North Indian Style Dal Tadka

I am all about easy recipes that are EASY at the same time COMFORTING. For me, a plate of perfectly cooked rice, dal tadka, and chicken or any seafood fry is something very much that tells me home cooked meal. In North India, this is combination is very popular and is called Dal-Chawal (lentil-rice), a favorite among many.

Dal tadka is something I prepare once a week, it's wholesome, filling and keeps one content. This recipe is so easy and gets done in a jiffy! For lentils, I have used toor dal here. You may use red lentils, masoor dal, a mix or a combination of the lentils. There is no sautéing involved, only a tadka / tempering is prepared to give the dal its oomph!

You can have DAL TADKA with chappati, roti, rice or as a side curry. It will definitely be your family's favorite.

Ingredients :

  • 1/2 cup Toor Dal
  • 1/2 Onion, sliced
  • 1/2 Tomato, chopped
  • 1-2 Green chillies, slit
  • 1/4 tsp Turmeric powder
  • Salt, as required
  • 3/4 cup Water
  • Coriander leaves, chopped

Tadka:

  • 2 tbsp Butter
  • 1/2 tsp Cumin seeds
  • 1 tsp Ginger Garlic paste
  • 2 sprig Curry leaves
  • 1 tsp Kashmiri Red Chilli Powder
  • A squeeze of Lemon juice
  • Coriander leaves, chopped

Instructions:

  1. Wash toor dal well and add to a pressure cooker.

  2. Pressure cook all the ingredients except for the ingredients under tadka for 1 whistle. Allow the pressure to release naturally.
  3. In a small tadka pan, add in butter, allow to melt.
  4. Splutter the cumin seeds, add ginger garlic paste, curry leaves, chopped coriander leaves and sauté well.
  5. Pour the cooked dal, add in the Kashmiri Red Chilli powder, and adjust seasoning if required.
  6. Allow to simmer well. Finally squeeze lemon juice, garnish with chopped coriander leaves and add in a blob of butter.
  7. Enjoy with cooked rice, and your favorite sides like chicken or fried seafood!

 Mac n Paneer

Well, Paneer is a form of cheese , isn't it? This is the Indian version of Mac n Cheese :D

I had some Paneer laying in fridge to be used, and I had to quickly whip up something before my girl returns from school. That's when I thought of preparing the Indian Mac n Cheese also known as Mac n Paneer. You can always play with the flavors according your preference, like add other veggies or spices of your choice.

There is no chopping involved in this recipe. The capsicum is also chopped by pulsing in the mixer jar along with tomato paste and other spices. I have not used green chillies or chilli flakes as my girl does not like her food spicy, you may add as per your choice.

This Fusion version is definitely a must try and loved by all Paneer lovers!

Ingredients :

  • 1 cup Macaroni
  • Boiling water, to cook the pasta
  • Salt, as required
  • A dash of Olive oil
  • 1 Garlic clove, sliced
  • 1 tbsp Olive oil
  • 1 tbsp Butter
  • 3 tbsp Tomato paste
  • 1 tsp Onion Powder
  • 1 tsp Kashmiri Chilli Powder
  • 1/4 Turmeric powder
  • 1/2 tsp Cumin powder
  • 1/4 piece of a large green Capsicum
  • 1/4 tsp Oregano
  • 1/2 cup Paneer cubes
  • Salt, as required
  • 2 tsp Arrowroot powder
  • 1/2 cup Milk
  • 1/4 Cup Mozzarella Cheese
  • Cheddar Cheese, optional

Instructions:

  1. In a pot, boil the macaroni with salt, and olive oil until al dente.
  2. In a small grinder jar, pulse tomato paste, spices like Onion powder, Kashmiri Chilli powder, turmeric powder, Cumin powder and chopped capsicum.
  3. In a large pan, pour the olive oil and the butter, add the sliced garlic and Sautee for a couple of seconds.
  4. To this, add the pulsed tomato-capsicum paste, a little pasta water, sprinkle oregano and add in the washed Paneer cubes an add salt as required.

