Savoury Cream Cheese Bread Toast 




A very delicious and super easy snack that is perfect to serve sudden guests or as a snack for kids in tiffin box. My girl loves this, I am sure your kids will love it too!! 

The first time I had it was at my husband’s cousins place. She made this easy bread toast for us in a jiffy and it tasted super delicious. We had to immediately ask her for the recipe and it is such a keeper!! Thank you Safeenatha for this easy peesy recipe that is an always a favorite here! 

The ingredients are very staple and that makes this recipe a go-to. We all always have a dabba (container) of cream cheese at the back of the fridge, waiting to be used and the cream cheese in this recipe just brings out the flavors like no other! Make sure you use ghee generously.. that’s where the flavors spark! 

Without further a do, let’s get started!! 


Ingredients: makes for 2


  • 4 Slices of White Bread
  • 2 Eggs 
  • 1/2 of an Onion
  • 1/2 tsp Oregano 
  • 1/4 Red Chilli flakes 
  • 2 tbsp Cream Cheese (preferably salted) 
  • Salt, as required 
  • Ghee/ clarified butter

Instructions: 

  1. In a small blender, crack in the eggs, add in the roughly chopped onion, Oregano, cream cheese and blend by pulsing around 4-5 times.

  2. Transfer the contents to a wide bowl, and add in the red chilli flakes and mix well.

  3. In a hit pan, add in a couple of tbsps of ghee.
  4. Now, dip the bread in egg mixture and toast the bread slices in ghee and your savory bread toast is ready!!

​ Emirati Chebab 




Chebab is an Emirati pancake made of slightly fermented batter using yeast, which is flavored with cardamom and saffron, usually enjoyed with honey and /cheese. It’s super easy to prepare and makes a great lunch box recipe too! 

Weekend breakfasts are mostly my favorite Chebab’s especially on a Friday morning…gives the whole Jumuah vibe..hehe

We as a family, gather around the table right before the husband goes for Jumuah and we have Chebab for brunch/breakfast for a glass of black tea or coffee, dry fruits and fresh fruits.

Chebab is widely served in most Arabic /Emirati restaurants as a breakfast dish. It is soft and super delicious too! It is a hit among the kids, they keep coming for more, well my Ms. Picky eater does! 😁

Let’s see how Chebab is prepared! 



Ingredients: (makes around 12 Chebabs)

  • 1 cup All purpose Flour 
  • 1/2 cup milk
  • 1 egg
  • 2 tbsp Sugar
  • 1/4 tsp Salt
  • 1 tsp yeast
  • Cardamom powder, a pinch
  • Saffron, a pinch 
  • 1 tsp Yeast
  • Little less than 1/2 tsp Baking powder
  • 100 ml water (a little bit more depending on the consistency) *
  • 1-2 tbsp Vegetable oil 


Instructions:

  1. In a bowl, pour the milk, egg, sugar , salt, yeast, baking powder, cardamom powder, saffron, and water.
  2. Gradually add in the flour little at a time and combine everything using a whisk.
  3. Cover with a cling wrap and set aside for around 30 minutes to ferment.

  4. On a non stick pan, pour ladlefuls of batter to form pancakes and wait for holes to form on the top and when batter looks slightly done, flip and cook the other side.


  5. Similarly do all of them.
  6. Serve them warm with Honey and Cream Cheese.





Notes: 

The batter should not be thick nor watery, somewhere between that, refer video/ reel for reference.

 Meat Sauce Spaghetti AKA Spaghetti Bolognese
 


I love quick dinners and this is one recipe that I tend to make quite often, whenever I get minced meat. And I also like to make this Shepherd's pie and this Rigatoni Bolognese. Bolognese Sauce is basically a meat based tomato sauce using slow cooking method. It is super easy, yet very versatile. You may add veggies of your choice like carrots, celery, mushrooms etc for that extra boost of nutritional values. Spaghetti Bolognese is super easy to prepare, you only need to prep some chopped onions and garlic and you are good to go.

