Greek Potato and Chicken Salad

Salads when had the right way can never go wrong! This is one of my favorite salads as it is healthy and nutrious without using any mayo or other condiments for that extra creaminess.

The right way to make the perfect Greek Potato Salad is to cook it to the right consistency, not too mashy nor too hard. Also remember not to make the dressing too acidic by adding too much lemon juice also not too add a large garlic clove as this may cause the salad to taste bitter.

Just keep these points in mind and I am sure you and your family will love it too!

Also yoummay completely avoid adding the chicken, I like to make Salad as a meal, aand my family loves non veg, so added chicken too :)

Ingredients :

  • 2-3 medium Potatoes
  • 1/4 Onion chopped finely
  • 1/4 Capsicum, chopped finely
  • Salad Leaves
  • 1/4 Cup Boiled Black Beans

For Chicken:

  • 2-3 boneless Chicken pieces
  • 1/4 tsp Black Pepper powder
  • Salt, as required
  • Olive oil

For the dressing:

  • 2 tbsp Lemon juice
  • 1 very small Garlic clove, miced
  • 1/4 tsp Freshly crushed Black pepper
  • 1/4 tsp Oregano
  • 2-3 tbsp Olive oil

Instructions:

  1. In a pressure cooker, cook the potatoes with same level water and cook for 3 whistles, let the pressure release naturally.
  2. Remove the potatoes from the pressure cooker and allow to cool completely.
  3. Remove the skin of the potatoes and chop them into medium to small cubes.

  4. Marinate the chicken pieces in garlic, black pepper and salt and fry them in olive oil. Once slightly cooled, chop them and set aside.

  5. Add the chopped veggies to the chopped potatoes and add the chopped chicken pieces to the salad.

  6. Now make a dressing of the above mentioned ingredients and add it to the salad and toss everything.
  7. You may have this salad as it is or along with set course of dishes. Either way it is a delicious salad.

Air Fried Chicken BBQ wings & Potato Wedges

I so love my food crispy and hot, and imagine to achieve the results with little to no oil, well, this chicken BBQ wings was air fried and so  are the potato wedges, so crispy.. Love love love the results! Few days back, the brand NinjaKitchen had send me their airfryer and oh boy am I amazed by the results?!

I used a tad bit of baking powder to keep the wings extra crisp. Some tips to keep in mind when you air fry:

Dab the chicken wings dry using a kitchen towel, this helps to crispen the wimgs better

Make sure you pre heat your air fryer before placing the wings.

Do not over crowd your air fryer pan, this way all the wings get cooked evenly.

You can use a parchment paper for easy cleanup, but the undersides might get soggy as the parchment paper does not allow drainage of fat/oil etc.

Make sure not to place your parchment paper while preheating your air fryer.

I used home made BBQ sauce, you may use store bought BBQ sauce or any of your favorite sauce to coat the air fried chicken wings. I will briefly put down the recipe of the BBQ sauce in this post.

I  couldn't stop munching on the Potato Wedges and the best part? Made the whole batch with just a tbsp of olive oil. I couldn't believe my eyes or my tongue :P So crisp and delicious! This is the perfect game night snack. Without further a do, let's get started!

 Hariyali Chicken Biryani

Hariyali Chicken Biryani/ Green Chicken Biryani is a recipe that I grasped/ learned from my in laws, basically my aunt-in-law, called Shabna. This is a special biryani that they make especially only during special celebrations like birthdays and anniversaries. So the last time I went to India my MIL and SIL was all praises about a special biryani that my aunt in law makes during such occasions. They said, the house smells amazing when she makes that biryani, and that unlike usual biryani, this had everything green in it and fried potatoes that made it extra special. I sooo wanted to try it. And finally I got a chance to taste it when it was their daughter's birthday and to my surprise I loved how flavorful the biryani was and of course it looked all green. Even the chicken, I was sure it was food color, and yes it was! That is why the biryani is only prepared during special occasions. So I wondered once in a while a little color won't hurt, but if preparing this biryani once every week, I'd suggest not to use the color.

