Gai Tod - Thai Fried Chicken

I am sure once you try this recipe, you are hooked for life! Unlike other fried chicken recipes, that requires you to do complex steps, this one is basic and with minimal ingredients and the results are just crazy.

You may ask, how can you say that something can get crispy without those extra steps. Well, we have a hero here! It’s RICE FLOUR, such a game changer!  The marinated chicken is coated in the rice flour..and oh boy!! The chicken always turns out so crispy and delicious that I am salivating just while I type this down.

The marination requires very minimal ingredients, I have used basic ones like soy sauce, you may use light and/ dark soy sauce, completely depends on you. Some people use fish sauce and/ oyster sauce for that added umami flavor, but again it’s optional. All ingredients are almost always available in every Asian Kitchen, this is definitely a must try!

Ingredients:

  • 8 pieces Chicken with Skin on
  • 7-8 Garlic Cloves, chopped
  • Coriander roots ( rinsed well and chopped)
  • 1 tsp Cumin powder/ cumin seeds
  • 2 tbsp Soy sauce
  • Rock Salt, as required
  • 1/4 cup Water
  • 1/4 tsp Red Chilli flakes
  • 1/4 tsp Turmeric powder
  • 1 cup Rice Flour
  • Vegetable Oil for frying

Instructions:

  1. In a chopper, add garlic, coriander roots, cumin powder, soy sauce, rock salt, and water .
  2. Onto the cleaned chicken, add the marinade and add other ingredients like red Chilli flakes and turmeric powder.
  3. Allow to marinate for 30 minutes to 1 hour.
  4. Coat the marinated Chicken pieces in rice flour well and deep fry the Chicken pieces in vegetable oil on medium high flame for around 20 minutes. *
  5. Serve hot garnished with crispy fried shallots, sweet Chilli sauce and rice.

Notes: *
Do not flip the chicken immediately after adding the chicken to hot oil. Allow it to stay and then flip after 5 mins, so that the coating stays intact.
Keep an eye on the chicken, so you may require to increase/ decrease flame as and when required.

 Dhaba Style Mutton Karahi

When it comes to my favorite dish in Mutton, it is undoubtedly this delicious Dhaba Style Mutton Karahi. I just love how very few ingredients brings out the flavor of the mutton. In fact, less masalas, the better Karahi tastes. Karahi needs to be slow cooked, and that's what makes the gravy finger licking good.

Some of my near and dear ones have tried this recipe from me and always been a hit for them too! Tomatoes being the star of the dish is what gives the Karahi an umami flavor. I love to make Karahi on days when I super busy with chores and errands to get done. The Karahi doesn't need much of your attention, just dump the mutton, tomatoes, ginger garlic and salt and allow it to do its magic. And a couple of masalas in the end and you are done.

My brother had tried Karahi from a restaurant and it tasted the best according to him, so he went on to ask the attender about the dish. He asked how did they make the Karahi with such distinct taste and deliciousness (as he couldn't make out what masalas were added, before you judge, yeah, we are a foodie fam here :D). So the guy got the chef and he said it's just tomatoes, mutton, salt and some ghee/ fat. He was surprised to know that they did not even add ginger and garlic, yet didn't have the meaty smell or taste, as it's cooked with fats and oil. Well, I am yet to try that version. But this one is very close to it as, I use very minimal ingredients too. The original recipe had many more ingredients, I adapted it to my taste.

Anyhow, let me tell you, be ready to be mind blown by how delicious this Karahi tastes, exactly like the ones you get in dhabas. 😋

Ingredients :

  • 1 kg Mutton
  • 4 large Tomatoes
  • 1 1/2 tbsp Ginger Garlic paste/ crushed
  • Salt, as required
  • 1 tsp Red Chilli powder
  • 1/4 tsp Turmeric Powder
  • 1 tsp roasted and ground Coriander
  • 1 tsp roasted and ground Cumin
  • 1 tsp Red Chili Flakes
  • 2 tbsp ghee
  • 1 tsp Lemon juice (optional)
  • Ginger, juliennned, for garnish
  • Chopped Coriander, for garnish

Instructions:

  1. In a large wok/ cheena chatti, add the mutton, chopped tomatoes, ginger garlic paste, and slat as required. Mix well and allow to come to a boil. Do not add water.
  2. Cover with lid and allow to cook for 20 minutes on medium heat and stir so that nothing gets burned on the bottom. Cover again and allow to slow cook for another 20-25 minutes until meat is tender. Open lid and cook uncovered for around 5 minutes until some of the liquid evaporates.

