Savoury Cream Cheese Bread Toast 




A very delicious and super easy snack that is perfect to serve sudden guests or as a snack for kids in tiffin box. My girl loves this, I am sure your kids will love it too!! 

The first time I had it was at my husband’s cousins place. She made this easy bread toast for us in a jiffy and it tasted super delicious. We had to immediately ask her for the recipe and it is such a keeper!! Thank you Safeenatha for this easy peesy recipe that is an always a favorite here! 

The ingredients are very staple and that makes this recipe a go-to. We all always have a dabba (container) of cream cheese at the back of the fridge, waiting to be used and the cream cheese in this recipe just brings out the flavors like no other! Make sure you use ghee generously.. that’s where the flavors spark! 

Without further a do, let’s get started!! 


Ingredients: makes for 2


  • 4 Slices of White Bread
  • 2 Eggs 
  • 1/2 of an Onion
  • 1/2 tsp Oregano 
  • 1/4 Red Chilli flakes 
  • 2 tbsp Cream Cheese (preferably salted) 
  • Salt, as required 
  • Ghee/ clarified butter

Instructions: 

  1. In a small blender, crack in the eggs, add in the roughly chopped onion, Oregano, cream cheese and blend by pulsing around 4-5 times.

  2. Transfer the contents to a wide bowl, and add in the red chilli flakes and mix well.

  3. In a hit pan, add in a couple of tbsps of ghee.
  4. Now, dip the bread in egg mixture and toast the bread slices in ghee and your savory bread toast is ready!!

 Fusion Spaghetti with a secret ingredient



Ramadan is almost here, Alhamdulilah! I have planned a variety of recipes for you guys! Can't wait to share it with my lovely people here. May Allah help us reach Ramadan, in Sha Allah.

Before the Ramadan series begin, I thought of sharing this yum recipe of Spaghetti that my mom makes during my childhood. The recipe is a very basic one, but there is this one ingredient that brings in a lot of flavor and aroma. The recipe uses soy sauce and all the flavors of Chinese, but the addition of a generous amount of Indian clarified butter takes the flavor to the next level. 

Let's make this delicious Spaghetti:


Ingredients:

  • 1 pack Spaghetti  
  • 3-4 Gralic, finely chopped
  • 1/4 Cup Yellow Capsicum, sliced
  • 1/4 Cup Red Capsicum, sliced
  • 1/2 cup beans, sliced
  • 1/2 cup Carrot, sliced
  • 2 green Chillies, slit
  • 200 gms, Boneless Chicken strips
  • 3 Eggs
  • 2-3 tbsp Ghee/ clarified butter
  • Vegetable oil
  • Salt, as required
  • 1/2 tsp Black pepper powder
  • 1/2 tsp White pepper powder
  • 2-3 tbsp Soy sauce 
  • Homemade Chicken broth/ Maggi chicken cube*

Instructions:

  1. Cook the Spaghetti according to package instructions. Drain and set aside.
  2. Crack 3 eggs, add salt and pepper and whisk it and keep aside.

  3. In a pan, pour veg oil and pour the egg mixture completely, to form a thin layer.
  4. Once slightly cooked, immediately overlap each side of the Omlette and cut uniformly into thin strips using the flat laddle.
  5. Remove the egg from the pan immediately.
  6. In the same pan, add ghee and veg oil and Sautee the garlic and veggies on high heat for a couple of minutes, so that they are cooked yet retain crispiness.
  7. Now move the veggies to the side of the pan, and cook the chicken strips.



  8. Pour some oil, add the chicken, black pepper and salt, cook well and mix everything.
  9. Now add the cooked Spaghetti in two batches. Add the soy sauce, black pepper, white pepper, and chicken broth and toss everything well on high heat.
  10. Finish off with a generous amount of ghee. Enjoy warm!


Notes;
*If using the cube, mix the chicken cube in around 1/2 cup of hot water and pour the contents to the Spaghetti so that the Spaghetti doesn't dry out.

Abresham Kabob/ Silk Kabab



I happened to stumble on this recipe I found in a book in the Dubai Library. Abresham Kabob aka Silk Kabab is a delicacy originated in Afghanistan, where eggs strands are fried in oil and pulled using a stick and shaped like a kabab, which is then poured with sugar syrup or dusted with powdered sugar and finished off with a sprinkle of crushed pistachios which is mixed with a small amount pf cardamom powder. I felt that the recipe had similarity with our muttamaala (egg garlands), where the egg strands are cooked in sugar syrup and as for the silk kabab the egg strands are fried in oil.

