Healthy Oats Khichdi



My go to recipe when I want to cook up something quick and dump in all the veggies in my fridge! And this one tastes so comforting that you won’t even feel you are eating healthy, but if course be easy on the portion you take too. 

Usually Khichdi is made with veggies or is more of a vegetarian dish (that’s what I know) but since my family loves chicken and instead of using store bought chicken cubes, adding the boneless chicken not only oomphs up the flavor but also gives you extra protein.

Add in whatever veggies you have in your fridge, potatoes, peas, bell peppers, etc cauliflower is also a great add on! I love cauliflower in Khichdi. This is such an amazing way to get your kids veggies..I tell you..they will ask for more!! 😁

Ingredients:


  • 1 1/2 cup Whole Oats
  • 1/2 cup Moong dal
  • 1-2 tbsp Ghee
  • Hing/ Asafoetida, a pinch
  • 1 tbsp Olive oil or any neutral oil
  • 1 Onion, chopped finely 
  • 1 tbsp ginger garlic paste
  • 1 cup Button Mushrooms, sliced
  • 1 Carrot, small, chopped
  • 1 cup Broccoli, chopped roughly 
  • 1/4 cup Frozen Corn
  • 150 gms Boneless Chicken, sliced into small thin strips
  • 1 tsp Jeera/ Cumin
  • 1 Sprig Curry leaves
  • 4-5 cups Water
  • Salt, as required 
  • 1 tsp White pepper
  • 1/4 tsp Turmeric powder
  • 1/2 tsp Red Chilli powder
  • 1-2 Green Chillies, optional 
  • Coriander leaves, finely chopped for garnish 
  • Lemon slice, for garnish

Instructions:

  1. In a pressure cooker wash the moong dal and add it into the pressure cooker and add in the oats and add salt as required. Pour in around 3 cups of water and allow to cook on medium high for 2 whistles. 

  2. In a large heavy bottom pan, pour the ghee and splutter the cumin, and a pinch of hing and add in the curry leaves. 
  3. Next add in the ginger garlic paste and add in the chopped onion and sauté well. 
  4. Next add in the chicken slices and add salt and pepper as required and cook well for around 4-5 minutes.
  5. Next, pour a little olive oil and add in the veggies and cook well and finally add in your spices and the cooked mushy oats and moong dal. 


  6. Add in some more water for the desired consistency and salt as required, pepper and finally add in a squeeze of lemon and ghee (if required).

 Honey Chilli Crispy Smashed Potatoes



Looking for a recipe that's savory, yet super easy to make to enjoy in this rain? I have got your back! It's been raining 3 days back to back and ordering food is my best bet xD But outside food does get boring and isn't very healthy, so I thought of something that required less dishes to wash and is quick to make and the honey Chilli Smashed Crispy potatoes were born! I have used medium-small potatoes here. I would suggest to get hold of the really tiny ones if possible, gives better texture when bakes. The potatoes are boiled and then smashed which is then baked to crispy perfection. The honey Chilli sauce is like liquid gold. I like to drop a dollop of the sauce over the crispy Smashed potatoes, so that the potatoes stay crispy. These are best enjoyed hot. 

From now on, I plan to write a lot about a particular recipe, if there is a back story etc, otherwie, I plan to keep my blog recipes simple and easy to navigate through. Hope this will help the blog grow in a better way :) 

Now to get back to the recipe.. If you like the sweet and spicy combo, I am sure you will love this one! Let's get to the ingredients...

Ingredients :

  • 1/2 kg Baby potatoes 
  • Salt, as required 
  • 3-4 Garlic cloves, minced
  • Freshly crushed pepper
  • Parmesan Cheese
  • 1 tsp Paprika 
  • 2-3 tbsp Olive oil
  • 1 tbsp Butter
  • 1/4 Red Chilli Flakes
  • 2 tbsp Sriracha Sauce
  • 1 tbsp Honey 
  • 1 tsp Black pepper powder
  • Sesame seeds and Parsley to garnish

Instructions:

  1. Preheat oven to 220 deg C.
  2. Boil the baby potatoes with some salt and place the potatoes on a baking tray lined with parchment paper and space them evenly.