  3. Add spices like chili powder, turmeric powder, roasted and ground Coriander and cumin, and red chili flakes. Mix well and allow the spices to be aromatic.

  4. If you require more gravy add very little water.
  5. Finally finish off with some ghee/ clarified butter.
  6. Garnish with chopped Coriander and juliennned ginger. Enjoy hot with any roti.

Notes:

You may add green chillies according to your preference, my daughter doesn't like very spicy food, so you may add a couple of green chilies, slit.
The original Dhaba style has a lot of ghee in it, so add ghee according to your preference.

Tamale Pie

As weird as Tamale may sound, I weirdly loved the name given to this dish. Tamale Pie is a comfort food that originates from US in the early 1900. Though it has its origin from US, the flavors are totally Mexican inspired.

It is said that the original recipe of Tamale takes hours of labor and due to the time consuming process, the authentic recipe isn't followed as much. After hours of researching I understood that Tamale isn't actually a pie, it is more like a casserole; never mind the name. This corn bread casserole is super easy to prepare, more like a shepherd's pie, corn version.

Interesting yea?!

Well, I wasn't quite aware of this dish, until lately when I happened to read about Tamale Pie… I wanted to try it right away! Usually, the dish is prepared using any red meat or minced chicken, or  can be done using only veggies. This dish makes a great veg/keto dish too if made slight variations in the ingredients.

Generally, the pie has its corn crust as the top layer, but I wanted to try it with a twist and made the corn layer as the base. Even though I love Mexican flavors, I don't usually stock up on Mexican ingredients so for the base, I used Masa Harina/cornmeal crust; flour made using dried corn kernels, and I had some cauliflower in the fridge waiting to be used. So I immediately blitzed the cauliflower and used it along with the base. Though I was quite unsure if the base would become soggy, I took the wrong road without the seatbelt. And oh boy was it a success! Alhamdulilah!

Also I made my own red enchilada sauce too from scratch! I am so happy that this dish turned out exactly like the comfort food I had in mind. I had to share the recipe today itself, before I forget how I prepared it!

The best part is that, if you prepare this dish, you will always have an additional casserole to save, which calls for a meal that is ready to it! For the cheesy layer I only used mozzarella cheese. You may use a combination of Monterey jack. cheddar cheese, mozzarella etc.

This recipe is definitely a keeper! Without further a-do lets gets started!

Ingredients:

Corn Base:

  • 1 cup Cornmeal/ Masa Harina
  • 1/2 cup Blitzed Cauliflower (optional)
  • 1/4 cup All Purpose Flour
  • A pinch of sugar
  • 1/2 cup canned creamed corn or corn niblets
  • 1 tbsp butter, room temperature
  • 1/4 cup heavy cream
  • 1 large egg
  • Salt as required.

Red Enchilada Sauce:

  • 3 tbsp vegetable oil
  • 2 tbsp all purpose flour
  • 3 tbsp red chilly powder
  • 1 tsp cumin powder
  • 1/4 tsp dried oregano
  • 1 cup low-sodium beef broth
  • 1 Large Tomato, blended**/ 1 store bought canned tomato sauce
  • 1 clove garlic, minced/ 1 tsp garlic powder
  • Salt, as required

Meat Filling:

  • 250 gms ground beef
  • 1 Onion, chopped
  • 2 Garlic Cloves, minced
  • 2 tsp Red Chilli Powder
  • 1 tsp Cumin Powder
  • Freshly Ground Pepper
  • Salt, as required
  • 1 cup Mozarella*
  • Sliced Pickled Jalapenos, for garnish
  • Finely chopped Tomatoes, for garnish (without the inner core)

Instructions:

  1. Prepare your enchilada sauce, by stiring your oil, flour, chilli powder, cumin powder and oregano in a sauce pan on sim and allow to bubble.

