 Meat Sauce Spaghetti AKA Spaghetti Bolognese
 


I love quick dinners and this is one recipe that I tend to make quite often, whenever I get minced meat. And I also like to make this Shepherd's pie and this Rigatoni Bolognese. Bolognese Sauce is basically a meat based tomato sauce using slow cooking method. It is super easy, yet very versatile. You may add veggies of your choice like carrots, celery, mushrooms etc for that extra boost of nutritional values. Spaghetti Bolognese is super easy to prepare, you only need to prep some chopped onions and garlic and you are good to go.

If you do not like too much tanginess, you may use cream cheese and tomato ketchup to balance the flavors. This pasta recipe comes together quickly, makes the perfect lunch/dinner. I have not used milk here, though you may use it to make it even creamier. Also if you have parmesan cheese, you may use it for garnishing, I ran out of it! (always has to happen only when I plan to document the recipe) 🙇 

 Anywhoo, let's get started!




Ingredients :

  • 1 pack Spaghetti 
  • 2 Onions, finely chopped
  • 4 Garlic cloves, finely chopped
  • 2 tbsp Olive oil
  • 2 tbsp Butter
  • Salt, as required 
  • 500 gms  minced meat
  • 1 tsp freshly crushed Black Pepper
  • 1/2 tsp Red Chilli Flakes
  • 1/2 tsp Oregano
  • 1 tsp Cumin
  • 3/4 Cup Tomato Paste
  • 1 cup Reserved Pasta Stock Water
  •  2 tbsp Cream Cheese (Optional)
  • 1 Chicken Stock Cube
  • 2 tbsp Tomato Ketchup
  • Parmesan Cheese and chopped Parsley Leaves, for garnishing

 

Instructions:

  1. In a large pot, pour olive oil and add in the butter.
  2. Next, add in the chopped onion and allow to cook until translucent.
  3. Next add in finely chopped garlic and salt, as required.
  4. Drop in the minced meat and add your seasonings like salt and freshly crushed black pepper.
  5. Break the meat using your wooden ladle.
  6. Next add in red chilli flakes, oregano, cumin powder and tomato paste and mix well. Close the lid and allow to cook for at least 15 minutes on low.
  7. In a large pot, Cook the Spaghetti in salted water according to package instructions.
  8. Next, add in cream cheese (optional), Maggi chicken cube and tomato ketchup (optional). Combine well, make sure the stock cube has dissolved into the sauce.
  9. Next add in your reserved stock water to make it even saucier.
  10. Finally add in your cooked Spaghetti and check for salt. Give a final mix and serve into a deep plate, sprinkle chopped parsley and garnish with Parmesan Cheese. Serve hot.


Notes:

You may add vegetables of your choice like carrots, celery, mushrooms etc.before adding the minced meat.

I used cream cheese, so that much quantity of tomato paste gets diluted, if you aren’t using any diary products, I would recommend to use lesser quantity of tomato paste depending on the quantity of pasta/ spaghetti you are preparing.

Parmesan Chicken Piccata



Looking for a lip-smacking side dish to along with your pasta or rice? This is the perfect side dish especially if you love Italian cuisine. I love love love Italian cuisine. I just cannot sum up how much I love Italian. Italian food is what made me love cooking in my teens. I just love how beautiful and aromatic it is when minced garlic is sautéed in butter or olive oil. My little brother just cannot wait on his legs when I start any dish starting with sautéing garlic in butter. He just doesn't leave until and unless he gets to eat it and I just get mad when I get interrupted while cooking, and he will come back every other minute to check if it is done to eat. Lol.



The chicken breast is cut lengthwise or in a butterfly shape and floured and then fried in olive oil to golden perfection. A sauce made from garlic-lemon-butter is poured over the chicken to make it slurpy good. The juice from the chicken gets combined in the buttery sauce when the sauce bubbles on a low flame for a minute or two. I know you might think, who has the time to make a side dish let alone a main dish. But I assure you this won't take much of your time, it is super easy. It only took me about 15 minutes only to make this. And the Mr. loved it. Alhamdulillah. The 15 minutes was worth it if you know what I mean. 😉 All a wife wants is a happy husband. ❤️

This juicy chicken can be served hot with pasta, rice or roasted veggies. This recipe is just too good yet so easy. This Chicken Piccata is going to be a family favorite in no time. I served it with some brown fried rice. The recipe of brown fried rice is on the blog.