In this version, I have used powdered sugar to dust the kabab for the sweetness. Alternatively, sugar syrup can be used for adding sweetness to the dish. I prefer the sugar syrup, but I happened to film the one with  powdered sugar. Some people like it with powdered sugar, so it is all about one's preference.

I love how easy this dish is to prepare, and not to mention how fun too! Usually different methods are used for achieving thin strands of the egg mixture, like a new steel scrubber, etc, here I have used my clean hands, the traditional way.

Ingredients: (makes 7-8 pieces)

  • 2 large Eggs
  • A pinch of salt
  • 1 cup Vegetable oil
  • 1/4 cup pre prepared sugar syrup* / powdered sugar
  • 3 tbsp Pistachios, crushed
  • 1/4 tsp Cardamom powder


Instructions:

  1. In a bowl, slowly beat the eggs using a fork, lightly, do not beat and make the eggs foamy.
  2. Add a pinch of salt to the eggs and mix.
  3. In a pan, pour oil and allow to heat well. 
  4. Now using a new steel scrubber or your clean hands, dip your hand in the egg mixture and fold your fingers inwards, and bring your hand over the hot oil and swiftly swing your hand with the egg mixture over the hot oil and keep doing this until you get a two inch thick egg strands layer.
  5. Fry just until it starts looking crisp in the middle. Using a skewer, lift the egg strands from the middle upwards and allow both the sides to fry well, by placing each side in the oil.


  6. Slowly place the kabab on a baking paper and fold the egg strand like a folded letter and pull off the skewer.
  7. Make the whole batch the same way.

  8. Now crush the pistachios and mix a dash of cardamom powder to it.
  9. Pour the sugar syrup/ powdered sugar over the silk kabab and spoon over them a tsp of the pistachio/ cardamom mix and enjoy immediately! 
  10. Your super easy sweet/ dessert is ready!

Ps: The recipe says that you can store in an air tight container for a couple of days, but pour the sugar syrup only before consuming it.
I preferred the sugar syrup version than the powdered sugar.

 Malabar Style Mutta Curry/ Mutta Aanam Vechadh




I have always been asked to share the recipes of the food the usual food we malabaris have. I kept delaying it, as I am someone who loves trying and sharing experimental food. Finally taking baby steps to make this page helpful for beginners in cooking as well. This egg curry is the easiest to prepare. No crushing of ginger garlic, and with basic pantry ingredients you can make this delicious curry that goes well with soft ari rotti (a malabar rice pancake), that is smeared with lots of ghee and/ Chappattis. This curry goes very well alongside some delicious meen mulagittadh/ meen varattiyadh, spicy fish curry made using red chilly powder and tamrind. 

We, here, usually like to pair it with some fried fish to compliment the curry. We also prepare a seafood version of this curry, will share the recipe as another post, in Sha Allah. It is very delicious too. I always like to prepare this curry durimg lazy days as it is effortless, yet delicious too. Make sure to cook the egg as per your liking keeping the time in mind to boil the coconut paste too. If you keep the coconut paste boiling for too long it might come out a little curdle-like. Once the curry starts boiling switch off and place lid as the earthen pot will do the rest of the cooking.

The last time I shared a pic of my breakfast plate with this curry and ari roti, I was bombarded with recipe requests. So here you go guys.. Do try and let me know you liked it.



Ingredients:

  • 1/2 medium size Onion, sliced
  • 2 sprigs Curry leaves
  • 3 tbsp Coconut Oil
  • 3 green Chillies, slit
  • 1/2 medium size Tomato, chopped
  • 3 Eggs
  • 1/2 cup Shredded Coconut 
  • 1/2 tsp Turmeric Powder 
  • 1 tbsp Fennel Seeds
  • Salt, as required
  • 1 tsp ghee

Instructions :

  1. In an earthen pot, pour the coconut oil and Sautee your sliced onion.
  2. Add salt for the onions to turn translucent .
  3. Next add in your curry leaves, and slit green chilies, Sautee well.
  4. Now add in the chopped tomato, mix well and close lid, allow to become mushy.
  5. Next make a coconut paste by grinding shredded coconut, turmeric powder, fennel seeds and little water and grind to a smooth paste.*
  6. Open the lid, and crack in your eggs and allow to cook for around 2 minutes and add in your ground paste, cook for around 3 minutes on medium low and you are done!
  7. Add in a tsp of ghee for that extra richness.
  8. Enjoy with mabalar Ari rotti/ Chappathi and some delicious fish fry like this. 
 

