Prawns Bonda

Couple of years back, my bhabhi (cousin’s wife Chachu) got us some snacks that she made. This particular item, did not look so eye catchy and all, but the flavors were on point! And I was loving the idea of adding prawns to make Bonda. Bonda is basically potato that is cooked and mashed to which mustard seeds are tempered with the basic ingredients like onion, curry leaves green chillies, they are made into balls and batter fried. More like a stuffed savory Malayali Luqeimat 🙊😄

I had these small pouches of cooked and frozen onion- Chilli that I had pre prepared before Ramadan.. ahh! My work of making the Bonda got over in a jiffy! No chopping or waiting for the onion to sauté etc. So very easy, Alhamdulilah!

Let’s see how prawns Bonda is made:

Ingredients: (Makes approx 16 small bondas)

  • 3 potatoes (cooked and mashed), make sure not to overcook
  • 150 gms prawns (cleaned and deveined)
  • 1/4 tsp Turmeric powder
  • 1 tsp Kashmiri Chilli powder
  • 1/2 tsp ginger garlic paste
  • 4- 5 tbsp Coconut oil
  • 1 tbsp Mustard seeds
  • Curry leaves
  • 1 large Onion, finely chopped
  • 2 small Green Chillies, finely chopped
  • Oil for deep frying

Batter:

  • 1 cup All purpose Flour / Besan (gram flour)
  • 2 tbsp corn flour
  • 1/4 tsp Turmeric powder
  • 1/4 tsp Chilli powder
  • Water, as required

Instructions :

  1. Marinate the prawns with ginger garlic paste, turmeric powder, Kashmiri Chilli powder and salt. Fry the prawns in coconut oil and set aside to cook slightly and chop them.

  2. In the same oil splitter mustard seeds and tear curry leaves and add the pre prepared onion mix, or fresh chopped onions and sauté with green Chillies.
  3. Now add the mashed potatoes and the add the fried and chopped prawns.
  4. Adjust seasoning if required.
  5. Grease your hands with oil and make equal sized small balls.

  6. While the balls rest in the refrigerator, make the batter by mixing all purpose flour, corn flour, turmeric powder and Chilli powder and a pinch of salt and combine using a whisk.
  7. Add water gradually while mixing to form a smooth semi thick batter.
  8. In a frying Kadai, pour oil and allow to come to heat.
  9. Now dip each ball in the batter and fry until golden and enjoy with your choice of sauce.

Ps: Do not chop the prawns well.

Arrowroot Custard Milkshake

Arrowroot is a root vegetable that is known for its easy digestive properties and fully packed with protein, Fibre and healthy fats. Arrowroot does not have a distinct flavor profile, it is usually used as a thickening agent in desserts, soups, sauces, etc due to its thickening properties.

I always like to use arrowroot powder instead of corn flour slurry in most of my dishes, as arrowroot has more health benefits. So I thought of trying out a milkshake using arrowroot (koova). Arrowroot drink is usually prepared as a hot drink, here I demonstrate a Milkshake version. Arrowroot slurry is prepared and poured to boiled milk, which is constantly mixed till you get a thick consistency. Allow to cool the thick Custard which is prepared. Next blend the arrowroot Custard with chilled milk and coconut milk and set aside. Sabudana pearls are added as the first layer of the Milkshake for added texture, this step is optional. I added soaked basil seeds/ tuk malenga seeds too, as it has good health benefits, high in iron etc.
For added flavor I used a pinch of cardamom powder. You may use vanilla essence or any other flavoring agent, as per your liking. Finally topped off with a scoop of vanilla ice cream and garnished with toasted shredded coconut.

This Custard milkshake is going to make you feel refreshed for iftar. I tell you! It had a feel of Elaaner (tender coconut) Milkshake flavor to it.. definitely a super hit here!

