Lebanese Casserole



And it's that time of the year again. It's winter here in Dubai! 😍 And that calls for a hot and soupy casserole for dinner. This is perfect coz the recipe only calls for basic ingredients that are almost always available in the kitchen.

Anything soupy, warm and hearty is what one needs during winter nights! 😍 I happened to come across this recipe on a keto page called thatketoyum, since the Mister is no more on keto and feeding the family with fat and proteins only isn't practical, I decided we wanted some carbs here. I used potatoes for carbs, you may use cooked rice instead too. This dish is kind of a combination between a stew and a casserole. The next time I make this, I might prepare using vermicelli for the carbs instead of potatoes. I am sure, vermicelli would make a great substitute too. 

All you need to do is boil and shredd chicken breasts in salt and pepper. And if using vermicelli, cook according to package instructions and set aside. I roasted my potatoes in salt, pepper, olive oil and garlic powder. Next, in a pan add you chopped onion, minced garlic, spices, tomato puree and veggies as per your choice. I used chopped carrots, Capsicum, sweet corn niblets and frozen Peas. Finish off with a couple of teaspoons of tomato paste and season with salt as required. 
Into a casserole dish or a baking dish, layer the prepared ingredients. The first layer being the shredded chicken, next add in some black olives and layer with the prepared tomato gravy. Finally pour in your chicken stock, milk or cooking cream, roasted potatoes, labneh (optional) and Mozzarella cheese and allow to bake for around 20 minutes or until the cheese melts well. As simple as that, and it is a whole meal in itself! What better excuse to prepare this yummy dish. Yallah! Let's move on to the ingredients. 






Ingredients : (makes for 3)

  • 250 gms Chicken Breast, boiled and shredded 
  • 1 cup chicken stock, reserve from the cooked chicken breast/ use maggi chicken cubes. 
  • 1 potato mashed or roasted * (check notes) 
  • 2 tbsp olive oil
  • 1 medium Onion, chopped finely
  • 3 cloves garlic, minced
  • Salt and pepper as required 
  • 1 tsp paprika powder
  • 1 tsp Kashmiri Red Chilli powder
  • 1 tomato, pureed
  • 1 small carrot, chopped 
  • 1/2 Capsicum, chopped
  • 1/4 cup frozen Peas (optional) 
  • 1/4 frozen corn niblets (optional) 
  • 2 tbsp tomato paste 
  • 1/4 cup sliced black olives
  • 1/2 cup milk/ cooking cream
  • Few labneh balls (optional) 
  • 1/2 cup shredded Mozzarella Cheese
  • Coriander leaves, chopped, to garnish

Instructions :

  1. Roast/ Mash potatoes and set aside. (Instructions under Notes) 

  2. Boil the chicken breast pieces in salt and pepper water, shred lightly and set aside. 
  3. In a skillet, pour the olive oil and add in your chopped onions and minced garlic. Sauté well, until raw smell disappears. 
  4. Next add in your seasonings and spices like salt, pepper, paprika, and Chilli powder, sauté for a minute on low. 
  5. Add in your pureed tomato and allow to cook for a couple of minutes. 
  6. Next add in your chopped veggies and frozen veggies (optional). 
  7. Finally add in your tomato paste and check if more seasoning required. 

  8. In a baking dish or a casserole, pat in your layer of shredded chicken and then Sprinkle your sliced black olives. 

  9. Now layer up your tomato gravy prepared earlier. Level the layer using a spatula. 
  10. Pour in your chicken stock and milk/cooking cream. 
  11. Finally, place the roasted/mashed potatoes as the final layer. Add in some labneh balls and or some thick cream if you have and generosly Sprinkle in your shredded Mozzarella cheese. 

  12. Place in a preheated oven 200°C for around 20 minutes or until the cheese has melted well. 
  13. Finally garnish with chopped Coriander leaves and voila! Labanese comfort food done. Lazeez! 



Note:
  • To roast the potatoes, marinate the potatoes with salt, pepper, garlic powder and drizzle olive oil. Place in the oven at 200°C and allow to roast for around 25 minutes.*
  • The labneh balls are totally optional. I used it here as I had them in stock. Not quite necessary. 
  • You may use mashed potatoes instead of roasting the potatoes. You may also use cooked vermicelli.

Cinnabon inspired Cinnamon pancakes with Cream Cheese Icing



Good evening ya'll!

I can't wait for the winter vacation. Like literally! This e-learning experience is the worst. Sometimes gets on my nerves, especially if you have a child doing their kindergarten. So exhausting! And every day in the morning I just sit so blank as I have no time to prepare anything fancy. The breakfast or lunch here since distance learning started has been so boring which otherwise never happens here.