If you do not like too much tanginess, you may use cream cheese and tomato ketchup to balance the flavors. This pasta recipe comes together quickly, makes the perfect lunch/dinner. I have not used milk here, though you may use it to make it even creamier. Also if you have parmesan cheese, you may use it for garnishing, I ran out of it! (always has to happen only when I plan to document the recipe) 🙇 

 Anywhoo, let's get started!




Ingredients :

  • 1 pack Spaghetti 
  • 2 Onions, finely chopped
  • 4 Garlic cloves, finely chopped
  • 2 tbsp Olive oil
  • 2 tbsp Butter
  • Salt, as required 
  • 500 gms  minced meat
  • 1 tsp freshly crushed Black Pepper
  • 1/2 tsp Red Chilli Flakes
  • 1/2 tsp Oregano
  • 1 tsp Cumin
  • 3/4 Cup Tomato Paste
  • 1 cup Reserved Pasta Stock Water
  •  2 tbsp Cream Cheese (Optional)
  • 1 Chicken Stock Cube
  • 2 tbsp Tomato Ketchup
  • Parmesan Cheese and chopped Parsley Leaves, for garnishing

 

Instructions:

  1. In a large pot, pour olive oil and add in the butter.
  2. Next, add in the chopped onion and allow to cook until translucent.
  3. Next add in finely chopped garlic and salt, as required.
  4. Drop in the minced meat and add your seasonings like salt and freshly crushed black pepper.
  5. Break the meat using your wooden ladle.
  6. Next add in red chilli flakes, oregano, cumin powder and tomato paste and mix well. Close the lid and allow to cook for at least 15 minutes on low.
  7. In a large pot, Cook the Spaghetti in salted water according to package instructions.
  8. Next, add in cream cheese (optional), Maggi chicken cube and tomato ketchup (optional). Combine well, make sure the stock cube has dissolved into the sauce.
  9. Next add in your reserved stock water to make it even saucier.
  10. Finally add in your cooked Spaghetti and check for salt. Give a final mix and serve into a deep plate, sprinkle chopped parsley and garnish with Parmesan Cheese. Serve hot.


Notes:

You may add vegetables of your choice like carrots, celery, mushrooms etc.before adding the minced meat.

I used cream cheese, so that much quantity of tomato paste gets diluted, if you aren’t using any diary products, I would recommend to use lesser quantity of tomato paste depending on the quantity of pasta/ spaghetti you are preparing.

Effortless Cream Cheese Honeycomb Bread




I love it when a recipe is effortless, especially in the month of Ramadan, when it gets tiring to toil in the kitchen to make dishes that will be served to break your fast with. Usually, if we have a savory snack on the table, I always like to have a sweet snack by the side too, so that I don't fee the urge to binge on foodstuff like chocolates,etc.

Our family loves honeycomb bread, but little do I have the patience to knead, make balls and allow them to rise, especially when fasting! I was thinking of ways in which honeycomb bread could be recreated at home using basic ingredients available at home, and of course kept in mind that it shouldn't be time consuming nor oily nor uses oven.



Ta daa! Comes SAMOON* to the rescue! (*a long sandwich bread, commonly found in supermarket stores). This hack is such a life saver! It's like a last-minute thing that you can get done in jiffy, yet so addictive and delicious. The recipe uses only honey, which a natural sweetener, so again, it is definitely healthier. 

I love the combination of egg, cheese and honey, which is an acquired taste of the traditional Emirati snack called Regag from all these years living in Dubai. So that's when this honeycomb bread hack struck me. I loved everything about this recipe, except that it has a small drawback, ie, if you consume them immediately you don't get any eggy smell, but if you are planning to have it after a while, I would recommend you to use vanilla essence/ cardamom powder in the egg mixture if you do not want the eggy smell. 

My misters reaction when he had this for the first time made my heart was so full. He was so happy and asked why I never shared this recipe on my blog. So here you go guys! It's super easy too. Hub said that they were melt in the mouth good, so you can imagine how much of a keeper this recipe is! Alhamdulilah!

