Cheesy Chicken Popcorn





I wanted to cut down on deep fried this ramadan, but it's almost impossible when you have fasting kids at home. They don't want to get served with non fried or simply have the main meal for iftar. So for keeping them excited all along Ramadan I try to include at least one fried item for the sake of kids. (My young siblings and my little girl)

We are already halfway into Ramadan, I feel so numb and miserable as it's Day 15 of Ramadan, which means the month of good deeds are slowly coming to an end. May Allah keep us all steadfast on His Deen and help us to continue to do all the good deeds that we have done this Holy month and may He accept it from us.

These cheesy Chicken popcorns are so easy to make, with almost all basic ingredients. Boneless Chicken pieces are minced and spices are added to which corn and mozzarella chesses is added to make it extra delicious and cheesy. Then these are made into lemon sized balls and frozen for around 30 minutes. At the breading station, coat the balls in flour, then beaten egg and then into bread crumbs and fry them on medium low for 6-7 minutes until chicken cooks well.* Kids will truly love this! It was indeed a hit here too, alhamdulilah!

Let's get on to the recipe. 



Ingredients:

  • 500 gms Boneless Chicken Breast
  • 1/2 tsp ginger garlic paste
  • 3/4 tsp red chilli flakes
  • 1/2 tsp Oregano
  • 1/2 tsp Crushed black pepper powder
  • 1 tsp Smoked Paprika Powder
  • Salt, as required
  • 1/2 cup Corn niblets, thawed
  • 3/4 cup Mozzarella Cheese
  • 1/2 cup All Purpose Flour 
  • 1 Egg, beaten
  • 1 cup Bread Crumbs
  • Oil for frying

Instructions:

  1. Add your boneless chicken cubes** to a food processor or a mixer and add in ginger garlic paste and your spices like red chilli flakes, oregano, black pepper powder, smoked paprika powder, and  mince your boneless chicken and transfer to a bowl.
  2. Now add in your thaw corn niblets, mozzarella and add salt if required.



  3. Next make them into lemon sized balls and freeze them for about 30 minutes.

  4. Coat the balls in flour, next dip into the beaten egg and then finally coat in bread crumbs and fry for 6-7 minutes on medium low heat until the chicken cooks well.




  5. Enjoy with ketchup or your favorite dip.

Notes:

  • The outer covering will get cooked fast, but since the insides are raw boneless chicken mince, you need to make sure to fry them well on medium low heat in oil before draining them*
  • Make sure your boneless chicken is cleaned and dried usimg a kitchen towel.**

Effortless Cream Cheese Honeycomb Bread




I love it when a recipe is effortless, especially in the month of Ramadan, when it gets tiring to toil in the kitchen to make dishes that will be served to break your fast with. Usually, if we have a savory snack on the table, I always like to have a sweet snack by the side too, so that I don't fee the urge to binge on foodstuff like chocolates,etc.

Our family loves honeycomb bread, but little do I have the patience to knead, make balls and allow them to rise, especially when fasting! I was thinking of ways in which honeycomb bread could be recreated at home using basic ingredients available at home, and of course kept in mind that it shouldn't be time consuming nor oily nor uses oven.



Ta daa! Comes SAMOON* to the rescue! (*a long sandwich bread, commonly found in supermarket stores). This hack is such a life saver! It's like a last-minute thing that you can get done in jiffy, yet so addictive and delicious. The recipe uses only honey, which a natural sweetener, so again, it is definitely healthier. 

I love the combination of egg, cheese and honey, which is an acquired taste of the traditional Emirati snack called Regag from all these years living in Dubai. So that's when this honeycomb bread hack struck me. I loved everything about this recipe, except that it has a small drawback, ie, if you consume them immediately you don't get any eggy smell, but if you are planning to have it after a while, I would recommend you to use vanilla essence/ cardamom powder in the egg mixture if you do not want the eggy smell. 

My misters reaction when he had this for the first time made my heart was so full. He was so happy and asked why I never shared this recipe on my blog. So here you go guys! It's super easy too. Hub said that they were melt in the mouth good, so you can imagine how much of a keeper this recipe is! Alhamdulilah!

Let's make these delicious bItes.

Ingredients : (Makes 16)

  • 4 Samoon (cut in 4) *
  • Kiri Cream Cheese Cubes, cut into 4 cubes
  • 2 Eggs
  • 1/4 tsp Vanilla Essence (Optional)**
  • 1/4 Cup Whole milk
  • 2 tbsp Butter
  • 4 tbsp Honey
  • 1/2 tbsp White and Black Sesame Seeds each

Instructions:

  1. Cut the Samoon into 4 pieces and make a cavity underneath each piece using a knife, cutting half way through on each of them. 
  2. Now place a small piece of Kiri Cheese cube in the cavity and sealed the cavity by pressing down using the extra piece that was cut open.