I kept scrolling my phone whilst I got some time to chill once my LO's break time happened, just looking for inspiration 😉
But my my even 5 minutes in break time is precious. But I was wanting to cook something exciting. And not the every day stuff. So all that came to my mind was pancakes! And I was sick of all the basic combinations like maple syrup, honey, Lotus biscoff, bananas, blueberries and other berries etc. Suddenly I had this craving for Cinnabon rolls. So I asked the Mister if he was okay with cinnamon flavor for pancakes. He nodded and then and there I knew I had to do this! 😍 And the Cinnabon inspired cinnamon pancakes with cream cheese frosting was born. 😋😋

Even though the flavors were the same, the textures made a slight difference and I loved it! The pancakes and the frosting was ready in less than half an hour and the perfect solution on a weekday breakfast for busy momma's like me. This was an instant idea and added in ingredients as though a recipe book was open in front of me. But honestly, it was indeed the best pancake flavor 🤤🤤

Though the pictures did not turn out like that I had in my mind as the Mister was in such a hurry, I urge you must try! Super easy and delicious, kids are going to love this😋👌 Well, my LO approved! 😁😍

*LO - Little one🤭





For pancakes:

  • 1 and 1/2 cup All purpose flour
  • 1 egg preferably omega
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup milk
  • 1/4 cup melted butter
  • 1 1/2 tsp cinnamon powder
  • 3 tbsp honey
  • Salt, a pinch


For icing:

  • 100 gms cream cheese, softened
  • 1 tsp Vanilla Essence
  • 1/4 cup butter, softened
  • 4 tbsp heaped sugar
  • 2 tsps and more of milk/cream /Whipping cream.
  • A pinch of salt

Instructions :

  1. In a large bowl add in your your dry ingredients and give a mix using a whisk.
  2. Next make a well in the middle and add in your wet ingredients one by one and combine well using a whisk.
  3. Cook the pancakes on a heavy cast iron pan or a pancake pan.
  4. Place a small piece of butter and smear the pan.
  5. Next pour in 2-3 ladlefuls of pancake batter in equal proportions and flip when you notice bubbles forming on the top.
  6. Cook for 2-3 minutes and transfer to a small plate and stack them up until you finish the process.
  7. The cream cheese Icing is prepared by combing all the ingredients mentioned under the ingredients of Icing. If at all yih come across lumps, use a electric whisk and combine well.
  8. Finally pour this luscious and delicious cream cheese frosting over the pancakes and enjoy! 😍


Notes :
Try to use unsalted cream cheese. If not possible, use a brand that has less salt content. You don't want your Icing to be too salty.

Garlic Butter Prawns



Hello TIBH fam! 

I am so excited for when winter approaches. It's time to grill anything and everything. And when you get your hands on fresh prawns that are in abundance, you want to try all thase dishes that has been always tempting you, isn't it?! Well, basically this recipe requires minimal effort and minimal ingredients yet, the flavors are intense! 😍

The prawns are grilled and slathered with garlic butter which intensifies the flavors of the dish. Cooking time of prawns is so less when compared to other proteins, so keep in mind not to over cook which would spoil the texture and juiciness of the prawns. 

Not only is this yummy, it is also keto friendly. Garlic-butter-prawns are a match made in heaven. The prawns are threaded onto skewers that are soaked in water at least for half an hour if grilling over coal so that the skewers doesn't burn. The skewers start from the tail and are pushed upwards.. You may also grill in a grill pan. And a squeeze of lemon juice gives that tangy finish to the final product. Pair it with a nice crusty bread and you are good to go! 

Without further ado, let's get started! 

Ingredients : (makes for 2 people) 

  • 15 - 20 fresh big prawns/shrimps, cleaned and deviened 
  • 4 tbsp butter
  • 5-6 garlic cloves, finely chopped 
  • 1/4 tsp Black Pepper Powder 
  • 1 tbsp lemon juice 
  • 1 tbsp fresh parsley , chopped


Instructions:

  1. In a small skillet/pan, allow the butter to melt, drop your finely chopped garlic and sauté until fragrant, make sure it doesn't burn. 
  2. The prawns are marinated in salt and pepper, and threaded onto the skewers and brushed with the garlic butter. 
  3. Grill for 3 minutes each side. 
  4. Once the prawns are cooked and removed to a plate. Pour the rest of the garlic-butter mixture with the dash of lemon juice over the cooked prawns. 
  5. Garnish with lemon and parsley. Enjoy hot! 😋

Notes :

  • Don't cook the prawns for too long. 
  • Keep the tail on for presentation purpose.