Let's make these delicious bItes.

Ingredients : (Makes 16)

  • 4 Samoon (cut in 4) *
  • Kiri Cream Cheese Cubes, cut into 4 cubes
  • 2 Eggs
  • 1/4 tsp Vanilla Essence (Optional)**
  • 1/4 Cup Whole milk
  • 2 tbsp Butter
  • 4 tbsp Honey
  • 1/2 tbsp White and Black Sesame Seeds each

Instructions:

  1. Cut the Samoon into 4 pieces and make a cavity underneath each piece using a knife, cutting half way through on each of them. 
  2. Now place a small piece of Kiri Cheese cube in the cavity and sealed the cavity by pressing down using the extra piece that was cut open.

  3. In a small bowl, crack in the egss, pour the milk and add vanilla/cardamom for flavoring, and add a pinch of salt and beat with a fork well. 
  4. Now using thongs, dip the samoon pieces one by one and place them on a hot pan smeared with butter, place the dipped samoon pieces on the pan, and Sprinkle sesame seeds on the upside of the bread and cook on all sides until the egg coating cooks well. 

  5. Finally, place them in a serving plate and drizzle with Honey as required. 
  6. Your melt in the mouth and effortless honeycomb bread is ready to devour! 😍 😍 😋




 

Notes:

*Please do not use stale samoon bread.
**You may use Cardamom Powder or Vanilla Essence for removing eggy smell from the eggs.

CREAM CHEESE PUFFS with a CRISPY PISTACHIO TWIST 




With the second wave happening all over the world, especially in India, let's keep everyone in our prayers and stay safe you guys! Whoever you may be, if you are reading this, please ask your family and loved ones to stay indoors as much as possible as the symptoms aren't even detectable. We are in this together and we shall overcome this together with the help of Allah.
 
Days of Ramadan are flying by and it breaks my heart to think that it's already the 14th of Ramadan. Trying to find time for Ibadah amidst all the house chores being a home maker, or an employee or whatever you occupation might be, can make things difficult. The best you can do is to moisten your tongue with zikr. This is a reminder to myself first.



So this Ramadan I have been looking forward to share easy and less time consuming recipes that you guys could easily follow and enjoy! These Crispy cream cheese puffs were an overnight invention. I had no clue if this could be good or bad but had my hopes high coz you can never go wrong when you have sweetened Condensed milk in a recipe. Isn't it? 😁



I happened to see this on reel on the explore page of Instagram, where a lady was preparing these Puff pastries, last week at midnight. I just loved the idea of puffs, sweetened Condensed milk and pistachios. But I felt that it would be too sweet to my liking. So to bring in a balance I sliced and placed a Kiri cheese cube inside these puffs and oh boy! The family went all bonkers over it! I felt so content and happy to see all the smiling faces and especially when my LO comes to me saying, mama please make more of these again. What else does a mother want to hear? Alhamdulilah 🥰

I know it sounds divine! Let me warn you, these are going to vanish into thin air.. So what are we waiting for? 

Let's get to the recipe! 

Ingredients :

  • 5 Square Puff pastry sheets (will give 15-20 nos) 
  • 5 Kiri Cream Cheese Cubes
  • 1/2 ground pistachios
  • 1/2 cup broken thin vermicelli 
  • 1/2 +1/4 cup Condensed milk
  • 3 tbsp butter/ghee

Instructions :

  1. To make the filling, in a strong bottom pan, add in 2 tbsp butter and add in your broken vermicelli and Sautee it well in butter. 
  2. Next add in your ground pistachio. 

  3. Now switch off your flame and add in your Condensed milk and reserve the rest for pouring when serving. 
  4. Combine well and set aside. 
  5. Roll out a thawed square Puff sheet and scoop and place your filling in the Puff sheet and place your sliced Kiri cheese cubes horizontally and carefully wrap the filling. 
  6. Now using a sharp large knife cut the wrap vertically 3-4 cuts and bake them in a preheated oven at 220°C on a baking tray that has been lined with baking paper. 

