Dark Chocolate Cinnamon Rolls 

(Updated Recipe)

with Cream Cheese Icing and Glazed Pecans





Oh boy! Do I love Cinnamon Rolls? I flippin' love them. These warm and tender buns with cinnamon and brown sugar filling with grated dark chocolate is a win-win. It gets better, they are paired with some awesome cream cheese icing and glazed pecans. Stay with me to find out how to make this delicious cinnamon-butter oozing rolls. These are one among my childhood favorites, nothing beats childhood memories. I used to have them from Cinnabon, but then I wanted it to be more chocolatey and with pecans; a little of both worlds. I am also a big fan of 'Pralines n Cream" from Baskin Robbins, so I wanted to add in an element of that too, hence, the Glazed Pecans. Like who doesn't love Glazed Pecans?



For insane deliciousness, the cinnamon rolls has to be made with unsalted butter and good quality brown sugar and dark chocolate. The dough has to rise twice, once you make the dough, let it rest for about an hour and once again after slicing the rolls let it rise from the baking tray.

My secret to satisfying my sweet tooth, I added in grated dark chocolate, which takes the rolls to the next level of lusciousness. Cinnamon and Chocolate makes a great combination. Another tip is to leave one side of the rolled dough bare and roll the dough toward the bare end. I usually slice the rolls using a dental floss, but I lost it and I had already started making the rolls, I had to substitute that with a thread. 🤷‍♀️Which is why my rolls did not come out as neat as it normally does.

What I do is I place the floss under the rolled dough, in the middle at first and take the two ends and pull the ends of the floss in the opposite directions to create a cut on the dough. Slice the rolls as per this trick and you are gonna love how perfect it comes out. Also, I pour in heavy cream at the last stage of the baking process to make my rolls super soft and tender.

You may make the rolls and store them in the fridge and use them the next day too. Just place the rolls out while the ovens heat up. Consider baking these beauties for your family, friends, neighbors or colleagues and they are going to be astound. Take my word for it. This recipe is Oh so GOOD!



The warm melted dark chocolate inside the warm rolls with the cream cheese icing on top melting, it is just out of the world. Who else wants to bake some cinnamon rolls now? CINNAMON ROLLS

INGREDIENTS

Dough: 

  • 1 cup Warm Milk
  • 2 1/2 teaspoons dry yeast
  • 2 Eggs at room temperature
  • 1/3 cup (75g) Butter, melted
  • 1/4 cup Granulated White Sugar
  • 1 teaspoon Salt
  • 3 1/2 cups All-Purpose Flour
  • 3/4 cup Heavy Cream, for topping

Filling: 

  • 1 cup (200g) packed brown sugar
  • 2 1/2 tablespoons ground Cinnamon
  • 1/3 cup butter, softened
  • 100 g Dark Chocolate, grated
Icing:
  • 100g Cream Cheese softened
  • 1/4 cup Butter, softened
  • 1 teaspoon Vanilla Extract
  • A pinch of salt
  • 1 1/2 cups Confectioner's Sugar
  • 2-4 tablespoons half and half/ milk
Glazed Pecans:
  • 2 tablespoons brown sugar tightly packed
  • 2 teaspoons butter
  • 1 tablespoon honey
  • 1/8 teaspoon salt
  • 1/2 cup Pecans

INSTRUCTIONS: 

  1. Set the butter, eggs and cream cheese out to warm to room temperature. Place the milk in a small saucepan. Bring to a boil. The moment it reaches a boil, remove from heat.
  2. Pour the hot milk into the bowl and add 1/2 cup butter, to bring the temperature down. Stir and allow the butter to melt completely. Then stir in the sugar. Touch the milk mixture to test the temperature. It should be close to lukewarm. If it is not, add 1/2 cup flour and test again. Once it is just above room temperature, stir in the yeast and let it foam for approximately 10 minutes. (Hot liquid can kill the yeast.) 