  3. In a small bowl, crack in the egss, pour the milk and add vanilla/cardamom for flavoring, and add a pinch of salt and beat with a fork well. 
  4. Now using thongs, dip the samoon pieces one by one and place them on a hot pan smeared with butter, place the dipped samoon pieces on the pan, and Sprinkle sesame seeds on the upside of the bread and cook on all sides until the egg coating cooks well. 

  5. Finally, place them in a serving plate and drizzle with Honey as required. 
  6. Your melt in the mouth and effortless honeycomb bread is ready to devour! 😍 😍 😋




 

Notes:

*Please do not use stale samoon bread.
**You may use Cardamom Powder or Vanilla Essence for removing eggy smell from the eggs.

Dynamite Chicken Skewers




It is already the 6th of Ramadan. Before you know these beautiful days will pass away very soon. So make the most of it with recitation of Qur'an, moistening your tongue with Dhikr (remembrance of Allah) even while doing chores etc. Last thing you want is slogging in the kitchen all day during Ramadan, so this is one easy recipe that anyone can make; be it adults or kids! My girl loved helping me do these easy Dynamite Chicken Skewers.




Potatoes are sliced thin using a slicer, which is then rolled with a chicken strip that has been marinated in spices which is then rolled and tuck into a skewer, dusted with maida (all purpose flour) and fried to perfection. And finally the Dynamite sauce is drizzled over the chicken potato skewers and enjoyed. Kids and adults will love it equally! Well, it definitely did here!

This Ramadan I wanted to cut down on my oil intake, so I am using the shallow frying method, thigh deep frying is demonstrated here. This recipe can be made in an oven or airfryer by spraying a tbsp of oil. 

The best part of this recipe is that, it is prepared with basic ingredients that you can find at any Indian Household. The only preparation you would require is to soak your skewers in water for at least 30 minutes.

Ingredients: (makes 7 skewers with 5 Dynamite Chicken in each skewer)


  • Skewers soaked in water for 30 minutes
  • 2 Large Potatoes
  • 350 gms Chicken Tender Breast
  • 1/4 Turmeric Powder
  • 2 tsp Kashmir Chilli Powder
  • 1 tsp Ginger Garlic Paste
  • Salt, as required
  • Pepper, as required
  • 5 tbsp Maida, for coating
  • 3 tbsp Mayonnaise 
  • 1 tsp Chilli Paste
  • 2 tsp Tomato Paste

Instructions:


  1. Peel and slice your potatoes using a slicer and set aside.
  2. Slice your chicken breast to long, thin strips and place them in a clean bowl.

  3. Next, add in your ginger garlic paste, turmeric powder, red chilli powder, and salt as required  and mix well.

  4. Now, unto a clean surface, place a potato slice and next place a marinated chicken strip and then roll and tuck in tightly so that one end of the potato slice and then the chicken and then the other end of the potato slice are securely tucked into the skewer.





  5. Place your pan for shallow frying. Pour oil, once hot, sprinkle salt and pepper over the potatoes and coat in maida immediately* and place in hot oil and shallow fry for at least 5-8 minutes.

  6. Finally prepare your Dynamite sauce by mixing mayonnaise, red chilli paste and tomato ketchup.

  7. And garnish with the prepared sauce and enjoy! 



Notes:

  • The potatoes should only be sprinkled with salt right before frying, because the potato oozes out water when sprinkled with salt.
  • Make sure to tuck in tight before you add the next set of potato slices and chicken so that they do not twist loosely when you flip, while frying them on the Skewers.

Pepperoni Pizza Pancakes



I am all in for easy recipes especially for iftar and if it is oil free and healthy double points! 😍 😍

I made a batter that can be used as a pizza base and requires no oven.. Pizza made on a pan with a simple batter. To make it healthy I have used half wheat flour and half of all Purpose Flour* and just a tbsp of olive oil. 

For toppings you may use any pizza sauce/bbq/ ranch sauce. I just used a basic pizza sauce here, that I demonstrate in the video/ recipe. I wanted to make mini pepperoni Pizza. But since the real pepperonis were too big for these mini pizza pancakes, I dehydrated my sliced sausage in the oven, for that crispy pepperoni look. Pepperonis are basically sausages with pepper. You may add pepper prior to baking if you like. 


This pancake pizza was such a hit! I was so happy to see the happy faces. The batter shouldn't be too thick not too thin, just make sure to prepare a batter with no lumps. The dry ingredients are gradually added one tbsp at a time to the wet ingredients. This batter method is easy during iftar preps so that you don't end up with messy hands, which happens while making the real pizza. 

You may use onions and other toppings as per your taste. Pizza is something that adults and kids unanimously love, so it is definitely going to be a hit on your iftar table and healthy and oil free too. 