Well, coming back to the flavors, one big mouthful and I could identify all the flavors, unlike in my recipe she had added capsicum pieces too. I didn't have capsicum/ bell pepper. Instead I added Spinach leaves (palak), this is totally optional, if you do not like the flavor of palak you can completely avoid it and still tastes sooo good*. Ever since I was back in Dubai, I wanted to replicate it, she was someone who found it difficult to explain the recipe like me. For me, I add spices and seasonings each time according to the flavor of the dish, so it will vary. So I almost made out the recipe in my head, noted down what I thought it would be like and it was a success. Just make sure you allow the green chicken masala and rice to stay in dum for some time .

Also, in the video I haven't allowed the onions to be translucent as to my liking, (as sun was setting and I wanted to finish filming in day light), so I pressure cooked the just the onion masala for 1 whistle, because we here like our biryani masala quite mushy, if you like the onions to stay without being smashy, just avoid this step. And that's it! Let's make this delicious Hariyali Chicken Biryani or as the kids call it, HULK Biryani! 😂

Ingredients : (makes for 3 people)

2 Large potatoes, sliced

For the Masala:

  • 2 tsp Ghee/ Clarified Butter

  7. Next add the crushed ginger garlic and saute until raw aroma disappears.
  8. Now add your chopped tomatoes, allow to cook well.
  9. Next add in the pureed leaves and herbs, saute with salt and garam masala. Pressure cook the masala for 1 whistle if not mushy enough.
  10. In a large non stick rice pot, fry the onion until golden brown and crispy for the rice in ghee and vegetable oil and set aside.
  11. Now add in the whole spices like cloves, cinnamon stick and cardamom, add in your washed and drained rice and Sautee for a couple of minutes, to that add in the curry leaves, Maggi chicken cube, green food color ( if required) and salt, as required .
  12. Pour water and allow to cook for 15 minutes and gently turn the rice over to check if cooked.
  13. To the cooked masala, add in your fried chicken pieces and allow to boil on simmer for 5 minutes.
  14. Squeeze lemon juice as required, check for seasonings, put on dum by putting the rice as a layer over the masal over which some fried onion and cashews are sprinkled.
  15. Place the fried potatoes.
  16. Cover the pot with aluminum foil, place lid and allow to be on dum for 1/2 hour at least.
  17. Mix everything together. Serve hot and enjoy!

Notes:

  • If using palak make sure to add a lot of lemon juice to balance out the bitter flavor of palak.
  • You will only require half a bunch of palak.

Sunny side up Potaffles

Pottafles are what came to my mind when I was craving for hash browns, yet wanted to make waffles when I had a lot of potatoes in my pantry. It is a super easy breakfast idea. Some days I really crave for something savory in the morning, but the thought of the process involved makes me want to adjust with pancakes and waffles. What I liked about potaffles was that it had a hash brown taste to it, without much effort.

The ingredients are basic, so you make it very easily, but of course, if you have a waffle maker. The addition of the corn flour helps to make the waffles crisper unlike usual savory waffles. Though, right after cooking the potaffles, they may look soggy, but it gets crisper when the vapour evaporates, the potaffles gets crispy.

After mixing the batter of the potaffles, the more the batter sits, water oozes from the potatoes, which can be removed by straining the water. You may avoid onions, but it helps elevate the flavors as well as helps the potatoes from oxidizing and changing color once shredded. I served the potaffles with sides like sausages, streamed brocolli and sunny side up eggs with a warm cup of coffee to go with it. If you have a food processor and a waffle maker, do definitely try this recipe, it's delicious yet super easy.