  3. Add the eggs, salt, and remaining flour up to 3 1/2 cups. Knead the mixture well for about 10 mins, allow the dough to stretch and develop the gluten. Cover the top with plastic or a wet kitchen towel, and allow the dough to rise until double in size, approximately 60-90 minutes in a warm kitchen.

  4. Dump the inflated dough out on a well-floured work surface. Fold into thirds and press flat. Then turn and fold into thirds again and press into a rectangle. Roll the rectangle out into a large 16 X 20 inch sheet.



  5. Combine brown sugar and cinnamon. Sprinkle mixture and grated dark chocolate over butter and work in with hands (can add chopped nuts at this stage, if desired). Gently roll dough to form a log. Leave 1 1/2 inches bare (cinnamon-free) on one long edge. Be careful not to gouge holes in the dough. Starting at the cinnamon-covered long edge, roll the dough sheet tightly toward the uncovered edge to form a long tight log. Using un-flavored dental floss, section dough into 1 1/2-inch thick pieces. 







  1. Place a piece of parchment paper in a 9 X 13 inch baking dish and place them in the baking dish and cover using a plastic wrap or kitchen towel and allow to rise.
  2. Preheat the oven to 350 degrees F. Allow the rolls to rise for at least 30 minutes while the oven heats. Then bake for 7-10 minutes, take out rolls and pour several tablespoons of heavy cream over each roll. Return to oven and bake until the edges are barely golden and the center of each roll is puffed high up.

  3. Meanwhile, prepare frosting. Whisk together cream cheese, butter, vanilla. 2 tablespoons half-and-half and salt in small bowl. Add confectioner’s sugar. Adjust frosting consistency by adding milk; add several more tablespoons for a thinner icing.
  4. Combine brown sugar, butter, honey and salt in a medium skillet. Stir over medium heat until butter is melted. Add pecans and cook, stirring constantly, for 5-7 minutes. Make sure pecans are all coated evenly. Spread pecans in single layer on parchment paper and cool completely.

  5. Pipe frosting over warm rolls and drizzle melted dark chocolate (optional) and place the glazed pecans on each roll. Let the rolls cool slightly before serving. Serve warm and enjoy!

Notes: 
Keep rolls covered and at room temperature for up to 3 days when not serving. Best when reheated in the oven.
If not using active dry yeast, you may use instant yeast, but no proofing is required.
Use the instant yeast directly along with the flour.

Goan Recheado Fish Fry



Racheado means 'Stuffed' in Portuguese. Use this marinade to fry your fish, and you are going to stock up the marinade in your pantry. This spicy, sour and tangy masala is going to take your taste buds on a ride. The masala/stuffing can be used with any fish like the Mackerel, Pomfret, Prawns, Kingfish etc. 



I am using king fish in this recipe because I had fresh ones. And this recipe is the perfect one to go for a fry. The chilies and spices are soaked in white vinegar for a few minutes before you grind them to a thick paste. You will love how the spices and the tanginess come together. Also, try to marinate and keep for at least an hour or overnight, this will help to bring out the flavors. If you want it to be crispy, just before frying, coat it with semolina and flour.



Goan cuisine is one among my most desired options for dining in. If you haven't yet tried their food, you are missing out on some great experience. Moreover, if you love spicy food (like my mama), you will definitely love Goan food. 



The traditional Goan cuisine is majorly influenced by Portuguese and African recipes; that explains the name of the dish. This is spicy, crispy and hot shallow fried fish that can go along with steamed rice and veggies for lunch or along with rotis and curry for dinner. Perfect combo! 


I have no roots from Goa but definitely crave for their food every now and then. This might not be an authentic Goan recipe, but an amazing recipe. Try it, Tayst it and let me know how you like it.