Ingredients :

  • 7-8 Chicken Sausages / Franks
  • 1 Cup All Purpose Flour 
  • 1 Cup Whole wheat flour
  • 1 egg
  • 1 cup warm milk
  • 1/2 cup warm water
  • 1 tbsp melted butter 
  • 1 tsp baking powder 
  • 1 tsp instant yeast 
  • 3 tsp Sugar
  • Salt as required 
  • 1/4 cup Chopped Capsicum 
  • 1/4 cup Black Olives, sliced
  • 1 cup Shredded Mozzarella 

Tomato Sauce Base:

  • 3 tbsp Tomato paste
  • 2 tbsp Tomato Ketchup 
  • 1/4 tsp Oregano 
  • 1/2 of a Garlic clove, minced
  • 3 tbsp Water 
  • Salt, as required 

Instructions :

  1. To prepare your Pizza Sauce, in a bowl, add tomato paste, tomato ketchup, Oregano, minced garlic clove, salt and water, mix well. 
  2. Slice your sausages thin and place on your baking tray lined with baking paper, sprsy some oil and bake for around 10 minutes or until almost crisp. *

  3. In a bowl prepare your dry ingredients, ie, all Purpose Flour, whole wheat flour, baking powder, instant yeast, sugar and salt and mix well with a dry whisk and set aside. 
  4. In another bowl, pour your lukewarm milk, lukewarm water, melted butter, egg and mix well. 
  5. Slowly and gradually add in your dry ingredients to your wet ingredients bowl, 1 tbsp at a time, so that no lumps form. 
  6. Mix well and make sure there are no lumps. 
  7. In a pan, greased with some olive oil/ butter pour your batter and cook covered for 3-4 minutes on low. 
  8. Open the lid and spread your pizza sauce, add in your toppings, here I have used finely chopped Capsicum and sliced black Olives, Shredded Mozzarella and Pepperoni (prepared earlier).

  9. Cover and cook until cheese melts. 
  10. Your no Bake, 20 minute Pepperoni Pizza Pancakes are ready! 😋😋🍕

Notes:

  • *You may add pepper powder on your sausage prior to baking. 
  • You may also shallow fry the sliced sausages if you do not have an oven. 
  • You may use only all Purpose Flour for better texture and results. But since it's for iftar, I wouldn't want to have it that way.
  • For easier pouring of pizza batter, to get perfect rounds, you may use a small pan for it, in which you will to pour one pizza base at a time. 
  • You may use toppings like cooked chicken, Mushroom, sliced onions etc.

Instant Chicken Tandoori Bows




Chicken Tandoori is definitely a dish most of us love. Well, this Ramadan I have tried to cut down on oil fried food/snacks. That's how I came up with this idea. It is the easiest dish you could prepare for iftar that is oil less, yet filling and delicious.

These bows that you see here aren't puff pastry sheets. Guess what! These are frozen Parathas that I transformed to a puff pastry kinda experience just by baking them. My little one being a puffs lover, this is a snack that had to be invented! 😅

If you are someone like me who stores frozen Parathas for quick access for immediate hunger pangs. Then this recipe is a good hack and delicious! 😋 👌



I prepared the chicken Tandoori Masala, and marinated it for a few minutes and pan fried  the chicken breast and allowed to cool, once cooked, you need to blitz the cooked chicken and make a sauce that comprises of yogurt and Mayo with a dash of chopped Coriander leaves for that hint of freshness.
As simple as that. And the tiny bows were baked to golden perfection by giving an egg wash prior to baking.

Let’s see the ingredients and get started:

Ingredients :

Chicken Marination:

  • 250 gms Chicken Breast
  • 1 tsp Garlic paste
  • 1/2 tsp ginger paste 
  • 2 tbsp yogurt
  • 3 tsp Kashmiri Red chilli powder
  • 1/4 tsp Turmeric powder
  • 1/2 tsp Garam masala powder
  • 1/2 tsp Black Pepper Powder
  • 1 tsp Coriander Powder
  • 1/2 tsp Dried Fenugreek leaves
  • Salt, as required
  • A squeeze of lemon
  • Frozen Parathas

For the sauce:

  • 2 tbsp Mayo
  • 1 tbsp Yogurt 
  • Coriander leaves, chopped 
 

Instructions:

  1. Marinate the chicken breasts, with the ingredients under chicken marination for at least 15 minutes. 

  2. Now in a pan, fry the chicken breast well on both sides 5 minutes on medium high and flip and cook 3 minutes on medium low heat. 
  3. Allow to cool, blitz in a food processor and set aside. 
  4. Now thaw the frozen Parathas one at a time, so that they do not stick to the plastic that comes along with the paratha. 
  5. Once thawed, peel off one layer of the plastic cover of the Paratha and cut a '+' sign, that is horizontal and vertical cut that gives 4 pieces.
  6. Now make a sauce by combining your yogurt, Mayo and Coriander leaves. 
  7. Onto the cut frozen Paratha, smear your prepared Mayo-yogurt sauce and place a tbsp of your blitzed chicken Tandoori on the  end if the triangle and roll them. 
     





  8. Once it reaches the end, press both the sides and pinch to middle to form a bow shape. 

  9. Now give them an egg wash. 
  10. And bake in a preheated oven at 200 Def C for 20 minutes or until golden and crisp. 


Notes: 

You may place a burning charcoal in an aluminum foil and pour a little oil in a sealed pot along the cooked chicken for that tandoori smokey effect, this step is optional.