Notes:

  • Make sure to add enough water, as the earthen pot drains the moisture.
  • *Do not add too much water, as you will get a smooth fine paste. 
  • Do not keep the coconut paste boiling for too long it might come out a little curdle-like. Once the curry starts boiling switch off and place lid as the earthen pot will do the rest of the cooking.

Sunny side up Potaffles



Pottafles are what came to my mind when I was craving for hash browns, yet wanted to make waffles when I had a lot of potatoes in my pantry. It is a super easy breakfast idea. Some days I really crave for something savory in the morning, but the thought of the process involved makes me want to adjust with pancakes and waffles. What I liked about potaffles was that it had a hash brown taste to it, without much effort.

The ingredients are basic, so you make it very easily, but of course, if you have a waffle maker. The addition of the corn flour helps to make the waffles crisper unlike usual savory waffles. Though, right after cooking the potaffles, they may look soggy, but it gets crisper when the vapour evaporates, the potaffles gets crispy.

After mixing the batter of the potaffles, the more the batter sits, water oozes from the potatoes, which can be removed by straining the water. You may avoid onions, but it helps elevate the flavors as well as helps the potatoes from oxidizing and changing color once shredded. I served the potaffles with sides like sausages, streamed brocolli and sunny side up eggs with a warm cup of coffee to go with it. If you have a food processor and a waffle maker, do definitely try this recipe, it's delicious yet super easy.

 

INGREDIENTS : (Makes for 4 )

  • 4 Potatoes (3 shredded and 1 finely shredded, using a food processor)
  • 1 Onion, finely chopped
  • 1 Egg
  •  4 tbsp All Purpose Flour
  • 2 tbsp Corn Flour
  • 1 tsp Black pepper, crushed
  • Salt, as required 
  • Eggs, brocolli, sausages to serve as sides
 

Instructions:

  1. In a food processor, shred 3 potatoes and finely shred 1 potato.
  2. In a mixing bowl, add the shredded potatoes and finely chopped onion, and all the ingredients, mix well to combine.
  3. Next scoop the batter mix and spread over the waffle griddle and close the griddle and cook for around 7 minutes or until the edges turn brown.
  4. Finally, place a sunny side up egg over the potaffles and serve with your favorite sides. I served with steamed brocolli and fried sausages.

Savory Breakfast Muffins



Have you ever wished if you could whip up a filling breakfast that is healthy at the same time delicious? I know we all have! Just imagine baking some easy breakfast muffins that are so simple that if you cut and prep the veggies the night before I am sure it won't take no more than half an hour from prepping to baking these cute little muffins, or more like mini frittatas (if you fancy a fancy name! *wink*) But if you want the perfect frittata recipe do check here.

These are so delicious and easy to prepare that I am sure once you make these you are going to bake these at least once a week! Who doesn't like recipes that are quick and done in a jiffy?! Also, this is a great idea for a potluck breakfast. Done so easy and yet so yummy. As these are tiny and bite-sized, kids will love to have them for sure. Well, my daughter did! This is a mini package full of nutrients - proteins, carbs, dairy, veggies, and everything you want for a meal. 


As parents, don't we always get clueless on a hustle bustle mornin, where you have so much to do yet little time to manage for a healthy yet nutricious meals for yourself and your little ones? Well, this is your answer to all your dilemma. The perfect lunch box solution! Recently I have been binge watcing this series on NETFLIX, where Nadiya, the famous chef-baker that hosts the show says that oven is your best friend when it comes to cooking food that are delicious, yet you have no time to toil in front of the stove. How true is that?! You just prep the dish, place it in the oven, do your chores and bam! You have your meal ready! Like Nadiya says,  The sooner you realise the oven is your best friend in your kitchen, the easier your life is going to be and I second that! That is my mantra to easy cooking too. 
Every time I open the oven to bring out the baked goodies it amazes me how easy and stress-free that was and how easily did I prepare my meal.