Mac n Cheese with Chicken, Broccoli and Mushrooms (Lunch box friendly)

I have always been asked to share lunch box ideas and recipes. A few days back I happened to post this Mac n Cheese that I kept in my girl's lunch box. Since there was a lot of requests for the same, I thought to share it as a video. So finally here you go! This recipe is delicious and you may deduct the veggies or chicken (protein) from the recipe. I added them so that the meal is wholesome and filling. I love how versatile Mac n Cheese is. No matter how wrong you make it, you can't go wrong with this one!

To make your morning packing easier, you may boil and keep the pasta in the fridge for easier cooking in the morning. Usually, all purpose flour is used as aa thickening agent, but here, I haven't used any! As cooking down the milk makes the sauce thick. Also, if you plan to cook this, you may make it less thicker and saucier by decreasing the boiling time of the milk. I like to cook up the milk well, so that it is mess free and non sticky when the Mac n Cheese cools down.

Make this for your kid's lunch box and see how they bring back an empty box. What makes a mommy happier than seeing their kids finish their lunch boxes?! =D
Also you may add chopped onions (or onion powder) to the butter before adding the veggies for better flavor, and if your child dislikes the flavor of garlic, feel free to not add garlic too. Still tastes amazing!!

Ingredients :
  • 1 cup Elbow pasta
  • 4 cups Boiling water
  • Salt, as required
  • 1/2 cup Broccoli, chopped
  • 1/2 cup Mushrooms, chopped
  • 2 small Garlic cloves, finely chopped (optional)
  • 100 gms Chicken Breast, sliced
  • 2 tbsp Butter
  • 1/2 tsp White Pepper Powder
  • 1 cup milk
  • 1/4- 1/2 cup Cheddar Cheese (shredded)
  • A dash of Oregano

Instructions:
  1. In a pot boil water, add salt and boil pasta according to package instructions ( do not over cook), drain and set aside.
  2. In a pan, add butter and finely chopped garlic, sauté for a few seconds and add in chicken breast pieces.
  3. Next add white pepper powder and salt as required. Sauté for around 5 minutes.
  4. Move the chicken pieces to a side on the pan itself and add another tbsp of butter and add in your mushrooms and sauté well with a dash of water to chele cook the mushroom easily. Add broccoli and salt as required.
  5. Next add the milk and allow to come to a boil, and add in the shredded cheddar cheese. Allow the sauce to thicken well.
  6. Finally finish off with a dash of Oregano and add in your pasta and combine everything well and enjoy! Bon appetite!

Notes:

If you want it saucier do not boil the milk for too long, the cheese will help bind the sauce together.

Chicken Maqluba

With all the overwhelming news around, I have been feeble and weak just by glancing through the images of the inhuman and brutal acts of the Israeli's in Palestine. As a gesture of solidarity, I was contemplating to share the recipe of the delicious Upside Down Chicken and Rice, which is one of the most cooked meals in Palestin#.
Ps: If keeping mum would have helped Palestine in any way, I would have definitely done the same. Spread awareness, be it any sort of page, with minimal to millions of followers. Spread love and not hate. This isn't about religion. This is about humanity.
Educate yourself and be the change. Raising our voices for them, boycotting Israel products and keeping the innocent souls in our duaa is the least we can do. But remember, they are the most powerful weapons, so don't ever undermine them.
.
In honor of Palestinian's rich culture and heritage, I present to you MAQLOUBA, which is a Levant dish that has its origins from Palestine too.
.
Years ago when my sister made this, we weren't quite fond of it. Later I deleveloped a liking towards it, over the years, when I prepared it the Way I wanted it. This is a rice dish where you can use any of your favorite vegetables. Though brinjal/eggplant is commonly and initially used, gradually all sorts of veggies were added which includes Cauliflower, carrots, potatoes, eggplants, onion, tomato etc.
.

Maqluba means 'upside down'. It is a beautiful upside down rice that is not only beautiful but delicious too..a pot dish with layers of veggies, rice and chicken. The way the veggies sit on the rice when you flip the casserole onto a platter is truly spectacular.
A beautiful dish where families gather around to relish at least every week in Palestine. While I share Palestinian's most popular rice dish, Maqluba, I sincerely make duaa (prayers), and I hope Palestinians get victory from all the inhuman practices, genocide and all sufferings they have been going through since 73 years.
.
Without further a do, let's get started.