  7. Now using a pastry brush, brush the outsides of the tiny puffs and allow to bake until golden for around 20 minutes. 
  8. Once the golden puffs are removed from the oven, drizzle in the sweetened Condensed milk and enjoy warm! 😍

Cheesy Murtabak with Chilli Mayo dip




Day 7 of Ramadan already? Where did the first 6 go? Jokes apart, time is ticking away and we need to utilize our valuable time to the maximum for Ibadah etc. Keep your tongue moist with zikr and adhkars. Also doing your chores, cooking food and being of some help to the family are also considered Ibadah and rewarded in the holy month. Just don't be extreme. Moderation is the key.

I have been asked to share oil free iftar dishes and I have come up with Cheesy Murtabak in my style. It is also called Muthabaq. Oh boy is it yummm?! 

Murtabak or mutabbaq is a stuffed Paratha with your favorite fillings like spicy minced meat and for that extra cheesiness I have added a ton load of cheese 🤪 (you know you can never go wrong with cheese). The classic, Saudi style matabak consists of green onions and leeks. But I kept it very simple. Just eggs and cheese with the spicy minced meat. And instead of adding in chopped onion, I have simply substituted by adding in some onion powder. 



It is a street food specialty especially seen in Saudi, Kuwait, Malaysia etc. Mini pockets  of these non fried Paratha are the best snack for iftar, coz these use little to no oil.
Now I won't call it healthy but definitely a step towards healthy eating for iftar. These little pockets are so delicious and filling. The chilli Mayo dip adds on to its yumminess, and a karak chai! Aaaaah, definition of bliss... Sooo soooo good. I cannot stress enough!

Here I have used meat mince, you may use chicken Mince also if you like, but traditionally mince meat is used for Murtabak. 

Let's get on to the ingredients to prepare this easy and delicious iftar dish. 



Ingredients :

Dough:

  • 1 cup all purpose flour
  • 1 tsp oil
  • 1/2 cup water 
  • Salt, as required 

Filling :

  • 300 grams minced meat
  • 3 small green chillies, chopped
  • 1 tsp Onion powder
  • 1 tsp Garlic paste
  • 1/2 tsp red Chilli flakes
  • 1/2 tsp Black Pepper po]]] wder
  • 1 tsp Cumin powder
  • 2 tsp paprika powder*
  • 1/2 of a tomato* (chopped fine) 
  • 3 tbsp Cream cheese 
  • 1/2 cup Mozzarella
  • 2 eggs
  • Salt, as required 

Instructions :

  1. Mix all the ingredients under dough by adding water little at a time, the dough should not be sticky, yet soft. Pour some oil over the dough ball, cover with a plastic wrap and to set for around 1 hour. 
  2. In a cast iron pan or any heavy bottom pan, pour a dash of olive oil add in your minced meat with a pinch of salt and break the minced meat using a wooden spoon.
  3. Once the color of the minced meat changes from red to brown, add in your garlic paste.
  4. Allow to cook for a couple of minutes, at this stage it is normal to see a lot of water ooze out of the meat.
  5. Next add in your chopped green chillies and sauté.
  6. Now add in your spices like onion powder, paprika powder, red chilli flakes, pepper powder, and cumin powder.  


  7. Allow your filling to cool, whilst at that in a bowl Crack 2 eggs, Mozzarella cheese and the cream cheese. 




  8. Next dump in all the contents of the filling to the bowl with eggs and cheese. 


  9. Add a tad bit of salt if required. 
  10. Make lemon sized small balls out if the dough. 
  11. Pour some oil in your Countertop and press and spread using your fingers and a rolling pin until it is very thin and see through. 
  12. Add 2 tbsp of the prepared filling and fold overlapping inner sides and outer sides. 