Kinder Chocolate Crepe with Nutella and Biscoff drizzle 



I have been saving Kinder chocolates from the chocolate lovers here so that I can make this chocolatey crepe! Not exactly the best breakfast idea. My eating habits can vary from a fitness model to a hungry child in a chocolate factory. That's called a balance 😉 and I am that hungry child in a chocolate factory today. 😁😁



Ps: This is the Mister's capture 👆 Whose is better? Mine or his?😉😄

Coming back to the crepe, what else are weekends for? Imagine this delicious crepe on a late Saturday morning.. Just cozying up with your family to watch a movie together. It's so easy, messy, and fun to make crepes with kids. Well, if you feel that this crepe is quite a bit too chocolatey for you, you may substitute the Nutella spread with Strawberries and bananas to get a dose of nutrition. Chocolate and fresh berries can never go wrong! 😍😋

The Mister and my precious little girl was beaming with joy to have a chocolate factory on their plates😁😍

It's just a simple recipe. Just a simple recipe, perfect for indulging 😋👌

Ingredients :

  • 1 Cup All purpose flour 
  • 1 egg
  • 1 tbsp Sugar
  • 1 1/2 cup full fat milk
  • 1 tbsp butter
  • 2 Kinder chocolates 
  • 2 tbsp Nutella 
  • 2 tsp lotus biscoff spread
  • A pinch of salt 

Instructions :

  1. In a large bowl, add in your dry ingredients - flour, sugar and salt and mix until combined. 
  2. Make a well in the middle of the bowl and drop in your eggs and gradually pour your milk and using a whisk combine well, you should have a thin batter, if the batter doesn't thin, add more milk until thin. 
  3. In a crepe pan, drop a small piece of butter and take a ladlefull of the batter and pour it onto the pan and swirl outwards till you get a nice, evenly swirled, thin crepe. 
  4. Allow to cook for a minute. 
  5. Next, flip and place your Kinder chocolates and allow to melt for a few seconds, using a spatula, spread the melted Kinder chocolate  well and turn over four sides of the crepe to create a aquare shape. 
  6. Flip and drop the prepared crepe onto a serving plate and top up with melted Nutella, Kinder chocolates and a drizzle of Lotus Biscoff with a scoop of vanilla ice-cream 😋👌



Note:

  • Try to use full fat milk. 
  • The ratio of milk compared to flour is that the milk is slightly more than the flour, coz you want a really thin batter.

Street Style Fast food
Paav Bhaji 






Good evening folks. Do you get this sudden cravings for Indian Street food style chat? Well I am someone who loves any kind of street food/ fast food, but to my dismay, the Mister hates Indian Chat! Well, thanks to all the viral videos that showed the unhygienic preparation of street food. So to satisfy my cravings, I make some them from home. 

Pav is basically the bread rolls that are served along with the bhaji (a Marathi word which indicates a vegetarian dish). Bhaji is basically prepared by cooking vegetables and adding spices, mashing the vegetables to form a gravy. A special combination of spices are used to prepare the paav bhaji masala which brings out the authentic taste. Though this spice mix (Pav bhaji masala powder) can be found in Indian stores and supermarkets, I like to prepare them from scratch, which helps to bring better flavors. 

It is said that Pav bhaji was invented as a quick lunch option for the textile mill laborers in Mumbai that is now enjoyed as a street - fast food and in restaurants. Though my recipe doesn't use red food color, you may use if required, I used kashmiri red chilli powder instead, sautéed them in butter to bring out the color.

Here, I have incorporated the street style way of cooking by sautéing a tbsp of the prepared masala in butter along with chopped Coriander leaves and toast the paav on an iron griddle. It takes the pav to a next level. I bet this recipe can fill your tummy and soul!

Ingredients :

For 3-4 people

  • 1 tbsp vegetable oil
  • 1 tbsp butter
  • 1 large Potato (boiled and mashed)
  • 1 large tomato, chopped
  • 1/4 cup green Peas (I used frozen) 
  • 1 medium Onion chopped finely
  • 1/2 green Capsicum chopped finely
  • 2 tsp Pav bhaji masala powder (to make from scratch I will mention below)
  • 1 tsp Kashmiri Red chilli powder
  • 1/2 dry Fenugreek leaves, powder it by rubbing between palms
  • 1 green chili, finely chopped (if required)
  • Coriander leaves, finely chopped
  • 1 tsp Ginger garlic paste
  • 2 tbsp lemon juice
  • Around 1 cup water
  • Salt as required

For paav:

  • 1 tbsp butter
  • Coriander leaves, chopped
  • 1 tbsp prepared Pav bhaji masala (not powder) 

Instructions :

  1. In a wide bottom thick pan, pour 1 tbsp vegetable oil and 2 tbsp butter.
  2. Sautee the onion and Capsicum till the wetness from them dry around 2-3 minutes.
  3. Add salt as required. 
  4. Add in Pav bhaji masala powder, kashmiri chilli powder and dry Fenugreek leaves.
  5. Sautee and add in green chillies, Coriander leaves and ginger garlic paste. Sautee well. 
  6. Finally add in your tomatoes and green Peas. 
  7. Sautee and finally pour lemon juice.
  8. Add your mashed potato. Mix well.
  9. Pour around 1 glass of water, you want it the gravy loose. Close the lid and allow to boil for around 5 minutes and open the lid and mash using a masher and adjust water and salt as required. 
  10. In an iron tawa, place a tbsp butter, drop Coriander leaves and add the prepared Pav bhaji masala and Sautee for a few seconds and place the Pav and nicely toast both sides.
  11. Serve the paav and masala with a slice of lemon and chopped onion.