Ingredients:

  • 1kg chicken
  • 3 glass Basmati rice
  • 1 large onion
  • 3 tbsp ginger garlic paste (6 cloves garlic and 1 inch ginger)
  • 1/2 small green Capsicum, chopped finely
  • 2 cinnamon sticks
  • 2 Cardamom
  • 1 Clove
  • 3 tsp Arabic Masala Powder *
  • 1 tsp Black Pepper Powder
  • Salt, as required
  • 1 large potato, sliced
  • 1 aubergine/eggplant, sliced
  • 1 carrot, sliced
  • 1 non ripe tomato, sliced
  • 1 onion, sliced
  • 1 green bell pepper, sliced
  • 3 cups Basmati rice (preferably soaked for 30 minutes before cooking for longer grains)
  • 4 1/2 cups water
  • 4 tbsp tomato paste
  • 1 tsp arabic masala powder
  • 1 tsp Black pepper
  • 1 tbsp oil
  • 4 tbsp water

Instructions :

  1. In a large casserole, pour some oil and ghee and add in your chopped onions, add salt and cook until translucent.
  2. Next add in your chopped Capsicum, ginger garlic paste and saute well until raw smell disappears.
  3. Next place in your chicken pieces, sprinkle the arabic spices masala, add in salt and pepper * and Turmeric if required.
  4. Pour in water.
  5. Close the lid and allow for the chicken to cook well for around 20-25 minutes.
  6. Whislt the chicken gets done, fry each of your chopped vegetables in batches and set them aside. Sprinkle salt over the fried veggies.

  7. Once done, drain the chicken pieces, reserve 1/2 cup of stock and set aside.
  8. Now in the chicken broth, add in your cleaned, soaked and drained rice, add salt as required and cook on low for around 10 minutes. (the rice will cook completely once layered and cooked on low)
  9. To prepare the tomato gravy for the rice, in a small pan, add your tomato paste, salt, pepper, arabic masala powder, oil and water and allow to come to a boil.
  10. Once done, mix it into the cooked rice.
  11. Now let's assemble and layer the Maqluba. Into your large casserole, start by adding your fried potatoes as the base and building up with any of the fried veggies.
  12. Layer your cooked chicken pieces.
  13. Next add a layer of cooked rice mixed with the tomato gravy.
  14. And add any leftover veggies and finish off with a layer of rice and gently run the back off your spatula over the rice (do not press) and pour the reserved chicken stock, close lid and allow to cook for at least 20-25 minutes.
  15. Now for the moment of reveal, place a rice platter or a large plate over the casserole and flip the casserole carefully and tap around the casserole using a wooden spoon, so that all remains of the Maqluba falls into the plate.
  16. Carefully remove the casserole slowly, so that the layers remain intact and you get to witness a beautiful Maqluba.

Notes :

* To make Homemade Arabic Masala Powder :
In a pan, dry roast 2 tbsp Coriander seeds, 2 tbsp cumin seeds, 2 tbsp black peppercorns, 1 tsp cinnamon, 1 tsp cloves, 1 tsp cardamom, and 1 dried lemon (torn by hand) and once the spices have roasted well, switch off flame, set aside to cool and add 1/2 tsp Turmeric powder. Once the spices have cooled, grind well to fine powder and store in a air tight container in a cool and dry place. Can be used until 1 month and can be used for 3 months if stored in the fridge.

* You may marinate the chicken pieces with salt and pepper before cooking.
 * I usually like to use Cauliflower and potatoes mainly for the dish, but since I had no Cauliflower with me, I prepared with whatever I had in hand.
* I have prepared makluba using half cooked rice, you may cook raw rice in the process, just add 2 cups of water for 1 glass of rice instead of 1 and half cups of water.

Effortless Malabar Style Chemmeen Thenga Chor

Have you had situations where you are already late and tired to make lunch? Well, this recipe is here to the rescue! Definitely, a must-try if you love 'naadan' food and tastes like its right from 'The God's Own Country'.