  13. Place the murtabaq on a pan with med high heat pan, seam side down, flip and cook 2 minutes each side or  until a sizzle starts coming, this indicates that the murtabaq is done. Using thongs, cook the sides of the murtabaq too (which only takes seconds). 
  14. Serve with your choice of sauce/dip or serve it just like that right away! *



Note:

  • You may substitute paprika with Kashmiri Red Chilli powder if you cannot find paprika.
  • You may use more tomato if you like. Or you may also add it after the meat cooking process.
  • I made a chilli Mayo dip, prepared by mixing hot sauce, Mayo and garlic powder.

Cinnabon inspired Cinnamon pancakes with Cream Cheese Icing



Good evening ya'll!

I can't wait for the winter vacation. Like literally! This e-learning experience is the worst. Sometimes gets on my nerves, especially if you have a child doing their kindergarten. So exhausting! And every day in the morning I just sit so blank as I have no time to prepare anything fancy. The breakfast or lunch here since distance learning started has been so boring which otherwise never happens here.



I kept scrolling my phone whilst I got some time to chill once my LO's break time happened, just looking for inspiration 😉
But my my even 5 minutes in break time is precious. But I was wanting to cook something exciting. And not the every day stuff. So all that came to my mind was pancakes! And I was sick of all the basic combinations like maple syrup, honey, Lotus biscoff, bananas, blueberries and other berries etc. Suddenly I had this craving for Cinnabon rolls. So I asked the Mister if he was okay with cinnamon flavor for pancakes. He nodded and then and there I knew I had to do this! 😍 And the Cinnabon inspired cinnamon pancakes with cream cheese frosting was born. 😋😋

Even though the flavors were the same, the textures made a slight difference and I loved it! The pancakes and the frosting was ready in less than half an hour and the perfect solution on a weekday breakfast for busy momma's like me. This was an instant idea and added in ingredients as though a recipe book was open in front of me. But honestly, it was indeed the best pancake flavor 🤤🤤

Though the pictures did not turn out like that I had in my mind as the Mister was in such a hurry, I urge you must try! Super easy and delicious, kids are going to love this😋👌 Well, my LO approved! 😁😍

*LO - Little one🤭





For pancakes:

  • 1 and 1/2 cup All purpose flour
  • 1 egg preferably omega
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup milk
  • 1/4 cup melted butter
  • 1 1/2 tsp cinnamon powder
  • 3 tbsp honey
  • Salt, a pinch


For icing:

  • 100 gms cream cheese, softened
  • 1 tsp Vanilla Essence
  • 1/4 cup butter, softened
  • 4 tbsp heaped sugar
  • 2 tsps and more of milk/cream /Whipping cream.
  • A pinch of salt

Instructions :

  1. In a large bowl add in your your dry ingredients and give a mix using a whisk.
  2. Next make a well in the middle and add in your wet ingredients one by one and combine well using a whisk.
  3. Cook the pancakes on a heavy cast iron pan or a pancake pan.
  4. Place a small piece of butter and smear the pan.
  5. Next pour in 2-3 ladlefuls of pancake batter in equal proportions and flip when you notice bubbles forming on the top.
  6. Cook for 2-3 minutes and transfer to a small plate and stack them up until you finish the process.
  7. The cream cheese Icing is prepared by combing all the ingredients mentioned under the ingredients of Icing. If at all yih come across lumps, use a electric whisk and combine well.
  8. Finally pour this luscious and delicious cream cheese frosting over the pancakes and enjoy! 😍


Notes :
Try to use unsalted cream cheese. If not possible, use a brand that has less salt content. You don't want your Icing to be too salty.

Cream Cheese Kunafa Rolls


Peace greetings to all of you! I am so excited to share this recipe that I can't wait to share with you guys! Basically these are cream cheese cubes that are wrapped with Kunafa dough and relished with a simple sugar syrup. Sounds too simple yea? But the flavors are intricate, I guarantee! 

I am so glad that I could come up with such a lovely sweet recipe for Ramadan. This is exactly how I want Kunafa. To be frank this is better than Kunafa! Not exaggerating or bragging but I couldn't believe how well this turned out. This is one recipe I really hope anyone who loves cooking with my recipes should try! It is worth it 😍 Takes only little bit of your time and requires very few ingredients. I can't stress enough how good these are. Drooling already while typing about it. 


