Pizza Bombs



It’s not easy to impress little kids that are fasting. So this little pizza bomb is here to their rescue. Kids love pizza! And this has to be the perfect snack for the little ones to open their fast. 

The dough is made using the Caesar style pizza dough (recipe already in my blog) and stuffed with a saucy filling and mozzarella cheese.

If you make the dough ahead of time, it’s an easy snack to prepare. Without further a do, let’s get started!

Ingredients:

  • 150 gms Boneless Chicken 
  • 1 tsp White pepper 
  • 1 tsp Paprika powder/ Red Chilli powder 
  • 1/4 tsp Garlic powder
  • Salt
  • Olive oil- to shallow fry the chicken 
  • 1 tbsp Butter
  • 1 tbsp Flour
  • 1/4-1/2 cup Milk
  • 1/4 tsp Red Chilli Flakes
  • 1/4 tsp Oregano
  • 1/4 cup Capsicum, chopped finely (optional)
  • 1 tbsp Black Olives, sliced (optional)
  • 2 tbsp Tomato Ketchup 
  • Mozzarella Cheese
  • Egg whites 
  • Bread Crumbs 
  • Vegetable Oil for frying

Instructions :

  1. Marinate the chicken pieces with white pepper, garlic powder, paprika powder and salt and shallow fry in olive oil no more than 5 minutes and set aside and chop with finely once cooled. 

  2. In to the same pan, add a butter slice, sauté the flour and switch off the flame and pour the milk little by little, whilst stirring constantly. 
  3. Into the bechamel/ white sauce, add your chilli flakes, Oregano, White pepper powder and salt. 
  4. Chop up the chicken pieces and add the chicken to the prepared sauce. 
  5. Next add in your capsicum, olives and tomato ketchup.
  6. Onto a clean counter top, place your risen dough and make small balls from it and flatten using a rolling pin and add in the thickened filling and Mozzarella Cheese and roll into balls and remove the excess dough if necessary.
  7. Finally dip and roll the ball in egg whites and coat in bread crumbs.


  8. Fry in a deep curved wok (to get the pizza bombs cooked thoroughly). - Make sure the flame is not too high or too low. 
  9. Enjoy with some ketchup!

 Cheesy Chicken Drumsticks


Are you concerned about your intake of veggies during Ramadan? Well, it's a bit tricky to convince kids to eat veggies during Iftar. So I thought of making these cute little drumsticks (that look like chicken drumsticks but aren't haha), whose inspiration I got from some random reel I saw of Thalassery street snacks I saw as a forward. I immediately wanted to try my version.

So I came up with the idea of adding finely minced fibrous cauliflower to make the snack, you may totally skip this step if you dislike the flavor of cauliflower. These are a different version of Chicken Cutlet, where potato sticks acts as the bone of the drumstick. I also stuffed the drumstick with Mozzarella cheese cubes, that makes it extra delicious, especially for the kids. The original Thalassery: Malabar Snack actually includes covering the drumstick shaped cutlets with a sheet of flour (which I omitted as I didnt want to complicate it any further :D)

Enjoy this yummy snack hot with a cup of chai! Without further a do, let's check the ingredients !

Ingredients :

  • 2 medium sized potatoes, cubed, boiled with salt and mashed
  • 1 Potato (sliced to make sticks)/ Frozen French fries
  • 200 gms Boneless Chicken, boiled with salt, pepper and Turmeric powder
  • Few florets of Cauliflower, chopped finely
  • 1/2 Onion, minced
  • 2 Garlic, small, minced
  • 1 very small piece Ginger, minced
  • Green chillies (optional)
  • 1/4 tsp Turmeric Powder
  • 1/2 tsp Kashmir Chilli powder
  • 1 tsp Ghee/ clarified butter
  • 1/4 tsp Garam masala
  • Mozzarella Cheese, cubes/ shredded

Coating:

  • Egg, whisked with salt and pepper
  • Bread crumbs+Oats+Corn flakes *

Instructions:

  1. In a pan pour some oil and add in the finely chopped/ minced Onion, ginger garlic and saute until translucent and aromatic.
  2. Next add in the finely chopped Cauliflower and add salt as required.
  3. Next add in the shredded chicken and the spices mentioned above.
  4. Finish off with ghee and garam masala.
  5. Add in the Mashed potatoes and combine well.