INGREDIENTS

  • 4 King Fish rinsed
  • 15 Kashmiri Red Chilies
  • 1 tsp Kashmiri Chilli Powder
  • 2.5 Tbsp White Vinegar or as required
  • 1 Garlic Bulb
  • 1 inch Ginger chopped
  • 1/4 tsp Mustard Seeds
  • 1 tsp Cumin Seeds
  • 1/2 tsp Black Peppercorns
  • a pinch Fenugreek seeds
  • 6 Cloves
  • 2 Marble sized Tamarind Balls soaked in 20 ml Hot Water
  • Salt
  • Turmeric
  • Semolina (Optional)
  • Flour (Optional)
  • Oil for frying

Instructions

  1. Soak all the spices, ginger, garlic, tamarind pulp and Kashmiri chilies except oil in vinegar.
  2. Add salt.
  3. Also, add turmeric powder and chilli powder.
  4. Combine all nicely and soak for 35-40 mins.
  5. Grind the mixture until soft and smooth. Add more vinegar if required but ensure the paste has to be thick so add vinegar accordingly. If the masala paste is thin then it would not stick to the fish.
  6. Coat the entire fish with this paste. Marinate the fish for at least 30 mins.
  7. Place oil in a shallow pan, once oil is quite hot, shallow fry the stuffed Kingfish. If you want it to be crispy coat the fish with semolina and/ flour. Fry until 3 - 4 minutes each side.
  8. Serve the Recheado kingfish hot with salad, lime wedges, rice, and curry.

Chicken Steak with Creamy Mushroom Sauce




Sudden plans/ideas are always the best! Aren't they? This dish was one such concept that just happened to be. I was planning on cooking a healthy meal and I was indeed missing on some comfort food. Chicken brown fried rice was the initial idea, but I swapped it to Chicken Steak with Creamy Mushroom Sauce with Teriyaki Brown Rice with Veggies, to please my taste buds. If you want the recipe to the Teriyaki Brown Rice, let me know! 💗

The climate is changing, Alhamdulillah. Dubai winters are the best, but so does flu and fever come along with it. 😟 Hope everyone is well and stay safe. Take good care of your kids too. Also, a good heartwarming soup is up to be uploaded. The precise one when you can't think of what to give your kids when they are not well and you yourself can enjoy too. Coming back to the Mushroom Sauce - Thank goodness I gave it a go. It was out of this world. The heavy cream mushroom gravy was finger-lickin' good. Though it is rich in flavors and calories😛 you won't regret making this, I assure you.


The mushrooms are sautéed to perfection in the garlic infused butter. Oh my! The aroma is just undeniable. You got to try it to know how fragrant it is and the depth of the sapidity, you'll love it. #comfortfoodatitsbest

This sauce is so elementary but the flavors are immense. It's that simple.

Like I said, this was an impromptu attempt so excuse me for not sharing the step by step photos of this recipe.

So let's move on to the ingredients to get started:

CHICKEN STEAK 

INGREDIENTS :

  • 1 Tablespoon Unsalted Butter
  • 2 Tablespoon Olive Oil
  • 500 grams Boneless Tender Chicken Breast, pounded lightly to flatten
  • 1 Teaspoon Garlic Powder 
  • ½ teaspoon crushed Black Pepper 
  • ½ cup All- Purpose Flour
  • Salt to taste

INSTRUCTIONS:

  1. Marinate the chicken using Garlic Powder, Black Pepper, and Salt for 15 minutes.
  2. In a hot steak pan or heavy griddle, drizzle in the Olive oil and let the butter melt away.
    1. Pat the Chicken Breast with some All-Purpose Flour and fry the steak on medium heat for about 10 minutes per side. Then increase the heat and give it a final fry of about 3-4 minutes per side or until it begins to slightly char. Do not crowd the pan, fry a few pieces at a time.

    MUSHROOM SAUCE

    INGREDIENTS:

    250 grams mushrooms
    1½ tablespoon unsalted Butter
    1 clove Garlic minced
    ½ medium sized Onion finely chopped
    ½ tablespoon All-Purpose Flour
    ½ cup Heavy cream/ Whipping cream
    ¼ cup Milk
    ½ teaspoon White pepper powder
    2 teaspoon Soy Sauce/ Worcestershire sauce

    Salt to taste

    INSTRUCTIONS:

    1. Place a non-stick/ceramic pan on medium-low flame and drop in the butter and sauté the minced garlic until fragrant. 
    2. Next, sauté the onions until soft and translucent. Add the garlic and saute till fragrant. Now add the mushrooms and stir-fry for a couple of minutes till its done.
    3. Now put the flame on simmer and add the All purpose flour and mix for about 30 seconds in the mushroom butter gravy.
    4. Now add the heavy cream and milk couple of tablespoons at a time and keep stirring without fail or else clumps will be formed. Once uniformly done, and the sauce starts to boil, add in the White pepper powder and Soy sauce/ Worcestershire sauce.
    5. Let this simmer for a minute or so, adjust taste and turn off.
    Serve your steak with the sauce drizzled over it, and with the sides of your choice!

    Note:



    •  You may decrease or increase the quantity of milk or heavy cream depending on how much sauce you want. For me, the more the sauce, the better.
    • The steak can be served with rice, or mashed potatoes, or even roasted baby potatoes.
    • To make it a wholesome meal you may roast veggies or steam some corn on the cob to go with it.

    Overnight Chia Oats with Blueberries and Kiwi



    Mirror Mirror on the wall, which is the easiest and healthiest breakfast of them all?
    It is definitely these Oats Chia Pudding!

    It is not only a piece of cake to make this nutrient-boost/on the go breakfast with has full of life. Who wouldn't love to have a dessert/pudding right in the morning? This is not only going to give you your full potential to your day but will keep you full for a long time. Now ain't we looking for something like that, huh? We all might have had those days where we wanted to eat healthily but don't know how to start healthy. Well, this is absolutely dedicated to you guys. Well, I do not have a step by step image of this one, but hey, even a 5-year-old can make this! It's that simple. 

    Ps: I wasn't actually planning to post this on the blog, this explains why there isn't a step by step recipe. *Posting because of popular demand!😊

    Let me be frank here, I am not a big fan of oats that is made into porridge. I actually feel empty within an hour or so when I have oats in the morning. So I pretty much don't like it, it is like the last resort I think of when it comes to breakfast ( like when there is only milk and oats to hog in the morning😬)

    However, this cold oats pretty much changed my perspective on cold food; when you are up from the bed. You are going to love your mornings when you make such delights. These creamy, rich and nutritious, slightly sweet course is undoubtedly going to make it to your favorite breakfast menu. Your fam is going to love you even more. 




    All I do is grab my jar of Oats that has been sitting in the fridge since last night or 2 and grab a few berries and fruits or if I am much more in a hurry just put in a dash of dry fruits and voila! Delicious and filling breakfast ready! Hassle-free mornings are the best. Aren't they? So what are you waiting for? Grab your mason jars and get ready to indulge! 


    You will need: 

    • A Mason Jar or any type of Glass Jar that has a covering
    • 1/2 Cup Oats 
    • 2 Tablespoon Chia Seeds (or more)
    • 1 Cup Unsweetened Almond milk/ Cow's milk
    • A pinch of Salt
    • A pinch of Cinnamon Powder
    • 2-3  Tablespoon Maple Syrup or Honey (I added both)
    • Cereals (Optional)
    • Walnuts/Almonds (Any dry fruit - Optional)
    • Fruits/ Berries (I used Kiwi and Blueberries)


    Instructions:


    1. Combine Chia seeds, Oats, Almond milk, Salt, Cinnamon Powder, Maple Syrup and Honey in a mason jar or a glass container. Give it a good shake or mix.
    2. Place it in the refrigerator overnight.
    3. Give the mixture a good stir to make sure the chia seeds have soaked up all the goodness.
    4. You may add in berry puree or fruit smoothie for some extra craziness, but I prefer bite-size fruits in my jar.
    5. Top up with some cereals for crunch, any dry fruits (I used walnuts), fruits and berries. (all these are optional)
    6. Voila! Your Oats is ready to be relished.

    Classic Pancake with Berries and Maple Syrup (The best pancake recipe ever)





    Like who doesn't love pancakes? Pancakes are not only delicious but a delight to the eyes. There is a whole lot of variety of pancakes on the Internet, but once in a while, I like to stick to my classic pancake recipe.