I can proudly say this is better than Kunafa because, these are bite sized with a perfect crunch (which means no more fighting for a spoon to attack a Kunafa). And wayyy delicious with the Kiri cream cheese cubes. You can be sure that this cheese doesn't melt, by safely wrapping it with the Kunafa dough! The flavor of the ghee smeared Kunafa dough with that cream cheese filling with a drizzle of the simple sugar syrup is so humble yet fulfilling, and these rolls, ups the Kunafa game.

Haters might say that it is a copy from the famous Kunafa Queen Cleobuttera. But once I had sketched the recipe plan in my mind and I simply searched on Google ( just to make sure no one else had attempted this so that people wouldn't say I copied the recipe, to my surprise I see the exact same picture that I had in my mind, but of course her pictures are more drool worthy than anyone and so much of perfection.) She had posted the recipe with ricotta cheese, also she used fresh Kunafa dough, but I couldn't get my hands on them. Looked super delish and when I saw the video I got the idea to roll the Kunafa rolls. Forever grateful to her for the rolling method.


Now back to my Kunafa rolls.. I was telling my mom and brother that I wanted to try with Mozzarella the next time for the perfect cheese pull. But they were both of the opinion that this tasted so good simply because I used cream cheese here. And I couldn't agree more.

Also I only made a few of these rolls as I wasn't quite sure how much of a success would this be. But to my surprise it was too good. Everyone was fighting over it. And I couldn't be happier to see what a success it was. Just imagine my happiness amidst my siblings fighting for the last piece 😂 It was hilarious! My brother who is a big time foodie and the biggest critic in my fam was all praises, he couldn't stop saying how good these were. So now you know how much you need these rolls in your life 😍

Please don't mind the bad picture quality, it was almost time for the magrib azaan and I couldn't capture like how I wanted. Anywhooo please do give this recipe a try, I am that excited for you guys, that I don't want to delay until I get a chance to click again! Might update the pic later though! ❤️ 

So without further a-do let's get started! 

Ingredients :


For the kunafa rolls:

  • Kunafa dough, frozen (preferably fresh) 
  • 3 Kiri cream cheese cubes, cut lengthwise into 3 portions 
  • 4 tbsp pure Ghee
  • Water, to seal

Sugar syrup : (double the quantity if you want more) 

  • 1 cup Sugar 
  • 1/2 cup water 
  • A squeeze of lemon

Instructions :

To make the simple sugar syrup :
  1. In a deep sauce pan add the ingredients and allow to boil, once it comes to a rolling boil, allow to boil in Sim for exactly 10 minutes, and then switch off the flame. 
  2. Do not stir, you may swirl the pan or give a light mix if the sugar doesn't dissolve at all.

To make the kunafa rolls:
  1. Preheat the oven to 220°C.
  2. Onto a thin strand of kunafa dough place the 1 long piece of cream cheese cubes and fold from the sides so that the sides are sealed properly.
  3. Next place this Kunafa wrapped cream cheese onto the sheet of kunafa dough and roll and trim, once a layer of rolling is done. Now seal the edges of the strand using water and gently squeeze inside your palms. (Check my YouTube video for the exact tutorial) 
  4. Now onto a Parchment lined baking tray, dip or smear the ghee generously onto the rolls and place them Seam side down.

  5. Now allow to bake for 30-35 or until golden and crisps. Turning the roll occasionally once or twice so that they brown evenly.
  6. Once cooled down for 5 minutes, dip the ends of the rolls in sugar syrup and coat them in ground pistachio.

Hasselback Potatoes with Cream Cheese and Dynamite Sauce


No - fried food for iftar is very difficult to accomplish right?! After all, after the many hours of fasting, we want to satisfy our taste buds with all possible junk/ fried items that we can. And is it healthy?! Definitely a big no! So here I have been contemplating on all the non-fried ideas. To make food visually impressive and delectably delicious is super hard when it comes to no - fried food. So I have collaborated with some lovely ladies on Instagram to come up with some delicious healthy snacks for Iftar!