INGREDIENTS : (Makes for 4 )

  • 4 Potatoes (3 shredded and 1 finely shredded, using a food processor)
  • 1 Onion, finely chopped
  • 1 Egg
  •  4 tbsp All Purpose Flour
  • 2 tbsp Corn Flour
  • 1 tsp Black pepper, crushed
  • Salt, as required
  • Eggs, brocolli, sausages to serve as sides

Instructions:

  1. In a food processor, shred 3 potatoes and finely shred 1 potato.
  2. In a mixing bowl, add the shredded potatoes and finely chopped onion, and all the ingredients, mix well to combine.
  3. Next scoop the batter mix and spread over the waffle griddle and close the griddle and cook for around 7 minutes or until the edges turn brown.
  4. Finally, place a sunny side up egg over the potaffles and serve with your favorite sides. I served with steamed brocolli and fried sausages.

Pulled BBQ Chicken loaded potatoes

Chicken and potatoes for a snack are match made in heaven. And to top it all, if it’s cheesy, even better.
I was planning to film video of another recipe while it’ll I had this sudden craving for bbq chicken flavored snack. I had some potatoes looking at me from the kitchen counter top.

Well, my idea was just to dump in the readymade bbq sauce I had in my refrigerator and just do a quick loaded potato, that’s when I realized not everyone has bbq sauce in their pantry. So I made it from scratch so that everyone could try it too. Let me tell you, be ready for a war if you don’t make individual loaded potatoes for each person at home. It’s that good. I have witnessed it. 😆

The recipe is super easy, where the potatoes are half way boiled and then roasted in the oven for crustiness of the potatoes, whose inner core is removed and mixed with chicken that has been slow cooked in bbq sauce and pulled. With some cream cheese and other ingredients, finally topped with a hell lotta cheeeeese, you will know it’s the best loaded potatoes you would ever have had!😋

Not boasting or anything, but everyone here were fighting for more. So, now you know, it’s a must try!🤤

Lets get started with the recipe!

Ingredients:

  • 3 Potatoes cleaned and unpeeled
  • 1 tbsp olive oil
  • Salt, as required
  • 150 gms Boneless chicken
  • 3 tbsp tomato ketchup
  • 1 tbsp dark brown sugar *
  • 1 tsp Crushed Black Pepper
  • Salt, as required
  • 1/2 tsp Garlic Paste
  • 1 tbsp Soy sauce
  • 1 tsp Worcestershire Sauce (optional)
  • 1 tsp Paprika/ Red Chilli Powder
  • 1/2 Red Chilli Flakes
  • 1/4 cup Corn Niblets
  • 2 tsp Cream Cheese
  • 1 tbsp Butter
  • Mozzarella Cheese
  • Cheddar Cheese Slices
  • Chopped Parsley

Instructions:

  1. Half way cook the unpeeled and cleaned potatoes in water seasoned with salt for almost around 10 minutes.
  2. Drain water from the potatoes, place them on a baking tray lined with parchment paper and poke holes in the potatoes using a fork.
  3. Drizzle olive oil and sprinkle salt, as required.
  4. Roast the Potatoes for around 15-20 minutes at 180 deg C.
  5. Next, into a pot add in your cleaned chicken pieces and add in your sauces and spices like tomato ketchup, soy sauce, Worcestershire sauce (optional), brown sugar, black pepper powder, garlic paste, and paprika/ red Chilli powder. Mix well.
  6. Slow cook the chicken for around 15-20 minutes without adding any extra water. Cook until when the chicken pieces pulled with fork, pulls easily.
  7. Pull the BBQ chicken, combine the thickened BBQ sauce in the pot with the chicken itself.
  8. Next, add in your red Chilli flakes, corn niblets, and cream cheese and butter. Mix well and set aside.
  9. Once the potatoes have cooled to the touch, scoop the inner core of the potatoes, keeping the potatoes peel intact and add the scooped potatoes to the pulled chicken and mix well.
  10. Load the potatoes with the chicken potato mix and top with mozzarella and cheddar cheese and brook until cheese melts.