Now coming back to the recipe, the main ingredients in these muffins are broccoli, mushrooms, and cream cheese, you may add or omit any veggies or spices according to your choice. I have used Kiri cream cheese, you may use any cheese according to your preference like feta, etc. But if you are using feta cheese be careful when you add salt. Also, you may add soy sauce while sauteeing your veggies for a change, but here I am trying to keep it healthy. I have poured the egg mixture directly to the generously greased muffin pan. I'd suggest using muffin liners, if so add about 2 tbsp olive oil to the egg mixture.


As the saying goes, eat your breakfast like a king! This is a perfect breakfast as it has everything that needs to make you energetic all day round. Without further a-do, lets bake these and have breakfast like a king!

Ingredients:



  • 3 large Omega Eggs
  • 2-3 White button mushrooms, finely chopped
  • 4 tbsp Broccoli, finely chopped
  • 1 small garlic clove, minced
  • 2 tbsp tomato, finely chopped
  • 1/4th Maggi chicken cube (optional)
  • 2 Kiri Cheese cubes, cut into small squared
  • 3 tbsp cooking cream or fresh cream
  • 1 tsp cajun spice or oregano
  • 2 tbsp olive oil
  • Salt, as required

Instructions:

  1. Preheat your oven to 180 deg C.
  2. In a frying pan, pour in some olive oil and sautee mushrooms along with minced garlic clove and broccoli and add your chicken cube.
  3. In a hand whisk jar, crack in 3 large eggs.
  4. Add in your Cajun spice/Oregano, salt, as required, and cooking cream and whisk well.
  5. Into the whisked eggs, add your cooked veggies, finely chopped tomatoes, and Kiri cheese cubes (cut into small cubes).
  6. Gently mix and pour in generously greased cupcake pans or muffin liners (if using muffin liners add 2 tbsp olive oil in the egg mixture).
  7. Bake for 25 minutes or until the muffins are golden and come off the sides of the pan.
  8. Once slightly cooled, enjoy with your morning cuppa coffee or tea.

Note : I got 12 Muffins from this quantity.

Egglicious Cheesy Toasted Sandwich




The sandwich filling is inspired by Farisa's (A dear fellow food blogger)'s Mughlai Omellete which I modified to my taste and needs. This is a perfect snack that can given to kids as a snack and equally enjoyed by elders.

I had done a trial for breakfast a few days back and since it turned out good I thought I'd sharing with you guys! Also as we are in a pandemic situation, this is something that can be prepared with basic ingredients at home. 


This makes a perfect snack for hungry kids.. Done in no time yet delicious.. I grille dthe sandwiches in a stove top bread toaster/grill which is nearly as old as me 😂. I stole it from my mom. I somehow like it better than the electric ones. However you may simply use an electric sandwich griller too. 

Ingredients :


  • 6 slices of bread
  • 3-4 tbsp butter
  • 1/2 small onion, chopped finely
  • 1/4 small tomato, chopped
  • 2 green chillis, chopped finely
  • 2 eggs boiled and grated
  • 1/4 tsp Turmeric powder 
  • 1/2 tsp Chilli Powder 
  • 1/4 cup water
  • 1 tbsp Mayonaise 
  • Mozzarella Cheese

Instructions :


  1. Boil the eggs and grate it using a grater and set aside.
  2. Now prepare the masala by sautéing onions, tomatoes and green chillis.
  3. Next add Turmeric powder and Chilli powder. Sautee and add water, then mix well.
  4. Next add the grated eggs and mix thoroughly.
  5. Switch off the flame and add the Mayo and mix.
  6. Onto 2 slices of bread spread butter on either sides and place buttered side down on the grilled and place the egg filling and add a generous amount of Mozzarella and place the other slice of bread and toast it well. This way the filling will not spill when the kids have the sandwich.

American Chopsuey




American Chopsuey unlike its name is a fusion of  Indo Chinese cuisine. The dish and flavors have nothing with the American cuisine. Technically there is a confusion between American and Chinese Chopsuey. The one that I am about to share is actually a Chinese one but called American as thats how restaurants name it.