  2. Add in your beef broth, tomato sauce, garlic and salt as required.
  3. Allow to simmer for 5-10 minutes, stir occasionally. Set aside, allow to cool.
  4. Preheat oven to 210 deg C. Grease a large casserole dish with butter or cooking spray.
  5. In a large bowl, mix all the ingredients under corn base. Now, into the prepared casserole dish, transfer the corn base and bake for around 15-20 minutes, or until golden. Allow to cool.

  6. In a skillet, over pour olive oil and sauté your chopped onions and minced garlic , once fragrant add in your seasonings like chilly powder, cumin powder, salt and pepper. Now add in your ground beef, break the meat using your wooden spoon, for around 6-7 minutes, until no pink color in visible. Drain the residual fat, that oozes out.

  7. Once your corn base has cooled, poke in using a fork and pour in your prepared enchilada sauce.

  8. Add your prepared beef and top with cheese.

  9. Cover with foil and bake for around 15-20 minutes. Allow to broil after removing the foil, so that cheese turns golden, for around 5 minutes.
  10. Your delicious Tamale Pie is ready to serve. Garnish with chopped tomatoes and sliced pickled jalapenos and a dollop of sour cream if you have or a sprinkle of chopped parsley will do.

Note:

Other recipes calls for baking powder, I did not use here.
*You may use a combination of Monterey jack. cheddar cheese, mozzarella etc.
**If using fresh tomatoes, use a dash of Tomato ketchup to balance the tanginess.
The above recipe I divided into two medium casserole dishes so that I could use the other one later.

Succulent Shepherd's Pie

Ever heard of food made out of waste? Yes, you read that right! I am sure most of you are aware of this delicious dish that has its origin from Britain. But have you ever thought how this delicious dish got its name?

This was a dish prepared quite often by the shepherds or their wives for dinner using leftover food, as mashed potatoes were a staple and often wasted by the husbands and children of the family, the wives came up with this solution. How wonderful of an idea to not waste it and come up with a dish that is now a favorite worldwide and loved!

Shepherd's pie as the name suggests is a pie that was invented by Shepherd's in Britain in 1700's and later it was introduced in Ireland and other countries like France and India also adopted the dish too. In short, this is a dish that is equally loved among people all over the world, in different names.

The dish consists of two layers and occasionally three layers. The pie is usually prepared in a dutch oven or an ovenproof casserole dish, with the first layer consisting of minced lamb that is cooked with chopped onion, garlic and other spices with a dash of tomato paste and the base is thickened using a sprinkle of flour to bring the meat pie together and the second layer consists of a mashed potato layer, that is baked until golden and crisp. This dish is so comforting and flavorful. It keeps you full at the same time, it is super delicious. The same dish is also called cottage pie when the minced meat is that of beef.

There are many variations of Shepherd's pie with different flavorings to suit one's taste buds. Another variation is also made in vegetarian using lentils and other pulses along with sweet potato that I had once come across that is of Jamie Oliver's recipe.

I had Shepherd's pie from a restaurant first time in my life, and then and there I knew I had to remake this at home and Oh boy does everyone love it here? It just vanishes in no time. Whenever I prepare this, I actually feel the warmth and love that the shepherd's wives put into the making of this dish. If you ask me why I love to make this dish? I prepare the meat base in my dutch oven that is oven proof and simply add on the mashed potatoes, so easy to prepare and fewer dishes to wash, also the oven does the rest of the work for you! Shepherd's pie done, in no time at all!

