Mushroom & Avocado stuffed Omelette 




I happened to develop this nutritious omelette few days back, and it has been on loop here. Undoubtedly a favorite! So I thought it’s high time I shared this recipe on my blog. The omelette consists of a layer of sautéed mushrooms, over which sliced avocados are placed.

I just love how easy the omelette is, and the avocado just doesn’t give out its bitterness which is covered up by the flavor from the sautéed mushrooms. I just looooove sautéed mushrooms and this omelette just is the right and nutrient packed breakfast you should definitely give a try! 😃

Ingredients: recipe for 1

  • 2 eggs 
  • 1 Scallion, chopped
  • 1/4 Capsicum, chopped
  • 1 small Onion, finely chopped
  • 6-7 White Mushrooms, sliced
  • 1 small Garlic clove, minced 
  • Salt, as required 
  • 1/4 tsp Oregano 
  • 1/2 ripe Avocado, sliced thinly 
  • Olive oil
  • Crushed Chilli flakes


Instructions:

  1. In a pan, pour olive oil and add the chopped onion, minced garlic, and sauté until raw smell disappears and add in the sliced mushrooms.
  2. Add salt as required and a splash of water.
  3. Next add in the chopped capsicum and sauté and finally add in oregano. And transfer the mushroom mix to a bowl.
  4. In another bowl, crack in 2 eggs and add in the chopped scallions and salt as required and mix well using a fork.
  5. In the same pan used earlier, pour some olive oil and pour the egg mix to the hot pan and swirl areas with excess eggs using a silicone or wooden spoon and allow to cook on low heat.
  6. Spread the mushroom mix prepared earlier on half of the omelette and place the uniformly sliced avocado over the bed of mushrooms and sprinkle the crushed chili flake’s and flip over the other side of the omelette and transfer to a plate and serve with fresh cherry tomatoes.

 Easy Mushroom Omelette




Eid Al Adha 2023 is over and it's summer vacation, which calls for lazy mornings and this omelette recipe is all you want this summer! Super easy to prepare, the kids and adults will enjoy it alike. The creamy mushroom filling makes it a delicious treat right in the morning! I like to add steamed veggies along with this creamy omelette to make it a complete meal.

Omelettes are the easiest breakfasts one can prepare in the morning and if you have mushrooms rotting in the fridge, before they go bad, make this ummami packed omelette. The cheddar cheese slice adds this added creamy flavor to the mushroom filling.

Grab these ingredients, let's go!

Ingredients :

  • 2 eggs
  • Salt, as required
  • Freshly cracked black pepper 
  • 2 tbsps butter 
  • 1 small Onion, finely chopped
  • 1 small Garlic clove, minced
  • 6-7 white/ brown button mushrooms
  • 1 tbsp Water, to wet the mushrooms
  • 1 tbsp Heavy cream/ fresh cream
  • 1 Cheese slice
  • Steamed veggies
 

Instructions :


  1. Crack 2 eggs in a bowl, add salt and freshly cracked pepper and whisk well.
  2. In a small fry pan, add a tablespoon of butter and swirl the pan, add in the finely chopped onions and sauté well. Add in the minced garlic.
  3. Now add in the sliced mushrooms and wet the mushrooms with water and salt and pepper, as required.
  4. Now por the heavy cream and allow the sauce to thicken. Transfer to another bowl.
  5. Wipe the fry pan with a kitchen towel and add in butter and pour the whisked eggs. Pull from the sides, so that all the eggs cook well.
  6. Add in the mushroom filling and the cheese slice and flip over one side of the omelette over the mushroom filling and serve hot with your side of steamed veggies.

 Mumbai Street Food Style Chicken Frankie
 


Chicken Frankie is a wrap that consists of an omlette like layer inside the wrap, with a chicken filling inside which is finished off with a dash of pickled onion and green chilli and a sprinkle of Frankie masala powder, unlike other wraps, this one is chatpatta which means it is spicy and tangy.

Frankie is usually made with a roti made from maida dough, I have used here tortilla wraps as it was more accessible to me. I have used tender chicken breasts, you may use boneless chicken thighs, as there is no risk of over cooking chicken thighs. On the other hand, if you overcook breast pieces, it may result in a dry texture, if overcooked.

Preferably prepare the filling a day ahead, as it helps in the flavors of the masala to steep in the chicken pieces and store in the refrigerator overnight. Chicken frankie is very filling and with the omlette inside, makes it a complete meal. So you may have it as a snack or as a meal. I am sure you will fall in love with the flavors.