Now to come back to how it made. Noodles/ egg noodles are boiled and fried in a nest shape and a thick sauce is made of veggies and chicken which is poured over the fried noodles and finally a sunny side up egg is placed as a topping.

This is and has been one of my all-time favorite. I was a little girl when I first tried this dish in my life and this dish completely changed my life. My brother had his friends over at our place in Thalassery. For dinner he used to take them out to a restaurant at our place. And these friends were Arabs who always ordered so much that they ended up with a lot of leftovers. And my brother used to bring in the leftovers that they did not even touch. And one such dish was the American Chopsuey, that is the first time I ever tried it. Ever since I haven't had a better Chopsuey from anywhere else.

As my strength is to recreate dishes I simply wanted to recreate that amazing American Chopsuey and oh boy did I nail it! It's so easy to prepare yet so delicious. And anyone who knows me well knows that I am crazy fan of any food that is saucy. And this is on such dish. 😋
If you are an Indo Chinese lover you will definitely love this one.

This dish doesn't look quite filling, but this one dish is enough to fill your tummy. The assembled American Chopsuey is simply deconstructed by breaking and mixing the fried noodles, gravy and of course the egg, mix and mix and just consume hot. These are super delish.
Let's cook this amazing dish already!

Ingredients:



  • 1 pack Hakka noodles/egg noodles
  • 4 cloves garlic (chopped finely)
  • 1/4 of an Onion
  • 1 Maggi Chicken Cube
  • 1 green chilli (according to preference)
  • 5-6 tbsp Tomato Ketchup
  • 1 tbsp tomato paste
  • 3 tbsp Soy Sayce
  • 1 tbsp Sriracha sauce/ any hot sauce
  • 1 tsp vinegar
  • 1/2 tsp Black Pepper powder
  • 1/2 tsp white pepper powder
  • 200 gms Chicken breast, sliced into thin pieces
  • 2 eggs (for topping)
  • 1/2 Carrot, julienned
  • Small piece of Cabbage, julienned
  • 1/2 Capsicum, julienned
  • 6-8 Baby Corn, sliced into halves (optional)
  • 1 and 1/2 glass water
  • 2 tbsp Corn flour
  • Salt, as required
  • Vegetable oil


Instructions:


  1. Boil the noodles according to package instructions and pour cold water and set aside.
  2. Prepare and cut the veggies, mix them in a bowl and set aside. (use only half portion while cooking first)
  3. In a medium deep pan pour 2 inches of oil and fry the  noodles by placing the noodles in the shape of a nest. Cook for 5 minutes on medium-high and when the sides start browning flip the frying noodles using a spatula and fry for 2-3 minutes. Whilst the noodles are frying prepare your sauce.
  4. Take a pan and pour 2 tbsp of oil and Sautee the chopped garlic until raw smell disappears. Before the garlic starts browning add the sliced onions and sautee.
  5. Now add 1 chicken cube and allow it to melt and mix that in.
  6. Next add your chicken and salt and cook on high for 5 minutes.
  7. Next add your veggies and cook on high for 3-4 minutes. And add the green chilli, slit.
  8. Add in your sauce (ketchup, soy sauce, Sriracha/hot sauce, tomato paste).
  9. Next add your pepper powder (Black and white) mix well and add in more sauces if required.
  10. Now pour in 1/2 glass of water and mix well.
  11. While it bubbles add the rest of the earlier mixed veggies and cook on high for 2 minutes. (this helps to retain some crunch in the veggies)
  12. Make a corn flour slurry and pour into the gravy and mix vigorously until a thick gravy is formed.
  13. Finally in a small non stick pan, pour in some oil and crack an egg and cook for 3 minutes and set aside the sunny side up eggs.
  14. Now assemble them onto a deep dish. First place the fries nest-like noodles and pour the gravy on top and finally top it with a sunny side up egg. Garnish with spring onions or parsely (optional).


Notes :


  • The more the gravy sits, the thicker it gets. Keep that in mind whilst adding more corn flour slurry.
  • Adding the leftover veggies at the end helps to retain crunch in the veggies that is why we keep half the veggies aside and add them at the last which gives a crunchy impression.