To prepare Pav bhaji masala powder from scratch : (can use this measurement to prepare the above recipe 2 - 3 times) 

  • 2 tbsp Coriander seeds
  • 1 tbsp cumin seeds
  • 1 cinnamon stick
  • 1 cardamom pod 
  • 2 cloves
  • 2 Bay leaves 
  • 2 tsp whole black pepper 
  • 1 tsp fennel seeds
  • 3 whole dried kashmiri chilli/ 1 normal dried chilli
  • 1/2 tsp Turmeric powder 
  • 1 tsp dry Mango powder/amchur powder. 

Instructions :

  1. Dry roast the above ingredients except for Turmeric powder and dry Mango powder and allow to cool completely.
  2. Grind well and finally add the Turmeric powder and dry Mango powder and give a couple of blitz and store in a dry and clean container.

Note:
  • If you want super mashed up veggies in your bhaji, you may cook them well in a pressure cooker before you prepare the masala.
  • The usage of the type of veggies used in Pav bhaji can make a slight difference in taste, if you like a sweeter taste you may use carrot, for extra color you may use beetroot. I personally like more Capsicum which helps bring out the flavors better.

Rose and Cardamom flavored Fairy Floss/ Candy Floss/ Cotton Candy.🌹




It's breast cancer awareness month and it's pink everywhere! Today my little girl wore pink as it's Pink day and it happens to be a long weekend ahead so I thought of trying out something that I have been wanting to explore and try since so long. 

I took this chance and created our very own Cotton Candy/ Candy Floss / Fairy Floss or in our home town it's called Pullu mittayi (grass candy) or Panji mittayi (cotton candy). And since rose is something that I always fall head over heels for, I decided to try a rose and Cardamom flavored candy floss. And after much anticipation, I tried and voila! It was done in less than half an hour and I couldn't believe it. 😍

My little sister stared at me while I spun sugar like a piece of cake. Like recall, y it was that simple! It was simple because the whole process requires a lot of attention, if done right then you are in for it! A few pointers would be to check the sugar syrup, it shouldn't be too thin or too thick. You can nail this simply by dropping a few drops of the sugar syrup in a small bowl of water. If it takes shape and comes out on your finger it is done. And the next pointer is that yih need to work fast with this, a little hot but worth to give it a try! The only thing that I would correct the next time is to add the flavorings at the end, right before pouring it on a greased counter top/ silicon baking mat. 

I will definitely be coming up with more recipes using this delicious candy floss.. Something that I used to love as a child and still do.. So stay tuned!

This post is my contribution to raise awareness on Breast Cancer that can be treated and cured if we check ourselves and diagnose early. Ingredients:

  • 1 cup All Purpose Flour 
  • 1 tbsp pure ghee
  • 1 cup Sugar
  • 1/2 cup water
  • 1 tsp lemon juice 
  • 1/4 tsp salt
  • 1 tsp rose water (you may use rooh afza or vimto) 
  • A pinch of cardamom powder 
  • A few drops of red gel food coloring

Instructions:

  1. In a clean wide pan, add in your ghee and sprinkle the all purpose flour/ Maida over it and roast well until the raw smell disappears. And set aside to cool. 
  2. In a saucepan, add in your sugar and water, lemon juice and salt, allow to boil well.
  3. Once your sugar syrup thickens, add in your color/flavorings (cardamom and rose water) and check the consistency by dropping a few drops of the syrup in a small bowl of water and if the syrup keeps its shape and comes on your finger, it's done.
  4. Onto your clean counter top or silicone baking mat, grease it wel with pure ghee and once the bubbles have disappeared, slowly pour the molten sugar syrup over ghee and wait for a few seconds until the sides start to cool.
  5. Now slowly push the sides using your hands, be careful, use a steel ladle to play with it, you will burn your hands.
  6. Using your greased palms, pull the candy outward and attach inward.
  7. Do this a few many times. Slowly make a circle out of the candy and sprinkle and spread the roasted APF/Maida that we have prepared earlier onto the candy.
  8. Dip and coat the candy in the Maida and start shaping them into '8' and stretch slowly.
  9. Repeat the step until you gets thin strands.
  10. Finally dust off the excess Maida and the super pretty pink candy floss is ready! 😍

Chicken Hakka Noodles





It's already halfway through October? Can you believe that? I am done sitting at home and bam! End of year 2020. If there is anything at all that has helped us to rewind and learn is anything and everything related to food. We have all been creepy crawlies when it comes to socializing, and food has been a big part of the whole lock down situation. Even though you belonged to any part or any community of the world, you could always talk food! If there is anything I like to d other than dozing off is cooking dome amazing food and even if I feel a little bumped for the plans I had for the year 2020, I am grateful to the Lord for bringing families together during this pandemic and to stumble upon so many like-minded people whom I now call my friends. Peace and prayers to all those who have been affected by the Virus.