  11. Garnish with chopped parsley and enjoy!

Notes:

You may completely avoid the sauces if you have readymade BBQ sauce.

Street Style Fast food
Paav Bhaji

Good evening folks. Do you get this sudden cravings for Indian Street food style chat? Well I am someone who loves any kind of street food/ fast food, but to my dismay, the Mister hates Indian Chat! Well, thanks to all the viral videos that showed the unhygienic preparation of street food. So to satisfy my cravings, I make some them from home.

Pav is basically the bread rolls that are served along with the bhaji (a Marathi word which indicates a vegetarian dish). Bhaji is basically prepared by cooking vegetables and adding spices, mashing the vegetables to form a gravy. A special combination of spices are used to prepare the paav bhaji masala which brings out the authentic taste. Though this spice mix (Pav bhaji masala powder) can be found in Indian stores and supermarkets, I like to prepare them from scratch, which helps to bring better flavors.

It is said that Pav bhaji was invented as a quick lunch option for the textile mill laborers in Mumbai that is now enjoyed as a street - fast food and in restaurants. Though my recipe doesn't use red food color, you may use if required, I used kashmiri red chilli powder instead, sautéed them in butter to bring out the color.

Here, I have incorporated the street style way of cooking by sautéing a tbsp of the prepared masala in butter along with chopped Coriander leaves and toast the paav on an iron griddle. It takes the pav to a next level. I bet this recipe can fill your tummy and soul!

*The picture displayed is a random capture for the time being , which will be replaced soon.

Ingredients :

For 3-4 people

  • 1 tbsp vegetable oil
  • 1 tbsp butter
  • 1 large Potato (boiled and mashed)
  • 1 large tomato, chopped
  • 1/4 cup green Peas (I used frozen)
  • 1 medium Onion chopped finely
  • 1/2 green Capsicum chopped finely
  • 2 tsp Pav bhaji masala powder (to make from scratch I will mention below)
  • 1 tsp Kashmiri Red chilli powder
  • 1/2 dry Fenugreek leaves, powder it by rubbing between palms
  • 1 green chili, finely chopped (if required)
  • Coriander leaves, finely chopped
  • 1 tsp Ginger garlic paste
  • 2 tbsp lemon juice
  • Around 1 cup water
  • Salt as required

For paav:

  • 1 tbsp butter
  • Coriander leaves, chopped
  • 1 tbsp prepared Pav bhaji masala (not powder)

Instructions :

  1. In a wide bottom thick pan, pour 1 tbsp vegetable oil and 2 tbsp butter.
  2. Sautee the onion and Capsicum till the wetness from them dry around 2-3 minutes.
  3. Add salt as required.
  4. Add in Pav bhaji masala powder, kashmiri chilli powder and dry Fenugreek leaves.
  5. Sautee and add in green chillies, Coriander leaves and ginger garlic paste. Sautee well.
  6. Finally add in your tomatoes and green Peas.
  7. Sautee and finally pour lemon juice.
  8. Add your mashed potato. Mix well.
  9. Pour around 1 glass of water, you want it the gravy loose. Close the lid and allow to boil for around 5 minutes and open the lid and mash using a masher and adjust water and salt as required.
  10. In an iron tawa, place a tbsp butter, drop Coriander leaves and add the prepared Pav bhaji masala and Sautee for a few seconds and place the Pav and nicely toast both sides.
  11. Serve the paav and masala with a slice of lemon and chopped onion.

To prepare Pav bhaji masala powder from scratch : (can use this measurement to prepare the above recipe 2 - 3 times)

  • 2 tbsp Coriander seeds
  • 1 tbsp cumin seeds
  • 1 cinnamon stick
  • 1 cardamom pod
  • 2 cloves
  • 2 Bay leaves
  • 2 tsp whole black pepper
  • 1 tsp fennel seeds
  • 3 whole dried kashmiri chilli/ 1 normal dried chilli
  • 1/2 tsp Turmeric powder
  • 1 tsp dry Mango powder/amchur powder.