  3. Smash the potatoes gently with a potato smasher and sprinkle, salt, freshly crushed pepper, Parmesan cheese, paprika and a drizzle of olive oil.
  4. Bake for 15 minutes each side, meanwhile, let's make the sauce.
  5. In a saucepan, drop butter, and add the minced garlic to the butter, once fragrant add the red chilli flakes, Sriracha sauce, honey and black pepper powder, a dash of water and allow to come to a boil and set aside.
  6. Onto the piping hot crispy Smashed potatoes, add dollops of the prepared sauce over the potatoes and garnush with sesame seeds and/ parsley.
  7. Serve hot!

 

Notes:

I have used medium-small potatoes here, I would prefer to use the small tiny ones for better texture.
You may air fry the potatoes too.

North Indian Style Dal Tadka




I am all about easy recipes that are EASY at the same time COMFORTING. For me, a plate of perfectly cooked rice, dal tadka, and chicken or any seafood fry is something very much that tells me home cooked meal. In North India, this is combination is very popular and is called Dal-Chawal (lentil-rice), a favorite among many.

Dal tadka is something I prepare once a week, it's wholesome, filling and keeps one content. This recipe is so easy and gets done in a jiffy! For lentils, I have used toor dal here. You may use red lentils, masoor dal, a mix or a combination of the lentils. There is no sautéing involved, only a tadka / tempering is prepared to give the dal its oomph!

You can have DAL TADKA with chappati, roti, rice or as a side curry. It will definitely be your family's favorite.

Ingredients :

  • 1/2 cup Toor Dal
  • 1/2 Onion, sliced
  • 1/2 Tomato, chopped
  • 1-2 Green chillies, slit
  • 1/4 tsp Turmeric powder
  • Salt, as required 
  • 3/4 cup Water
  • Coriander leaves, chopped 

Tadka:

  • 2 tbsp Butter
  • 1/2 tsp Cumin seeds
  • 1 tsp Ginger Garlic paste
  • 2 sprig Curry leaves
  • 1 tsp Kashmiri Red Chilli Powder
  • A squeeze of Lemon juice
  • Coriander leaves, chopped 

Instructions:

  1. Wash toor dal well and add to a pressure cooker. 


  2. Pressure cook all the ingredients except for the ingredients under tadka for 1 whistle. Allow the pressure to release naturally.
  3. In a small tadka pan, add in butter, allow to melt. 
  4. Splutter the cumin seeds, add ginger garlic paste, curry leaves, chopped coriander leaves and sauté well. 
  5. Pour the cooked dal, add in the Kashmiri Red Chilli powder, and adjust seasoning if required.
  6. Allow to simmer well. Finally squeeze lemon juice, garnish with chopped coriander leaves and add in a blob of butter.
  7. Enjoy with cooked rice, and your favorite sides like chicken or fried seafood!

Succulent Shepherd's Pie



Ever heard of food made out of waste? Yes, you read that right! I am sure most of you are aware of this delicious dish that has its origin from Britain. But have you ever thought how this delicious dish got its name?

This was a dish prepared quite often by the shepherds or their wives for dinner using leftover food, as mashed potatoes were a staple and often wasted by the husbands and children of the family, the wives came up with this solution. How wonderful of an idea to not waste it and come up with a dish that is now a favorite worldwide and loved!

Shepherd's pie as the name suggests is a pie that was invented by Shepherd's in Britain in 1700's and later it was introduced in Ireland and other countries like France and India also adopted the dish too. In short, this is a dish that is equally loved among people all over the world, in different names.

The dish consists of two layers and occasionally three layers. The pie is usually prepared in a dutch oven or an ovenproof casserole dish, with the first layer consisting of minced lamb that is cooked with chopped onion, garlic and other spices with a dash of tomato paste and the base is thickened using a sprinkle of flour to bring the meat pie together and the second layer consists of a mashed potato layer, that is baked until golden and crisp. This dish is so comforting and flavorful. It keeps you full at the same time, it is super delicious. The same dish is also called cottage pie when the minced meat is that of beef. 

There are many variations of Shepherd's pie with different flavorings to suit one's taste buds. Another variation is also made in vegetarian using lentils and other pulses along with sweet potato that I had once come across that is of Jamie Oliver's recipe.

I had Shepherd's pie from a restaurant first time in my life, and then and there I knew I had to remake this at home and Oh boy does everyone love it here? It just vanishes in no time. Whenever I prepare this, I actually feel the warmth and love that the shepherd's wives put into the making of this dish. If you ask me why I love to make this dish? I prepare the meat base in my dutch oven that is oven proof and simply add on the mashed potatoes, so easy to prepare and fewer dishes to wash, also the oven does the rest of the work for you! Shepherd's pie done, in no time at all!