Turkish Pide



Turkish Pide resembles pizza just like the name suggests. It is one of the most popular foods in Turkey. A flatbread that is boat-shaped consists of meat toppings (minced meat etc), chopped veggies which includes onion, tomatoes etc herbs such as parsley and spices along with some cheese or egg mixture which is completely optional; it is what Turkish Pide comprises. The flatbread is similar to pita bread or the Italian pizza crust. It is known as their fast food that is "slow-cooked". Lahmacun is another dish that is similar to the Turkish Pide. Turkish Pide is made into a boat shape/oval flatbread whereas lahmacun is round in shape made of thin dough topped with minced meat and vegetables. Another name for Turkish Pide is Kiymali Pide.

The flavor-packed Turkish pide is much thicker and they are served in slices. Some people like to bake the pide with raw meat filling, but I like to cook my filling first to be on the safer side and then top it up with the filling. Cooking the meat mince first with the other ingredients like the veggies, spices and herbs helps the flavors to combine well so, we can make sure if the filling is well seasoned/cooked etc.

If you are somone like me who loves simple and easy recipes for lunch/dinner then thi sis defineely one recipe you got to try! The steps seem very intricate and the dish itself looks very sophisticating but I guarantee you one you are done you are going to feel it was so easy and so much FUN to make it! I myslef when I tried it for the first time I was surprised that it was done effortlessly rather I enjoy making it! If you have a kid grab him/her along to bake these 'Pides'. Ask them to help to make the boat shape or maybe to brush some egg wash on already prepared 'Pide'. I bet they are going to love it; not only to bake them but to gorge into them too. This Turkish Pide recipe is BOMB.

  • 1 medium Carrot, chopped finely
  • 3 Cloves of Garlic
  • 1 tbsp Lemon Juice
  • 1 tbsp Olive Oil
  • 1tbsp Butter
  • ¼ tsp Black Pepper powder
  • ¼ tsp Paprika
  • ¼ tsp Cajun Spice/ Oregano
  • Salt as required

Instructions: 

  1. In a small bowl stir in the yeast to ½ cup warm water. Close the bowl with a lid and set aside for 5-10 minutes for the yeast to activate and froth.
  2. In a large bowl, combine the flour and salt and make a well in the middle and pour in the olive oil and the yeast mixture.
  3. Pour in the remaining ½ cup water and combine to bring the dough from the sides of the bowl and scrape the dough from the bowl completely onto a clean countertop and knead well using your hands.
  4. Work the dough for 3-5 minutes until the dough is soft and smooth. The more you work with the dough it might start to get sticky, add in a couple of tbsps of flour and olive oil to hep shape into a soft dough.
  5. Transfer the dough into the large bowl and cover the bowl with a cling film and set aside for 1 hour until it doubles in size.



  6. While the dough rises the filling can be prepared.
  7. In a heavy large pan add a tbsp of butter and pour in some olive oil, once the butter is melted, add the chopped onions and saute well.
  8. Season with some salt for the onions to cook faster.
  9. Next, add the minced garlic and saute well until fragrant.
  10. Now add in your veggies - carrot, capsicum, tomatoes and cook well in medium flame.


  11. Now season with salt and pepper and spices like paprika, cajun/oregano etc and squeeze in a tbsp of lemon juice.
  12. Once the veggies are done add in some tomato paste which is optional so that it makes the filling look more colorful. 
  13. Add in the minced meat and salt and pepper as required.
  14. Cook until the meat renders some water and the water is reduced. Add in some chili flakes for some fire.
  15. Preheat the oven to 350°F/ 180°C
  16. Now take the risen dough and place it on a lightly floured countertop and knead for a minute and divide the dough into 4 equal portions.

  17. Next, roll the dough balls into 4 boat shape/oval shape and transfer the rolled dough into a baking tray lined with baking paper sprinkled with some semolina which helps in even baking.

  18. Now place and spread the filling leaving the edges with no filling about 2 cm border. (Please see images for better understanding)



  19. Fold the edges to act as a barrier so that the filling stays intact. Press the dough at the 2 ends of the oval shape to form a pointy boat shape.
  20. Beat an egg in a small bowl with some olive oil and brush the dough with the mixture using a pastry brush.
  21. Bake the Pide for approximately 20-25 minutes or until golden.




Notes:
It is easier to fill the flatbread with the topping while the flatbread is placed on the baking tray.