It isn't necessarily the same ingredients and the same flavor, it varies from houses to houses. So like I always say, I don't follow a particular recipe and this recipe is my own with adaptations from the authentic ones that I could find. Make yourself feel good by making some for your family and let me know how you liked it! Let's move on to the ingredients:

KFC Copy-Cat Spicy Broast  Chicken recipe

Good day folks! It is 19th April and it's been more than a month under quarantine. Buying take away has been stressful and a feeling of anxiety pops in when you think of getting some ready-made meals that calls for some free time from the kitchen, during a stage when my workspace like everyone else is bustling almost all the time. Like I said, I had been craving broast chicken since many days and I had already stocked up enough chicken as it was almost very exhausting just the thought of buying groceries every few days.

It dawned on me that I never shared a broast / KFC recipe here. My dear followers had always wanted me to share it. Well, here I am. But I was skeptical to make KFC coz I did not have cabbage to make some coleslaw and it was bothering me. My little one loves coleslaw, maybe I shall share the recipe some other day. I had some leftover hummus in the fridge, so that did the plan! And during this quarantine situation, it is nearly impossible to have all the ingredients in your hands reach, going out and getting them is like putting your life at stake and who would want to do that risky business. Anyhow, I was adamant to make KFC and share it with you guys.

I like to marinate my chicken at least for 4 hours or overnight for that the flavors really get into the chicken, also poking the chicken using a fork by moving the skin slightly also helps. Well, I am someone who rarely does early planning when it comes to cooking, so 4 hours is the maximum I can do haha. Anyhow, let me tell you, KFC according to me if one of the easiest food to prepare, really just a few chicken pieces, marinating, coating and frying, DONE! Isn't that simple. I guarantee you even little kids can prepare KFC if they have the right recipe in hand.

Ok, now coming to the recipe, I recently came to know of a mind-blowing method to get that crunchy texture on the outside of the chicken pieces from a fellow  blogger Afshaan, who recently shared her recipe. Well, I used that method to my KFC recipe, when it struck me that I have been doing it wrong all these years by dipping the marinated chicken dipped into an egg mixture, it is a big NO-NO! I never thought this one ingredient is a game-changer when it comes to fried chicken, THIS will change the texture of the chicken, also an ingredient that is evident in every kitchen/ workspace. You wouldn't guess! It is WATER, ice-cold water! That's right! You read that right, I used water to dip my chicken and recoat with the flour mixture. Super easy and almost very close to the real deal.

Also, one another tip to get that perfect crust is to place the chicken on a wire rack to allow the chicken to drip the excess oil and not directly place the fried chicken on a kitchen towel. Placing fried chicken directly onto a kitchen towel is one of the biggest mistakes one can make when making KFC, as it makes the chicken soggy. To know how crunchy the crust is, check out the video recipe on my YouTube. It's Finger lickin' good. 👌😁😋

Let's get started!

Ingredients:

For Chicken Marination
  • 800 gms Chicken, preferably skin on
  • 1 cup milk, or buttermilk/laban
  • 1 tbsp vinegar
  • 1 tbsp ginger garlic paste
  • Salt, as required
  • 2 tsp Chilli Powder
  • 1/2 tsp pepper powder
  • 1 tsp paprika

For Coating:
  • 1 Bowl water with ice cubes
  • 1 1/2 cup All-Purpose Flour
  • 1/2 cup Cornflour
  • 1 tsp mixed herbs or Cajun
  • 1/2 tsp black pepper, Garlic powder
  • 1/2 tsp White pepper
  • 1/4 tsp onion powder (optional)
  • 1 tsp paprika
  • Salt, as required

Instructions:

  1. Marinate the chicken with buttermilk, ginger garlic paste, chilli powder, paprika, pepper powder, and salt for at least 4 hours or overnight.
  2. In a separate bowl prepare the coating mix - All-purpose flour, cornflour, cajun/mixed herbs, black pepper, garlic powder, white pepper, onion powder (optional), paprika and salt, using a whisk mix well.
  3. Once the chicken is marinated, coat the chicken in the above-prepared mixture.