This Chemeen thenga chor is something that is made quite often at home since childhood. I have always been a picky eater when I was smaller and used to completely dislike when mama made this, then least favorite rice. Only after I grew did I know that I was missing out so much on this Chor (rice) and its flavors in my life! 🤣Ever since this rice has always been my last minute resort which is equally delicious compared to basic meals from our place! So of course, this is my mommy 's recipe! This might not be authentic but that's how me and my mama cooks🤷‍♀️😀 We don't follow any particular recipe or go for proper measurements! 😅

Let's move on to the recipe now. The rice is very pungent and flavorful, you would not want to miss out on its flavors. As the name suggests, it is so effortlessly made. All you need are cleaned prawns and 30 minutes of your time in total. That easy I must say.

Basically, it is rice cooked in a masala of turmeric, chilli powder, coriander powder and garam masala in small proportions, in which the prawns are cooked in the gravy and coconut milk is added to escalate its flavor profile. Here, I have used coconut milk powder in the recipe for ease of accessibility but does the job well. You may use freshly squeezed coconut milk too (any day better)!  🤣

The rice is often accompanied by some mango-coconut chutney and pappadam (pappad) and/ raita. Here I did not have pappad with me, hence only the coconut chutney is pictured.
Let's get going and make this super delicious and effortless Thenga Chor with Chemmen.

Ingredients:

(Makes for 3 people)

  • 2 glass Ponni Rice/ Jeerakashala
  • Water (check notes) *
  • 15-20 Prawns, cleaned and deveined (marinated in turmeric powder, Kashmiri chili powder, 1 tiny garlic minced and salt)
  • 1-2 tbsp ghee
  • 4 tbsp Coconut oil
  • 1 medium Onion, sliced
  • 2 tbsp ginger garlic paste
  • 1 small tomato, chopped
  • 3 green chilies
  • 2-3 sprig of curry leaves
  • 1/4 Turmeric powder
  • 1 1/2 tsp Chilli Powder
  • 1 tbsp Coriander powder
  • 3/4 tsp Garam Masala
  • 1 cup Coconut milk

Instructions :

  1. Pour the coconut oil in a large pot and fry the prawns that have been marinated in Kashmiri chili powder, turmeric powder, salt and 1 small garlic minced.
  2. In the same leftover coconut oil, add ghee and sauté the onions until translucent and add in your ginger garlic paste and curry leaves. Saute till the raw smell disappears.
  3. Now add the slit green chilies and chopped tomatoes, and cook for a couple of minutes until the tomatoes mash.
  4. Now add all the spices and Sautee on low till the spices have no raw smell, about 2 minutes.
  5. Add the fried prawns to this and sauté,
  6. Next, add the washed and drained rice and add in 1/4 tsp of turmeric powder if needed and sautee. Next, add water as required (refer notes)*.
  7. Add the coconut milk to the rice and close the lid and allow to cook. For cooking time for the different types of rice check notes.*
  8. Voila, and you are done! Effortless Chemmeen Thenga Chor is done.
  9. Garnish with fried curry leaves and a Mango coconut chutney and achar/ pickle on the side.! (recipe below 👇)

Notes*-

  • You may always use freshly squeezed Coconut milk if you have the time or canned coconut milk is definitely much convenient and better!
  • For Jeerakashala : water ratio is 1 : 1 1/2 glass (Since you’ll be adding 1 glass of coconut milk, reduce the amount of water accordingly. For example, if you’re using 2 glasses of Jeerakashala rice, the total liquid should be 3 glasses. Instead of adding 3 glasses of water, use 2 glasses of water and 1 glass of coconut milk.)
          Ponni rice : water ratio is 1 : 2 1/4 glass

  • For cooking Jeerakashala rice - After 10 minutes give a mix, and close the lid and let it cook on simmer for another 5 minutes and it's done! (If using Jeerakashala I prefer using ghee along with coconut oil)
  • For cooking Ponni rice - Cook covered for at least 25 minutes and check it's doneness and cook more if required.

Mango Coconut Chutney

  • 1/2 cup grated coconut
  • 1 small garlic clove
  • 1 side slice of green mango, chopped
  • 1/2 tsp Kashmiri Chilli powder
  • Salt

Grind in a grinder all the above ingredients or use a mortar and pestle for better results.

SIMPLE SAMBAR RECIPE

Good evening folks!