Instructions :

  1. Dry roast the above ingredients except for Turmeric powder and dry Mango powder and allow to cool completely.
  2. Grind well and finally add the Turmeric powder and dry Mango powder and give a couple of blitz and store in a dry and clean container.

Note:
  • If you want super mashed up veggies in your bhaji, you may cook them well in a pressure cooker before you prepare the masala.
  • The usage of the type of veggies used in Pav bhaji can make a slight difference in taste, if you like a sweeter taste you may use carrot, for extra color you may use beetroot. I personally like more Capsicum which helps bring out the flavors better.

Hasselback Potatoes with Cream Cheese and Dynamite Sauce

No - fried food for iftar is very difficult to accomplish right?! After all, after the many hours of fasting, we want to satisfy our taste buds with all possible junk/ fried items that we can. And is it healthy?! Definitely a big no! So here I have been contemplating on all the non-fried ideas. To make food visually impressive and delectably delicious is super hard when it comes to no - fried food. So I have collaborated with some lovely ladies on Instagram to come up with some delicious healthy snacks for Iftar!

Well, my contribution are my Hasselback potatoes with cream cheese and dynamite sauce. Hasselback potatoes have their origin from Sweden. They have these crispy rim like edges that are so appealing at the same time, super delicious and the inner part of the potatoes are so soft and infused with flavors. My initial thoughts were to include some sort of non - veg in the Hasselback, which was quite challenging. Then on second thought, I wanted to keep it simple. So I went on with a simple Hasselback, which in itself is super delicious with the flavors of garlic and rosemary-infused into the potatoes that are sliced halfway with many such cuts, which are sprinkled with a generous amount of salt and pepper, which are then baked to perfection. These are not only visually appealing, but they are also super delicious too. Believe me, when I say, Potatoes never tasted so good! Like really! I have been making these Hassel back potatoes, cause I love garlic and rosemary and these baked potatoes are exactly how I like it. Now if you ask me whats the role of the sauces in the Hasselback potatoes? They simply add more flavor dimension to the Hasselback potatoes, which is so much better than the plain Hasselback potatoes.

This is simply a revelation. I am so happy how it turned out as this was my experiment, and I can proudly say this is my recipe because it isn't inspired from anywhere. I had been researching for quite a few days to see if there were any such recipes online, I could only find loaded Hasselback potatoes, and some which had sauces but nothing like this one! I wouldn't want to have my potatoes any other way! It makes a perfect side dish for dinner with some roasted chicken, or a perfect iftar snack idea.

My hubster is someone who loves chicken or anything non - veg, so this is why I wanted to include non - veg in this recipe somehow. But I went ahead and baked them, kept it simple, drizzled the sauces and voila! My hubster was saying this thing is too good! Do you believe that? This man, who never says that about veg dishes guarantees you this. My little nephew kept asking for more. All you have to do is give cuts on the potatoes, pour the garlic-rosemary infused butter and bake while you prep for other things for iftar. And simply pour the sauce over the potatoes and voila! You are done! Its that super simple!

Without further a do, lets get started!

Ingredients:

For the potatoes:
  • 5 Potatoes
  • 4 garlic cloves
  • 2 tbsp butter
  • 2 tsp dried rosemary
  • Salt, as required
  • 1/4 tsp Black pepper powder
  • Chopped green spring onion, to garnish

For the cream cheese sauce:
  • 2 tbsp Mayonaise
  • 2 tbsp Cream Cheese
  • 1 tbsp Cream
  • 1 tbsp milk (optional)
  • Salt to taste

For the Dynamite Sauce:
  • 2 tbsp Mayonaise
  • 1 tbsp Tomato Ketchup
  • 2 tsp Hot Sauce/ red chilli sauce
  • 1/4 tsp Kashmiri chili powder (optional)
  • 1 tsp garlic powder (optional)