  6. Sprinkle salt on the potato sticks.
  7. Once the potato chicken mix has slightly cooled, make small balls out of it, using your index finger , make a small dent and add the small cheese cube and make a ball.
  8. Next push in a potato stick and press well to form a shape of drumstick.

  9. Next, coat the drumsticks in the egg wash and coat in the bread crumbs mix.





  10. Fry on high, until golden (be careful not to burn them).

  11. Enjoy warm (for the cheesy texture) with a hot cup of chai!


Notes:

*You may simply use bread crumbs only.
These are freezer friendly, you can make ahead and store them too! 
* I have used potato sticks as I ran out of frozen French fries.

 Chicken Priyazo


How many of y'all remember this nostalgic snack from lulu? Perfect for iftar, simple yet fun to make and the best part, it is oven baked which means no need to stand near the hot oil and stare at it. I am a big fan of Puff pastry since childhood. Whenever I see anything using Puff pastry being served, I had to try it. And most of the time never disappointed. 

And this snack indeed is a childhood favorite snack that I used to love munching when my parents used to take us shopping to Lulu Hypermarket. This is my interpretation of the snack. Do try and let me know how you liked it. 

This is one of my first recipes I shared in the internet, was such a success at home, wanted to share the success with everyone, Alhamdulilah! Then, the recipe of chicken Priyazo was not even there on the internet , now there are variety of recipes of chicken Priyazo :D

The filling is so delicious. You may use it for any snack item as a filling. You may also make the same with Maida/All purpose flour dough and fill them like rolls and dip in the egg mixture and fry them. 😋

Without further ado, let’s check out the recipe! 

Ingredients:

  • 1 pack Puff Pastry sheet squares (preferably whole wheat)
  • 250 gms Boneless Chicken
  • 1/2 Onion, finely chopped
  • 1 Garlic clove, minced 
  • 2-3 tbsp Thick Cream
  • 2  tbsp Tomato Paste
  • 2 tbsp Mayonnaise
  • Handful of Coriander Leaves
  • Olive oil
  • 1 egg for Egg wash
  • Sesame seeds

Spices :

  • 2 tsp Kashmiri Chilli powder
  • 1/4 tsp Turmeric powder
  • 1 tsp Coriander Powder
  • 1/2 tsp Cumin powder
  • 1 tsp Ginger Garlic paste
  • Salt, as required 

Instructions :

  1. Marinate the chicken with spices mentioned above and set aside.
  2. In a pan, pour some olive oil and Sautee finely chopped onions, and minced garlic until fragrant and onions become translucent.
  3. Now add in the marinated chicken pieces, slightly sear the chicken and pour in a dash of water, add in the tomato paste, and handful of chopped coriander leaves and cook covered for 10 minutes on medium low flame.

  4. Transfer the cooked chicken with the masala/ gravy into a bowl allow to cool slightly.
  5. Next, add the chicken to a food processor and slightly pulse to shred the chicken.

  6. Add the shredded chicken back to the bowl with the thick gravy (onion masala) and add the thick cream.

  7. Flatten the puff pastry sheets slightly and fill in the chicken masala.
  8. Crack open an egg into a bowl and whisk it well. 
  9. Now seal the puff pastry by brushing the egg wash at the end of the sheet and rolling it up completely.
  10. Place the rolls on a oven tray lined with parchment paper and similarly line up all the rolls on the tray.

  11. Give an egg wash to the pastries and sprinkle sesame seeds and Bake/ air fry in a pre heated oven at 190-200 deg C for 20 minutes or until golden and flaky.


  12. Now spread mayo and both ends of the roll and dab the finely chopped coriander leaves onto the mayo.
  13. Serve warm!