Let's prepare this easy and refreshing arrowroot Custard milkshake,

Ingredients:

  • 1 tbsp basil seeds, soaked in water
  • 2 tbsp Arrowroot powder, made into a slurry with some water
  • 1/2 cup milk
  • 1/2 cup coconut milk (store bought/ freshly squeezed)
  • Cardamom powder, a pinch
  • 4 - 5 tbsp Sugar
  • A scoop of Vanilla Ice cream
  • 1 tsp of toasted shredded coconut (for garnishing, optional)
  • 2 tbsp Sabudana pearls (soaked in water at least for 3-4 hours), optional

Instructions:

  1. Boil and drain the sabudana pearls that has been soaked and set aside.
  2. Into a saucepan, add in your arrowroot slurry, milk, sugar and cardamom powder and bring to a boil, whilst stirring constantly, so that no lumps form.
  3. Set the arrowroot custard aside to cool.
  4. Blend the arrowroot Custard with coconut milk and chilled milk.
  5. Into a tall glass, drop your boiled and cooled sabudana pearls, then pour some of your arrowroot Custard milkshake, drop in some soaked basil seeds, and pour your milkshake, finally drop 1 scoop of vanilla ice cream and pour in your Custard Milkshake.
  6. Finally garnish with toasted, sweetened shredded coconut and enjoy!

Notes:
You may add frozen milk cubes and pulse for added chillness (don’t know if there is even a word like that) 😁

Paneer Tikka Bread Discs

I love anything that has the base of butter chicken.. But of course, what stands out in Tikka masala is the addition of yogurt. Though Yougurt is usually added in the stage where the paneer is shallow fried, I prefer to shallow fry it just with salt and add the addition of yogurt in the tikka gravy.

You may use tomato paste instead of tomatoes to get even finer texture of the gravy. While experimenting this one, I had actually used tomato paste and the gravy turned super smooth and silky. The method I use here is fresh tomato, though the texture might have tiny bits ( the gravy can be strained using a strainer), you can have the gravy without any guilt as the tomatoes are not canned/in a container (which may contain additives to preserve them).

Paneer Tikka Bread Discs are prepared simply by preparing the gravy first, which should not be too thin. Next the bread discs are prepared by using cookie cutters of 2 sizes and then water is used to join both the bread discs. The bread sics are tasted with garlic butter and finally filed with the tikka gravy.

More Ramadan recipes coming your way. In Sha Allah.

Ingredients : (Makes 6 paneer tikka bread discs)

  • 12 bread slices
  • 1 tbsp Vegetable oil
  • 200 gms Paneer cubes
  • 2 tbsp Butter
  • 1 Medium Onion, chopped coarsely
  • 1 Medium tomato, chopped / 3 tbsp Tomato paste
  • 1 green chili, optional
  • 8 Cashews
  • 2 tsp Red Chilli powder
  • 2 tbsp yogurt
  • Salt, as required
  • 1/2 tsp Dried Fenugreek leaves
  • 2 tsp tomato ketchup
  • A dash of heavy cream
  • 2 tbsp Butter
  • 1 Cloves Garlic butter, minced
  • 1/2 tsp Red Chilli Flakes
  • 1/4 tsp Dried Fenugreek Leaves
  • Coriander leaves for garnishing

Instructions:

  1. In a pan, pour the vegetable oil and add in your paneer cubes, season with salt. Shallow fry until light brown marks appear on the paneer.
  2. Next, in the same pan add in your butter and sauté your chopped onions, season with salt, this helps to cook the onions faster.
  3. Next add your cashews and tomatoes and cook cover for 5-10 minutes until mushy. Set aside to cool.
  4. In a hand blender, blend the onion-tomato-cashews to a smooth paste ( strain the gravy using a strainer if required).
  5. Next, into the same pan, add 1 tbsp Butter and add red chilli powder, saute for 5 seconds and immediately add in your gravy base to the sautéed chilli powder before the powder burns and Sautee well.
  6. Now add in your shallow fried paneer cubes, yogurt, Kasoori methi /dried Fenugreek leaves, tomato paste (optional)** , tomato ketchup and once everything comes to a boil, bring it to a sim and add the cream. * and switch off the flame.
  7. Next, prepare garlic butter by mixing, butter, red chilli flakes, minced garlic clove, and Fenugreek leaves and salt in a small bowl, mix well and set aside.
  8. Cut your 2 bread slices using a large round cutter and the second one using a cookie cutter just smaller than the large bread circle.
  9. Remove the middle bread piece and layer the one with hole on top of the other bread circle by joining them using water and pressing the ends slightly.
  10. Spread the prepared garlic butter, on both sides and toast them until crispy and fill in the Paneer Tikka masala and garnish with Coriander leaves and enjoy!