It isn't necessarily the same ingredients and the same flavor, it varies from houses to houses. So like I always say, I don't follow a particular recipe and this recipe is my own with adaptations from the authentic ones that I could find. Make yourself feel good by making some for your family and let me know how you liked it! Let's move on to the ingredients:

Ingredients:


Mashed Potatoes layer:
  • 3 large potatoes
  • 2 tbsp Butter
  • 1 tbsp Fresh or thick cream
  • 1 Egg yolk
  • 1 tsp Garlic powder
  • 2 tbsp Parmesan Cheese
  • 1 tsp black pepper powder
  • Salt as required

Meat Layer:
  • 2 Tbsp Extra Virgin Olive Oil
  • 1 tbsp Butter
  • 500 gm minced meat
  • 2 medium onions, finely chopped
  • 3 garlic cloves, minced
  • 1 carrot, chopped
  • 1/2 tsp black pepper powder
  • 1 tsp Cajun spice, freshly cracked(optional)
  • 1/2 tsp dried rosemary
  • A pinch of Oregano
  • 2 tbsp Flour
  • 1 cup frozen corn niblets
  • 1 cup frozen peas
  • 3 tbsp tomato paste
  • 2 tbsp Worcestershire Scauce (optional)
  • 1 cup beef broth
  • Salt, as required

Instructions:

  1. Preheat your oven at 200 °C. 
  2. Boil evenly chopped Potatoes in salted water for 10 minutes or until knife glides in easily.
  3. In an ovenproof skillet or dutch oven pour your olive oil, and add in your butter.
  4. Next add in your finely chopped onions and minced garlic. Sautee well.
  5. Next add in your chopped carrots and cook for 2 minutes. Add your minced meat and break using a strong spatula or a wooden spoon, add salt as required. Meanwhile also keep an eye on your potatoes and strain when done. 
  6. Add your spices like black pepper powder, cajun spice, rub the dried rosemary between your fingers and ad it to the skillet, finalyy add a pinch of oregano and mix everything well.
  7. Next add your tomato paste, worcestershire sauce and Sprinkle your flour. 
  8. Combine well and add in your beef stock water. 
  9. Drop in your frozen corn niblets and frozen green Peas. 
  10. To prepare your mashed potatoes layer, mash your boiled potatoes well, add in the butter, thick cram, grated parmesan cheese and 1 egg yolk. 
  11. Also add in black pepper powder and garlic powder. 
  12. Level your meat layer and add your mashed potatoes layer above the meat year and level it using a Spatula or use a fork to make a design according to your preference. 
  13. Bake for 25 minutes or until the mashed potatoes layer turn golden. 
  14. Enjoy! 
  


Notes:
  • You may use beef or lamb Mince for this pie. 
  • Increase or decrease the quantity of potatoes depending on the size of your skillet or Dutch oven. 
  • Try to use fresh Mince meat for better flavor.

Cheesy Sausage Bread Rolls with Aioli dip


It is Ramadan day 13 and I haven't been posting here much. Blogging and editing takes up so much of your time that you end up having no time for yourself or cooking therapy or self seclusion for ibadah. So I thought I would post recipes once in a while so that you guys could try them for Iftar. Well, for most of us food is something that connects to us instantly, likewise, when you have sweet fond memories of mommy cooking up some amazing food it stays in your heart and the taste lingers in your taste buds forever!

This was one snack that my mom prepared quite often during Ramadan when she went out of ideas. Sausages are cut into half and placed onto a bread that is wet slightly and pressed down with your hands and then rolled flat using a rolling pin. As far as I can recall, my mom used the sliced cheese whereas I used mozzarella. I somehow never liked the sliced cheese, but in this recipe, I would suggest using the sliced cheese if you could get your hands on them. As I never use sliced cheese I didn't have them and used mozzarella, actually, any firm cheese would work. You may also use cream cheese blocks after flattening them and placing them under the sausage. 

Anyhow, back to the recipe, the cheese is first added onto the damp and rolled bread and then place the halved sausage rolls and shape the bread into rolls and press down the edges. Next seal the edges using a flour paste and dip the rolled bread in egg mixture and coat them in bread crumbs. As easy as that! This is the easiest snack that you can come across. To take these rolls to the next level, I have made a Mayo-garlic aka aioli dip to accompany these rolls. Really I mean it when I say it that this dip brings out flavors that you will want more!

