cook on all sides until the egg coating cooks well.

  5. Finally, place them in a serving plate and drizzle with Honey as required.
  6. Your melt in the mouth and effortless honeycomb bread is ready to devour! 😍 😍 😋

Notes:

*Please do not use stale samoon bread.
**You may use Cardamom Powder or Vanilla Essence for removing eggy smell from the eggs.