Notes-

  • *Do not boil the gravy for too long, as the gravy may curdle due to the presence of yogurt.
  • **You may completely avoid fresh tomatoes for silkier gravy, use the 3 tbsp tomato paste in this case, if using fresh tomatoes, you may add 1 tbsp tomato paste too.
  • These discs can be prepared in airfryer too.
  • You may do the Charcoal burn flavor, by placing a piece of hot coal in olive oil/butter in a small dish/aluminum foil , and place the small dish inside the pan with gravy and close with the lid well immediately, so that the smoke within gets absorbed by the Paneer Tikka masala. I have skipped this step in the recipe.

Effortless Cream Cheese Honeycomb Bread

I love it when a recipe is effortless, especially in the month of Ramadan, when it gets tiring to toil in the kitchen to make dishes that will be served to break your fast with. Usually, if we have a savory snack on the table, I always like to have a sweet snack by the side too, so that I don't fee the urge to binge on foodstuff like chocolates, etc.

Our family loves honeycomb bread, but little do I have the patience to knead, make balls and allow them to rise, especially when fasting! I was thinking of ways in which honeycomb bread could be recreated at home using basic ingredients available at home, and of course kept in mind that it shouldn't be time consuming nor oily nor uses oven.

Ta daa! Comes SAMOON* to the rescue! (*a long sandwich bread, commonly found in supermarket stores). This hack is such a life saver! It's like a last-minute thing that you can get done in jiffy, yet so addictive and delicious. The recipe uses only honey, which a natural sweetener, so again, it is definitely healthier.

I love the combination of egg, cheese and honey, which is an acquired taste of the traditional Emirati snack called Regag from all these years living in Dubai. So that's when this honeycomb bread hack struck me. I loved everything about this recipe, except that it has a small drawback, ie, if you consume them immediately you don't get any eggy smell, but if you are planning to have it after a while, I would recommend you to use vanilla essence/ cardamom powder in the egg mixture if you do not want the eggy smell.

My misters reaction when he had this for the first time made my heart was so full. He was so happy and asked why I never shared this recipe on my blog. So here you go guys! It's super easy too. Hub said that they were melt in the mouth good, so you can imagine how much of a keeper this recipe is! Alhamdulilah!

Let's make these delicious bItes.

Ingredients : (Makes 16)

  • 4 Samoon (cut in 4) *
  • Kiri Cream Cheese Cubes, cut into 4 cubes
  • 2 Eggs
  • 1/4 tsp Vanilla Essence (Optional)**
  • 1/4 Cup Whole milk
  • 2 tbsp Butter
  • 4 tbsp Honey
  • 1/2 tbsp White and Black Sesame Seeds each

Instructions:

  1. Cut the Samoon into 4 pieces and make a cavity underneath each piece using a knife, cutting half way through on each of them.
  2. Now place a small piece of Kiri Cheese cube in the cavity and sealed the cavity by pressing down using the extra piece that was cut open.

  3. In a small bowl, crack in the egss, pour the milk and add vanilla/cardamom for flavoring, and add a pinch of salt and beat with a fork well.
  4. Now using thongs, dip the samoon pieces one by one and place them on a hot pan smeared with butter, place the dipped samoon pieces on the pan, and Sprinkle sesame seeds on the upside of the bread and cook on all sides until the egg coating cooks well.

  5. Finally, place them in a serving plate and drizzle with Honey as required.
  6. Your melt in the mouth and effortless honeycomb bread is ready to devour! 😍 😍 😋

Notes:

*Please do not use stale samoon bread.
**You may use Cardamom Powder or Vanilla Essence for removing eggy smell from the eggs.

Pull Apart Shawarma Sliders with no egg Garlic Sauce/ Thoum

Like I said, this year, I am actively trying not to consume fried snacks for iftar. That's when I decided to share this slider recipe. This is especially dedicated to all the shawarma lovers out there! Shawarma as sliders may sound weird but let me tell you, it's just sooo good! It's basically like a combination of middle eastern and western food piled up.. One bite and you will want more..

The best part of pull apart sliders is that you don't have to fill them individually and you all your sauces and fillings are done in one go. I love pull apart sliders for iftar because they are less tiresome and more yumminess..