Ingredients: (makes 3)

  • 4 tbsp White Vinegar
  • 1/2 an Onion, thinly sliced 
  • 2 Green  Chillies
  • Salt, as required
  • 250 gms Boneless chicken, cubed
  • 2 tbsp Vegetable Oil
  • 2 medium Onions, chopped finely
  • Salt, as required
  • 1 tsp Garlic paste
  • 1 tsp Ginger paste 
  • 1/4 Turmeric powder
  • 2 tsp Kashmir Red Chilli powder
  • 1 tsp Coriander powder
  • 1 tsp Cumin Powder
  • 2-3 tbsp Tomato Paste
  • 1/4 cup Water  
  • 2-3 Large Eggs
  • Ready made/ Homemade roti or paratha
  • 2 tbsp Butter 
  • 2 tbsp Frankie masala powder **
  • Butter paper for wrapping the frankie

Instructions:

  1. In a small bowl, add in the sliced onions, chopped green chillies, white vinegar and salt. Mix and set aside.
  2. In a large pan/wok, pour vegetable oil and add in the chopped onions, add salt as required and allow the onions to become translucent.
  3. Next add in the ginger and garlic paste, Sautee until raw aroma disappears.
  4. Next add in the spices and mix well. Add the tomato paste and the chicken cubes,our in a splash of water and allow the chicken to cook well. After 7 minutes, switch off the flame.

  5. In another small bowl, beat an egg with some salt and in a pan, pour vegetable oil, allow to come to a heat, then pour the beaten egg in the pan, once half cooked place in your prepared roti before the egg cooks completely, as the uncooked egg helps to stick onto the paratha/ roti.
  6. Smear the roti with butter, flip and allow to cook. Immediately transfer to a board or a plate and stack the earlier prepared chicken filling to a side of the omlette-roti and add in the pickled onion and green chillies over the chicken filling and sprinkle the frankie masala powder as required. Now slowly roll the frankie from the side and halfway through, roll one of the long ends inward and roll the frankie wrap, now using a butter paper wrap the chicken frankie. 



  7. Serve hot and enjoy with pickled veggies.



**Homemade Frankie Masala powder:
  • 2 tbsp Red Chilli Powder
  • 1 tbsp Coriander Powder
  • 2 tbsp Dry mango powder
  • 1 tbsp Cumin powder
  • 1 tsp Garam Masala powder
  • 1/2 tsp Turmeric powder
  • 1 tbsp Black Salt/ Normal Salt
Mix all spices and store in an air tight container.

Balaleet








Balaleet is one the most popular breakfasts of Emiratis. Bring born and bought up in the United Arab Emirates I have always had such so much love for the food and culture of this beautiful country.

This traditional dish is usually served with boiled garbanzo beans and served with other sides like Hummus, cheese and bread.
Balaleet has contrasting flavors. The noodle pasta/vermicelli is sweet and the eggs are savory.

The bedouins have always prepared eggs with sweet but the noodle pasta/vermicelli came into existence from the traders who introduced pasta to the middle east. This with some boiled beans and a cup of Karak is only you need for breakfast. I could not get hold of the garbanzo beans today. But I definitely recommend it for a complete meal.




Balaleet is a combination of cardamom and saffron flavored sweet vermicelli tht is served with savory eggs. It is also served for iftar during Ramadan. The first time I had it was from Arabian Tea House, a prominent restaurant in Dubai. I wanted to create it at home right away! The ingredients seemed accessible. But the first time I made, it was a big flop coz I made around 400 gms of vermicelli for 6 of us. While preparing balaleet, remember less is more. 😅 Also if you love sweet and savory in one dish, you will certainly love balaleet for breakfast. I feel the dish has an acquired taste, the situation at home was mixed reviews. So I think it is definitely an acquired taste. I loved it though! 😍 

I have been delaying to post the recipe of balaleet as I wanted to post for UAE National Day. But I wasn't able to do so. So I thought let me share it anyways 😄, it's never too late for anything.. It's the mind's game that keeps us from doing things sometimes. Anywhoo let's go check out how to prepare this easy Emirati  breakfast! 😍

Ingredients -

  • 200 gms vermicelli
  • 2 1/2 cups water or as required 
  • 1/2 cup sugar
  • 3 tbsp ghee
  • Saffron, a pinch
  • Powdered Cardamom, a pinch
  • 2 eggs
  • Salt, a pinch
  • Vegetable oil

Instructions :

  1. Roast the vermicelli in a pan until they turn golden brown, by stirring constantly so that the vermicelli does not burn.
  2. Next pour your water and bring to a boil and allow to cook for around 5 minutes. Drain water if necessary. 
  3. Now soak saffron in a tbsp of water. 

  4. Next in a large pan, add in your cooked vermicelli and ghee, mix well. 
  5. Next add in your sugar, soaked saffron and a pinch of cardamom powder, mix well and your sweet side of the dish is done. 
  6. Next prepare your eggs by pouring your beaten eggs with a pinch of salt and flip the Omlette once the underside is done and  the upside is dry. Once the eggs are cooked for around 2 minutes on medium low heat, set the omlette aside. 
  7. Now for the plating, place the omelet over the bed of cooked sweet vermicelli and your Emirati breakfast is ready to relish preferably with a glass of Karak chai! 😍

Afghani Omlette




Mornings and breakfasts are inseparable. To have an easy and healthy is ideal but busy mornings can mean gobbling down junk food.