Well, my contribution are my Hasselback potatoes with cream cheese and dynamite sauce. Hasselback potatoes have their origin from Sweden. They have these crispy rim like edges that are so appealing at the same time, super delicious and the inner part of the potatoes are so soft and infused with flavors. My initial thoughts were to include some sort of non - veg in the Hasselback, which was quite challenging. Then on second thought, I wanted to keep it simple. So I went on with a simple Hasselback, which in itself is super delicious with the flavors of garlic and rosemary-infused into the potatoes that are sliced halfway with many such cuts, which are sprinkled with a generous amount of salt and pepper, which are then baked to perfection. These are not only visually appealing, but they are also super delicious too. Believe me, when I say, Potatoes never tasted so good! Like really! I have been making these Hassel back potatoes, cause I love garlic and rosemary and these baked potatoes are exactly how I like it. Now if you ask me whats the role of the sauces in the Hasselback potatoes? They simply add more flavor dimension to the Hasselback potatoes, which is so much better than the plain Hasselback potatoes. 

This is simply a revelation. I am so happy how it turned out as this was my experiment, and I can proudly say this is my recipe because it isn't inspired from anywhere. I had been researching for quite a few days to see if there were any such recipes online, I could only find loaded Hasselback potatoes, and some which had sauces but nothing like this one! I wouldn't want to have my potatoes any other way! It makes a perfect side dish for dinner with some roasted chicken, or a perfect iftar snack idea. 


My hubster is someone who loves chicken or anything non - veg, so this is why I wanted to include non - veg in this recipe somehow. But I went ahead and baked them, kept it simple, drizzled the sauces and voila! My hubster was saying this thing is too good! Do you believe that? This man, who never says that about veg dishes guarantees you this. My little nephew kept asking for more. All you have to do is give cuts on the potatoes, pour the garlic-rosemary infused butter and bake while you prep for other things for iftar. And simply pour the sauce over the potatoes and voila! You are done! Its that super simple!

Without further a do, lets get started!

Ingredients: 

For the potatoes:
  • 5 Potatoes
  • 4 garlic cloves
  • 2 tbsp butter
  • 2 tsp dried rosemary
  • Salt, as required
  • 1/4 tsp Black pepper powder
  • Chopped green spring onion, to garnish

For the cream cheese sauce:
  • 2 tbsp Mayonaise
  • 2 tbsp Cream Cheese
  • 1 tbsp Cream
  • 1 tbsp milk (optional)
  • Salt to taste

For the Dynamite Sauce:
  • 2 tbsp Mayonaise
  • 1 tbsp Tomato Ketchup
  • 2 tsp Hot Sauce/ red chilli sauce
  • 1/4 tsp Kashmiri chili powder (optional)
  • 1 tsp garlic powder (optional)

Instructions:

  1. Preheat the oven to 220 Deg C. Line a baking tray with parchment paper.
  2. Hold the end of the potato and create slits halfway through the potato, be careful not to cut through the potato and use chopsticks as barriers to help cut your potatoes without cutting through. Repeat with remaining potatoes. 
  3. Meanwhile, in a saucepan melt butter and olive oil, and add garlic cloves and rosemary, and let it infuse in medium-low flame for 2-3 minutes.
  4. Now using a brush, brush the garlic-rosemary infused butter onto the slit potatoes, also make sure the butter reaches the cut folds too.
  5. Then sprinkle the potatoes with salt and pepper generously and bake for 30 minutes.
  6. Whilst the potato bakes, prepare the sauces in different bowls by mixing the ingredients under the sauces heading.
  7. Next, re-brush the potatoes with the garlic-rosemary infused butter and bake for another 30 minutes until fork tender and crispy edges on the potatoes.
  8. Serve hot and slather the cream cheese sauce and dynamite sauce.
  9. Garnish with chopped green spring onions. Enjoy!