Instructions:

  1. Preheat the oven to 220 Deg C. Line a baking tray with parchment paper.
  2. Hold the end of the potato and create slits halfway through the potato, be careful not to cut through the potato and use chopsticks as barriers to help cut your potatoes without cutting through. Repeat with remaining potatoes.
  3. Meanwhile, in a saucepan melt butter and olive oil, and add garlic cloves and rosemary, and let it infuse in medium-low flame for 2-3 minutes.
  4. Now using a brush, brush the garlic-rosemary infused butter onto the slit potatoes, also make sure the butter reaches the cut folds too.
  5. Then sprinkle the potatoes with salt and pepper generously and bake for 30 minutes.
  6. Whilst the potato bakes, prepare the sauces in different bowls by mixing the ingredients under the sauces heading.
  7. Next, re-brush the potatoes with the garlic-rosemary infused butter and bake for another 30 minutes until fork tender and crispy edges on the potatoes.
  8. Serve hot and slather the cream cheese sauce and dynamite sauce.
  9. Garnish with chopped green spring onions. Enjoy!

Easy and Crispy Masaledar Fries

Good morning lovelies!

Do you love French Fries? Like who doesn't? It is something that is universally loved among adults and children. And when you transform " French" fries to "Desi" Fries by making it Masaledar, I am sure the fries are going to munched in a blink of an eye. When I made this for a trial it just vanished into thin air.

Cheesy Potato Latkes

Here is something that I made when I wanted some savory snack for tea. Latkes are potato pancakes that are shallow fried using grated potato, binding it using eggs and grated mozzarella cheese often adding in grated garlic/ garlic powder and/ onion with some seasoning. The best part is when you squeeze out all that water from the grated potato, its so much fun! Call your kids along to make this yummy snack, they are going to love it. It is so much fun when you have are giggles and messy little helpers around the kitchen (only if you are not in a hurry or ain't making them for guests )🙊

When I tried making this, I felt it would be too simple or bland when the idea of adding in mozzarella cheese dawned on me. Did the kids (my toddler and siblings) love them? It was a win-win. Cheesy tender potatoes that gives in a slight kick of garlic and onions. Perfect for a winter evening! You may use only the cornstarch to make it gluten-free. I have added in both flour and corn flour to make it extra crispy. You can never go wrong with hot snacks if they are perfectly seasoned. Serve it with some sour cream and sprinkle in a few chopped green onions. Ps. I didn't have them, so I improvised it with parsley. 😅

Get your graters and potatoes and let's make these!

Ingredients:

  • 2 large Potatoes, grated
  • 1/2 of a medium onion, grated
  • 1 small clove garlic, minced / 1 teaspoon garlic powder
  • 2 large eggs
  • 1/4 cup cornstarch
  • 1/4 cup All Purpose Flour
  • 1/2 teaspoon baking powder
    • 1 Cup Shredded Mozzarella Cheese
    • 1 teaspoon white pepper powder
    • Salt as required

    Instructions:

    1.  1. Grate the potatoes and onion using a grater or using a food processor.

    2.  2. Pile the grated potatoes in 2 batches on a clean kitchen towel and squeeze out the excess liquid.

    1.  3. Transfer this to a big bowl and mix in the rest of the ingredients. The mixture should look like the image shown.

    1.  4. In a large non-stick skillet, heat oil on a medium-high flame, drop in a little potato mixture, and check if the mixture sizzles, that's when you know the oil is hot.

    1.  5. Using an ice- cream scoop (or use 2 tablespoons of the mixture), scoop the mixture and drop it carefully into the hot oil and flatten it slowly using the back of the scooper. Let them cook about 3-4 mins each side till they become crisp and golden on both sides. Drain on paper towels and serve them with sour cream and chopped green onions. Enjoy with tea or coffee!