Whenever my mom made these for iftar they are a super hit here! You need to have them hot or else the cheese will solidify and you won't get that cheesy effect. Let me warn you, this is the easiest iftar recipe you could make! Without further ado, let's get started!

Ingredients:

  • 8 White bread slices
  • 100 gms Mozzarella Cheese
  • 4 Sausages
  • 1 egg
  • 1 cup bread crumbs
  • Flour paste 
  • Water

For the Aioli:
  • 4 tbsp Mayonaise 
  • 1 small garlic clove, minced
  • 1 tsp olive oil 
  • Black pepper powder (optional) 
  • Salt, if required 

Instructions :





  1. Trim off the edges of the bread slices. 
  2. Dampen the bread using your fingers dipped in water. 
  3. Using a rolling pin, flatten the bread slice, place the Mozzarella cheese and the sausage and roll them neatly and seal the edges using flour paste. 
  4. Crack an egg in a bowl and beat it using a fork and dip the prepared bread roll in the beaten egg and coat them in bread crumbs. 
  5. Repeat the process until done. 
  6. Fry them in hot oil until golden brown. 
  7. Serve hot with Aioli. (mix the Mayo and garlic, olive oil) 

Notes:
You may use home made sausage too.

Hasselback Potatoes with Cream Cheese and Dynamite Sauce


No - fried food for iftar is very difficult to accomplish right?! After all, after the many hours of fasting, we want to satisfy our taste buds with all possible junk/ fried items that we can. And is it healthy?! Definitely a big no! So here I have been contemplating on all the non-fried ideas. To make food visually impressive and delectably delicious is super hard when it comes to no - fried food. So I have collaborated with some lovely ladies on Instagram to come up with some delicious healthy snacks for Iftar!

Well, my contribution are my Hasselback potatoes with cream cheese and dynamite sauce. Hasselback potatoes have their origin from Sweden. They have these crispy rim like edges that are so appealing at the same time, super delicious and the inner part of the potatoes are so soft and infused with flavors. My initial thoughts were to include some sort of non - veg in the Hasselback, which was quite challenging. Then on second thought, I wanted to keep it simple. So I went on with a simple Hasselback, which in itself is super delicious with the flavors of garlic and rosemary-infused into the potatoes that are sliced halfway with many such cuts, which are sprinkled with a generous amount of salt and pepper, which are then baked to perfection. These are not only visually appealing, but they are also super delicious too. Believe me, when I say, Potatoes never tasted so good! Like really! I have been making these Hassel back potatoes, cause I love garlic and rosemary and these baked potatoes are exactly how I like it. Now if you ask me whats the role of the sauces in the Hasselback potatoes? They simply add more flavor dimension to the Hasselback potatoes, which is so much better than the plain Hasselback potatoes. 

This is simply a revelation. I am so happy how it turned out as this was my experiment, and I can proudly say this is my recipe because it isn't inspired from anywhere. I had been researching for quite a few days to see if there were any such recipes online, I could only find loaded Hasselback potatoes, and some which had sauces but nothing like this one! I wouldn't want to have my potatoes any other way! It makes a perfect side dish for dinner with some roasted chicken, or a perfect iftar snack idea. 


My hubster is someone who loves chicken or anything non - veg, so this is why I wanted to include non - veg in this recipe somehow. But I went ahead and baked them, kept it simple, drizzled the sauces and voila! My hubster was saying this thing is too good! Do you believe that? This man, who never says that about veg dishes guarantees you this. My little nephew kept asking for more. All you have to do is give cuts on the potatoes, pour the garlic-rosemary infused butter and bake while you prep for other things for iftar. And simply pour the sauce over the potatoes and voila! You are done! Its that super simple!

Without further a do, lets get started!