 Freezer-Friendly Cheesy Chicken Cutlet Fingers




During Ramadan, it's almost unavoidable to have fried snacks. The smell of fried snacks always hits different when you are fasting. I plan to share iftar recipes, where there is a moderation between fried and non-fried snacks. These Freezer friendly cheesy chicken Cutlet Fingers are super easy to make, and that you don't waste time shaping the cutlets is such a time saver hack!

I had some leftover basic chicken filling, that's when I tried out this hack, that dawned on me and oh boy, I so love this hack! I love cutlets but shaping them takes up so much time. I will share the chicken filling recipe below. Also Cheesey snacks tend to break and ooze out when made immediately, the zip lock-freezing hack comes so handy as, the cheese will not burst out that easily. You may use a baking paper to make a block of the chicken potato mix that are sandwiched between Mozzarella cheese. And they kept in the freezer to become a solid square for 3-4 hours or overnight. Then thaw for half an hour and cut into equal strips and cut into halves. And coat them in egg mixture and coat them in bread crumbs.

Do definitely give the recipe a try, in Sha Allah!


Chicken filling:

Sauté onion, green chillies, coriander leaves and chicken cooked in water with salt and turmeric. Add the shredded chicken to the onion mix.

Ingredients :

  • 2-3 Potatoes, boiled with salt and mashed
  • Chicken filling
  • Mozzarella Cheese
  • 2 Eggs
  • Bread Crumbs
  • Zip lock bag/ Baking Paper
  • Vegetable Oil 

Instructions :

  1. Into the boiled and Mashed potatoes add the chicken filling and mix well. 

  2. Add the chicken -potato mix into a zip lock bag and flatten leaving a gap in the lock and flatten using a roller. You may also use a baking paper, flatten using oiled hands into a medium flat square shape on the baking paper.

  3. Next add in a layer of Mozzarella cheese and repeat the process of adding the chicken potato mix and roll flat. If using baking, cover using the baking paper and place in the freezer. Allow to freeze to solid for 3-4 hours or overnight, so that the cheese becomes solid. 
  4. Next, thaw for half an hour so that you may easily cut into equal strips and and half them. 

  5. Into a bowl, crack 2 eggs and whisk using a fork. Now to the egg mix, dip your Cutlet finger and coat in bread crumbs. 

  6. Fry in hot oil and make sure to fry in hot oil.
  7. Enjoy with ketchup.

 Easy Homemade Chicken Nuggets



We are all in search of the best recipes when it comes to pack lunch for kids. I completely detest the frozen chicken Nuggets that come in the supermarkets, as we do not know what all goes into it. So I try and make these ahead of time, super easy to make too. I made the chicken Nuggets with hormone free boneless chicken cubes.
 
The addition of mayonnaise helps the chicken to tenderize and makes the Nuggets even more delicious. Make these Nuggets ahead of time (during the weekend) and your kids are going to love their lunch time. And for us mommies, we can feel guilt free too. I served the Nuggets on lettuce, you may place them inside bread slices as a sandwich or however you desire. 
 
Chicken Nuggets are loved by kids worldwide. So I am sure your kids will love them! It is always a hit here. To bring in the right coating texture I used 3 different ingredients to bring out the texture, I used plain cornflakes, rolled oats and a little amount of bread crumbs. Do try and let me know how your kids liked them!
 

Ingredients : (makes 12 Nuggets)

  • 250 gms Boneless chicken
  • 1 tbsp Mayonnaise 
  • 1 tsp Garlic powder
  • 1/2 tsp Paprika Powder
  • 1 tsp White Pepper Powder
  • 1/4 tsp Parsley (dried, optional)
  • Salt, as required
  • 1-2 tbsp Bread Crumbs, if required

For coating:

  • 2 Eggs 
  • 1/2 cup Maida/ All Purpose Flour 
  • 1/2 cup Cornflakes
  • 1/4 cup Rolled Oats
  • 1/4 cup Bread Crumbs

Instructions:

  1. In a food processor, pulse boneless chicken cubes with mayonnaise , garlic powder, paprika powder, white pepper powder, and dried parsley. Pulse and check the consistency, if required add a couple of tablespoons of bread crumbs and pulse once again. (make sure not make a paste)
  2. Onto a parchment paper/ baking paper add the chicken mixture and with the help of oiled hands flatten using using your fingers and shape the nugget mixture to a neat square, cover using the overlying baking paper from all sides and store in the freezer for around 20-30 minutes, this step will help you slice the chicken nugget block into perfect sized Nuggets.
  3. Remove the nugget block from the freezer and using a sharp and oiled knife, cut the chicken nugget block into equal sized nuggets.

  4. In a dry grinder, pulse cornflakes, rolled oats and bread or bread crumbs.

  5. Now dip the nugget into beaten eggs and then dip in the flour and repeat the process, now dip in egg again and coat in the cornflake mix. 


  6. In a freezer safe container place the prepared Nuggets using a baking paper before placing another layer of nuggets, or immediately fry for 3-4 minutes each side on medium flame.



  7. Serve with ketchup or any of your favorite dips.

 Café Style Smoky Chicken Burger


 
I am all in for juicy home made burgers and if it is made ahead of time, aaah the perfect treat on a lazy day! I prefer making my burger patties at home, as we know what goes into our body and helps us play with flavors. One among my favorite burger flavors is the Smoky chicken burger, the smokiness coming from the smoked and powdered Paprika is a game changer. It has a sweet, tangy and a hint of spicy tone to it. To help the flavors shine through I like to add Jalapeño slices to the final burger, which adds to the spiciness and tanginess. And the sauce with crispy fried onions is what brings the chicken burger alive with flavors!

This is one of the recipes I invented really long back. A time, when I started playing with flavors and textures, kept trying different variations until I was satisfies with the final outcome. There are a gazillion recipes on the net, but I tell you this one is a must try, I promise! Just make sure you don't over cook orundercook your chicken burger patties. This recipe is one of my inventions that I am smug about because it takes a lot of tries to nail one recipe, I am proud of this one!



Well, one of the first impressions from my siblings when I made this was, this is better than the one's you get in expensive restaurants and cafés. What better feedbacks can one expect from a burger recipe invention. :D
I add the coriander leaves its roots, as the flavor of coriander leaves are very strong and fragrant at its roots.  



Ingredients: (makes 6-7 patties)

  • 500 gms tender Chicken breasts, cubed
  • Handful of Coriander Leaves with cleaned roots, chopped
  • 2 small Garlic cloves
  • Salt , as required
  • 1/2 tsp Crushed black Pepper
  • 1/2 tsp dried Parsley (you may use fresh)  
  • 1/4 tsp Oregano
  • 1 tsp Smoked Paprika powder 
  • 1 tsp Onion powder, optional 
  • 1/4 tsp Red Chilli flakes 
  • 1/2 tbsp Soy Sauce 
  • 1/2 tbsp Mayonaise
  • Baking sheet/ Parchment paper
  • 1 Ziplock bag
  • 1 Onion, sliced thinely
  • 1/4 Cup Vegetable oil
  • Lettuce, preferably Ice berg lettuce
  • Jalapeños, sliced
  • 2 tbsp Unsatled butter
  • 6 Burger buns, with sesame seed
  • 5 tbsp Mayo 
  • 2 tsp Dijon Mustard (optional)
  • 2-3 tsp Tomato ketchup
  • 6 Cheddar Cheese Slices

Instructions:

  1. In a food processor/ chopper, add in cubes of chicken breast, chopped coriander leaves with roots, minced garlic cloves, salt, freshly crushed black pepper and spices like dried parsley, oregano, Smoked Paprika , Onion powder, Crushed red chilli flakes, and condiments like Soy sauce and Mayonnaise. Grind using the pulse function, not to a paste, but with small chunks of chicken pieces.