    I love to have them on a busy morning when I crave for a dessert-like delicious morning meal. I am a berry kinda person, I love to load my pancakes with a whole lot of berries, berries are not only so pretty and glamorous but it has quite a lot of health benefits too and I love to include them in my diet. When in the mood to indulge, I do replace the maple syrup with some hot and gooey melted chocolate. Gulp, a deadly combination indeed!

    Pancakes can be made from scratch from homes of any type of ethnicity, because which house doesn't have flour, milk, and eggs? You can whip up these pancakes and have an instant breakie in no more than 15 minutes, its a piece of cake! Take the ingredients, mix them up, pour a ⅓ cup of the batter onto a pan and flip them when the sides turn brown/ have small bubbles on top- as simple as that! No more figuring out which is the best recipe to follow for the most divine pancakes right in the morning. Classic pancakes with freshly squeezed orange juice are my favorite take on a lazy morning.     Without further ado, let's move on to the ingredients!





    Ingredients

    • 1½ Cups of All Purpose Flour
    • 2 tsp Baking Powder
    • 1 Tablespoon Sugar (Optional)
    • 1 Egg
    • 1¼ Cup Milk
    • ¼ Cup Melted Butter
    • ½ Teaspoon Vanilla Essence
    • A pinch of salt 

    Instructions

    1. In a large bowl mix together the flour, baking powder and salt with a wooden spoon. Set to the side.
    2. In a smaller bowl crack in the egg and pour in the milk.
    3. Add the melted butter and vanilla essence to the egg and milk and use a fork to mix together until everything is well combined.
    4. Make a well in the dry ingredients and pour in the wet. Fold the batter together with a wooden spoon until there are no longer any large lumps.
    5. To cook the pancakes heat a heavy based pan like cast iron over medium-low heat. When the pan is hot add a small amount of butter and ⅓ cup of the pancakes batter.
    6. Cook the pancake for 2-3 minutes each side. Repeat with remaining batter



    Serve the pancakes stacked high with butter and maple syrup. Enjoy!

    Bubbly Hot Spinach Frittata







    Are you that kind of person who is tired of having the old-fashioned sunny side up, omelette, poached eggs etc and you don't have much time to spend in the kitchen right in the morning? Well, this recipe is for you. Frittata is basically an Italian omelette, they are started on the stovetop and then finished in the oven and if you're anything like me; loves garlic, cheese; then this concoction is going to blow your mind and I promise you this is going to be you and your family's favorite go-to breakfast recipe. I tried this recipe with 'a pinch of salt', not sure if it was going to be tasty or filling. When I discovered Frittatas are so versatile that you can pretty much add any veggies like mushrooms, broccoli etc and it will taste so out of the world, I was enlightened. Not only are frittatas delicious, but they are also super nutritious and health packed with all those omega 3 eggs and veggies. So if you are looking for some way to make your kids eat healthy, this recipe is super easy and they are gonna love it. Let's move on to the ingredients to make the perfectly yummified Spinach Frittata:



    Ingredients: 

    • 5 Omega-3 Eggs
    • ½ cup of Milk
    • 1 Tbsp Olive Oil
    • 2 small cloves of minced Garlic
    • 4 cups of Fresh Spinach
    • ½ cup of Shredded Mozzarella Cheese
    • ½ cup of Freshly Grated Parmesan Cheese
    • ½ tsp Pepper
    • Salt to taste

    Instructions:

    1. In a skillet, cook the garlic in the olive oil over medium heat for about 1 minute, add the spinach and cover the skillet with a lid for 1 minute or until the spinach is wilted.
    2. In a small bowl, whisk together the eggs, milk, parmesan, half of the shredded mozzarella and salt and pepper, set aside.
    3. Remove the lid from skillet and give the spinach a toss, pour in the egg mixture and using a wooden spoon pull in the set eggs from the sides of the skillet. Let it cook for about 5 to 7 minutes or until the frittata is almost set.