Ingredients: 

For the potatoes:
  • 5 Potatoes
  • 4 garlic cloves
  • 2 tbsp butter
  • 2 tsp dried rosemary
  • Salt, as required
  • 1/4 tsp Black pepper powder
  • Chopped green spring onion, to garnish

For the cream cheese sauce:
  • 2 tbsp Mayonaise
  • 2 tbsp Cream Cheese
  • 1 tbsp Cream
  • 1 tbsp milk (optional)
  • Salt to taste

For the Dynamite Sauce:
  • 2 tbsp Mayonaise
  • 1 tbsp Tomato Ketchup
  • 2 tsp Hot Sauce/ red chilli sauce
  • 1/4 tsp Kashmiri chili powder (optional)
  • 1 tsp garlic powder (optional)

Instructions:

  1. Preheat the oven to 220 Deg C. Line a baking tray with parchment paper.
  2. Hold the end of the potato and create slits halfway through the potato, be careful not to cut through the potato and use chopsticks as barriers to help cut your potatoes without cutting through. Repeat with remaining potatoes. 
  3. Meanwhile, in a saucepan melt butter and olive oil, and add garlic cloves and rosemary, and let it infuse in medium-low flame for 2-3 minutes.
  4. Now using a brush, brush the garlic-rosemary infused butter onto the slit potatoes, also make sure the butter reaches the cut folds too.
  5. Then sprinkle the potatoes with salt and pepper generously and bake for 30 minutes.
  6. Whilst the potato bakes, prepare the sauces in different bowls by mixing the ingredients under the sauces heading.
  7. Next, re-brush the potatoes with the garlic-rosemary infused butter and bake for another 30 minutes until fork tender and crispy edges on the potatoes.
  8. Serve hot and slather the cream cheese sauce and dynamite sauce.
  9. Garnish with chopped green spring onions. Enjoy!

Butter Chicken Parcels


Like who doesn't love Butter chicken? My love for Butter Chicken made me make this filling and it is truly scrumptious! Butter Chicken is one among the most popular dishes or gravy of Indian Cuisine. The first thing that I order, be it any restaurant, is this utterly butterfly delicious butter chicken. If the butter chicken tastes great then I bet the restaurant/Eatery is top notch when it comes to cooking with flavors.

When Ramadan is here we stock up on our basic necessities and ingredients so that we can have more time to do Ibadah. Well, one such major item that every household buys and stocks up is the samosa sheets. We all stock up on samosa sheets! Don't we? And they are definitely a big savior when it comes to preparing something quick for iftar without the hassle of preparing dough and making sheets. 

I try and avoid preparing fried snacks during iftar as it definitely isn't good for the tummy. But a fried item once in a while won't hurt too!😁

Well, I am introducing you to my Creamy saucy butter chicken parcels on the occasion of reaching 3K+ followers, which is a huge deal to me! 😍 I had to share a recipe of fried snack during this Ramadan for my dear followers who are my constant supporters and motivation. ❤️


Coming back to the recipe, boneless chicken are cut into 1 - 2 cm strips and marinated in ginger garlic paste, chilli powder and salt. It is fried and set aside. The masala consists of butter, finely chopped onions, green chili, red chilli powder, ginger garlic paste, tomato paste, dried Fenugreek leaves (kasuri methi), a tablespoon of flour and milk. And garnished with chopped Coriander leaves! It's that easy.

Now if you ask me how is it creamy like I mentioned before. I wanted the ingredients to be easily accessible, hence you may use heavy cream instead of flour and milk for that creamy touch and when filling the samosa leaves into parcels I also like to add a dollop of cream for that extra creamy effect! (Cause I like anything and everything creamy) haha

Enough of the drooling session, let's get started!

Ingredients:


  • 20 Samosa leaves
  • 150 gms Boneless Chicken, cut into 1-2 cm strips
  • 3 tsp Kashmiri Red chilli powder
  • 1 tsp ginger garlic paste
  • 2 tbsp butter
  • 1 onion medium - small onion chopped finely
  • 1 green chilli, slit
  • 2 tbsp Tomato paste
  • 1 tsp dried Fenugreek leaves (kasuri methi)
  • 1 tbsp flour
  • 1/4 cup milk /heavy cream *
  • Chopped Coriander leaves
  • 4-5 tbsp of thick cream/Nestle cream
  • Salt as required

Instructions :

  1. Marinate the chicken pieces with 1/2 tsp ginger garlic paste, 2 tsp Red Chilli powder, salt.
  2. In a pan, pour some oil and fry the marinated chicken pieces for 5-6 minutes.
  3. Transfer to a bowl and shred using hands or fork.
  4. Next in the same pan add butter and add 1 tsp Chilli Powder and saute for about 30 seconds, add the finely chopped onions, and the green chilli, 1/2 tsp ginger garlic paste, and the tomato paste. Mix well.
  5. Add your shredded chicken.
  6. Next add the dried Fenugreek leaves and 1 tbsp flour and mix well.
  7. Finally pour the milk and mix consistently to form a thick creamy filling, check for salt.
  8. Finish off with a Sprinkle of chopped Coriander leaves.