The whole yumminess comes from the garlic sauce or 'toum' like the locals here like to call it. Unlike other garlic sauces, this one is not made using raw egg whites as such, instead it is made using a secret ingredient.. "Corn Flour".. I know right! Don't be surprised, the garlic sauce is really good or even better. For the sauces, I usually use garlic sauce only. When in the mood, I go in for a tad bit of Tahini and go a little crazy over Mayo too. This is completely an optional step.

The bun is super soft, and feels like baby's bum. As these are super soft sliders, I request you to not prepare it in the last moment, as the bun requires enough time to cool. Once cool, you need to cut the sliders in one go using a bread knife for precision. Adding jalapeños bought the sliders to a next level. You may add any other pickled veggies of your choice for that.

The shawarma spiced chicken is oven cooked here. You may fry instead if you do not have an oven. As complicated the pics may look, it is one of the easiest and yummy iftar snacks to prepare. Without any delay, let's get started!

Ingredients:

For Dough of slider:

  • 1 tsp Active dried yeast
  • 1 tsp sugar
  • 1/4 lukewarm watee
  • 2 cups all purpose flour
  • 1 1/2 tsp sugar
  • Salt, as required
  • 1 cup lukewarm milk
  • 2 tbsp butter
  • White sesame seeds

For Chicken Shawarma:

  • 500 gms chicken breast
  •  2 tbsp yogurt
  • 1 tbsp olive oil
  • 1 tbsp tomato ketchup
  • 1 tsp white vinegar
  • 4 tsp Kashmiri Red chilli powder
  • 1/4 tsp cardamom powder
  • 1 tsp cumin powder
  • 1 tsp Coriander Powder
  • 1 tsp Garlic Powder
  • 1 tsp white pepper powder
  • 1 tsp Black pepper powder
  • 1 tsp paprika
  • A pinch of Oregano
  • Salt as required

No Egg Garlic sauce (thoum) :

  • 1 1/4 cup water
  • 1/2 cup corn flour/ corn starch
  • 1 cup yogurt
  • 3 garlic pods
  • 1/2 cup oil
  • 1 tsp lemon
  • Salt as required

Adds ons:

  • Chopped Lettuce
  • Tomatoes, sliced
  • Jalapeños
  • Hot sauce (optional)

Instructions :

  1. In a bowl, pour in the lukewarm water and add in your active dried yeast and sugar, mix gently and place a lid and set aside.
  2. In a stand mixer place your dough hook, or use a mixing bowl and add in your flour, a pinch of sugar and salt as required. Mix gently to combine.
  3. Now keeping the speed setting of your stand mixer on low, gradually add in your activated yeast and add in lukewarm milk until the dough turns soft and non sticky to touch. (make sure to make a very tight or lose dough)
  4. Finally add in your room temperature butter to the dough and knead well.
  5. Allow the dough to proof by placing the dough in a warm area for 1 hour. Once double the size, gently give the dough a slight knead and make medium sized balls and place them on your baking pan/tray lined with a baking paper, place the balls spaced out and allow to proof again. *
  6. Once proofed, apply milk and sprinkle white sesame seeds on top of the sliders, bake the sliders at 180 deg C for 20 minutes or until it bakes well and the top of the sliders brown slightly.
  7. Allow the sliders to cool well before you slice the sliders horizontally using a bread knife. *

  8. To prepare your no egg garlic sauce/thoum, in a sauce pan, pour your water and add your corn flour, give it a mix and place on flame.
  9. Once the mixture starts bubbling, set aside to cool.
  10. Once cool, the mixture hardens, now in a blender/grinder, add your hardened corn flour, yogurt, garlic cloves, oil and salt as required.
  11. To prepare the shawarma chicken, mix all the ingredients under chicken shawarma and spread well on the chicken, you may either roast* in the oven or fry in a fry pan.

  12. Apply your thoum/garlic sauce on both sides of the slider and place your chopped Lettuce, sliced tomatoes, and add in your jalapeños now place your cooked chicken and place the slider's top half smeared un garlic paste over it.