    4. Preheat your broiler.
    5. Sprinkle the top of the frittata with the remaining mozzarella and some more parmesan.

    6. Pop it under the broiler for a couple minutes or until the top is golden brown and the frittata is set. Cut and serve hot.

    Meringue Roulade with Fresh Raspberries and Rose Petals󠀫⁣










    Craving to satisfy your sweet tooth? This dessert/pudding is simply slurping just as it looks stunning on a dinner table or if you have guests over for lunch. It is definitely a show stopper. You are going to be amazed by the flavors that melt in your mouth from the gooey /crunchy meringue to the softly whipped cream as a filling. Roulade is a French word for something that is rolled and can refer to a sweet dessert made with sponge cake and filled with whipped cream, pastry cream, ganache and sometimes fruit. The meringue is a sweet mixture of egg whites and sugar, and it is really sweet.. so you don't want to mess up the cream by adding too much sugar to the cream. The cream should be light and not very sweet, this makes the roulade special. The crunchiness from the slivered green pistachios, the fruitful goodness of the fresh raspberries and the rose petals is a surprise with a twist. You won't believe how the flavors compliment each other, that is until you give it a try. 😄


    The combination of raspberry, rose and pistachios create a delicate floral flavor profile to complement the lightness of the texture. Each bite of this roulade will remind you of a breeze wafting over your face, refreshing and delightfully favorable. My husband and my whole fam were very impressed and they kept asking for it after every meal.

    INGREDIENTS

    1. Meringue:
      • 4 large egg whites
      • 1 cup/ 215 g superfine sugar
      • 1 teaspoon vanilla extract
      • 1 teaspoon white wine vinegar
      • 1 teaspoon cornstarch
    2. Cream:
      • 3 1/2 ounces/100 g mascarpone
      • 1 tablespoon confectioners' sugar
      • 1 1/2 tablespoons rose water
      • 1 3/4 cups/400 ml heavy cream
      • 1 1/4 cups/150 g fresh raspberries
      • 2 tablespoons dried rose petals
      • 1 teaspoon slivered pistachios (or regular, if unavailable, crushed)
      • Confectioner's sugar, for dusting



    1. instructions

    2. To make the meringue:

    1. Preheat the oven to 325°F/160°C.
    2. Line the base and sides of a 13 by 9-inch/33 by 23-cm jelly roll pan with parchment paper. Allow the paper to rise about 3/8 inch/1 cm above the sides of the pan.
    3. In a large bowl, beat the egg whites with an electric mixer until they begin to firm up. Add the superfine sugar to the whites in spoonfuls or tip into the bowl in a slow stream. Continue beating until a firm, glossy meringue form. 
    4. Using a large metal spoon, gently fold in the vanilla, vinegar, and cornstarch. Spread the mixture inside the prepared pan and level with an offset spatula.
    5. Bake for 30 minutes, until a crust forms and the meringue is cooked through (it will still feel soft to the touch). Remove from the oven and allow to cool in the pan. Unmold the cooled meringue onto a fresh piece of parchment paper. Carefully peel off the lining paper.


    TO MAKE THE CREAM:
    1. Place the mascarpone, confectioners' sugar, and rose water in a large bowl and whisk by hand until smooth. Add the cream and whisk for about 4 minutes, until the cream just holds its shape. (You can do this in an electric mixer but keep a close eye on it as it's easy to overmix).  
    2. Spread most of the mascarpone cream over the original underside of the meringue, reserving a few tablespoons. Leave a small border around the edge of the meringue. Scatter most of the raspberries and 1 1/2 tablespoons of rose petals evenly over the cream.
    3. Using the paper to assist you and starting from a long edge, roll up the meringue into a perfect log shape. Carefully transfer the log onto a serving dish. Use the remaining cream to create a rough wavy strip along the top of the log (see photo). Chill for at least 30 minutes.
    4. When ready to serve, dust the log with confectioners' sugar, dot with the remaining raspberries, and scatter the remaining rose petals and pistachios evenly over the top.

    Notes: 
    • Do not overbeat the egg whites, add the sugar and check for a glossy consistency. 
    • Never over bake the meringue. It will not come together as desired.