Not anymore. This Omlette, though the name states omelette, Afghani Omlette is more like bullseye or sunny side up eggs on a bed of chopped veggies.

What is stunning about this dish is that it is simply uncomplicated, and to believe that something so easy can turn out this delicious is just stunning! When the cubed potatoes crisp and brown the juices from the tomato caramelize to form this umami flavor that is unbelievably good. This dish requires no spices and is prepared with basic ingredients you can find at home. 

The first time I came across this omelette, I felt what was so great in this dish that made it unique. Well, the addition of potatoes made it interesting, so I definitely had to give it a try and oh boy was it good. The original version that has just salt and pepper has its intense flavor bomb in itself, though I wanted to try using Garam masala and Chilli powder. I'd recommend trying the dish with just salt and pepper for a first timer. 

This is a great recipe for busy mothers especially, kids will love it. Can be had as it is with a spoon or you may dip and eat using any sort of bread. 

Ingredients :

  • 1 tbsp butter/ oil 
  • 2 eggs
  • 1 onion chopped finely 
  • 1 small potato cubed (peeling the skin is optional) 
  • 1 tomato chopped finely
  • Salt and pepper 
  • 1/4 tsp Garam masala (optional) 
  • 1/4 tsp Kashmiri Red Chilli Powder (optional) 
  • Red Chilli Flakes/green chilli for garnish

Instructions:


  1. In a small Omlette pan, drop a piece of butter and saute your potatoes and allow to cook well and crisp up on the outsides. 
  2. Add salt and pepper to taste. 
  3. Next add in your chopped onions and add salt. 
  4. Now add in your tomatoes, add salt and pepper to taste, close the lid and allow to cook for 1 minute. 
  5. Open the lid and mix well and allow the tomato to caramelize well. 
  6. Finally add in your chilli powder and Garam masala (this is an optional step). 
  7. Saute well. Spread the veggies and crack in 2 eggs and allow to cook depending on the consistency you like you eggs, I did my eggs for around 4-5 minutes. *
  8. Add in salt, pepper and red chilli flakes /slit green chillies according to your choice. 
  9. Your easy peesy Afghani Omlette is ready to serve! 😍 




Notes:

  1. Do not add the Garam masala and red chilli powder if preparing for the first time. The authentic Omlette without additions is the best. 
  2. Egg cooking directions:
  3. 3-4 minutes runny yolk
  4. 4-5 minutes semi cooked yolk
  5. 5-7 minutes yolk cooked well.

Bubbly Hot Spinach Frittata







Are you that kind of person who is tired of having the old-fashioned sunny side up, omelette, poached eggs etc and you don't have much time to spend in the kitchen right in the morning? Well, this recipe is for you. Frittata is basically an Italian omelette, they are started on the stovetop and then finished in the oven and if you're anything like me; loves garlic, cheese; then this concoction is going to blow your mind and I promise you this is going to be you and your family's favorite go-to breakfast recipe. I tried this recipe with 'a pinch of salt', not sure if it was going to be tasty or filling. When I discovered Frittatas are so versatile that you can pretty much add any veggies like mushrooms, broccoli etc and it will taste so out of the world, I was enlightened. Not only are frittatas delicious, but they are also super nutritious and health packed with all those omega 3 eggs and veggies. So if you are looking for some way to make your kids eat healthy, this recipe is super easy and they are gonna love it. Let's move on to the ingredients to make the perfectly yummified Spinach Frittata:



Ingredients: 

  • 5 Omega-3 Eggs
  • ½ cup of Milk
  • 1 Tbsp Olive Oil
  • 2 small cloves of minced Garlic
  • 4 cups of Fresh Spinach
  • ½ cup of Shredded Mozzarella Cheese
  • ½ cup of Freshly Grated Parmesan Cheese
  • ½ tsp Pepper
  • Salt to taste

Instructions:

  1. In a skillet, cook the garlic in the olive oil over medium heat for about 1 minute, add the spinach and cover the skillet with a lid for 1 minute or until the spinach is wilted.
  2. In a small bowl, whisk together the eggs, milk, parmesan, half of the shredded mozzarella and salt and pepper, set aside.
  3. Remove the lid from skillet and give the spinach a toss, pour in the egg mixture and using a wooden spoon pull in the set eggs from the sides of the skillet. Let it cook for about 5 to 7 minutes or until the frittata is almost set.

  4. Preheat your broiler.
  5. Sprinkle the top of the frittata with the remaining mozzarella and some more parmesan.

  6. Pop it under the broiler for a couple minutes or until the top is golden brown and the frittata is set. Cut and serve hot.