Onto the Hakka noodles, now now, you may call this Hakka noodles, chow mein or stir fried noodles. It doesn't matter. The main difference between Hakka noodles and chow mein is that there is no difference other than they were invented in two different regions in China. They both have the same ingredients, be it vegetables, or a favorite protein like chicken Thighs strips/pieces etc. Additionally chow mein may be prepared a little watery which are slurpy good. But they are cooked by tossing unlike stir frying method which is used for Hakka noodles. For me noodles has always been my go to dish whenever I go to a restaurant. It's so easy to prepare at home too. I'd recommend not to use the Maggie noodle cake coz the textures are quite different.
Here I have used Chings Vegetable Hakka Noodle pack you may use the egg Hakka noodles too, tastes the same.



Chicken Hakka noodles is a popular Indian street food which is prepared using boiled noodles that is stir fried on a high flame with lots of veggies and chicken pieces and a drizzle of soy sauce. Make sure you prepare your Hakka noodles over high heat and you got to slice your veggies thin. I used Onion, Capsicum, carrot, Cabbage and green french beans. When you want to prepare something quick this is just the perfect dinner treat for weeknights! Gets done in half an hour max! 😍

I like to toss and stir fry my noodles and shhh.. I have a secret to share with you. But only if you promise you won't tell it to anyone🤪 haha, who am I kidding? I know you are here for the secret.😉 I like to add a drizzle of vegetable oil at the end of the stir frying to get that glossy restaurant look. But let me tell you, it's not just in the looks but this is the best Hakka noodle recipe. I had to share it here as I have my followers always ask for the recipe, so here you go!

Ingredients:

  • 250 gms/ 1 package of Chings Hakka Noodles
  • 2 + 1 tbsp vegetable oil (1 tbsp for the final coat) 
  • 3-4 garlic cloves, chopped finely
  • 1/4th of an onion, thinly sliced
  • 1/2 Capsicum, thinly sliced
  • 9-10 French beans sliced thinly
  • 1/4 pc of Cabbage sliced thin
  • 1-2 green chillies, chopped finely (depending on the heat level) 
  • 1/4 Chicken stock or 1 maggi chicken cube (optional) 
  • 50- 100 gms Boiled and lightly shredded chicken (boil in water with salt + pepper) 
  • 2 tbsp Soy sauce
  • 1/4 tsp white vinegar 
  • 1/4 tsp crushed black pepper
  • 1/2 tsp white pepper powder (optional)
  • Salt (if required)

Instructions :

  1. In a large pot, boil water required to boil noodles. Add salt and allow to cook 80% and drain off the water and run through cold water. Finally coat with a tbsp of vegetable oil. 
  2. In a deep wok, add 1 tbsp oil and Sautee the garlic for around 15 seconds and quickly add the onion and stir well. 
  3. Next add in your veggies in the order - French beans, carrot, Cabbage and Capsicum and finally add your green chillies and stir well. 
  4. Next add your boiled and lightly shredded chicken. 
  5. Next add your soy sauce, white vinegar, and some crushed black pepper powder and add in your noodles, toss and stir fry really well. 
  6. Now you may see the moisture has all dried out and the noodle might look dry, if so use my secret trick, add a tbsp of vegetable oil and stir fry well for a minute and voila your chicken Hakka noodles is ready! 
  7. You may garnish with greens of spring onion. (I didn't here coz let's be honest here, I ran out of groceries🙈)

Iles Flotantes - Floating Island 




It's International Egg day and which better day to try out this dreamy Classic French dessert called Floating Island. Yup! You read that right! Isn't the name of the dessert in itself so fascinating. It is basically a cloudy-pillowy meringue balls/oval shaped baby cakes that are floating on a rich creamy thick custard. 

I have been wanting to try this since a long time now. Though I wanted to try and experiment with different flavors other than vanilla, I stuck to the classic one this time as I wanted to know what the real flavors felt like. The meringue balls are usually made using the help of two Spoons and rolling a spoon full of meringue between two tablespoons till you get them ival shaped. But since the lazy girl in me did not want to go through the struggle, I literally grabbed an ice cream scooper and voila! My little island were scooped and dropped into the hot milk in no time. The meringue requires around 9-10 minutes of cook time, in between which you have to flip them to cook completely. The meringue is cooked well when you close the lid and beware of boiling the milk, you don't want a hot mess in here!


The recipe calls for cornstarch that has to be added to the whisked meringue, but I completely forgot to add it. But there was no issues in holding its shapes Coming to the flavor, practically speaking we all have vanilla essence at our homes, but I'd rather go for the vanilla pod next time I try the dessert. But guys I was literally amazed by the technique of poaching the meringue in the hot milk. Aaaahh! The inventions people come up with, truly genius! The rich creme anglaise and the meringue is a match made in heaven. It's unreal how a few ingredients like literally 4 ingredients and you can make an easy and delicious dessert in a jiffy.