  4. Next, drop the chicken in the ice-cold water and while the chicken piece stays in the water for a minute, coat another piece of chicken in the flour mixture.
  5. Now tap off the excess water and dip and coat the chicken in the flour mixture, tap off excess flour and set aside or fry immediately and fry in medium-low flame without flipping for at least 5 minutes.

  6. Fry for 8 minutes each side, and drain onto a wire rack.
  7. Serve hot with french fries, coleslaw, buns, etc

Notes:
  • You may always marinate for 1/2 an hour, but the more time kept for marinating, the better.
  • If you do not have buttermilk, you may make by mixing 1 cup milk to 1 tbsp vinegar.
  • Do not drain the fried chicken onto a kitchen towel if you want a crusty chicken, instead use a wire rack.
  • Do not flip the chicken for at least 5 minutes
  • Do not fry on high flame, us medium-low heat once the oil is hot as you need to cook the chicken completely while frying.
  • If you do not have garlic powder, onion powder, cajun etc. You may use the maggi noodles taste maker/ seasoning as a substitute.

Do try this recipe and don't forget to share your experience/feedback with me here in the comments or feel free to send me a mail. Also, do tag me at #taystedit if you try out my recipes on Facebook, Instagram etc so that I can see when you make it. ♡♡♡♡

American Chopsuey

American Chopsuey unlike its name is a fusion of  Indo Chinese cuisine. The dish and flavors have nothing with the American cuisine. Technically there is a confusion between American and Chinese Chopsuey. The one that I am about to share is actually a Chinese one but called American as thats how restaurants name it.

Now to come back to how it made. Noodles/ egg noodles are boiled and fried in a nest shape and a thick sauce is made of veggies and chicken which is poured over the fried noodles and finally a sunny side up egg is placed as a topping.

This is and has been one of my all-time favorite. I was a little girl when I first tried this dish in my life and this dish completely changed my life. My brother had his friends over at our place in Thalassery. For dinner he used to take them out to a restaurant at our place. And these friends were Arabs who always ordered so much that they ended up with a lot of leftovers. And my brother used to bring in the leftovers that they did not even touch. And one such dish was the American Chopsuey, that is the first time I ever tried it. Ever since I haven't had a better Chopsuey from anywhere else.

As my strength is to recreate dishes I simply wanted to recreate that amazing American Chopsuey and oh boy did I nail it! It's so easy to prepare yet so delicious. And anyone who knows me well knows that I am crazy fan of any food that is saucy. And this is on such dish. 😋
If you are an Indo Chinese lover you will definitely love this one.

This dish doesn't look quite filling, but this one dish is enough to fill your tummy. The assembled American Chopsuey is simply deconstructed by breaking and mixing the fried noodles, gravy and of course the egg, mix and mix and just consume hot. These are super delish.
Let's cook this amazing dish already!

Ingredients:

  • 1 pack Hakka noodles/egg noodles
  • 4 cloves garlic (chopped finely)
  • 1/4 of an Onion
  • 1 Maggi Chicken Cube
  • 1 green chilli (according to preference)
  • 5-6 tbsp Tomato Ketchup
  • 1 tbsp tomato paste
  • 3 tbsp Soy Sayce
  • 1 tbsp Sriracha sauce/ any hot sauce
  • 1 tsp vinegar
  • 1/2 tsp Black Pepper powder
  • 1/2 tsp white pepper powder
  • 200 gms Chicken breast, sliced into thin pieces
  • 2 eggs (for topping)
  • 1/2 Carrot, julienned
  • Small piece of Cabbage, julienned
  • 1/2 Capsicum, julienned
  • 6-8 Baby Corn, sliced into halves (optional)
  • 1 and 1/2 glass water
  • 2 tbsp Corn flour
  • Salt, as required
  • Vegetable oil

Instructions:

  1. Boil the noodles according to package instructions and pour cold water and set aside.
  2. Prepare and cut the veggies, mix them in a bowl and set aside. (use only half portion while cooking first)
  3. In a medium deep pan pour 2 inches of oil and fry the  noodles by placing the noodles in the shape of a nest. Cook for 5 minutes on medium-high and when the sides start browning flip the frying noodles using a spatula and fry for 2-3 minutes. Whilst the noodles are frying prepare your sauce.
  4. Take a pan and pour 2 tbsp of oil and Sautee the chopped garlic until raw smell disappears. Before the garlic starts browning add the sliced onions and sautee.
  5. Now add 1 chicken cube and allow it to melt and mix that in.
  6. Next add your chicken and salt and cook on high for 5 minutes.
  7. Next add your veggies and cook on high for 3-4 minutes. And add the green chilli, slit.
  8. Add in your sauce (ketchup, soy sauce, Sriracha/hot sauce, tomato paste).
  9. Next add your pepper powder (Black and white) mix well and add in more sauces if required.
  10. Now pour in 1/2 glass of water and mix well.
  11. While it bubbles add the rest of the earlier mixed veggies and cook on high for 2 minutes. (this helps to retain some crunch in the veggies)
  12. Make a corn flour slurry and pour into the gravy and mix vigorously until a thick gravy is formed.
  13. Finally in a small non stick pan, pour in some oil and crack an egg and cook for 3 minutes and set aside the sunny side up eggs.
  14. Now assemble them onto a deep dish. First place the fries nest-like noodles and pour the gravy on top and finally top it with a sunny side up egg. Garnish with spring onions or parsely (optional).

Notes :

  • The more the gravy sits, the thicker it gets. Keep that in mind whilst adding more corn flour slurry.
  • Adding the leftover veggies at the end helps to retain crunch in the veggies that is why we keep half the veggies aside and add them at the last which gives a crunchy impression.

Pan-Seared Butter Steak with Creamy Mushroom Sauce

Well, steak is something that I love! But unfortunately, the Mister doesn't like it much. So it's a rare scene that we go out to dine in and order a steak.

So one fine day, I was craving for steak so badly. And I was visiting the local grocers. It is an Indian grocery store so when I asked for the steak he just cut me a chunk of meat and gave. I was confused if he heard me right. I wanted ribeye steak and now I have this. He asked me to try this and if it comes out good he would give similar cuts the next time.

Kaju chicken curry

The easiest chicken curry you can make! The only chopping required is for the onions. Other than that all the ingredients are blended or ground. Now you can imagine how easy it is going to be. Cashew paste makes the Curry even more rich and tastier. It is up to you to totally omit the cashew paste, you still have a thick and yummy chicken curry.

This curry is the perfect recipe for newbies to the kitchen, momma's with small babies, working moms, in fact anyone who has no time to spent in the kitchen all day and when hotel food is BOO. Also who doesn't like cheat days in kitchen, teehee. Well, this effortless curry is going to bring all smiles on your family's faces, this curry recipe is surely a keeper The recipe is so simple and effortless with minimal ingredients. I guarantee you this curry won't take you more than 30 minutes from start to end.

I was planning to make some naadan type chicken curry to go with my Ney pathil for breakfast. While I was in the mood for experimenting (yet I was starting to have strong symptoms of bad cold), so you know how badly I wanted to run from the kitchen. To top it my hubby was in a hurry and I had to make a curry super quick.

I had no time to think much so I did what I felt like and voila! It turned out so good Alhamdulilah!
This curry is made in a pressure cooker, yes! Thank god for pressure cookers. Always comes to the rescue when you are short on time. (I prefer to do it in a pot itself tough if I had the time), here I am using the cooker so that my onions are pressure cooked well in the masala and mashed well.

Rich and delicious cashew chicken curry can be accompanied with Ney pathil (oil fried rice pancakes), Ari dosa (rice crepe), ghee rice, appam, noolputtu/iddipyappam, chappathi, etc.

Guys! Please do give the recipe a try and let me know how you liked it! I am sure your family will love the curry😋👌