  2. Next prep your baking sheet into squares and set aside.
  3. Oil your hands and make golf ball sized balls of the chicken mixture and pat one ball at a time on one small square sheet of the baking sheet into a round patty and make an impression in the middle using your thumb.** 

  4. Place another sheet of the baking sheet over the burger patty and repeat the process for all other 5 burger patties. Place in the freezer for future use.

  5. To make the café style burger, in a pan pour the vegetable oil and fry the sliced onion on medium high until golden and crisp (keep an eye after it starts browning as it burns very quickly, keep stirring to get perfect color)
  6. Thaw your burger patties for at least 10 minutes.*
  7. Chop your lettuce and set aside.
  8. In a grill pan, using the same oil that you used to fry your onions, place your burger patties and fry 4 minutes each side, for a total of 8 minutes and no more.
  9. Spread a tsp of butter in the insides of your burger bun and grill on the grill pan, whilst the patties get done.
  10. Let's make the sauce by mixing the Mayonnaise, Dijon mustard and Tomato Ketchup in a bowl and crumble the crispy golden onions and add to the sauce prepared.

  11. Onto the grilled burger patties, place the cheddar cheese slices and allow it melt while the flame is off.

  12. Now to the grilled buns, spread the onion sauce generously, place the chopped lettuce and the melted cheese burger patty, over that place the sliced Jalapeños and finally place the sesame seeded side of the bun. Serve with fries and ketchup!


Notes:

  • Do not overcook the burger patties, as the patties would not be juicy and would turn hard.
  • If you plan to make beef burger patties, you need not all the spices and condiments to the beef mince, rather salt, pepper, and smoked paprika would do, as beef has its own beautiful Smoky flavor.
  • *If you thaw longer, the burger patties might stick to the baking paper, making it difficult for you to transfer to the pan for frying.
  • **The impression in the middle is made as the middle part of the burger tends to thicken while cooking, this helps maintain its shape.

Pulled BBQ Chicken loaded potatoes




Chicken and potatoes for a snack are match made in heaven. And to top it all, if it’s cheesy, even better. 
I was planning to film video of another recipe while it’ll I had this sudden craving for bbq chicken flavored snack. I had some potatoes looking at me from the kitchen counter top.

Well, my idea was just to dump in the readymade bbq sauce I had in my refrigerator and just do a quick loaded potato, that’s when I realized not everyone has bbq sauce in their pantry. So I made it from scratch so that everyone could try it too. Let me tell you, be ready for a war if you don’t make individual loaded potatoes for each person at home. It’s that good. I have witnessed it. 😆

The recipe is super easy, where the potatoes are half way boiled and then roasted in the oven for crustiness of the potatoes, whose inner core is removed and mixed with chicken that has been slow cooked in bbq sauce and pulled. With some cream cheese and other ingredients, finally topped with a hell lotta cheeeeese, you will know it’s the best loaded potatoes you would ever have had!😋

Not boasting or anything, but everyone here were fighting for more. So, now you know, it’s a must try!🤤

 Lets get started with the recipe!

Ingredients:

  • 3 Potatoes cleaned and unpeeled 
  • 1 tbsp olive oil
  • Salt, as required
  • 150 gms Boneless chicken
  • 3 tbsp tomato ketchup
  • 1 tbsp dark brown sugar *
  • 1 tsp Crushed Black Pepper
  • Salt, as required
  • 1/2 tsp Garlic Paste
  • 1 tbsp Soy sauce
  • 1 tsp Worcestershire Sauce (optional)
  • 1 tsp Paprika/ Red Chilli Powder
  • 1/2 Red Chilli Flakes
  • 1/4 cup Corn Niblets
  • 2 tsp Cream Cheese
  • 1 tbsp Butter
  • Mozzarella Cheese
  • Cheddar Cheese Slices
  • Chopped Parsley

Instructions:

  1. Half way cook the unpeeled and cleaned potatoes in water seasoned with salt for almost around 10 minutes.
  2. Drain water from the potatoes, place them on a baking tray lined with parchment paper and poke holes in the potatoes using a fork. 
  3. Drizzle olive oil and sprinkle salt, as required.
  4. Roast the Potatoes for around 15-20 minutes at 180 deg C.
  5. Next, into a pot add in your cleaned chicken pieces and add in your sauces and spices like tomato ketchup, soy sauce, Worcestershire sauce (optional), brown sugar, black pepper powder, garlic paste, and paprika/ red Chilli powder. Mix well.
  6. Slow cook the chicken for around 15-20 minutes without adding any extra water. Cook until when the chicken pieces pulled with fork, pulls easily.
  7. Pull the BBQ chicken, combine the thickened BBQ sauce in the pot with the chicken itself.
  8. Next, add in your red Chilli flakes, corn niblets, and cream cheese and butter. Mix well and set aside.
  9. Once the potatoes have cooled to the touch, scoop the inner core of the potatoes, keeping the potatoes peel intact and add the scooped potatoes to the pulled chicken and mix well.
  10. Load the potatoes with the chicken potato mix and top with mozzarella and cheddar cheese and brook until cheese melts.

  11. Garnish with chopped parsley and enjoy!








Notes: 

You may completely avoid the sauces if you have readymade BBQ sauce.


Dynamite Chicken Skewers




It is already the 6th of Ramadan. Before you know these beautiful days will pass away very soon. So make the most of it with recitation of Qur'an, moistening your tongue with Dhikr (remembrance of Allah) even while doing chores etc. Last thing you want is slogging in the kitchen all day during Ramadan, so this is one easy recipe that anyone can make; be it adults or kids! My girl loved helping me do these easy Dynamite Chicken Skewers.




Potatoes are sliced thin using a slicer, which is then rolled with a chicken strip that has been marinated in spices which is then rolled and tuck into a skewer, dusted with maida (all purpose flour) and fried to perfection. And finally the Dynamite sauce is drizzled over the chicken potato skewers and enjoyed. Kids and adults will love it equally! Well, it definitely did here!

This Ramadan I wanted to cut down on my oil intake, so I am using the shallow frying method, thigh deep frying is demonstrated here. This recipe can be made in an oven or airfryer by spraying a tbsp of oil. 

The best part of this recipe is that, it is prepared with basic ingredients that you can find at any Indian Household. The only preparation you would require is to soak your skewers in water for at least 30 minutes.

Ingredients: (makes 7 skewers with 5 Dynamite Chicken in each skewer)


  • Skewers soaked in water for 30 minutes
  • 2 Large Potatoes
  • 350 gms Chicken Tender Breast
  • 1/4 Turmeric Powder
  • 2 tsp Kashmir Chilli Powder
  • 1 tsp Ginger Garlic Paste
  • Salt, as required
  • Pepper, as required
  • 5 tbsp Maida, for coating
  • 3 tbsp Mayonnaise 
  • 1 tsp Chilli Paste
  • 2 tsp Tomato Paste

Instructions:


  1. Peel and slice your potatoes using a slicer and set aside.
  2. Slice your chicken breast to long, thin strips and place them in a clean bowl.

  3. Next, add in your ginger garlic paste, turmeric powder, red chilli powder, and salt as required  and mix well.

  4. Now, unto a clean surface, place a potato slice and next place a marinated chicken strip and then roll and tuck in tightly so that one end of the potato slice and then the chicken and then the other end of the potato slice are securely tucked into the skewer.





  5. Place your pan for shallow frying. Pour oil, once hot, sprinkle salt and pepper over the potatoes and coat in maida immediately* and place in hot oil and shallow fry for at least 5-8 minutes.

  6. Finally prepare your Dynamite sauce by mixing mayonnaise, red chilli paste and tomato ketchup.

  7. And garnish with the prepared sauce and enjoy! 



Notes:

  • The potatoes should only be sprinkled with salt right before frying, because the potato oozes out water when sprinkled with salt.
  • Make sure to tuck in tight before you add the next set of potato slices and chicken so that they do not twist loosely when you flip, while frying them on the Skewers.