Creme anglaise is basically egg yolks that are cooked along with hot milk and vanilla briefly without boiling, or else you might end up with a creme anglaise that is grainy.



Just a few points to be kept in mind and your classic French dinner dessert called Iles Flotantes with sugar basket is ready to serve! 😍 

Let's get started! 

Ingredients :



  • 2 cups Full Fat milk (plus extra to add on later) 
  • 1 tsp Vanilla extract or 1/2 vanilla bean paste
  • 4 large eggs, yolks and whites separated
  • 1/3 cup sugar (for meringue) 
  • 1/4 cup sugar (for creme anglaise) 
  • 1 tsp cornstarch /corn flour (optional) 

Instructions:

  1. Pour the milk into a wide skillet (you will be poaching your meringues here) and pour in your vanilla extract. Allow to heat on low flame whilst we prepare the meringue. 
  2. Whip the egg whites using a electric hand beater or a stand mixer on a high speed while gradually adding your sugar and continue to whip until the egg whites have stiff peaks when the beaters are lifted or spoon the meringue and turn the spoon and if the meringue stays intact without falling, the meringues are ready for poaching. Fold in the cornstarch at this stage. 
  3. Once the milk has heated to a point where there are no bubbles of boiling visible, using two large Spoons shaped the meringues to oval shape (I used uce cream scoop) and drop them into the hot milk carefully leaving space between each meringue ball. 
  4. Poach the meringues for 5 minutes uncovered, then flip and cook covered for around 4 minutes. 
  5. Using a slotted spoon, scoop the cooked meringues and set aside to cool on a tray. 
  6. Once cooked, allow to chill. 
  7. Into a clean saucepan, strain the milk that was used to cook the meringues and add extra milk if required (requires 2 cups/500 ml milk). Bring the milk to a Sim. 
  8. Whilst at that, whisk the egg yolks in a large bowl with sugar. Slowly pour the hot milk into the yolk mixture while whisking. 
  9. Transfer the custard mix to the saucepan again and using a wooden spoon mix well until the mix thickens lightly and coats the back of your wooden spoon (you can check this by wiping the back of your spoon with a finger and if it separates, then it is cooked and you may switch off the flame).
  10. Slowly strain the custard into a clean bowl and cover with a cling wrap directly covering the surface of the custard. Allow the custard to come to a room temperature and chill well before serving. 

  11. Finally, make caramel to garnish. (by bringing sugar to a boil and stiring occasionally until melted) 
  12. To serve, pour ladle fulls of the prepared and chilled creme anglaise into a flat serving dessert bowl and gently place the cooked and cooled meringue. Finally, drizzle the prepared caramelized sugar over the meringue, serve immediately and enjoy! 😍

Tamil Nadu/ Madras Chicken Dum Biryani


Nothing screams the weekend like biryani, and Tamil Nadu biryani is one of the best biryani that you could have! It is so light on your tummy, yet so flavorful and easy to prepare. My advice would be to prepare the biryani as early as possible and allow the biryani to develop better flavors by staying in dum. 



Now coming back to our recipe of the day Tamil nadu/Madras Style Chicken Dum Biryani. I have had this special fondness to try out this yummy biryani which has its ingredients very similar to our very own Thalassery Biryani. Although there is an addition of yogurt and the rice used here is Basmati rice. And the process varies slightly from Thalassery Biryani, of course! You definitely need some time to keep the rice and Masala in dum.

The first time I tried attempting this biryani, I did not quite like it. Though the next day when the flavors from the chicken Masala actually mingled with the rice, it tasted super delicious. I was all so curious to try out Madras Biryani as I have always heard Tamil stars, celebrities and anyone from Tamil nadu rave about Madras biryani. If you ask them their favorite food it's always biryani. Though I haven't tried the real Madras biryani, I wanted to replicate and ask the people in my house i.e, my bhabhi who has been bought up in Madras and my Hubby who has done his college in Coimbatore and wanted them to check if it resembles. And to my surprise, bhabhi said it's exactly the same way they prepare, just that it's red in color and my hubster told me that it felt like he back in his college days and was similar to what he used to have from coimbatore.

OK. So now, I myself was super happy. But I would definitely prefer Thalassery Biryani to this. But who doesn't like a change and it definitely tastes soo good the next day. Especially along with the raita. As this biryani is quite dry compared to what we usually prepare, raita definitely helps bring out its flavor dimensions. This is when little Huda helped me prepare this biryani. She loves to be with me in my kitchen. So yeah, basically this biryani credit goes to my 3 year old daughter who became a 4 year old last week. (like literally where is the time flying?😭) 



Yallah! Let's make this yum biryani and enjoy the moment.😋

Ingredients :


Rice:

  • 3 cups Basmati rice
  • 4 and 1/2 cups normal water
  • 3 tbsp ghee

Masala:

  • 1 kg fresh chicken
  • 1 tbsp ghee
  • 3 tbsp vegetable oil 
  • 2 cloves
  • 3 cardamom pods
  • 2 2" cinnamon stick 
  • 3 medium onions, sliced finely
  • 5-6 garlic cloves, chopped coarsley
  • 1" ginger, chopped coarsely 
  • 3-4 green chillies 
  • 1 medium tomato, chopped 
  • 1 tbsp kashmiri chilli powder 
  • 2 tbsp Coriander powder
  • 1/4 cup yogurt 
  • Salt, as required 
  • Couple of tbsp of lemon juice
  • 15 leaves of mint leaves approx, chopped
  • 5-6 sprigs of Coriander leaves, chopped
  • Red/orange food color (optional) 

Raita:

  • 1 cup yogurt 
  • 1/4 of an onion, finely chopped 
  • 2 small green chillies, slit

Instructions :

  1. Soak your Basmati rice for around 15-20 minutes and cook the Basmati rice by turning the flame to the lowest setting when you see fumes forming on top of the boiling water and close the lid and cook untouched for 20-25 minutes (until 80% cooked) and open the lid, pour in your ghee and fluff your rice using a fork gently and allow to cool completely, so that the rice attains better texture. (Cooling in a platter is a good idea) 
  2. In a pressure cooker,  pour in your ghee and vegetable oil (flavorless) and add in your whole spices (cloves, cardamom, and cinnamon) and Sautee. 
  3. Next add in your sinely sliced onions and add some some salt, Sautee until translucent. 

  4. Chop your garlic, ginger and green chillies using a hand held chopper or grinder. 
  5. Add the ground ingredients to the onions and sauté for a couple of minutes until the raw aroma dissappears. 


  6. Next add in your chopped tomatoes and cook until tomatoes turn mushy. 
  7. Now add in your Coriander powder and Chilli powder and sauté well. 
  8. Add in your yogurt and mix gently. 

  9. Finally add in your chicken, salt and chopped herbs. 

  10. Close and cook for 2 whistles. Once the pressure is down, open the cooker and allow the gravy to thicken by keeping the masala under low flame. Once done, finally squeeze in your lemon.

  11. Into a larger vessel start layering the masala and the rice, begining with the masala layer, then a rice layer and a sprinkle of chopped herbs. 
  12. Continue the process until done and add in your color (if you are adding). I prefer my biryani without color. 
  13. Using a foil paper or Maida dough close the lid and seal in the aroma. 
  14. In a preheated oven, 200° C, place your vessel and allow to stay in dum for around 20-30 minutes. 
  15. Serve hot with raita. 

Notes:

  • Refer to my Bukhari rice recipe for tips to cook Basmati rice perfectly to the T. 
  • You may add in red color, which is the authentic style. I haven't used any color here. 
  • You may do the dum process on the stove top if you do not have an oven by placing a flat tawa on flame and put the flame to simmer and place your vessel with your biryani while using a foil to cover your vessel and finally closing with a lid and allow to dum for around 15-20 minutes.

Dahi Murg

Good morning folks! 


Let me tell you, this distance learning has literally drained the s**t out of me. And to add to it my brother and bhabhi (sis in law) who used to live with us have shifted and the mess and cleaning has literally drained me more than ever. If at all I get a chance to film a recipe I never get the chance to update it here on my blog. I just can't handle any mess, although I am glad that all this is right in time of my annual deep cleaning. It is my pet peeve to complete all the mess in a day or two. But it usually makes me super tired and cranky. So I thought to myself maybe doing everything a bit by bit might make it easy. Although physically it has worked but by the time I really want to sit and pendown something on my blog I end up snoozing. I hope I can accomplish both my targets and its really hard especially because of the e-learning and I know we all are going through our own difficult times. I hope and pray that everything goes well for everyone who is reading this.



Now, coming back to the recipe, Dahi murgh is basically an instant and easy gravy that can be made in a jiffy, exactly that you need during these testing times to save energy and time (for distance learning😄) . The first time I made this recipe was when I had a whole dabba (container) of yogurt that was untouched and nearing its expiry. So I tried this recipe that I came across different other recipes and added my own touch to it like usual. The curry is quite spicy, tangy and delectable and better enough it's super easy. I highly recommend this curry for a quick lunch/dinner as slogging in the kitchen is the last thing in my mind when there are a 1000 tabs open in my mind. Lol, I am sure by now you know how stressed out I am😂 exactly why I haven't been blogging much. 

The chicken is basically marinated in a spiced yogurt to get the maximum flavor of it. And guess what, there are no tomatoes involved or any cream for the thickness of the gravy. The sourness and thickness all comes from the yogurt itself. The more the chicken stays in the yogurt the better. I have paired it here with my instant butter naan if you'd like the recipe of the naan let me know in the comments below. It was sooo good, it tasted just like a it were served from a good restaurant. 