I have always felt Sambar making is a big headache, but that is only if you want it to be a long and authentic one. Normally Sambar is prepared by stir-frying or sautéing grated coconut with other spices like powders, garlic, etc are Sautéed till it browns and the coconut mixture is ground to a paste and added to the dal-veg curry prepared earlier and lastly, for tempering - mustard seeds, dried red chilies, and curry leaves are used. A long process isn't it? Well, that is the authentic one. 🤷‍♀️
I am here to share with you the Simple Sambar recipe which is the best when you have time constraints. I somehow don't like the 'varutharacha sambar' (Sautéed and ground Coconut mixture Sambar) and it is super time-consuming.
Storytime- Once back in the good old days when I was in high school we used to have a carpenter who used to single-handedly do neat furniture for us. One fine day it was declared hartal and the very famous 'national hotel' was not opened that day. So I had to cook food for him too as mama was here in Dubai and I had already started my work for Sambar. I was quite hesitant to agree to cook for him as he is a local from our place and I am sure he would die laughing asking if this really was Sambar. I was new to my kitchen then, if at all I never tried Sambar much, there was a lot of pressure on me. I felt it like a mission. I did whatever I could to my understanding and prepared the Sambar. Voila and mission accomplished! My heart went *dhuck dhuck dhuck* in a fast rate. And I was indeed surprised when he said that this was the best Sambar he ever had! I was astonished 😲 I quite didn't know what to say as I didn't see this coming. So I thought to myself maybe he was just trying to make me happy as I was a little girl. Then he kept asking things like did someone help you in the kitchen and what all did you add in etc. I was overwhelmed and when he finally said to my dad that the guy who marries your daughter is the luckiest guy, I was blushing. @haseeb.hsb you lucky man😝
Not writing to brag about it here but isn't this one of the best critics a girl in her teens can get. Alhamdulilah since then I felt like I wanted to cook more. And try more. Always remember your motivation, encouragement and your kind words can always have a big impact on the lives of our children.
Anyhow, I never liked Sambar much and don't make it that often. Also, I hate making the varutharacha style, so will be sharing the "Simple Sambar" recipe on my blog. No videos or aesthetic pics as I never thought of putting this up here. But due to many requests for the recipe of easy Sambar came in, I thought I would share this beautiful story with you guys too! ❤️
Let's hop on and make this Simple Sambar!

Ps: Will update with pictures and videos the next time I make it. In Sha Allah ❤️

Serves: 4

Ingredients :

For sambar:

  • 1/2 glass Toor dal
  • 2 green chillies
  • 1 small onion slices
  • 1/2 tomato
  • 1 sprig curry leaves
  • 1 tsp Ginger garlic paste
  • 1/4 tsp Turmeric powder
  • 1/2 tsp chilli powder
  • A pinch of asafoetida/hung (optional)
  • Salt as required
  • 1 potato, chopped
  • 1 carrot, chopped
  • 2 drumsticks/ beans/ ladies finger etc. *

For tempering:

  • 2 tbsp coconut oil
  • 1/4 tsp Mustard seeds
  • 2 sprig curry leaves
  • 2 dried red chillies
  • 2 tsp Sambar powder*
  • Other ingredients :
  • About 2 tbsp tamarind pulp*
  • 1 tsp Jaggery (optional)

Instructions :

  1. Pressure cook everything in the list under 'for Sambar' except for the vegetables in about 1 and half cup to 2 cup water for 3 whistles.
  2. Once the pressure is released on its own, let the cut vegetables cook in the dal curry mixture for about 15 minutes or until knife passes through the vegetables easily.
  3. Temper the ingredients under the list 'for tempering' in coconut oil and add the Sambar powder and mix until raw smell of powders dissappear, (be careful not to burn) and toss it into the Curry and let it all boil well. Lastly add the tamarind pulp and Jaggery. Adjust salt and your Sambar is ready! 😋
Note: *If using ladies finger sautee them in coconut oil separately for 2-3 minutes and add to the Sambar
* Sambar powder quantity depends on the brand used, some are strong some aren't.
*tamarind pulp is prepared by adding hot water and set aside and strain the liquid and use the liquid in the Curry.