  13. Pull apart your shawarma chicken sliders and enjoy!

Notes :

*By spacing out the dough balls, you allow room for the balls to become bigger into tiny buns.
*20-25 minutes roasting time, depending on your oven, time may vary.
*If the sliders don't cool well before you slice, the sliders may fall apart.
*You may use hot sauce or tobasco sauce over the garlic sauce if you like it.

Cheesy Murtabak with Chilli Mayo dip

Day 7 of Ramadan already? Where did the first 6 go? Jokes apart, time is ticking away and we need to utilize our valuable time to the maximum for Ibadah etc. Keep your tongue moist with zikr and adhkars. Also doing your chores, cooking food and being of some help to the family are also considered Ibadah and rewarded in the holy month. Just don't be extreme. Moderation is the key.

I have been asked to share oil free iftar dishes and I have come up with Cheesy Murtabak in my style. It is also called Muthabaq. Oh boy is it yummm?!

Murtabak or mutabbaq is a stuffed Paratha with your favorite fillings like spicy minced meat and for that extra cheesiness I have added a ton load of cheese 🤪 (you know you can never go wrong with cheese). The classic, Saudi style matabak consists of green onions and leeks. But I kept it very simple. Just eggs and cheese with the spicy minced meat. And instead of adding in chopped onion, I have simply substituted by adding in some onion powder.

It is a street food specialty especially seen in Saudi, Kuwait, Malaysia etc. Mini pockets  of these non fried Paratha are the best snack for iftar, coz these use little to no oil.
Now I won't call it healthy but definitely a step towards healthy eating for iftar. These little pockets are so delicious and filling. The chilli Mayo dip adds on to its yumminess, and a karak chai! Aaaaah, definition of bliss... Sooo soooo good. I cannot stress enough!

Here I have used meat mince, you may use chicken Mince also if you like, but traditionally mince meat is used for Murtabak.

Let's get on to the ingredients to prepare this easy and delicious iftar dish.

Ingredients :

Dough:

  • 1 cup all purpose flour
  • 1 tsp oil
  • 1/2 cup water
  • Salt, as required

Filling :

  • 300 grams minced meat
  • 3 small green chillies, chopped
  • 1 tsp Onion powder
  • 1 tsp Garlic paste
  • 1/2 tsp red Chilli flakes
  • 1/2 tsp Black Pepper po]]] wder
  • 1 tsp Cumin powder
  • 2 tsp paprika powder*
  • 1/2 of a tomato* (chopped fine)
  • 3 tbsp Cream cheese
  • 1/2 cup Mozzarella
  • 2 eggs
  • Salt, as required

Instructions :

  1. Mix all the ingredients under dough by adding water little at a time, the dough should not be sticky, yet soft. Pour some oil over the dough ball, cover with a plastic wrap and to set for around 1 hour.
  2. In a cast iron pan or any heavy bottom pan, pour a dash of olive oil add in your minced meat with a pinch of salt and break the minced meat using a wooden spoon.
  3. Once the color of the minced meat changes from red to brown, add in your garlic paste.
  4. Allow to cook for a couple of minutes, at this stage it is normal to see a lot of water ooze out of the meat.
  5. Next add in your chopped green chillies and sauté.
  6. Now add in your spices like onion powder, paprika powder, red chilli flakes, pepper powder, and cumin powder.

  7. Allow your filling to cool, whilst at that in a bowl Crack 2 eggs, Mozzarella cheese and the cream cheese.

  8. Next dump in all the contents of the filling to the bowl with eggs and cheese.

  9. Add a tad bit of salt if required.
  10. Make lemon sized small balls out if the dough.
  11. Pour some oil in your Countertop and press and spread using your fingers and a rolling pin until it is very thin and see through.
  12. Add 2 tbsp of the prepared filling and fold overlapping inner sides and outer sides.

  13. Place the murtabaq on a pan with med high heat pan, seam side down, flip and cook 2 minutes each side or  until a sizzle starts coming, this indicates that the murtabaq is done. Using thongs, cook the sides of the murtabaq too (which only takes seconds).
  14. Serve with your choice of sauce/dip or serve it just like that right away! *

Note:

  • You may substitute paprika with Kashmiri Red Chilli powder if you cannot find paprika.
  • You may use more tomato if you like. Or you may also add it after the meat cooking process.
  • I made a chilli Mayo dip, prepared by mixing hot sauce, Mayo and garlic powder.