This simple chicken curry recipe with yogurt makes a great dish to serve sudden guests or for unplanned meals. I bet if you haven't tried this recipe yet, this is definitely going to be one among your go-to chicken curry recipes. You can basically have this curry along with any type of roti or you may make the Curry a bit thin by adding water or chicken stock so that you can enjoy with rice too. I prepared it in some desi ghee, if you'd like you may substitute it with butter but ghee would be better any day for desi curries. 

Ingredients :



  • 700 gms chicken 
  • 1 tsp ginger garlic paste 
  • 3/4th cup of yogurt 
  • 1/2 tsp Black pepper powder 
  • 1/4 tsp Turmeric powder 
  • 3/4 tsp Garam masala 
  • 2 tsp Coriander Powder 
  • 2 tsp pure ghee 
  • 1 Onion, finely chopped
  • 3 green chillies 
  • 7-8 cashews soaked in hot water
  • 1/2 tsp Kasoori Methi /dried Fenugreek leaves 

Instructions :

  1. Soak the cashews in hot water and set aside. 
  2. In a large bowl, add in the yogurt, ginger garlic paste, the spice powders like Turmeric, black pepper powder, Coriander powder and Garam masala and 1 tbsp green chilli sauce (this is completely optional). 
  3. Add salt as required and add the spiced yogurt to cleaned chicken pieces and allow to marinate at least for 1/2 and hour. 




  4. In a deep pan/kadai, add in 2 tsps of ghee/butter. 
  5. Add in your finely chopped onions. 
  6. Once the onions are translucent, switch off your flame and add in your marinated chicken along with the spiced yogurt. 
  7. Combine everything well and cook covered for 20 minutes with occasional stirring. 
  8. Drop in your slit green chillies. 
  9. Grind the cashews with a couple of tbsp of milk and pour that in and combine well. 
  10. Finally, in a small pan, dry roast your dried Fenugreek leaves to bring out its aroma and transfer to a small bowl. 
  11. Now gently rub the leaves between your fingers to powder them, and add them to your gravy. 

  12. Enjoy this flavorful yet super easy chicken curry marinated in spiced yogurt along with rice, roti, naan etc. 


 Notes:

  • If you want to have the Curry along with rice, loosen the Curry by adding half cup of water or chicken stock. 
  • The green chilli sauce is completely optional. I just add it in for that extra spiciness.

Crispy Fried 
Restaurant Style Kerala Prawns



Howdy folks! Long time.. I know that you might have noticed my absence by now. Somehow I wanted to take sometime off from gadgets and social media as I were already going through a lot of turmoil..
But hey look who's all grown up.. Lil miss Huda is all ready to start school more than ever due to the lock down situation and these past days have been super hectic for me. I have been taking it slowly. It is super mad and crazy, being an owl myself who gets little to no sleep at night has to wake myself up and lil miss Huda for.... School 🚸 E-learning 🥺 getting up early in the morning just to sit in front of the laptop is truly annoying and tiring, since it isn't just tlyou trying to be attentive, you have to keep her active and attentive too. And I get cranky the whole day. 

Even though I have been experimenting in my kitchen, this e-learning booth (ghost) that has been keeping me on my nerves doesn't give me a chance to film or click pics. Anyhoo.. Long story short, basically I have been trying to get into this new e-learning phase of life. Once I get on track I can't wait to share my recent experiments with you guys.

Now let's talk about the dish served here today, it's my favorite restaurant Style Crispy fried prawns. This method can be basically followed for any small seafood which includes natholi/ nethel (anchovies), prawns, squid etc. The recipe basically helps you to retain the crispness along with its juicy flavors. I have always loved to devour natholi/prawns for meals (rice, curry and other sides with either of these Crispy seafood sides) and ever since I wanted to replicate the same from home. Other than the cleaning and deveining of prawns, the cooking part is the best, it takes no more than 5 minutes in total for medium sized prawns.



The prawns are cleaned and marinated in a Masala that contain garlic paste, Turmeric powder, chilli powder, a dash of Maida and corn flour and fried to perfection in coconut oil. Drooling much? Without further a do, let's get started! 😍

Ingredients :

  • 250 gms cleaned and deviened prawns 
  • 1/2 tsp Garlic paste
  • 1/4 tsp Turmeric powder 
  • 2 tsp Kashmiri Red chilli powder 
  • 1 tbsp Corn flour
  • 1 tsp Maida
  • Roughly chopped curry leaves 
  • Salt, as required 
  • 5 tbsp coconut oil

Instructions :

  1. Marinate the ingredients with the cleaned prawns and allow to marinate for 15 minutes. 
  2. In a kadai, heat coconut oil and fry the coated prawns for 3 minutes each side and no more.
  3. Drain oil from the fried prawns and serve immediately. Tastes best and crispier when piping hot!

Notes:
  • The marination might look a little off red due to cornflour, but once you drop them in oil, the color of the prawns change to red immediately.
  • For larger prawns, increase frying time to 2 minutes extra. 
  • Add adequate amount of salt to bring out the best of flavors 
  • The ingredients might sound minimal but allow seafood to play its own magic and you won't regret! 😋