Ingredients

For The Chicken:
2 large boneless and skinless chicken breasts halved lengthwise to make 4
2 tablespoons flour (all purpose)
2 tablespoons finely grated fresh Parmesan cheese
1 teaspoon salt
1 egg
Cracked pepper
2 tablespoons fresh cilantro/parsley






For The Sauce:
1 tablespoon olive oil
2 teaspoons butter 
1 tablespoon minced garlic
1 cup chicken broth (stock)
1/3 cup finely grated fresh Parmesan cheese
2-3 tablespoons lemon juice - juice of 1 lemon (adjust to your tastes)


Instructions:





  1. In a shallow bowl, combine the egg and parmesan cheese and cilantro. Season the chicken with salt and pepper; dredge in the flour mixture; shake off excess and set aside.
  2. Heat 1 tablespoon of oil and 2 teaspoons butter in a large skillet over medium-high heat until butter has melted and the pan is hot. Dip the floured chicken into the egg mixture and fry the chicken until golden on each side and cooked through and no longer pink (about 3-4 minutes, depending on the thickness of your chicken). Transfer onto a warm plate.
  3. Add the garlic to the oil in the pan, add butter if required and fry until fragrant (about 1 minute). Reduce heat to low-medium heat, add the broth. 
  4. Bring the sauce to a gentle simmer; season with salt and pepper to your taste; add in the parmesan cheese. Continue cooking gently for about 2 minutes until thicker. (If the sauce is too runny for your liking, add the cornstarch/water mixture into the centre of the pan and mix through fast to combine into the sauce. It will begin to thicken immediately).
  5. Pour in the lemon juice, allow to simmer for a further minute to combine. Add the chicken back into the pan, allow to simmer gently in the sauce for about a minute to soak up all of the flavors in the sauce.



Serve with the sauce over pasta, steamed vegetables, white rice. Top with lemon slices and parsley.




Notes:

  • You can make this chicken without using an egg instead you may just pat it in flour.
  • You can make it more crumbly by using bread crumbs after the chicken is dipped in the egg/flour mixture.
  • The parmesan cheese gives it a more cheesy flavor you may always avoid it; it becomes a classic delicious chicken Piccata.
  • You may also make it creamy by adding heavy cream/Evaporated milk. 
  • Use tender Chicken Breast for best results. It will be super juicy or you may always brine it. 
  • Pound the chicken breast if it is too thick or else the inside of the chicken will not get done. 
  • Be careful when you add salt, remember the stock already has salt in it.

Bubbly Hot Spinach Frittata







Are you that kind of person who is tired of having the old-fashioned sunny side up, omelette, poached eggs etc and you don't have much time to spend in the kitchen right in the morning? Well, this recipe is for you. Frittata is basically an Italian omelette, they are started on the stovetop and then finished in the oven and if you're anything like me; loves garlic, cheese; then this concoction is going to blow your mind and I promise you this is going to be you and your family's favorite go-to breakfast recipe. I tried this recipe with 'a pinch of salt', not sure if it was going to be tasty or filling. When I discovered Frittatas are so versatile that you can pretty much add any veggies like mushrooms, broccoli etc and it will taste so out of the world, I was enlightened. Not only are frittatas delicious, but they are also super nutritious and health packed with all those omega 3 eggs and veggies. So if you are looking for some way to make your kids eat healthy, this recipe is super easy and they are gonna love it. Let's move on to the ingredients to make the perfectly yummified Spinach Frittata:



Ingredients: 

  • 5 Omega-3 Eggs
  • ½ cup of Milk
  • 1 Tbsp Olive Oil
  • 2 small cloves of minced Garlic
  • 4 cups of Fresh Spinach
  • ½ cup of Shredded Mozzarella Cheese
  • ½ cup of Freshly Grated Parmesan Cheese
  • ½ tsp Pepper
  • Salt to taste

Instructions:

  1. In a skillet, cook the garlic in the olive oil over medium heat for about 1 minute, add the spinach and cover the skillet with a lid for 1 minute or until the spinach is wilted.
  2. In a small bowl, whisk together the eggs, milk, parmesan, half of the shredded mozzarella and salt and pepper, set aside.
  3. Remove the lid from skillet and give the spinach a toss, pour in the egg mixture and using a wooden spoon pull in the set eggs from the sides of the skillet. Let it cook for about 5 to 7 minutes or until the frittata is almost set.

  4. Preheat your broiler.
  5. Sprinkle the top of the frittata with the remaining mozzarella and some more parmesan.

  6. Pop it under the broiler for a couple minutes or until the top is golden brown and the frittata is set. Cut and serve hot.
