Breakfast Waffles 





Some days I wake up craving for spicy food for breakfast whilst on other days it can get a bit dramatic, instead of going to a cafe, I might as well whip up some waffles at home itself. Especially if you have berries sitting in the fridge, it’s the best way to put it to use. 😋 
The tartness from the berries adds the perfect flavor to the light, crispy and slightly sweet waffles.. Love it with a cup of coffee!  Postpartum cravings have been everywhere..will be posting more recipes soon..Stay tuned! 

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon table salt
  • 1 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 egg
  • 1½ teaspoons sugar
  • ¾ teaspoon vanilla
  • Butter
  • Berries
  • Maple syrup/ agave syrup/ honey/ chocolate sauce (as per liking)

Instructions:

1. Whisk all the dry ingredients in a bowl and set aside.
In another bowl, mix all the wet ingredients. 
2. Add in the dry ingredients gradually and mix well using a whisk until no lumps can be seen. Do not worry about over mixing. 

3. Next, grease your waffle plate with butter, scoop and pour a ladleful of batter and allow to cook for 7-8 minutes depending on the temperature of the waffle maker. 

Drizzle maple syrup and top up with berries and enjoy!

Ps: Pro tip: If you want your waffles to be crispy and warm, keep the cooked waffles in a slightly warm oven with the broiler function on.

You can always double or triple the recipe and make extra batches. Store them in a ziplock bag in your freezer, thaw and microwave and use as required.

Makes a great school tiffin box meal too.

Can add chocolate for kids after pouring batter to the waffle plate

Almond Waffles 



Almonds being rich in protein and other nutrients is the best alternative to the staple all purpose flour, nutrition wise and taste wise too! 

Ever since I started making waffles using almond, there is no going back! The nutty flavor from the almonds and the buttery goodness with the crispy texture is the best bet you could get! 

Making waffles doesn’t involve any rocket science, that is if you follow my fool proof waffle recipes! 😉
Enjoy your waffles warm with a drizzle of honey/ maple syrup/ agave nectar or any sauce of your choice! 

Ingredients:

  • 1 egg white, large egg
  • 1/2 cup Almond Flour
  • 2 tbsp Corn Flour
  • 1/4 cup Almond milk/ Cow’s milk
  • 2 tbsp Almond Butter/ Cashew Butter
  • 2 tbsp Butter
  • 1 tsp Vanilla Essence
  • 1/2 tsp Baking powder
  • A pinch of salt
  • Honey, as required 

Instructions: 

  1. In a bowl, beat egg whites until almost stiff peaks.
  2. In another bowl, mix the dry ingredients like Almond Flour, corn flour, baking powder, salt.
  3. In a microwave safe bowl, add in the unsalted butter, Almond butter, vanilla essence and microwave for around 5-10 seconds until melted.
  4. Into the bowl with flour, add in the melted butter and the almond milk, honey and combine well. 
  5. Finally, fold in the egg whites gently. 
  6. Heat a waffle maker and spray the waffles plates with oil/ butter and pour in 1/4 cup of batter to the waffle plate and allow to cook for 10-12 minutes depending on your waffle maker. 

  7. Simply remove the crispy waffles onto a serving plate and enjoy warm with your choice of sauces and toppings! 


Ps: You can make ahead these waffles and store them in the freezer and reheat in a toaster or if in oven broil it and get back it crispy state! 
Makes a great recipe for school lunch boxes too!

Sunny side up Potaffles



Pottafles are what came to my mind when I was craving for hash browns, yet wanted to make waffles when I had a lot of potatoes in my pantry. It is a super easy breakfast idea. Some days I really crave for something savory in the morning, but the thought of the process involved makes me want to adjust with pancakes and waffles. What I liked about potaffles was that it had a hash brown taste to it, without much effort.

The ingredients are basic, so you make it very easily, but of course, if you have a waffle maker. The addition of the corn flour helps to make the waffles crisper unlike usual savory waffles. Though, right after cooking the potaffles, they may look soggy, but it gets crisper when the vapour evaporates, the potaffles gets crispy.

After mixing the batter of the potaffles, the more the batter sits, water oozes from the potatoes, which can be removed by straining the water. You may avoid onions, but it helps elevate the flavors as well as helps the potatoes from oxidizing and changing color once shredded. I served the potaffles with sides like sausages, streamed brocolli and sunny side up eggs with a warm cup of coffee to go with it. If you have a food processor and a waffle maker, do definitely try this recipe, it's delicious yet super easy.

 

INGREDIENTS : (Makes for 4 )

  • 4 Potatoes (3 shredded and 1 finely shredded, using a food processor)
  • 1 Onion, finely chopped
  • 1 Egg
  •  4 tbsp All Purpose Flour
  • 2 tbsp Corn Flour
  • 1 tsp Black pepper, crushed
  • Salt, as required 
  • Eggs, brocolli, sausages to serve as sides
 

Instructions:

  1. In a food processor, shred 3 potatoes and finely shred 1 potato.
  2. In a mixing bowl, add the shredded potatoes and finely chopped onion, and all the ingredients, mix well to combine.
  3. Next scoop the batter mix and spread over the waffle griddle and close the griddle and cook for around 7 minutes or until the edges turn brown.
  4. Finally, place a sunny side up egg over the potaffles and serve with your favorite sides. I served with steamed brocolli and fried sausages.