  9. Position the leaves horizontaly and vertically on one another and place the cooled filling in the middle. Now add a dollop of cream.
  10. Fold the leaves from right to left and from bottom to upwards. (Check video on YouTube to see how it's done)
  11. Spread flour paste on the remaining unfolded leaves and fold to form a box shape and trim off any excess leaves residual popping out.
  12. In a kadai, pour oil and fry and until golden and serve hot! 


Notes*:

  • You may use heavy cream instead of milk and flour for a creamier consistency.
  • Increase quantity of green chillies if you like it hot.
  • Remove the green chilli when filling the parcels.

Creamy Chicken Pot Pie


When Ramadan falls this is one dish I look forward to prepare! Creamy Chicken pies, just like the name suggests are deliciously creamy  and it like you feel a warmth instantly as though the pot pie was hugging you! These are super delicious and so comforting. Today I plan to make these pot pies my dinner escape, haha, as these are super easy to put together, and so effortless! What else does one need during Ramadan, when you are drained out and all that comes to your mind are fried food. I promise these are better than fried food for iftar!

Now coming back to the recipe, the base is basically veggies in white sauce with chicken broth that gives it a hint of a warm creamy soup. And finish off with some cream and you are good to go! There are two crusts/ Puff pastry layers in this pot pie. Normally we find only the crust layer in pot pies. Even though the pastry gets drenched in the sauce, it is easier to serve this way than the one crust method.


When I make these for Ramadan, it just vanishes into thin air. So comforting, filling and delicious, exactly what you need when you are fasting! When I did make them the first time, I knew this was gonna be a super hit, sautéing the onions in butter brings out this amazing smell that fills the kitchen and house with some amazing aroma that anyone will want to come look what was happening in the kitchen. My little one who sometimes is a very fussy eater, loves it.! I can't be happier! 😍

This is super easy to prepare with basic and minimal ingredients! Without further a do let's get started!

Ingredients:


  • 400 gms Puff pastry
  • 250 gms Chicken breast
  • 3-4 tbsp flour
  • 1 cup chicken broth
  • 1/2 tsp Black pepper powder
  • 1/4 tsp Red Chilli Flakes
  • 2-3 tbsp cream
  • 4 tbsp butter
  • 1 Onion, chopped finely
  • 1 large Clove of garlic
  • 1 cup Carrot, chopped cube
  • 1/2 cup frozen corn niblets
  • 1/4 cup frozen Peas
  • 1 1/2 cup milk
  • Maggi chicken cubes (optional) 


Ingredients :

  1. Preheat the oven to 200°C.
  2. Roll 200 gm Puff pastry sheet and place on a pie dish.
  3. Blind bake the pastry sheet by placing a Parchment paper/baking paper and placing a similar sized pan on it and add some beans etc to give weight so that the Puff pastry won't puff up. Alternatively, you may simply add the beans over the Parchment paper.




  4. I placed a dish on the Parchment paper for ease of mobility of the beans. I used green gram for weight. 
  5. Blind bake for 10 minutes.
  6. To make the filling, in a pan add 2 tbsp butter and Sautee the onions, mince a large garlic and Sautee.
  7. Next add your carrots, and allow to cook.
  8. Next add the remaining butter to make roux, add 3 tbsp of plain flour, allow to cook on low for a minute.
  9. Gradually add milk, little at a time and mix so that no lumps are formed.
  10. Next add the chicken broth and allow to boil.
  11. Next add  you frozen veggies like corn, Peas etc. And a dash of black pepper and red chili flakes
  12. Now add your shredded chicken and mix well and add your cream to finish off. 
  13. Now roll the second Puff pastry layer and keep aside.
  14. Fill the pot pie with the filling and place the second layer of Puff pastry.
  15. Using a sharp knife make small cuts on the pie and and give an egg wash. 

  16. Bake for 20-25 minutes and roast for 5 miminutes for that Crispy flakey look on the Puff pastry. Serve immediately! 

Note :
  • Serve immediately! 
  • Don't roll the pastry sheet too thick. 
  • I used green gram for weight for blind baking. You may use chick Peas etc. 
  • Use maggi chicken cubes for added flavor. 
  • For a healthier version you may use arrow root powder instead of flour for the roux. 
  • You can also make them in individual ramekins, for a perfect portion size or to serve guests individually.
